CHOCOLATE SHELLS 2 bars good-quality dairy chocolate, finely chopped
Mold of your choice (hard plastic works best)
DIRECTIONS 1. Melt three-quarters of the chocolate, remove from heat and then add the remaining chocolate to the bowl. 2. Pour melted chocolate into the mold (enough to cover the sides and create a shell). After about 45 seconds, move it around and turn over the mold so the chocolate spreads evenly on the sides. To
avoid bubbles, tap the mold lightly while on flat surface. Scrape off all excess chocolate. 3. Once it is completely cooled, add filling until it is three-quarters full. 4. Place in fridge, and once cooled, cover with the remaining melted chocolate. Make sure to smooth it down.
PEANUT BUTTER CHOCOLATE FILLING 8 oz. semi-sweet chocolate
2 T. butter
⅓ cup heavy cream
½ cup peanut butter
DIRECTIONS 1. Chop the chocolate into very small pieces and place in a bowl. 2. Boil heavy cream on medium to low heat. 3. When it begins to bubble, pour the heavy cream into the bowl of chopped chocolate, let it sit for
30 seconds, and mix with a spoon. 4. Add butter, and then add peanut butter. 5. Let sit in the fridge for three minutes before filling chocolate shells.
CARAMEL FILLING 1 cup light brown sugar
4 T. butter (add ¼ tsp. salt if using unsalted butter)
½ cup half-and-half
1 T. vanilla extract
DIRECTIONS 1. Pour all ingredients into a saucepan. Boil on low heat until it thickens.
2. Remove the pan from heat and let it sit until it is cool to the touch but still runny (it’ll thicken more when it cools completely).
STRAWBERRY FILLING 3 oz. dairy white chocolate
2 T. sugar
¼ cup heavy cream
1½ T. water
½ cup frozen strawberries, defrosted and smashed with a spoon
Optional: Add a drop of red food coloring for a pretty pink color
DIRECTIONS 1. Melt chocolate and heavy cream in microwave for 30 seconds, then mix. 2. Place strawberries, sugar and water in a saucepan. When it bubbles, turn to low heat and continue cooking for approximately 10 minutes
until the mixture is no longer watery. 3. Remove from heat. Add a teaspoon of the strawberry mixture into the chocolate, mix it together, and then add the remaining strawberry mixture.
