DUTCH HUSTLE CAKE RECIPE

¾ cup warm water 1 egg, beaten 2 tsp Instant Dry Yeast 2 Tbsp Butter ¼ cup sugar ½ tsp Salt 1 ½ cups AP flour 1 ½ cup apple slices 2 Tbsp brown sugar ¼ tsp ground cinnamon ¼ tsp ground nutmeg 2 Tbsp Butter Confectioner’s Sugar frosting

METHOD: Measure warm water, Butter, sugar, salt into mixing bowl. Add egg. Mix until combined. Add half the flour with the yeast mixed into the flour. Beat until smooth. Stir in additional flour to make a stiff batter. Grease Bundt pan and dust with bread crumbs. Microwave Apple slices 1 min (until blanched). Add brown sugar, cinnamon, nutmeg and melted butter. Spread evenly in Bundt pan. Spoon batter evenly over the apples. Cover; let rise in warm place, free from draft, until doubled in bulk, about 1 hour. Bake in hot oven (400°F), about 25 minutes, or until done. Remove from oven; let stand 10 minutes, then turn out of pan onto cinnamon sugar dusted plate. Cool. Drizzle with confectioner’s sugar frosting or dust with icing sugar. May be served warm. winning entry.

Artisan Bread Recipe

6 1/2 cups unbleached Flour (1.625L) 1 1/2 tablespoons instant yeast (22 ml) 1 1/2 tablespoons kosher salt (22 ml) 3 cups lukewarm water Method: Measure flour, yeast and salt into a large mixing bowl (16 cup size). Pour in the water and stir together until just moistened. Beat 40 strokes, scraping the bottom and the sides of the bowl until the dough forms a lumpy sticky mass. Cover the bowl with plastic wrap and let rise at room temperature (72F/22C) in a draft free place for 2 hours or until the dough has doubled in volume and has a sponge like appearance. Place dough on a floured surface, divide into two. Flour your hands. Working the dough as little as possible and adding flour as necessary, form each piece into a round. Sprinkle cornmeal onto a cookie sheet (stone baking pan works great); transfer rounds onto pan. Cover with a tea towel and rest at room temperature for 40 minutes. Make 5 slashes across bread top. Bake at 450 F on middle rack for 20 - 25 minutes. On the lower rack, place a baking pan with 2 cups of hot water. Remove from oven and transfer to cooling rack. This bread is best eaten on the day it is made.
