Welcome back to another great recipe from your favorite buzzed chef, Chef Buz here with my trusty glass of 1942. It’s coming up on tailgating season, cooler weather, thank God for that, and of course some great times with friends. This month’s recipe is inspired from my time living in Pittsburgh and a time when you could tailgate all day too. We would load up the truck with plenty of food and drinks, the grill, tent, tables, chairs, and an assortment of games to play. Some football games were night games and when I say we could tailgate all day, I mean it. We would get there sometimes as early as 6am to get the prime spot. We would set up early and get the grill going, eat, drink, and mingle with other tailgaters up til game time. that’s some serious drinking and you need to have some good food to help you make it through the day and the game. So, this month’s recipe is my famous Game Day Beer Bratwurst, paired with your favorite brew and would you believe it, it goes great with Don Julio too. Now let’s dive right into this month’s recipe and a tequila or two.

First get your grill fired up to medium-high heat and then in a large dutch oven or crock pot melt the butter. Once the butter is melted, toss in the sliced onions, and cook until they are tender, 5-10 minutes, depending on your temperature. Now add the Brown sugar, caraway seeds and black pepper and stir well, then add the brats in and pour over the beer, just enough to cover the brats. Save ½ cup of the remaining beer for the sauce and the rest is to drink. Bring the beer to a boil and then reduce your heat to medium and simmer. Remove the bratwurst and add the sauerkraut to the beer and stir. Place the brats on the grill, on medium, and cook until they are a nice golden brown before returning them back to the beer and kraut mixture. Now for my famous sauce, add all the ingredients to a small saucepan and reduce until it becomes the consistency of ketchup. Salt and pepper to your desired taste and you're ready to enjoy some Game Day Beer Bratwurst. Serve on the brat buns with the onions and kraut and top with the sauce. Yield: 12 Time: 45 minutes to an hour

12 Whole Bratwurst 2 Yellow Onions, sliced thin 14 oz Can of Sauerkraut, rinsed 2-3 Cans of Beer, I like you use a Porter or Stout, Lagers are good also 5 TBS Brown Sugar ½ stick of Butter Cracked Black Pepper 1 tsp Caraway Seed Chef Buz ’s Famous Brat Sauce 1 Cup Heinz Chili Sauce 1 Cup Heinz Ketchup ½ Cup Beer 1 TBS Worcestershire Sauce 1 tsp Prepared Horseradish 2 TBS Cider Vinegar 2 TBS Brown Sugar 1 tsp Garlic, minced Salt and Black Pepper, to taste
