A quarter century from now, we may look back at the 2010s as the decade of the catcher. True, there are no Johnny Benches, Gary Carters or Carlton BY GEORGE DICKIE Fisks in this decade, Hall of Famers who dominated the position in the 1970s and ’80s. But with a proliferation of triple-threat receivers who can win games with their bats, gloves, arms, smarts and even legs – among them Buster Posey, Matt Wieters, Carlos Ruiz, Joe Mauer and Yadier Molina – it’s possible that the days of the good-field-no-hit catcher are over. Molina is a particularly interesting case. The 30-year-old native of Bayamon, Puerto Rico, was always considered one of the game’s best defensive catchers, boasting a 44 percent career rate for throwing out opposing base stealers to go with 47 pickoffs since his rookie year of 2004. And his leadership of a sterling Cardinals pitching staff is unquestioned. But it is his hitting that has progressed from acceptable to competent to middle-of-the-order threat. He put up his best offensive numbers a year ago, when he batted .315 with 22 home runs, 76 RBIs, a .373 on-base percentage, an OPS (on-base plus slugging percentage) of .874 and 12 stolen bases. As the No. 5 hitter on a very good hitting Cardinals team this year, at this writing he was hitting .327 with two home runs, 20 RBIs, a .366 on-base percentage, a .798 OPS and three steals. Molina and the Cardinals can be seen in action Sunday, June 9, on ESPN, when the Cards conclude a three-game series against the Cincinnati Reds.

The only sure shot going into the 67th Annual Tony Awards on Sunday, June 9, is Neil Patrick Harris hosting for a fourth time. “He understands Broadway and television, and Broadway and television come together one time a year,” says Glenn Weiss, director and co-producer of the Tonys. Though Harris was suspended upside down when “Spider-Man: Turn Off the Dark” was a contender in 2012, he’s not going to pull similar stunts. “I never find it a successful move when an awards show host dons different ridiculous outfits,” Harris says. “As a viewer, I never feel it is funny, and I just think it is difficult for the host. It is a lot of work for not a lot of accolades. You end up with silly pictures of yourself in the trades.” “The job of hosting an awards show like the Tonys is to be the ringmaster and barker,” Harris says. “It is different from other shows because it is so performance filled. You have to spend your time honoring the season and honoring the shows.” CBS’ live three-hour telecast returns to New York’s Radio City Music Hall to honor a season that has been incredibly diverse. That included one-person shows on a super agent (“I’ll Eat You Later”), Macbeth and Mary, the mother of Jesus (“The Testament of Mary”) – though Bette Midler, Alan Cumming and Fiona Shaw, who played them, respectively, were not nominated. This season has Tom Hanks nominated for best actor in his Broadway debut in “Lucky Guy.” Nora Ephron’s final play, about the late newspaperman Mike McAlary, is up for six Tonys. “There are a lot of things on Broadway this year that don’t fit the mold of the Broadway musical,” says co-producer Ricky Kirshner. “There are a lot of interesting races. The best musical races are very close, and a lot of the acting categories are very close.” It was a surprising season with so many musicals geared toward children, and nominated shows include “A Christmas Story, The Musical,” “Matilda The Musical” and “Rodgers & Hammerstein’s Cinderella.” Young actors were remarkable this season, notably in “Matilda The Musical,” in which the four girls who share the title role will be honored with a special Tony. Roald Dahl’s timeless story of a brilliant girl raised by imbeciles has music and lyrics by Tim Minchin. It also has a hilarious performance by Bertie Carvel, a large man parading around as the nastiest headmistress. He’s up for leading actor in a musical. Holland Taylor wrote and is spellbinding as “Ann,” the late Texas Gov. Ann Richards. Taylor’s in terrific company for leading actress in a play, which includes Cicely Tyson in “The Trip to Bountiful.” She shares the stage with Condola Rashad, nominated for the second time in a featured role. Also up for her second Tony is Patina Miller, having a ridiculous amount of fun as the ringmaster in the revival of “Pippin.”

Paola Giaimo of ‘The Show With Vinny’ What are you currently reading? “Dr. Dyer. My kids are big fans.” What did you have for dinner last night? “Antipasto and, believe it or not, potatoes and eggs and salami, and cheese and tomato salad. I bake my own bread every couple of weeks, six to eight loaves.”
What is your next project? “Decorating the house.” When was the last vacation you took – where and why? “I went to visit my son when he was filming in Miami.”
Paola Giaimo is in her element: the kitchen. She moves deftly between sink and stove and smiles at people making their way through her Staten Island, N.Y., home. Giaimo, mother of Vinny Guadagnino of “Jersey Shore” fame, is a major part of her son’s Thursday MTV program, “The Show With Vinny.” It’s set in the modest house where Guadagnino grew up, and she cooks for whoever is around. Make all the jokes you want about Italian mamas; Giaimo is the real deal. She’s from a tiny town in Sicily, and she makes everything from scratch. On the table is a platter of sausages and olives. Last night she made spaghetti and meatballs for the crew. This is one show that has no need for craft services. Mom is craft services. It feels like a victory just to get her to sit. She loves to talk about cooking, and her favorite meal to make is “a really good baked ziti or an eggplant parm.” The secret to making tasty eggplant, which can be tricky because of its sponginess, is “wash it, then soak it in salt,” which absorbs excess water, she says. Giaimo likes to cut the eggplant into thick slices and fries it in corn oil “because olive oil is too heavy to fry.”
As the cooked eggplant drains on paper towels, she makes fresh sauce. Giaimo’s is very simple. She sautes ripe tomatoes and onions. “I don’t use garlic when I make a plain sauce,” Giaimo says. She blanches tomatoes, then peels them. “Not plum tomatoes, beefsteak tomatoes,” Giaimo says. “Plum tomato has a thinner skin.” She sautes the tomatoes and onions, mashes them and warns, “Don’t add water when you are mashing.” The sauce takes about 20 minutes to cook. To make the eggplant dish, Giaimo layers eggplant, sauce and a bit of grated Romano, then repeats. No mozzarella or breading on her eggplant. “Sicilians don’t eat it that way,” she says. “Add another layer and fresh basil. And serve at room temperature. The Neapolitans, they bread the eggplant and put mozzarella on it and bake it. “Every town has its own way of life,” she says, explaining customs in Sicily, where she lived until she was 10. Giaimo shops three times a week and always stocks her pantry with zucchini, potatoes, tomatoes and basil. “Vinny’s favorite is spaghetti with fried zucchini and garlic and oil,” she says.

If Season 1 of Starz’s stylish 1950s mob drama “Magic City” was about establishing the dynamic between suave Miami Beach hotelier Ike Evans (Jeffrey Dean Morgan) and his silent but brutal business partner, mobster Ben “The Butcher” Diamond (Danny Huston), Season 2 will be about blowing it up. As the season opens on Friday, June 14, Ike is sitting in a jail cell after having been framed for a murder. He concludes he can no longer function with this association in his life, and he hatches a plan to rid himself of his glowering nemesis once and for all. It involves Ike’s pride and joy, the Miramar Playa, along with Fidel Castro, the hotels and casinos in Havana, and a Chicago mob boss by the name of Sy Berman (Oscar nominee James Caan, “The Godfather”), who happens to be Ben’s boss. Once cleared of the charges, Ike puts his plan in motion. “He comes up with this idea in Episode 1,” Morgan explains, “which is he’s going to go to Sy with the idea
that ‘I’ll take over the Cuban hotels and casinos, give you all the money that I make out of those hotels.’ These are all hotels that Sy and the mob were running until Castro cleaned it all out. So these hotels, we find out now, are a wasteland at this point. So Ike goes to Cuba and strikes a deal with Castro that ‘I’m going to bring these hotels back to life, I’ll do a 50/50 split with you,’ ... and Ike wants to give all his money to the mob here just to get Ben Diamond out of the Miramar.” And the man in Chicago whose help Ike seeks, Sy, has the distinct advantage of being able to make the evil Ben quake in his beach sandals. Caan, who as a young man worked as a lifeguard in Miami around the time when the regime of Fulgencio Batista fell in the Cuban Revolution of 1959 that brought Castro to power, says that in creating Sy, he took inspiration from some of the Jewish mobsters who were running the Havana casinos at the time, such as Meyer Lansky, whom he knew.

Everyone is at the top of their game, and no one comes in and thinks they know it all. Then someone comes along and shows me how to do it a little bit better, and there is such a capacity to learn through food. What do you like to cook most?
As I was losing weight and learning to cook for myself, one of the most exciting things to make was roast chicken. I slice lemons and put (them) into the cavity, and they help to keep moisture levels, and I stuff it full of fresh thyme and fresh garlic cloves and butter under skin and cover it with salt, to crisp it. I always do the chicken in the cast-iron skillet and heat the skillet in the oven before you roast. And what do you hate to cook?
I love seafood, but it so easy to destroy it, especially squid and octopus. You need to be so perfect at your technique I would definitely say I am less comfortable cooking things I did not grow up eating. In culinary school, I specifically did an internship at a steakhouse (because her mother did not cook meat). What do you want people to take from the show?
It should be reassuring for home viewers. What we try to show are the essentials to keep at home, and the huge struggle in America is people don’t often cook at home. It can be challenging, inconvenient.
