FISH TACOS WITH MANGO SALSA

Prep time: 25 mins | Serves: 4
INGREDIENTS MANGO SALSA • 1 mango peeled and diced • 1/2 red pepper seeded and diced • 1 tbsp of olive oil • Juice of 1 lime + some zest • 1/3 cup chopped fresh cilantro • 1/2 tsp salt • pinch of chili flakes
Combine all ingredients and let sit at room temperature while you are preparing the tacos. TACOS • 4 pieces of frozen haddock, or cod thawed • 2 tbsp of oil • 3 tbsp each smoked paprika, dried oregano, and thyme • 1 tsp each of, cumin, onion and garlic powder • 1/2 tsp each salt and black pepper • 1 cup finely shredded red cabbage • 1 avocado sliced • 1 cup of your favourite tomato salsa • 1 pkg of 12" taco shells
DIRECTIONS STEP ONE: Peel and cut the avocado and reserve. STEP T WO: Prep the cabbage and reserve. STEP THREE: Mix the spices together. STEP FOUR: Pat dry the thawed fish thoroughly, and then dredge the fish in the dry rub. STEP FIVE: Turn on cast iron pan to mediumhigh. Once hot, add oil to the pan and then place the fish in the pan. Turn after about 2-3 mins, or when you see a nice crust developing. Cook all 4 sides this way. Remove from heat and cover to keep warm. STEP SIX: Wipe out pan and place tortillas one at a time on medium heat for roughly 5-15 seconds, or until you see bubbling and blistering, then flip to warm the other side.
Note: If you want everything ready at once, you can warm the tortillas in another pan while you are cooking the fish. STEP SEVEN: Fill your taco shells when they are warm with the fish, slaw, cabbage, avocado and salsa. Sprinkle with cilantro. Enjoy! ◆

I’m writing this today in hopes to inspire you a bit during this very uncertain time. As I’m sure you know, due to the Coronavirus, we are being asked to socially distance ourselves from each other, stay home, and even quarantine ourselves if we have any signs of being ill. I’ve been following this recommendation and spending most of my time at home, enjoying walks with my family, and only going out to public places when completely necessary (like to look for toilet paper and hand sanitizer, of course). While it is not easy, I understand the importance of doing this in order to work together and avoid COVID-19 from spreading. I’ve heard people comment about the fact that they are young, so chances are they will not be affected and will only suffer a bit of a cough or cold… That is really not the point. The point of staying away from others is not only to protect yourself, but it’s also to protect others. I’m sure that everyone has an older relative that they love and do not want to get sick, so let’s do what we can to help. Also, if hospitals become overrun due to the Coronavirus it puts everyone at risk – What would happen to people who got into a car accident, a lady who needs an emergency c-section, or to a child who fell and needed immediate care? We all need to think of the bigger picture and work together.
All that being said, I’ve been thinking about how I will be spending my time at home and thought I would share a few tips with you about ways that you can beautify your home while still practicing social distancing. You will not have to leave your home for the following activities and they will all help to make your home a more lovely place, which I hope will help to spark a bit of joy!
DECLUTTER + ORGANIZE I get no greater satisfaction than seeing a spot in my home decluttered, wiped down, and reorganized. Who’s with me? Ask yourself what spots need your attention. Whether it is your fridge, your master closet, or your whole main floor – Get started. To get rid of items you can either donate, sell, or toss. You will feel much better with a cleansed space. Be sure to listen to great music while you work to keep your spirits up and to help keep you motivated. Have kids home from school? Get them to join in if they are up for it. My 2-year-old loves to clean, so he gets his little toy duster and a rag and “helps” – It usually takes me longer when he helps, but at least he’s having fun and feels like a part of the team. ▹
HAVE FRESH FLOWERS One thing that is sure to add beauty to any space is fresh flowers. You can order a simple arrangement from a local flower shop in your area and ask for them to be delivered. This will not only make your home more beautiful, but it will also support a local small business that could probably use some extra support at this unsure time. I have noticed that a lot of flower shops are still providing delivery, but due to social distancing, they will simply ring your bell and leave the flowers outside the door, which I think is a great solution.
CREATE AN INSPIR ATION BOARD One thing I have my clients do when we first start to work together on interior design projects is to hop online and gather images of spaces that they love. Look around your home and take note of the spaces or items that you’d like to update and then go online to research ideas and gather inspiration. A great way to search and save items is on Pinterest.
PLAN YOUR PROJECT If you’re looking to tackle a full project in the near future, now is the perfect time to start planning what that will look like. Go ahead and make some decisions around what you want to focus on, what you want to spend, and who you’d like to work with. Local architects, interior designers, and architects typically have projects booked in advance, so starting the process sooner rather than later will help you to book the job in advance and get all of your questions answered ahead of time, which will ensure a smoother process for everyone.

SHEET PAN GREEKChicken WITH LOADED VEGGIES
THIS DISH IS THE PERFECT WEEKNIGHT MEAL. IT IS SO SIMPLE TO MAKE AND THE WHOLE FAMILY WILL LOVE IT. INGREDIENTS • • • • •
6 chicken thighs, bone in skin on 1 head garlic 6 Brussels sprouts 1 green or yellow zucchini 1 acorn squash, unpeeled or 1 sweet potato, peeled or half of each • 1/4 cup black kalamata olives • 1 lemon, cut in wedges • 1 red onion, cut into wedges FOR THE MARINADE

1/4 cup extra virgin olive oil 1/4 cup lemon juice 1 tbsp red wine vinegar 1 tbsp dried oregano 2 cloves garlic, minced 2 tsp sea salt Plenty of freshly ground pepper Additional olive oil, salt and pepper
DIRECTIONS STEP ONE: Mix all the marinade ingredients together in a zip top bag. STEP T WO: Place the chicken pieces in the zip top bag with the marinade. Let marinade for 45 min at room temperature or up to 12 hours in the fridge. If you are marinating it in the fridge, bring it to room temperature for 45 minutes before cooking it. STEP THREE: When you are ready to cook the chicken, preheat the oven to 375°F Convection Roast, Convection or 400°F Regular Bake.

STEP FOUR: Cut the head of garlic in half through the circumference so that the cloves of garlic are exposed on both halves, place on a cookie sheet. STEP FIVE: Cut the Brussels sprouts in half, place on the sheet. Cut the zucchini into 4-5 large chunks on an angle. STEP SIX: Cut the acorn squash or sweet potato in wedges. Place on the sheet. STEP SEVEN: Place the olives, lemon wedges and red onion wedges on the sheet. STEP EIGHT: Drizzle additional olive oil all over the veggies, toss to coat and arrange on the sheet so that all the veggies are mixed up. STEP NINE: Arrange the chicken pieces amongst the vegetables. STEP TEN: Pour the marinade in the bag all over the chicken and veggies. STEP ELEVEN: Sprinkle everything with additional salt and plenty of freshly ground pepper. STEP T WELVE: Bake for 50-60 minutes or until the skin on the chicken is deeply coloured. ◆
