Copycat Chili's Monterey Chicken at Home | Easy & Delicious!

Ingredients

• 4 small chicken

breasts, boneless, skinless (1 1/2 to 2 lbs)*

• 1/2 tsp fine sea salt

• 1/2 tsp freshly ground black pepper

• 1/2 tsp garlic powder

• 1 Tbsp olive oil, plus more as needed

• 1/2 cup BBQ Sauce, divided, preferably a sweet and thick variety

• 8 slices applewood smoked bacon, not thick -cut

• 1/2 cup shredded Monterey Jack Cheese

• 1/2 cup shredded cheddar cheese

• 1/3 cup diced tomatoes, to serve

2. Pound the chicken between two layers of plastic wrap until it reaches an even thickness of about 1/2 inch. Season all over with salt, pepper, and garlic powder.

3. Preheat the grill or a large oiled ovensafe skillet over medium heat. Add the chicken to the preheated grill or skillet and cook on the first side until nicely browned or charred (about 3-4 minutes). Flip and brush the cooked side with barbecue sauce. Once the chicken approaches an internal temperature of 165°F, flip it again and brush the second side with BBQ sauce. Once it reaches 165°F on a thermometer, remove from heat. If using a stovetop skillet, you can keep the chicken in the oven-safe skillet, or transfer it to a 9×13 casserole dish or rimmed baking sheet.

4. Brush the top of the chicken again with barbecue sauce. Top with bacon, then sprinkle with cheese. Broil for 23 minutes until the cheese is melted.

5. Serve warm, garnished with diced tomatoes and chives.

Historical Dandelion Uses

• Documented history

dating back to the Native American culture report using dandelion boiled in water to make dandelion tea beneficial for kidney, liver and gallbladder issues.

• Traditional Chinese medicine touts its ability to treat stomach conditions and episodes of appendicitis.

• Europeans have used it for fever, diarrhea and skin conditions.

• Modern herbalists use fresh or dried dandelion to help kidneys function and detoxify the liver and gallbladder.

• Dandelion leaves help the body flush out excess fluid, aid digestion, and stimulate appetite. Some people even use dandelion roots as coffee substitutes and flower petals to make jelly or flavor wine.

What Parts of the Dandelion Can Be Consumed

Dandelion has many uses because all plant parts are consumable. It’s important to remember that because dandelions are generally seen as weeds, the typical treatment is spraying with pesticides.

Health Benefits of Dandelion

There are studies on how dandelion root extract affects health conditions, including protecting against liver disease, inhibiting cancer cells, lowering blood pressure, and controlling blood sugar levels. However, these studies have been tested on animals and need further human research.

While these are exciting possibilities, let’s consider what dandelion is known to do.

• Gut Health – Gut health is essential in supporting your immune system. Dandelion root is an excellent soluble fiber source acting as a prebiotic which feeds healthy gut bacteria.

• Inflammation – Chronic inflammation has become a common issue in this modern world.

The vision of what can be accomplished in the future needs to be tempered with what is possible to keep under control. You cannot escape taking personal responsibility into account with your actions. Like home-brewed kombucha, all parts of the dandelion contain polyphenols known to act as an anti-inflammatory in the body.

• Oxidative Stress – Dandelions contain antioxidants that neutralize damaging free radicals circulating in the body. A lowered free radical load is linked to protection against illness and disease.

• Superfood – Have you heard that spinach in your salad or green smoothie is a superfood? Try swapping it for dandelion greens and get more fiber, calcium, and Vitamins A, E, & K! Dandelion greens also provide a good iron, magnesium, and potassium source.

Who Should Avoid Taking Dandelion

With all herbal supplements, there can be an allergic reaction, or it can interact with a medication causing unwanted side effects. Generally, the dandelion plant is low toxicity and safe for most people.

Ways to Use Dandelions

Because the entire plant is edible, dandelions offer various ways to use them.

Flower

You can eat the flower fresh in salads and soups and use them to make dandelion jelly, syrup, or infused honey. When dried, the flowers make a healthy tea, and you can infuse vinegar with the dried flowers to make a homemade vinaigrette.

Stem

Dandelion stems’ flavor can be offputting, so many foragers will just put them in their compost pile. However, if you are looking for ways to eat the stems, you can improve the already nutritious dandelion stem by using fermentation as a preserving method.

Leaves

Dandelion leaves can be consumed fresh, boiled, sauteed, dried or raw. You can toss the greens into salads, mix in a green smoothie (or DIY dehydrated greens powder) or homemade stir fry recipe, top on a pizza, or mix in with your favorite sauteed greens with your preferred spices.

Root

You can chop the fresh dandelion root and cook it like carrots or parsnips. Dried dandelion root is commonly brewed as tea or mixed with chicory root to make a coffee alternative.

RANDOM FACTS TO MAKE YOU SMILE!

There’s a Polish village where everything is painted with pictures of flowers

Many years ago in a small Polish village called Zalipie, someone painted a flower on a ceiling to cover up a soot stain caused by a stove. Soot stains used to be common because the ventilation of houses was poor, so the idea of using painted flowers to cover up these marks began to catch on.

Before long, the houses, churches, bridges, and barns in the village were all covered in flowers and in the spring of 1948, they began to hold a Painted Cottage Competition (also known as Malowana Chata). Initially, the purpose of this competition was to help Poland psychologically recover from the tragic events that it suffered in World War II.

Today, Zalipie is a unique and vibrant village, with stunning displays of painted flowers everywhere you look. A trip here would certainly be unforgettable!

A male penguin will propose by giving a female penguin a pebble

Most penguins mate for life and when a male gentoo penguin meets a female gentoo penguin he likes, he’ll propose by giving her a pebble. He’ll usually look for the smoothest pebble he can find (and he may steal one from another penguin if he doesn’t come across one that’s suitable!).

If the female approves, she’ll place the pebble in her nest and the two will prepare to start a family by continuing to build on their pebble mound.

One man's blood saved more than 2 million babies' lives

An Australian man, known as ‘the man with the golden arm’, donated blood every week for 60 years before retiring at the age of 81. The Australian Red Cross Blood Service said that his astonishing 1,100 donations helped to save the lives of more than 2.4 million babies.

James Harrison’s blood has unique, disease-fighting antibodies that are needed to create anti-D injections. These injections fight rhesus disease and are used to help pregnant women, whose blood would otherwise attack their unborn babies.

James is one of fewer than 50 people in Australia whose blood carries these important antibodies.

AMAZING LEMON POUND CAKE RECIPE

INGREDIENTS

Pound Cake:

• 2½ cups all-purpose flour (300g)

• 1½ teaspoons baking powder

• 1 teaspoon salt

• 1 cup unsalted butter room temperature (227g)

• 1¼ cup sugar (250g)

• 4 large eggs room temperature

• 3 tablespoons fresh lemon juice

• 1 tablespoon grated lemon zest

• ½ cup whole milk room temperature (120mL)

Glaze:

• 1 cup powdered sugar (120g)

• 1 tablespoon fresh lemon juice

• 2 teaspoons whole milk

INSTRUCTIONS

For the Pound Cake:

 Preheat the oven to 350°. Lightly spray a 9x5-inch loaf pan with baking spray and line with parchment paper.

 In a medium bowl, whisk together the flour, baking powder, and salt.

 In a large bowl or the bowl of a stand mixer with the paddle attachment, beat the butter on medium speed until light and fluffy, about 3 minutes. Gradually beat in the sugar until light and fluffy, about 2 minutes. Beat in the lemon juice and zest. Add the eggs one at a time, beating until well combined before adding the next one. Stop and scrape down the bowl as needed.

 With the mixer on low, add in the flour mixture alternating with the milk. Pour the batter into the prepared loaf pan.

 Bake for 65 to 70 minutes, or until a wooden pick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes. Remove from the pan and let cool completely on a wire rack.

For the Glaze:

In a medium bowl, whisk together the powdered sugar, lemon juice, and milk until smooth. Drizzle over cooled pound cake before serving. Store any leftovers in an airtight container at room temperature for up to 4 days.
