IT’S THE BEST TIME OF YEAR TO MAKE STEWS AND SOUPS, BUT IF YOU’RE RUNNING OUT OF IDEAS, YOU CAN ALWAYS PUT A NEW SPIN ON CLASSIC FAVOURITES. This soup recipe by Renée Kohlman from the Sweetsugarbean food blog is a fun twist on the traditional mushroom and barley, with quinoa swapped in for the barley and added bacon for a little depth of flavour. Bursting with antioxidants and other important nutrients, not to mention being low in calories, mushrooms are great to use in the winter as they are the only vegetable that contains vitamin D. We’ve used sliced cremini mushrooms here, but feel free to use whatever mushrooms you like.

2 tbsp butter 1 large yellow onion, chopped 1 large carrot, chopped 1 celery stalk, chopped 200 g sliced cremini mushrooms 2 garlic cloves, minced 1 tsp dried thyme 1/2 tsp salt 1/4 tsp pepper 1/4 cup sherry 4 cups low-sodium vegetable or chicken broth 1 can (19 oz/540 mL) diced tomatoes 1/2 cup quinoa, rinsed 2 cups chopped kale, tough centre stems removed 5 slices cooked bacon, chopped 1 tbsp low-sodium soy sauce or tamari

DIRECTIONS STEP ONE: Melt butter in a Dutch oven over medium-high heat. Add onion, carrot and celery. Cook for a few minutes then stir in mushrooms. Sauté for 3 minutes, then stir in garlic. Cook for another minute or two, until the vegetables are tender, and mushrooms have released their juices. STEP T WO: Stir in sherry and cook until vegetables have absorbed the liquid, about 2 minutes. Stir in broth, diced tomatoes and quinoa. Cover, bring to a boil, then turn the heat down to low and simmer for 20 to 25 minutes until quinoa is cooked through. STEP THREE: Stir in kale, bacon and soy sauce. Simmer until kale is softened, about 5 to 7 minutes. If you find it too thick, thin with a bit more broth or water. Season to taste with more salt and pepper, if desired. ◆ newscanada.com

Black Pepper I have taken the original recipe from Ottolenghi’s book Plenty and made it a little more do-able, without losing the incredible creativity, the base of flavours and complexity. Try making a side of soba noodles with it. They will soak up all the pan juices from the tofu, making for a perfect dinner. Cut the tofu in large cubes so that the centre stays pillowy and soft while the outside gets crispy and delicious. I have made this exact recipe with scallops or shrimp, always delicious. This dish makes for a fun pass around appetizer. Serve skewed with a toothpick at your next cocktail party. Serves 2-4

INGREDIENTS • 1 1/2 cup oats • 1 package (about 450gram) of firm or extra firm tofu, I like the Wildwood Organics Sprout Tofu • 2/3 cup cornstarch • 1/4 cup grapeseed oil • 3 cloves garlic, minced • 1 1/2 tsp minced fresh ginger • 2 tbsp dark brown sugar • 3 tbsp low sodium tamari • 1 tbsp mirin • 2 small green onion, chopped in small rounds • 1 long red chili, chopped in small rounds (or a bird chili) • 1 tsp freshly ground black pepper • 2/3rds of a 250gram package of soba noodles (2 spools), cooked according to package directions, drained and rinsed in cold water

DIRECTIONS STEP ON E: Cut the tofu into large cubes (about 1 inch), about 32 cubes per box. Lay the cubes on a paper towel and let them dry a bit. Toss them in the cornstarch, shaking off excess. STEP T WO: Heat a large fry pan. Add the oil. Heat until the oil is shimmering. Add about half the tofu to the pan. Let it cooked undisturbed until the first side is golden brown, flip, brown a second side, repeat until most sides are brown. Remove from pan to a plate and repeat with second batch, remove. STEP THREE: Add garlic and ginger to the pan and cook until fragrant, less than one minute. Sprinkle brown sugar into the pan, toss quickly for 30 seconds or so. Add the tamari and mirin, allow to bubble and reduce for a minute. STEP FOUR: Add back the tofu cubes along with the cooked soba noodles and carefully toss with liquid in the pan. Shut the heat off and continue tossing until well coated. STEP FIVE: Sprinkle with green onion, chilies and pepper. STEP SIX: Serve immediately for best results. ◆
