Thank You For Smoking, Meat What’s more Texan than beer and BBQ? Traditionally, South Texas style is distinguished by it’s thick sauces that ensure the juiciest meat possible. Thanks to the European meat-smoking traditions brought to Central Texas by German and Czech settlers in the 1800s, butchers would smoke leftover meat to keep it from spoiling. We sure are thankful!
