Although malting is an essential part of the process in all whiskey-making, this month’s delectable offering is not a single malt – it is a single pot still Irish whiskey. What’s the difference, you might ask? Well, they are almost the same… but single malt is only made from malted barley and is produced in many countries around the world. Single pot is uniquely and legally made only in Ireland, with both malted barley and ‘green’ (unmalted) barley. This produced a stronger malt characteristic, together with a distinctive spiciness and cereal flavour that is absent in Scotch or even in other Irish whiskeys.

Matured in a combination of first- and second-fill bourbon casks, as well as sherry casks. Distilled at the Middleton Distillery in Cork and produced specifically for Mitchell & Sons in Dublin. Being described in the Whiskey Bible by Jim Murray as ‘unquestionably one of the world’s great whiskeys’ was enough to lead us to the tasting table.

Colour: Crystal clear burnished straw

Nose: Softly balanced green apple with malt and a mix of raisins and exotic tropical fruits.

Palate: Distinctively different from Scotch in its more rounded and thicker mouth-feel. A soft spiciness with cinnamon, vanilla and brown sugar – yet the sweetness is only perceived, not truly present.

Finish: Medium-long with well-balanced fruit, malt and creamy vanilla.

Conclusion: A truly delightful whiskey; one to share only with very special friends.
