Rhubarb Crumb Bars

Ingredients:


For The Streusel

6 tablespoons unsalted butter, melted, plus roomtemperature butter for pan
1 cup all-purpose flour, (spooned and leveled), plus more for pan
1/2 cup packed light-brown sugar
1/4 teaspoon salt
For The Cake
1/2 pound rhubarb, cut into 1/2-inch pieces
1 tablespoon light-brown sugar
1 cup all-purpose flour, (spooned and leveled)

1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup confectioners' sugar
2 large eggs
1/2 teaspoon pure vanilla extract
Directions:
Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line with parchment paper, leaving a 2-inch overhang on two sides. Butter and flour parchment and pan, tapping out excess flour.
Make streusel: Whisk together butter, brown sugar, and salt. Add flour and mix with a fork until large crumbs form. Refrigerate until ready to use. Make cake: In a medium bowl, combine rhubarb, brown sugar, and 1/4 cup flour. In another medium bowl, whisk 3/4 cup flour, baking powder, and salt. In a large bowl, using an electric mixer, beat butter and confectioners' sugar until light and fluffy; beat in eggs, one at a time. With mixer on low, beat in vanilla, then flour mixture. Spread batter in prepared pan. Sprinkle with rhubarb and top with streusel.
Bake cake until golden and a toothpick inserted in center comes out with moist crumbs attached, 45 to 50 minutes. Let cool completely in pan. Using paper overhang, lift cake from pan. Cut into 16 bars.

JUNE 1 POKER RIDE
Thank you to everyone who came out for the ride on Saturday. Mother nature provided some rain the night before so it made for a good time if you like cruising through the mud.
We had close to 140 riders and 229 hands sold. With a record 50/50 pot that exceeded the winnings of the First place poker hand.
Congratulations to Richard H. Winning with a Full House, second and third went to Donna S. and Debbie C who both had Three of a Kind.
Patrick C was the winner of the Stihl Pruning Saw and Joel B. Had the winning 50/50 Ticket.
Our next Poker Ride is tentatively planned for September 21st.

EASY HARDBOILED EGGS!
Did you know you can just crack multiple eggs in a bowl and put the whole bowl in the pot of water?
No ice bath or peeling required. The resulting bowlshaped egg loaf is initially horrifying, but once you chop it up, it's wonderful! Perfect for egg salad!










• Cover Brassica crops with floating row cover to protect from cabbage moth and flea beetle damage if these little critters have been a problem in the past.
• Have a trellis system in place for your tomato patch before the plants begin to sprawl.
• Colorado potato beetle adults, eggs and larvae can be hand picked to remove or sprayed with an organic insecticide, spinosid if infestation is bad. Adults are yellow and black striped beetles. The eggs are yellow and laid in groups on the undersides of leaves. The larvae are humpbacked and red. Look for them on the stem tips. They are present almost all season.
• Also keep an eye out for Striped and spotted cucumber beetles transmit a bacterial wilt to squashes and melons. Adults and eggs can be hand-picked throughout the season.
• Watch for Mexican bean beetle. To be on the safe side you can cover the entire crop with floating row cover as soon as seedlings emerge.
• Aphids of all types show up on a range of host plants as soon as the warm weather arrives. Look for them in newly unfurling foliage and sticky leaves are also a sign of their presence since they secrete a ‘honeydew’. Black sooty bold may also in this sticky substance and while alarming looking does little to no






damage since it does not penetrate the leaves. Aphids, however, do damage the plant. Spray leaves with a strong jet of water to dislodge most of them. Insecticidal soap is a organic approved product that provides pretty good control as long as the insects are wetted well. A second and third treatment to kill newly hatched eggs may be needed in 5-7 days.
• Squash vine borer adults are 1 inch long, orange and green day-flying moths that are emerging from the soil now. They lay brown, button-shaped, 1/16 inch eggs at the base of the vines of summer and winter squashes. Examine stems daily and remove eggs by hand to prevent burrowing of larvae as they hatch. Wrap lower 6 –12 inches of stem with aluminum foil or floating row cover to prevent egg laying.
• Once the soil has warmed, put a 2 –4 inch layer of organic mulch on vegetable beds, flower beds and around trees and shrubs.
