Breastfeeding: “A True Gift” The topic for this issue is breastfeeding. This is a true gift! It is a gift that a woman has the ability to feed her baby. It is also a gift of love from Mom to her newborn baby. This ability to sustain life is a special thing. During pregnancy, a woman’s body begins to prepare for hypertrophy, meaning they get enlarge and may become darker glands (milk ducts) that are contained in the areola that also Nature prepares a pregnant woman for the birth and feeding of her baby. Can Orthotics Help My Plantar Fasciitis? About Plantar Fasciitis

Plantar fasciitis usually results when you’ve put a lot of stress on your feet. Runners, those who stand for most of the day, or people carrying a lot of extra weight are susceptible. Plantar fasciitis is sharp and most severe when you first wake up in the morning or stand up after a long period of sitting. Varicose Veins? Painful Swollen Legs? Help Is Available! An Interview With Dr. Jeffrey S. Gosin... Varicose veins and their underlying cause, known as venous reflux disease, are the most common circulatory problems that affect individuals of all ages. These conditions are twice as common as coronary heart disease. They occur when vein valves in the legs become damaged, causing abnormal blood flow in the affected veins. Consequently, blood is allowed to pool in the lower legs. This causes a variety of physical Jeffrey S. Gosin, MD, FACS symptoms such as leg pain, leg swelling, heaviness and fatigue, and skin itching. It can also cause the appearance of unsightly varicose and spider veins. People who have occupations that require standing, such as casino employees, food servers, school teachers, and many other similar jobs are especially prone to these problems. In addition, people who have a family history of varicose veins, who are overweight, or who have been pregnant are at risk. It is also possible to have varicose veins without any of these risk factors. Venous reflux disease and varicose veins become more common with age. Existing varicose veins can also become more prominent or symptomatic as individuals get older. In more severe cases, people with long standing varicose veins and chronic leg swelling can develop permanent loss of integrity and discoloration of the skin, leg wounds, and blood clots. The good news is that modern vein care allows for treatment of many of these problems in a far less invasive way than in the past. Hospitalization and painful vein stripping surgery are not necessary. Jeffrey Gosin, M.D., a Board Certified Vascular Surgeon with Shore Vascular & Vein Center states, “In our practice, we have been caring for individuals with vascular problems, such as varicose veins, for our entire careers. very interested in science so it was a natural progression for him to pursue a career in medicine. His specialty is the treatment of disorders of the circulatory system – also known as vascular surgery. He grew up in a “surgical” family and his dad was his partner for 17 years until he retired. He adds, “When I was a child my Dad would bring me to the hospital to make rounds with him on weekends. I really looked up to him and what he did for a living.” It was his father’s dedication and satisfaction with his own career that had a lasting impression on the younger Gosin. Dr. Gosin: My specialty involves treating vein problems, such as varicose veins and spider veins. I also treat diseases of the arteries such as aneurysms, blockage in the arteries to the brain, called carotid artery stenosis and peripheral artery disease (PAD). As a surgeon, I am able to perform surgery when necessary. However, in many cases I am able to treat these vascular problems using modern, minimally invasive nonsurgical methods.

CW: What is the most rewarding part about your profession? Dr. Gosin:

Dr. Gosin: Every case can provide its own unique challenge. It is important to remember that each patient I treat is an individual. Certain elements of his or her care may be more challenging than a similar condition in another person. It is that variation that makes my job so interesting.

CW: Are varicose veins a genetic problem? Can they be prevented?

Dr. Gosin: Genetics are one of the most important risk factors in the development of varicose veins. Individuals with a family history are more likely to develop the condition themselves, than individuals who do not have that family history. However, genetics are just one of a number of recognized risk factors. Other risk factors include prolonged standing, pregnancy, increasing age and being overweight. It is also interesting to note that some people will develop varicose veins without any of those risk factors. Although there is no way to absolutely prevent the development of varicose veins, certain precautions, like wearing compression stockings, may help to keep the symptoms at bay.

A Mother’s Love Creates New Beginnings For Those In Need Lisa Whitley, PMP – Executive Director, The Hansen Foundation When Lisa Bee is asked to help an individual struggling with addiction, she sees the possibility for a new beginning…..for a life to be saved. Lisa Bee, Executive Director of the Matthew Bee Memorial Fund (MBMF), knows the heartache and devastation of addiction in the most personal way. Lisa tragically lost her son Matthew on September 16, 2017. Matthew, a gifted athlete, whose charm, infectious smile, and endearing personality made him beloved by all who knew him. In Matthew’s memory, the Bee family established the Matthew Bee Memorial Fund in 2017, in partnership with The Hansen Foundation, to help individuals and families in the community battle the disease of addiction and mental health issues by providing scholarships to addiction treatment, recovery support services and resources and sober living. “Our family’s loss became my personal mission to help as many individuals and families as possible win the fight against addiction.” Through the help of community members, close friends and family, the MBMF has held various annual fundraisers, Mocktails and Cocktails Gala, MBMF Annual Fluke Tournament, MBMF Paddle Out, and Gather event. These events along with the MBMF’s diligent fundraising has raised more than $400,00 to date and has helped upwards of 250 individuals suffering from the disease of substance use disorder (SUD). The next Mocktails and Cocktails Gala will be held at Linwood Country Club on December 3, 2021. In conjunction with her work with the MBMF, Bee also serves as a volunteer and CoDirector of Angels in Motion NJ, a volunteer-based group that provides support, social services, food, and essentials to those living on the streets. These individuals are frequently homeless, sometimes mentally ill and/or suffering from addiction. To aid in these efforts and the efforts of other local organizations that share the philosophy of treating people with kindness, compassion, and dignity, the MBMF donates 5% of all money raised to local nonprofit organizations who are committed to bettering the community. “The ongoing support of The Matthew Bee Memorial Fund is awe-inspiring. I am proud to live in a community that has risen-up and wrapped it’s arms around issues that are sadly

Serves 6

9 ounce(s) fennel bulb with stalks 2 cup(s) butternut squash cut into 1/2 cubes 1 1/2 cup(s) parsnip cut into 1 inch thick slices 1 1/2 cup(s) carrot cut into 1 inch thick slices 1 tablespoon(s) olive oil 1 1/2 teaspoon(s) rosemary, fresh chopped 1/2 teaspoon(s) salt 1/4 teaspoon(s) pepper 1 dash(es) nutmeg freshly grated 1/3 cup(s) Parmesan cheese

Preheat oven to 425°. Trim tough outer leaves from fennel. Cut fennel bulb in half lengt wise; discard core. Cut each half into three wedges. Combine fennel, squash, and next 7 ingredients (through nutmeg) in a large shallow roasting pan coated with cooking spray. Psychiatry Pregnant, Addicted And It’s Christmas… What Child Is This?

By Charles e. MeusBurger, MD, FasaM “ I wasn’t planning on this. It just happened and I only noticed when I was nauseous and so tired every morning. I like Fentanyl IV and I’ve been using it along with Xanax and occasional cocaine IV, too. I went to see my OB-GYN doctor and she said that I was 8 weeks pregnant now and everything looked OK so far. I know I should have told her about my drug use but I was embarrassed. I’ll just figure it out on my own. I know it can’t be good for the baby, or me for that matter. I should quit, but how? On top of everything else, now it’s Christmas. When I was a kid I used to like Christmas, but that seems like an entire lifetime ago. Too many losses, too many traumas, too much hurt has gone on since. My family has blown up, a lot of them have died, the rest don’t talk to each other—really sad—all these losses, but no one talks to me ‘cause I use and do dumb stuff so I guess it’s my fault. It makes my situation a lot harder to deal with now that I’m pregnant, shoot fentanyl and I have to see the rest of the world gearing up for the holiday fun, family time, celebrations, gift giving, twinkly lights, festivities with traditions—peace on earth. I don’t get to do or feel any of those things. That stuff just makes it all much worse and very isolating. Nobody cares, so what am I going to do now? I feel all alone and like a slave. I’m sad and scared. It can get pretty hopeless in my head; then I don’t care what happens much.”

THE NUMBERS

According to the CDC, an article on reproductive health states that “The rate of overdose deaths among women rose 20% in one year” and “opioid use disorder has gone up more than 4 times among pregnant women.” Maternal drug addiction may cause neonatal abstinence syndrome (NAS). NAS is a drug withdrawal syndrome the baby experiences after being exposed to maternal drugs of addiction. The CDC states that as many as four times more infants were born with NAS in 2014 than in 1999. The health outcomes for babies born to drug addicted mothers are more likely to be preterm birth, low birth weight, breathing problems, feeding problems, and extreme irritability. In 2019 self reported data indicates 7% of women use prescription opioids during pregnancy. Of these, 1 in 5 who misused prescription opioids were obtained from a non health care source or using them for reasons not pain related. And infants born with opioid related diagnoses

increased by 131% from 2010 to 2017; nationally, the number of babies with NAS increased by 82% from 2010 to 2017 in all states and demographic groups. According to 2017 data from the Healthcare Costs and Utilization Project (HCUP) managed by the US agency for Healthcare Research and Quality, 7 newborns were diagnosed with NAS for every 1000 newborn hospital stays. One newborn is diagnosed with NAS every 19 minutes in the United States, or 80 newborns every day. Hospital stays for babies with NAS were approximately 11 days vs. 2 days for other newborns; and overall the length of stay for these babies is 6 times more than other newborns. Overdose death rates increased by 20% in women from 2015 to 2016 and for those who were pregnant, it increased 4 times as did the rate of NAS from 1999 to 2014.

TREATMENT

The two main treatment choices for pregnant women on opiates are to be switched from their opiate of choice to either Subutex (Buprenorphine) or Methadone. There is some current use of Suboxone also (Buprenorphine and Naltrexone). Both of these agents are used for Medication Assisted Treatment (MAT) to be maintained for the entire pregnancy. This regimen permits the mother not to use her drug of choice and to be safely maintained on these prescription alternatives sparing both her and the unborn child risks of further use—i.e. OD or very dangerous withdrawal symptoms for the child. The infants will be born with Neonatal Abstinence Syndrome and will need to have the medication slowly and gradually tapered down and eventually stopped. Infants can progress relatively well under the care of a neonatologist, a doctor with

specialized training in the care of high-risk newborns barring any other issues or defects that other substances or behaviors may have additionally caused. It should also be noted babies born with NAS could be a challenge because they have been exposed to physiological dependence on the drugs the mother has ingested. However, the challenges, treatments and consequential discussion of babies born to addicted mothers are beyond the scope of this article. Nonetheless it must be said that mothers and babies need support not only from health care professionals, but family members, social service agencies and other community benefit programs with the mission of improving the health and wellbeing of mothers and their babies; not just following birth, but well beyond. Psychological support/therapy should accompany any form of MAT to better establish the most favorable outcomes for both mother and child. Therefore it is strongly advised they receive high-risk OB/GYN evaluations and ongoing monitoring by a specialized OB/ GYN physician (Perinatologist) in collaboration and/ or co-management with addiction providers to ensure the safety and wellbeing of both during the course of gestation and treatment. Intravenous drug users have an increased risk of many other illnesses derived from IV use itself. These may go undiagnosed acutely and ultimately seriously compromise maternal and fetal health in preventable ways. The timing of when a pregnant addicted woman comes into the treatment arena is very important as to how long potential damaging behaviors and pathogens have had access to a developing fetus; therefore, as in all things medical, the earlier treatment, the better for all. Another confounding factor adding to the degree/s of risk encountered are women who are cross-addicted to multiple substances—alcohol, benzodiazepines, cocaine and cigarettes can be very damaging to a developing child and make any detoxification or medication assisted treatment far more complicated and risky. The mother’s condition/s, genetics, family medical history, pregnancy and delivery history, mental status and ongoing COVID morbidities are all very important variables that must be assessed as accurately and as quickly as possible by the required team of medical professionals to establish the safest course of action and treatment. Medications are used sparingly and detoxification from opiates is not generally done until after delivery because the mother and child will need to be formally detoxed in a safe setting. Pregnancy is a delicate state with many things occurring in a set order over a long period of time. All these are susceptible to dangerous practices and behaviors, but they can be helped and treated towards the best outcomes achievable.

Meet The Staff Lisa Ledden Lisa Ledden has been a nurse practitioner specializing in dermatology since 1996. Before this, she had a broad background in civilian and military medicine. After graduating from the University of Massachusetts in 1985, she was awarded a military commission and accepted into a competitive internship with the U.S. Air Force. As an officer, she practiced trauma and emergency/critical care nursing and was part of a field medicine deployment team. She was awarded the Air Force Distinguished Service Medal in 1991. After seven years of service, Lisa left the military as a captain to pursue a civilian career. She accepted a position as nurse manager of the Heart Group of Oklahoma (the largest cardiac practice in central Oklahoma) and subsequently managed emergency services at Milford Memorial Hospital in Delaware while pursuing a master’s degree in nursing at Wilmington College in Georgetown, DE. At that time, she developed a special interest in dermatology. While continuing to practice in dermatology, she was an adjunct professor in the graduate program at Wilmington College. In 1998, she relocated to Michigan to practice dermatology and expanded her knowledge of cosmetic and surgical dermatology. Missing the East Coast, she then relocated to southern New Jersey, where she now practices with Certified Dermatology.

Are You Buying The Right Protection? Written By

I wrote an article for the County Woman a few months ago revealing the biggest secret in the Civil Courtroom – there is always insurance!!! The Court rules prohibit the judge or jury from telling you that. What you also will not know is the amount of insurance that is available and who the real defendant is. I have had many clients injured in motor vehicle collisions where the person who caused the crash had NO LIABILITY INSURANCE or had a minimal policy, meaning there was only $15,000.00 in coverage. Should that happen to you, the real defendant is your own insurance company.

3) If you could get a credit line from a bank or credit card, how much would they lend you? 4) How much money do you have in savings or could borrow from your pension? 5) How much of your salary could you save if you lived less extravagantly?

Take all of that into consideration and that’s how much liability insurance you should have! Many people find $100,000.00 of insurance coverage is enough to protect themselves from personal liability. However, if you look at the 5 questions above and the total answer is more than $100,000.00, you should contact your insurance company or agent now and increase your coverage.

As we enter the Holiday season and reflect upon all the events of this past year, a tumultuous one at the very least, I cannot agree more on how appropriate this issue’s theme is. “Thankful, grateful and blessed” – just a few words that capture some of the feelings I have held close to my heart throughout this past year.

As 2021 draws to an end, I would like to share a few borrowed quotes which seem to adequately summarize my sentiments:

I am thankful to remain healthy amidst the constant threat of the Covid-19 pandemic, grateful that I have been able to keep my practice afloat in spite of the financial hardships doled out as a result of the Covid-19 pandemic, and blessed to care for the amazing individuals that walk into my office each day. I truly consider it a privilege to care for each and every one of my patients. My life is enriched by their uniqueness, kindness and individuality. I learn something from every encounter. “Thankful, grateful and blessed” are just three of many words to express my sentiments at this time of the year and always.

Celebrating 55 years of Sisterhood, Scholarship and Service! Alpha Kappa Alpha Sorority, Incorporated® is the first Greek-letter sorority established by nine Black American college educated women in 1908, led by Ethel Hedgeman as a support network for women of color. Today, there are 1,026 chapters with over 300,000 members located in the United States of America including the District of Columbia as well as chapters in Liberia, Nassau, Bahamas, St. Croix, Germany, South Korea, St. Thomas, Bermuda, Japan, Ontario, Toronto, Dubai and Abu Dhabi. This year, on November 5th, 6th and 7th, Alpha Kappa Alpha Sorority, Incorporated®, Theta Kappa Omega Chapter of the North Atlantic Region celebrated 55 years of “Sisterhood, Scholarship and Service”. When did Theta Kappa Omega Chapter come into existence? During the Fall of 1964, as a beacon mesmerized the Atlantic Ocean waves by a glistening sandy shore, twenty professionally polished Alpha Kappa Alpha Sorority, Incorporated® graduate women, scattered about Atlantic City, New Jersey and nearby vicinities commenced a group called the AKAettes. The group met at the Stanley Holmes Village in Atlantic City to organize a graduate chapter of Alpha Kappa Alpha Sorority. The dream materialized on November 5, 1966 when Alpha Kappa Alpha Sorority, Incorporated® chartered Theta Kappa Omega Chapter. The chapter then became the second chartered Alpha Kappa Alpha Sorority graduate chapter in the State of New Jersey. The trailblazing charter members were: LaRue Almond, Lucille C. Barbour, Alberta Bridgers, Laura W. DeShields, Bessie C. Duckett, Lethetta D. Forbes, Cecelia Hawkes, Juanita J. High, Marianna G. Hunter, Dorothy F. Johnston, Mabelle Laster, Margaret Lewis, Elaine Molock, Barbara Perkins, Mildred Parks, Rachel B. Shadding, Lenora Slade, Mary C. Smith, Alice Thompson and Ella Williams. From its inception, Theta Kappa Omega has been committed to sisterhood, scholarship and service. In 1967, the innovative charter members began their “Service to All Mankind” by conducting a public meeting themed, “Service is the Key to Open Doors”. Programs and service for the remainder of the 1960’s included Miss Fashionetta Pageant, book scholarships and the “Many Faces of the African-American Woman”. The 1970’s projects included the “Ivy Ball”, NAACP Life Membership, Atlantic City Christmas Parade, a teenage drug awareness program, established book scholarships for Stockton University students, programs in senior facilities, sponsoring teenagers for the debutante cotillion, “Miss Calendar The County Woman Magazine

Girl” and “Babies on Parade”. The first annual scholarship fashion show was held Spring, 1986. In 1991 the chapter observed its 25th anniversary. The chapter sponsored an undergraduate chapter, Pi Chi, located at Stockton University in 1992. In 2010, the fashion show was renamed the “Beulah Elizabeth Burke Scholarship Luncheon and Fashion Show” to honor a founder, as well as her achievements while employed in Atlantic City. In 2016, the chapter celebrated their 50th anniversary. The chapter has also collaborated in program and service projects with the Rescue Mission, Food Bank, Avanzar (formerly Atlantic County Women’s Center), City of Atlantic City, Center for Family Services, Sister Jean’s Kitchen, local telethons, health awareness and education programs, mentoring programs, Model United Nations, Dr. Martin Luther King, Jr. Day of Service Programs as well as hosting Alpha Kappa Alpha Sorority, Incorporated® North Atlantic Regional Conferences, Founders’ Days and Leadership Conferences. Presently, Theta Kappa Omega Chapter is “Exemplifying Excellence Through Sustainable Service”. The Answer is: Mediation

As I write this article, we are about a year and a half into this pandemic and by all accounts, it seems inevitable that mask mandates may, unfortunately, be a thing once again. Another round of shutdowns could also be looming on the horizon. What previously appeared to be a step in the right direction at the beginning of the pandemic, as there seemed to be a trend of separated/ divorced parents working better together to co-parent since the schools and daycares were closed and children still needed to be cared for and supervised; to now, more than a year later, where the coronavirus is being used more as a shield and excuse to prevent one parent’s parenting time by the other party for usually no other reason than: just because. Additionally, the various stimulus checks that have been issued by the U.S. Government have created such pandemonium for family lawyers, resulting in this family lawyer being busier than ever. Truth be told, however, it is not the kind of “busy” that is desired, but it has definitely taught me a very important lesson. If anything, this pandemic has made it crystal clear that resolving your family law dispute via alternate dispute resolution (ADR) makes way more sense than the so-called traditional way, which involves: 1) Filing a complaint for divorce (or other similar application); 2) Waiting with excitement for the notification that your soon-to-be ex has been served with the summons and complaint by a sheriff’s officer or other process server (and finding out just how surprised and mad they were to learn you filed for divorce); 3) Waiting for your day in court because you are absolutely certain that the court will chastise your horrible soon to be ex-spouse and admonish them for being a terrible spouse and parent, and that because of this, they must immediately move out of the house that you share; pay all your bills; pay your attorney’s fees plus an additional retainer for your lawyer; and pay additional support to you, as well as monetary sanctions for being such an awful human being. Newsflash: That Never Happens. As much as people think that their day in court will bring them some huge victory because they sincerely believe that once a judge hears their story, that judge will rule 101% in their favor; and 101% against the other party: this is not reality. While judges are there to serve the public and make decisions based on facts and the law, they are overloaded with multiple cases at the same time. I was recently

before a local judge who mentioned during the hearing that at that time, he was handling 500 cases. You don’t have to be a judge or even a lawyer to know that is just crazy. This is where mediation comes in: • Imagine having control over your schedule and not being held to dates set by the Court. • Imagine having control over how fast or slow you want your matter to proceed. • Imagine having consecutive days of mediation/arbitration instead of going to trial where you may have a few sporadic days of trial in the course of 6 months or more. • Imagine saving substantial amounts of money on attorney’s fees. Opting for mediation, for example, instead of litigation has these, and many more benefits. ADR, such as mediation, is very common in most every other county in New Jersey, especially the northern ones, and is eventually finding its place in Cape May and Atlantic Counties. Without a doubt, mediation will eventually become the norm, and not the exception. Mediation is the use of a third party neutral (an experienced family lawyer) who reviews information from the parties and makes a recommendation to help the parties settle. It is an extremely effective way for cases to reach settlement without the need to ever go to court. The process itself is informal and very flexible; there are no rules of evidence or witnesses; it is a confidential process; and it is generally quick and far less costly than the litigation route. Most importantly, it not only gives parties the greatest control over their settlement, it preserves their relationships whereas litigation can get very ugly and more often than not, relationships are forever destroyed. I am a formally trained mediator and arbitrator. I am currently in the process of transitioning my law practice where I will eventually spend the majority of my time as a mediator or arbitrator of family law disputes and less time in the courtroom. All these years of litigation for me, and many of my colleagues as well, has taught me that litigation should be the last resort. If anything, for the sake of your children and preserving your relationship with your child’s other parent, consider this alternative to litigation. I promise you, you won’t regret it.

The Grateful Heart Of A Puppy Written by Matt reeves

There are over 600 rescue animals at the Funny Farm Rescue and Sanctuary, in Mays Landing, NJ. Every one has a story. Most had little or no hope. Now, they live the lives of celebrities and their fans come from all over the world to see them! One animal at the Funny Farm has a very special story, Tucker. No one knew his mom was pregnant when she was rescued by two angels named Cindy & Mike. Tucker has a birth defect called megaesophagus. This meant he could not keep his food down, no matter how much food he ate. He was literally starving to death. Cindy and Mike tried everything to feed Tucker and were told by their vet to euthanize him as it would be the “best thing” for him. When faced with this extremely difficult decision to euthanize Tucker, they looked into his adorable eyes, and were determined to find a way to keep him alive and give him the happy life they knew he deserved. They asked everyone they knew what to do and they did as much research as they could. What are the chances that just a few miles down the road lived one of the most experienced persons in the world working with Tucker’s condition? Her name was Laurie Zaleski, the Founder of the Funny Farm Rescue & Sanctuary. Laurie’s famous dog Chucky was the worst case of megaesophagus the University of Penn had ever seen. They gave him 6 months max. He lived an incredible 5 years at the Funny Farm Rescue! Soon after Chucky’s sudden loss, Laurie received the phone call from Cindy & Mike

asking her for help with Tucker. There was something genuine and honest about them. They poured out their hearts to Laurie explaining Tucker’s story. Laurie agreed to meet Tucker. When their eyes met, it was love at first sight. Fast forward 3 1/2 amazing years. Today, Tucker has grown into the most beautiful healthy, confident, tall, black, German Shepherd you ever saw. Besides how he eats sitting straight up in a Bailey Chair, he is a completely normal dog. He runs and jumps and plays with 600 brothers and sisters of all species every single day. Thousands of people come each year to meet him and be inspired by his story. The bond Laurie has with Tucker is extraordinary and amazing! Cindy and Mike saved all 9 puppies includingTucker and to this day, they are still involved in his life. They celebrate each day he lives and they know what that means. They know he is a miracle! Each time Tucker sees them, he runs up to them with a happy, grateful heart. Somehow, he never forgot what they did for him. Tucker also healed Laurie’s heart from losing Chucky. Who knows? Maybe Chucky had a little something to do Tucker coming to the Funny Farm. Cindy and Mike are now Funny Farm family. They did the right thing even though it was incredibly difficult. Each night they go to bed, just as we do at the Funny Farm, their hearts are full of love, gratitude and pure thankfulness for the blessing that Tucker is living such a great life! Thankful and Grateful – Everyday! I know I’m in the minority when I say that I truly love my job. In spite of a global pandemic that halted my business for a while, I never lost the belief that I was doing the job that was right for me. I’m thankful for the Ad in Cooking Light Magazine that first introduced me to the idea of being a Personal Chef (I used to cook to “relax” in my previous job). I’m grateful to my mom and aunts who taught me all the basics of making tasty, healthy food. I’m thankful for the clients that have been with me throughout this whirlwind of 18+ years and I’m truly blessed that I am able to continue doing a job that is both rewarding, challenging, and lots of fun. So as the holiday season approaches on this current trip around the sun, I’m hopeful that each and every one of you can find the peace and grace that allows you to slow down and take stock of what it is in YOUR life that you are thankful for. My focus has always been on healthy eating and meeting the dietary needs of each client. As a Certified Personal Chef and owner of Cutting Board Creations, LLC, I take care of all the menu planning, grocery shopping, cooking, packaging and clean up of your meals, leaving a kitchen that smells great and a refrigerator full of delicious dinners. All the cooking is done in your home, and I bring all the supplies and equipment needed to prepare your pre-approved, customized menu with me. Meals are ready to heat and eat within minutes. As a certified Food Safety Manager, I follow strict guidelines for food safety and sanitation with your health and safety being of utmost importance. Using a Personal Chef will give you back extra time in an already hectic life and may even end up saving you money!

Add one cup of the cranberry puree to the stuffing and mix well. Combine 1/2 cup of the cranberry puree, the marmalade, remaining 1/2 cup of broth and honey in a small saucepan. Bring this mixture to a gentle boil and reduce by ¼ to create a glaze. Set aside to cool. Cut the pork tenderloin for stuffing and season with fresh herbs inside and out. Put the cranberry cornbread stuffing into the pork and tie with butchers’ twine as needed to keep everything in place. Preheat oven to 400 degrees. Heat an oven proof skillet on the stovetop using medium high heat and sear the tenderloin on all sides. Place pan into the oven and roast the pork until the internal temperature reaches 145 degrees. Let pork rest for 5 minutes before slicing and drizzle with the glaze.

CORNBREAD AND CRANBERRY STUFFED PORK TENDERLOIN -

BRUSSELS SPROUTS WITH CARAMELIZED SHALLOTS – 8

2 pounds pork tenderloin 6 ounces cornbread stuffing mix 3/4 cups dry white wine 1 1/4 cups chicken broth, low-fat, reduced sodium 1 cups cranberries, dehydrated 1/2 cups orange marmalade 2 tablespoons honey 2 large sage leaf, fresh chopped 8 thyme sprig chopped 3 tarragon sprig chopped Mix the wine, 3/4 cup of the broth and cranberries in a small saucepan. Bring the mixture just to a boil, remove from the heat, cover and set aside. Prepare the stuffing according to the package directions and set aside to cool. Puree the cranberry mixture in a food processor or blender until it has small chunks of cranberry left in it.

6 tablespoons butter 1/2 pounds shallot thinly sliced 2 tablespoons cider vinegar 4 teaspoons sugar 1 1/2 pounds Brussels sprouts trimmed 3 tablespoons olive oil Melt 3 tablespoons butter in medium skillet over medium heat. Add shallots and sauté until soft and golden, about 10 minutes. Add vinegar and sugar. Stir until brown and glazed, about 3 minutes. Halve brussels sprouts lengthwise. Cut lengthwise into thin (1/8-inch) slices (you are basically “shredding” the sprouts with your knife). Heat oil in large skillet over medium-high heat. Add sprouts and sauté until brown at edges, 6 minutes. Add 1 cup water and 3 tablespoons butter. Sauté until most of water evaporates and sprouts are tender but still bright green, about 3 minutes. Add shallots and season with salt and pepper.

What You Don’t Know About Addiction Popular opinion and common belief used to be that anyone who used drugs and was addicted to substances made this choice for themselves, and continued to use despite all the negative effects on their health, life and family. But modern medicine and science have proven this belief wrong. Addiction is a complex disease of the brain. Substance Use Disorder is a treatable medical condition, which impacts brain chemistry and behaviors. People impacted by Substance Use Disorder experience involuntary cravings for the substance which leads to seeking out and using the substance despite the negative impacts on their health and life. Like the rest of the Nation, Ocean County has experienced the tragic impact of the Opioid Epidemic. What started as a common practice of prescription pain medications being given out, lead to a high rate of physical addition to opioids and the epidemic that followed.

Changes in brain chemistry created by substance use make it is very difficult to stop using, and often produce significant illness and discomfort when stopping the use. But comfortable and successful treatment is available for anyone needing assistance to discontinue using opioids. Often one of the first steps in recovery from Opioid use is what is referred to as detoxification from the opioid. Such as, I am grateful for the way my dog greets me when I come home from work when he jumps up and down and wages his tail and smiles at me with his three front teeth. Crossroad For Angels Ms. Eve Cortes is an American Philanthropist, Captivating Speaker and Business-woman born in Isabella Puerto Rico. Ms. Cortes immigrated to the U.S. mainland from the Commonwealth of Puerto Rico at the age of 5. Since a very young age her parents instilled within her the importance of faith and doing the right thing. Early in her younger years she had an experience which would change her life forever. Ms. Cortes was subjected to sexual abuse by her brother and shortly after she told her brother she was going to disclose what he had done, he committed suicide at the age of 16, The emotional scars that were imprinted upon Ms. Cortes at a young age left her questioning what and why things had occurred in the way they had. She not only had to deal with the trauma of being sexually abused as a child but also had to grieve the loss of her older brother. The agony of her life experiences with her brother and her very public recantment of her story sent shockwaves throughout the family who had supported her however did not want to make public the ordeal. In 2014 Ms. Cortes after establishing herself as a successful entrepreneur owning and operating several tax offices and serving as a highly successful bilingual business woman she decided to start a foundation dedicated towards bringing awareness to children that were victims of sexual abuse named Crossroad for Angels. Since then Crossroad for Angels has cemented itself as a pillar of hope for the hopeless and a voice for all children and the adult survivors who have deep seated wounds and scars. Ms. Cortes has developed quite a reputation and caring for others is at the core of everything she does. Ms. Cortes lives in South Jersey with her children and is involved in charity work and is currently a Realtor associate as well as Ordained Minister, in her downtime Ms. Cortes enjoys reading, spending time with family and friends and walking on the seashore while looking at picturesque views of the sunset.

A Mindful Renewal

A truly remarkable, accomplished, self-determined, and inspirational woman living in Southern New Jersey is Laurie Zaleski. Not only does she have an endless positive energy, when you think about all she has accomplished, and how many animals she’s saved, you can’t help but wonder how does she do it all? Rising out of the ashes of a crumbled family because of an abusive father, with nothing to her name, and losing her mother at such a young age due to cancer, Laurie built one of the largest animal rescues in the Northeast. Tell her she can’t do something and she will prove you wrong every time. She has dedicated her life to helping those who can’t help themselves. She finds homes for those who desperately need them. She feeds animals and provides plenty of love to those who once never knew love. Not only does she have over 600 rescue animals and a team of volunteers, Laurie created Art-Z Graphics, a successful graphic design, photography and multimedia company that contracts with the Federal Government. Laurie proves to women everywhere that the only real limits are those you place on yourself.

As a Certified Mindful Coach, Gina Peccia is practicing her lifelong passion: helping others in their time of need. With over 15 years of experience as a therapist working in the community mental health field, she is a wonderful example of staying true to yourself. However, before realizing where her true passion lied, she worked at a global pharmaceutical company and was an Executive Assistant to the Director of Marketing. She soon realized this was not her calling so she listened to her heart and went back to graduate school to become a therapist. After graduating, she worked in a traumatic brain injury program for adults and their families. She held a myriad of different titles in the field and finally decided to venture out to form her own private practice. Since 2012, she has been practicing independently and working with adolescents and adults suffering from mental health disorders, relationship issues, and stressors interfering with their contentment with life. Most recently, she became trained as a Certified Mindful Coach with a center in California. Learning from a Master Coach was a wonderful experience and she is now able to use what she learned to help others achieve their goals and gain balance in their own lives. Briana is the Director of Enlightened Farm and leads horticulture programs for clients of Enlightened Solutions, a substance use disorder (SUD) treatment center, and residents of Serenity Houses, SUD recovery housing. After receiving her BA in Political Science and Public Health from The Catholic University of America, Briana moved to Washington State and joined a social justice community where she worked with at risk populations to improve health disparities. Briana tragically lost her brother Matthew to addiction in 2017 and shortly thereafter returned home to join The Hansen Foundation. She loves fostering the healing relationship between people and nature. She is Vice President of C.R.O.P.S., a local non-profit working towards a more accessible and equitable food system. She is also team facilitator for the Food Democracy Collaborative (FDC), a think-tank that works with NJ universities and colleges that improve the food system in our state. Briana also leads the Young Adult Initiative for AC Pride, a program and outreach organization for LGBTQ Pride Month.

Denise has been with Journey Hospice since 2019 and is currently the Director of Nursing. She has over 27 years of experience in healthcare in Atlantic, Cape May and Cumberland Counties. Denise began her career with a Bachelor’s Degree in Social Work from Stockton State College. Shortly after, she decided to pursue nursing. She’s grown from a Licensed Practical Nurse to a Registered Nurse and is currently in school to obtain her Bachelor’s Degree in Nursing. For most of her career she has worked as a Certified Assisted Living Administrator, in both local and regional positions, and also in admissions and marketing. Denise brings a vast amount of experience as a liaison in mental health, hospice and long term care to Journey. As a Certified Dementia Practitioner with a passion for working with Alzheimer’s patients she believes she has a calling to work in hospice. Her personal experience with her own grandfather on hospice has led her to help patients and their loved ones find peace and comfort as they approach end of life. Shannon Brown is a realtor at Clayton & Clayton Relators in Bay Head and is happily married to her high school sweetheart, Scott Brown. They have two sons, ages six and two, which is a large part of the reason that Shannon was drawn to CASA. Shannon expressed feeling helpless knowing there were children out there that needed the stability and love that her children were able to receive. Shannon said, “The children CASA advocate for have been through so much in their lives and had a level of inconsistency that no child should. It is truly fulfilling when the child realized they can trust their CASA after seeing them consistently showing up with a smile. I look at it as a privilege to be able to be a part of their lives as well as a huge responsibility to report my findings to the court.” Last year, Shannon had the opportunity to see her CASA child be adopted by a loving family and has already begun advocating for another family. Shannon works tirelessly advocating for her CASA children and is a great role model for other CASA volunteers as well as women in general.

Dr. Mukti Rana is a pediatrician specializing in the treatment and care of patient’s ages newborn to 21. She offers comprehensive school, daycare, & sports physicals as well as management & treatment of acute and chronic medical conditions. She is board-certified with the American Board of Pediatrics as well as Subboard of Pediatric Infectious Disease. Since completing her postdoctoral training in 1997, Dr. Rana has been a fixture in the Pediatric community, she is married to Dr. Satyendra Singh, a board-certified internist who has been practicing for 25 years in Lakewood, NJ & has two beautiful children. Tis the Season! Apples This fruit is an antioxidant powerhouse, known to help disarm or neutralize harmful waste products that would otherwise cause inflammation, atherosclerosis, dementia, and DNA mutations that may lead to cancerous growth. It’s no wonder they say “an apple a day, keeps the doctor away!”

Mushrooms

Most wild, edible mushrooms only appear in the fall. They offer numerous health benefits: high in protein; low carbohydrate content; and rich in fiber, iron, calcium and other compounds that are believed to help fend off cancer.

Pears

Known for being high in fiber, pears provide a sense of satiety (feeling full), translating to fewer calories consumed to quell hunger. They are also a sensible snack for pre-diabetics and diabetics because fiber decreases absorption of the pear’s carbohydrates, preventing a spike in blood sugar levels.

Sweet potatoes

They’re rich in beta carotene, vitamin B6 (can lower risk for heart attacks), vitamin C (helps your immune system) and iron (assists with red blood cell production).

Citrus

Oranges, tangerines, lemons, limes to grapefruit and more — are a good source of Vitamin C. Citrus also contains antioxidants from the flavonoid group. Respected studies show a diet rich in flavonoids can decrease chances of dying from heart disease by 40%. How? It’s believed that flavonoids improve blood flow through coronary arteries and decrease blood clot formation and “bad” cholesterol levels.

Eating fresh fruit, veggies, herbs and spices is a key ingredient to good health. And there’s something extra scrumdidylicious about fall flavors. Read how they’re great Butternut squash for your taste buds, body, mind and soul! Pumpkins A fall favorite, the meat of the pumpkin is low in calories and provides your body with essential dietary fibers, calcium, potassium, vitamins B and K, and more than 200% of the recommended daily vitamin A. Its radiant orange color results from high amounts of beta-carotene, an essential nutrient that helps maintain eye and skin health as well as neurological function. And studies show that the seeds may help decrease prostate gland enlargement and risk for kidney stones and depression. There are lots of great, easy recipes available with ways to prepare them.

Spices and Herbs

• Cinnamon boasts fun-filled flavor, antibacterial and antifungal protection, and antioxidants (helps protect the body from harmful waste products). • Ginger is commonly used to soothe upset stomachs and reduce nausea. It is also linked to brain function, possibly protecting against Alzheimer’s Disease. Ginger contains a component called gingerol that can help keep infections at bay. • Nutmeg may reduce feelings of pain associated with strains, injuries and even arthritis. It also has impressive fiber content that can help promote healthy digestion. • Cloves, similar to cinnamon, are rich in antioxidants, including vitamin C, which can neutralize dangerous waste products. Also, cloves contain antimicrobial properties that can help keep bacteria at bay and promote oral health. Additionally, it also helps support healthy blood sugar levels and liver and bone health. • Allspice, with anti-inflammatory, antibacterial and antioxidant properties, can help boost the immune system. It also boasts significant copper and iron levels that are essential to red blood cells. • Herbs such as sage, rosemary, turmeric, cilantro, cumin, thyme, paprika all offer incredible health benefits along with great flavors to favorite fall dishes while enriching lives with great fragrances.

Rich in nutrients, antioxidants and fiber, while low in calories, butternut squash is also at the head of its class when it comes to Vitamin A. Just 100 grams of butternut squash contains 354% of the recommended daily allowance!

Kale, cabbage and broccoli

Kale is often called a superfood because it contains such high amounts of Vitamins A, C and K as well as calcium. Cabbage and broccoli also contain plenty of nutrition that can promote heart, brain and skin health, and help to fend off cancer (containing sulforaphane, a characteristic of cruciferous veggies that has been shown to block an enzyme that plays a role in the growth of cancer cells).
