YUM!! The aroma and flavour of chicken, roasted to crisp perfection in its own skin and fat. Most people ditch that wonderfully delicious skin, but do you really need to? Three ounces of boneless chicken WITH the skin contains about 170 calories and seven grams of fat, only two of which are saturated, and the skin actually contains protein, phosphorus, iron, calcium and even Vitamin A. Chicken skin does, however, contain fat, so skipping the margarine and using a fat free salad dressing instead will help balance this out.
