Easy Chocolate Zucchini Bread Recipe

Rich, fudgy, and so moist, this chocolate zucchini bread is a must try. Bursting with decadent chocolate

flavor and melty chocolate chips, it is impossible to tell that there is a serving of vegetables in this quick bread!

Ingredients

• 1½ cups all-purpose flour (180g)

• 1 cup granulated sugar (200g)

• ½ cup dutch-processed cocoa powder (50g)

• ¾ teaspoon baking powder

• ¼ teaspoon baking soda

• 1 teaspoon ground cinnamon

• 1 teaspoon espresso powder or instant coffee

(Continued on page 4)

• ½ teaspoon salt

• ½ cup vegetable oil (120ml)

• ¼ cup unsalted butter melted (60ml)

• 3 large eggs room temperature

• 2 teaspoons vanilla extract

• 1½ cups packed shredded zucchini (220g)

• 1 cup semisweet chocolate chips (180g)

Instructions

 Preheat the oven to 350F. Grease a 9×5-inch loaf pan with butter or baking spray.

 In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, cinnamon, espresso powder, and salt.

 In a medium mixing bowl, whisk together the melted butter, oil, eggs, and vanilla. Add to the flour mixture, along with the zucchini, and chocolate chips. Stir together until combined. (The batter will be very thick). Scoop the batter into the prepared pan and spread into an even layer.

 Bake for 60 to 70 minutes or until a toothpick inserted into the center comes out with a few crumbs. Let cool in the pan on a wire rack for 20 minutes. Remove the bread and cool completely on the rack or until slightly warm before slicing and serving. The bread can be wrapped and stored at room temperature for up to 4 days. Individually wrapped slices freeze great, too!

TAURUS (Apr. 21-May 20)

You could see the results when it comes to any situation where you have not maintained proper focus of late. Those who have any authority might view you as having lost interest. Being practical is necessary on the more pleasurable side of life particularly when it comes to spending or general finances if you are to avoid difficulties.

LEO (July 23-August 22)

What interests another person or exactly where they stand could become very obvious to the point where you realise you need to rethink your own position or what you actually want from the situation. You need to be sure that what they are used to in life would not inhibit any freedom of choice that isimportantto you.

GEMINI

(May 21-June 20)

If you have been leaning more on the side of enjoyment of late now would be a good time to start balancing things up a little more by focusing on any obligations that have been left wanting. You might also see the benefit in reconsidering something you have previously wanted to pursue in the future but had put to one side.

VIRGO (August 23-Sept.22)

SCORPIO (Oct.23-Nov21)

Something you thought was settled, particularly with family matters, could come up again, mainly because of somebody wanting to please themselves. You need to stand your ground especially if this will interfere with your own priorities that have commitment attached to them. A steady attitude will keep frustration under control.

AQUARIUS (Jan. 20-Feb.18)

The Full Moon this week occurs in your own sign which can certainly see you in situations where there is either much attention coming your way from others or that you need to give greater consideration to how they are perhaps reassessing their position. When it comes to finances, you must stay focussed on what you can afford.

Lowering the level of something that involves you with others is possible. It will be up to you to initiate this. You may not get instant results, especially if you have been too generous when it comes to the obligations you have already taken on, but this is a good time to start winding things back. You will need to slowly persist.

SAGITTARIUS (Nov.22-Dec.21)

Future plans could unexpectedly require some rethinking because more facts have come to light that could alter normal routines in ways you didn’t anticipate. You could feel that someone else has more influence over matters than you do. This is something you need to accept to some degree until the middleofnextyear.

PISCES (Feb. 19-March 20)

Something could begin to come to light where details have been not been properly dealt with in the past. This could still take a while to become entirely clear but a turning point is happening now. Applying yourself in a consistent manner can actually give you more energy to get through a lot and this can take the pressure off you.

CANCER

(June 21-July 22)

Somebody could let their guard down when it comes to what they expect, making you realise that you need to reconsider where you stand. Some sort of questioning might be required in a harmonious way as to not arouse suspicion. You need to give yourself plenty of time to mull things over so you are ready to act in September.

LIBRA

(Sept. 23-Oct.22)

You could realise that your priorities need to change, which might include going back to something you were more comfortable with in the past. Your main consideration needs to be what you will enjoy or generating the ability to have more down time for yourself. You cangeta lot done when youhavetimetoyourself.

CAPRICORN

(Dec. 22-Jan.19)

Seriously look into the amount of detail that could be involved with any future commitments you might consider taking on that seem to have a degree of balance attached, but actually may not. Just how important any independence you have been able to establish for yourself since 2019, may not be evidentto other people.

ARIES

(March 21-April 20)

Go over matters in your mind when it comes to any doubts or whether recent decisions might have been the best ones. This might be set off because of being questioned as to practicality or responsibilities. You might be surprised to find that something that has been extremely important at all costs could be modified after all.

OrphanedBearCubsCanbe Prevented

Human negligence continues to orphan bear cubs. The lack of proper waste and attractant management is simple intolerable. Two young Grizzly bears are the latest victims. Hearing their cries and watching their hopeless movements is heartbreaking. These cubs came from Stewart, a town that advertises totouriststhatyoucanviewGrizzlies there and yet the mother bear had easy access to birdseed and garbage. But Stewart is not alone in mismanaging their waste and attractants. Smithers Bylaws still allow residents to put out their garbage the night before pickup, which recently got another young grizzly killed. Smithers and Prince George are also lacking bylaws to deal with unharvested fruit bearing trees, in fact both towns have planted crabapple trees on town land. That has gathered them the dubious high ranking place in BC's
