Taking the space long-occupied by the Steaksmith restaurant at El Gancho Fitness, Swim and Racquet Club on the Old Las Vegas Highway east of Santa Fe, Bourbon Grill offers classic preparations of seafood, prime rib, steaks, chops, salads and soups, along with an attractive and affordable bar menu and full bar. My wife Debbie and I recently tried a dinner meal at Bourbon Grill with her niece Katie Bourbon Grill and husband Zack who were visitng Santa Fe 104B Las Vegas Highway on a quick getaway from their busy lives in the Santa Fe, NM 87505 Denver area. Debbie and Katie had the 14 ounce prime rib, perfectly cooked and a great value at Bourbon Grill is only $19.95. Zack tried the 14 oz. sirloin strip open daily at 4 pm while I ventured for the Colorado lamb chops. Sunday through Thursday until 9 pm The meat was all excellent and cooked perfectly. Thursday, Friday and Our entrees were served with a fresh green salad and a baked potato with all the fixings. The serSaturday till 10 pm vice staff were very gracious and attentive. Castles of Goodness - A Legacy in Gingerbread by Marc-Paul LaRouche

Ever since I can remember, and long before that, my

family has been building castles. Not your typical, runof-the-mill drafty castle. These castles are edible, and are made of all manner of edible bits and pieces. Long ago, my grandmother, Toni Morris, modified a classic gingerbread recipe specifically for castle-building. Along with my grandfather George, she developed a method of building those iconic turrets that are so often a part of proper castle building. Many castles were built through the years, with the help of family and friends, at their ranch in Colorado.

Since those days, my cousins, my mother and dad, my sisters, even my wife Debbie and son Jefferson have all participated in carrying on the tradition of castle building. The process is pretty straight-forward. We usually start with a floorplan, then create patterns for each of the building pieces. I use brown paper bags, opened up and laid flat. We then draw the patterns for each piece on the paper and cut out the patterns. Next we roll out the card gingerbread (see our recipe on page 13) and lay the patterns on the flat gingerbread and cut along the edges of the pattern. Be sure to cut any windows and other features before you bake the gingerbread - it’s very hard to cut after it has been baked. For doors and drawbridges, cut them out and bake separately, as the gingerbread does rise some and will make separating the parts hard after baking. Once the gingerbread is baked and has cooled completely, use royal icing to “glue” the pieces together. When your castle is built, finish it by decorating to your hearts desire. The usual rule is to only use edible items, but hey, it’s your castle - do what you want and enjoy! We ususally would add christmas lights to give the castle a wonderful soft glow at night. One word of advice - especially in the dry West - gingerbread will get very hard in low humidity, so be careful eating it, as one can break a tooth on the stuff if it gets too hard.

You can find a myriad of variations of royal icing online. Most of them start with raw eggs or meringue powder. This is my mother’s version of royal icing. It uses milk instead of raw egg whites, which should not be consumed by women when pregnant, babies, small children or those with other health problems. To 1 cup of confectioners suger (powdered sugar containing cornstarch), add 2 Tablespoons of milk. mix with a spoon until smooth. You may need to add more milk or sugar depending on humidity, etc. You want a fairly stiff consistency to glue the piecd of gingerbread together. If you are handy with a piping bag this is very useful as well for building and decorating your castle. ENJOY!

by Debbie LaRouche - Associate Editor “A family favorite as long as I can remember! Now a few different variations float around various family celebrations, but my favorite is without pecans. Feel free to try with or without them!”

Makes about 2 cups The day before: Let cheese soften at room temperature. In a bowl (or food processor for best results) combine cheeses, onion, Worcestershire sauce. Blend well. Stir in 1/8 cup parsley and optional ¼ cup pecans. Shape into ball and place in bowl lined with wax paper. Refrigerate overnight. To Serve: About an hour before serving, remove ball from refrigerator. Stir the ball in additional pecans and parsley if desired.

“My mother’s latkes are my favorite, but the recipe is not written down. You just measure everything with your eye and add love.”

5 large potatoes, peeled 1 large onion 3 eggs 1/3 cup flour 1 tsp. Salt ¼ tsp. pepper ¾ cup oil for frying

Makes 4 to 6 servings Grate potatoes and onion on the fine side of a grater or in a food processor. Strain grated potatoes and onion through a colander, pressing out excess water. Add eggs, flour, and seasoning. Mix well. Heat ½ cup oil in 10 inch skillet. Lower flame and place 1 large tablespoon batter at a time into hot sizzling oil and fry on one side for approximately 5 minutes until golden brown. Turn over and fry on other side 2 to 3 minutes. Remove from pan and place on paper towels to drain excess oil. Continue with remaining batter until used up, adding more oil when necessary.

Continuing up the river gorge, about 8 miles north of Velarde is the village of Dixon, NM. Known for its 2 fine wineries as well as the longest-running Artists’ Studio Tour each Fall, Dixon is located only about 2-1/2 miles from the highway to Taos and well worth a quick trip to see and enjoy. The winery and Dixon tasting room are located at the corner of NM 68 and NM 75 (the road to Dixon). Both wineries offer tastings daily. Vivac Winery also features an in-house chocolatier.

Rio Grande Gorge Near Taos, New Mexico

Located in Pilar, NM, about 10 miles north of Dixon along NM 68 on the East (right) side of the highway is the Bureau of Land Management Visitor Center for the newly created Rio Grande del Norte National Monument. This National Monument encompasses 242,500 acres, beginning in the Rio Grande Gorge just south of the Visitor Center and extending north to the New Mexico / Colorado state line. The water tower at Embudo Station

If you look to the West, across the river, you can see for remnants of the railroad bed for the DRG&W Narrow Gauge “Chili Line” railway which traveled from Santa Fe, NM to Antonito, Colorado carrying passengers and livestock, wool, fruit, beans and New Mexico green chiles. The Embudo Station (just West of the highway) is listed on the National Register of Historic Places. The water tower is still visible from the road.

San Francisco de Assis Mission Church - Ranchos de Taos

On the road again to Taos you will first ecounter Ranchos de Taos, about 4 miles southwest of the town of Taos, NM. Stop on the historic plaza there to see and take photos of the beautiful San Francisco de Assis Mission Church. Ranchos Plaza Restauranta and Old Martina’s Restaurant flank the plaza, as well as a few curio shops. COMING SOON - The High Road to Taos and visits to Taos, NM.

1 tube Pillsbury™ refrigerated pizza crust ¾ cup alfredo sauce 1 ½ cups mozzarella cheese, shredded Toppings (This recipe used baby carrots, purple onions, black olives, and rosemary sprigs for the face and buttons.) 1. Preheat oven to 350°F. Line a baking sheet with parchment paper. Set aside. 2. Open dough. Make six slices. 3. Press the pieces of dough until flat. Make in three sizes. Press each round of dough together at the seams to create a snowman shape. Repeat. 4. Top with alfredo sauce and shredded mozzarella. 5. Place toppings or vegetables as features of the snowman. 6. Bake pizzas for 15-20 minutes, or until the cheese bubbles and the edges of the crust turn light golden brown. 7. Remove pizzas, allow to cool slightly before transferring to a serving platter. Garnish with rosemary sprig scarves. Enjoy!
