Mesa de Agua presenta un programa integral que reta la rápida e industrializada forma de vivir para regresar al papel simbólico de la mesa y responder a las necesidades intelectuales y sociales del habitante recordando al agricultor primigenio. _1. El Laboratorio de Alimentos nace como ancla del programa con el fin de urbanizar la granja donde viven actualmente las gallinas y las vacas. Asimismo, funciona como área de procesos transparentes donde el usuario aprende a coexistir con la flora y fauna (revitalizada) respetando sus espacios y ciclos naturales de producción.

Mesa de Agua presents a comprehensive program that challenges the fast-paced, industrialized way of living to return to the symbolic role of the table and respond to the intellectual and social needs of the inhabitants by recalling the primordial farmer. _1. The Food Laboratory is born as an anchor of the program in order to urbanize the farm where the chickens and cows currently live. It also functions as an area of transparent processes where the user learns to coexist with the flora and fauna (revitalized) respecting their spaces and natural cycles of production.

La reutilización de la infraestructura existente de la granja se ve reflejada en la utilización del basamento. La materialidad del laboratorio de alimentos como todos los demás espacios consta en una base sólida que funciona como los cimentos, estructura de marcos rígidos, vigas de madera para soportar las losas y muros con recubrimientos de madera tipo celosías con tratamientos para intemperie.

The reuse of the existing infrastructure of the farm is reflected in the use of the foundation. The materiality of the food laboratory, like all the other spaces, consists of a solid base that functions as the foundation, a rigid frame structure, wooden beams to support the slabs and walls with latticetype wood cladding with weathering treatments.

El Laboratorio de Alimentos se convierte en un museo interactivo que permite vivir la experiencia de cosechar y crear alimentos con productos derivados de las vacas y gallinas; fomentando el consumo local y enseñando a los habitantes y visitantes a crear alimentos tradicionales, saludables y orgánicos. El conjunto Mesa de Agua brinda una producción no industrializada para educar y demostrar cómo la industria agropecuaria puede ser resiliente, sustentable y beneficiosa tanto para la salud de los habitantes como para medio ambiente.

The Culinary Laboratory becomes an interactive museum that allows the experience of harvesting and creating food with products derived from cows and chickens; encouraging local consumption and teaching residents and visitors to create traditional, healthy and organic food.

Sus losas inclinadas, el juego de alturas, sus diversas texturas y amplitudes permiten que occura un sinfin de actividades y formas de interactuar entre el hombre, la Tierra y los animales.

El juego de interior-exterior también le brinda al conjunto una transparencia para que los habitantes y los animales puedan coexistir y aprender uno del otro.

The Mesa de Agua complex provides non-industrialized production to educate and demonstrate how the agricultural industry can be resilient, sustainable and beneficial to the health of both residents and the environment.

Its inclined slabs, the diversity in heights, textures and amplitudes allow an endless number of activities and ways of interaction between Man, Earth and Animals. The indoor-outdoor game also gives the complex a transparency so that the inhabitants and the animals can coexist and learn from each other.

El taller culinario funciona como un espacio con cocinas y áreas de trabajo comunitarias en dónde se imparten clases gastronómicas de recetas tradicionales utilizando ingredientes locales y cultivados en sitio. El espacio educativo regresa a los procesos artesanales y la comunidad tiene la oportunidad de utilizar la cocina para emprender negocios de alimentación que posteriormente se pueden vender.

El mercado reúne todos los procesos anteriores y funciona como el espacio principal en dónde se promueven alimentos Slow Food y se comercializan propuestas de negocios minoristas. En un futuro se podrán extender a lo largo del corredor verde para llevar la alimentación más cerca de los puntos de consumo y seguir promoviendo una alimentación “buena, limpia y justa” en todo Santa María Magdalena.

The culinary workshop functions as a space with community kitchens and work areas where gastronomic classes are given on traditional recipes using local, and freshly harvested ingredients. The educational space returns to craft processes and the community and offers a space for food businesses to unfold.

The market brings together all of the processes and functions as the main space where Slow Food is promoted and retail business proposals are marketed. In the near future, the market can be extended along the green corridor to bring food closer to consumption points and continue to promote good, clean and fair food throughout Santa Maria Magdalena.

Lo técnico de los ecosistemas

El proyecto integral busca generar beneficios ecosistémicos a través de diversas estrategias implementadas.

Se logra disminuir la huella de carbono con el saneamiento y suministro de agua limpia, la producción tradicional de alimentos locales, la disminución en la erosión de la Tierra y la sanación de la Tierra al regresar sus nutrientes con cosechas mezcladas con diferentes plantas y su composta.

Mesa de Agua seeks to generate ecosystem benefits through various strategies implemented to reduce the carbon footprint with the sanitation and supply of clean water, the traditional production of local food, the decrease in soil erosion and the healing of the Earth by returning its nutrients with crops mixed with different plants and their compost. As an ecosystemic-hydric return, two wetland systems (vertical and horizontal) are implemented to clean the contaminated water found in a canal of the river Río Querétaro. The wetland system to be used is divided into three parts:

_2 El agua contaminada pasa al sistema de filtración del humedal ya sea vertical u horizontal: En el humedal vertical el agua se mueve de arriba hacia abajo, pasando por varios filtros de grava y tierra, permitiendo la siembra de cualquier tipo de planta en la superficie. Las tuberías del humedal vertical son visibles y van perforadas y siempre debe contar con una salida de aire.

En el humedal horizontal la filtración del agua ocurre de lado a lado a lo largo de toda el área destinada. La tubería de este sistema no es visible y después del proceso de saneamiento y filtración, el agua limpia se canaliza para utilizarla tanto para el riego al igual que los bebederos de las vacas y gallinas.

_2 The contaminated water passes into either the vertical or horizontal wetland filtration system: In the vertical wetland the water moves from top to bottom, running through several gravel and soil filters, allowing for the seeding of any type of plant on the surface. The pipes of the vertical wetland are visible and perforated. These pipes must always have an air outlet.

In the horizontal wetland, water filtration occurs from side to side along the entire area intended for the wetland. The piping of this system is not visible and after the sanitation and filtration process, the clean water is channeled to be used for irrigation as well as for drinking troughs for cows and chickens.

_3 Como estrategia de mejoramiento de prácticas agrícolas, se utiliza la metodología de “pixel farming” como un método de cultivo en dónde una parcela se divide en secciones para sembrar diferentes tipos de alimento y así los nutrientes erosionen menos el terreno de cultivo y se cree una tierra fértil.

_3 As a strategy to improve agricultural practices, “pixel farming” is used as a method of cultivation in which a land parcel is divided into sections to plant different types of food so that the nutrients create fertile soil decreasing its erosion.

También se van a utilizar métodos de irrigación sostenibles por ejemplo el método por goteo con agua tratada ya que esta contiene nitrógeno y fósforo que son elementos que permiten que las plantas crezcan y se nutran naturalmente.

Asimismo, se implementará la composta hecha en sitio y creada con el estiércol de los animales para fertilizar todas las tierras agrícolas del proyecto y las adyacentes.

Sustainable irrigation methods will also be used, such as drip irrigation with treated water that contains nitrogen and phosphorus, which are elements that allow plants to grow and nourish themselves naturally.

Mesa de Agua es un proceso de transformación y una alternativa para contrarrestar los efectos negativos que produce la industria agropecuaria al medio ambiente y una respuesta para el desarrollo sostenible del estado de Querétaro.

Mesa de Agua is a process of transformation and an alternative to counteract the negative effects of the agricultural industry on the environment and a response to the sustainable development of the state of Queretaro.

Mesa de Agua presenta a Santa María Magdalena como un Barrio Esponja y un Barrio Slow Food pero el valor verdadero del proyecto está en el ADN el cual permite encontrar nuevos puntos de intervención para realmente llevar el impacto a escala Ciudad.

Como el postre del proyecto, se encontraron tres posibles lugares que comparten las mismas características para generar una Ciudad Esponja en un ‘después’.

Mesa de Agua presents Santa María Magdalena as a Sponge Neighborhood and a Slow Food Neighborhood but the real value of the project is in the DNA which allows finding new points of intervention to really bring the impact to the City scale.

As part of the dessert, three possible sites were found that share the same characteristics to generate a Sponge City in the future.

La receta del postre tiene las siguientes características: _1 Áreas periurbanas con gran crecimiento urbano por el cambio de uso de suelo (industrializado) que han perdido su red sistémica de puntos de absorción. _2 Grandes campos de uso agrícola con una sobreexplotación de agua potable; teniendo grandes pérdidas por el mal manejo del recurso y por métodos tradicionales de cultivo. _3 Infraestructura de saneamiento (Plantas de Tratamiento) en condiciones deplorables por cuestiones de corrupción y mantenimiento. Reduciendo la oportunidad de utilizar agua para segundo uso. _4 Colonias rural-urbanas con un nivel socioeconómico medio bajo que cada vez más están teniendo presente problemas de salud a causa de una mala alimentación.

Las colonias y áreas dónde el sistema de Mesa de Agua puede intervenir son: Santa Rosa Jáuregui, La colonia de los Héroes y Saldarriaga en el Marqués y la Colonia de San Isidro Miranda, entre otros.

The recipe for dessert has the following characteristics: _1 Peri-urban areas with large urban growth due to land use change (industrialized) that have lost their systemic network of absorption points. _2 Large agricultural fields with overexploitation of drinking water; with large losses due to poor management of the resource and traditional cultivation methods. _3_ Sanitation infrastructure (treatment plants) in deplorable conditions due to corruption and maintenance issues. Reducing the opportunity to use water for second use. _4 Rural-urban colonies with a medium-low socioeconomic level that are increasingly experiencing health problems due to poor nutrition.

The table is not just a table. The table is symbolic; alluding to moments, conversations and spaces; no two tables are alike because the essence of the table changes through the people, the activities that are happening and the food that is being served.
