When it comes to yachts, bigger isn’t always better. Just ask Lawrence Stroll, the Aston Martin executive chairman who recently downsized from a 317-foot Feadship to a 262-foot Feadship so he could get in and out of Monaco’s Port Hercules with ease. And while 262 feet is still massive, it proves that even the world’s wealthiest yachtsmen recognize the need for smaller boats depending on their cruising requirements. An influx of small regional jets may be shaking up the private aviation space, but the growing selection of large, long-range aircraft is changing the way fliers take on global travel. While the upper reaches of the segment are occupied by privatized commercial airliners from divisions like Boeing Business Jets (BBJ) and Airbus Corporate Jets (ACJ), familiar players are introducing a fresh crop of compelling long-range aircraft.

originally slated for April of this year, the inaugural Anantara Concorso Roma was postponed out of respect for the passing of Pope Francis and the events that followed. The highly anticipated debut has now been rescheduled for April 2026, when 50 of the most iconic Italian automobiles will rev their engines at Piazza della Repubblica to commemorate the event with a procession from Rome to Frascati. The marques on display will include Alfa Romeo, Pagani, and Bugatti, as well as standout models such as the 1959 Ferrari 196 S “Dino” #0776S, the 1953 Siata 208 CS Balbo Berlinetta, and the 1970 Lamborghini Miura S “Italian Job.”
“This will be the first time a concours in Italy will feature solely Italian cars,” says William E. Heinecke, founder and chairman of Minor Hotels, Anantara’s parent company. In the world of collectible automobiles, a concours remains one of the most prestigious events showcasing motorcar craftsmanship, and the three-day Anantara Concorso Roma will introduce a new way for auto enthusiasts to connect with the Eternal City’s storied past through iconic automotive design. Rome previously hosted the original Mille Miglia, starting in 1927, and the Gran Premio di Roma, an automobile race around the city that ran from 1925 to 1991.
Fittingly, the event will take place nearly 100 years after the first-ever Rome concours—the Concorso Romano delle Carrozzerie—which was held at the Terrazza del Pincio in the gardens of Villa Borghese, just a short distance from the setting of the 2026 Anantara Concorso Roma at the Anantara Palazzo Naiadi Rome Hotel. “Part of the vision will be to bring the concours world together with Italian style, cuisine, and luxury hospitality,” explains Heinecke. In other words, the concours will fuel the renaissance of la dolce vita through Italian automobile craftsmanship. n

As a travel writer, Jillian Dara is typically drawn to places for their hotels, gastronomy, or viticulture. However, on a recent personal trip to Scotland, she found herself captivated by its stunning landscapes.
Our first peek at the Scottish coastline appeared in a surprising ray of October sunshine. After four hours on the train from London to Edinburgh, my fiancé, Neil, and I were eager to take advantage of the balmy temperatures—but we still had a drive ahead of us.
Luckily, the sun followed as we wound through Glencoe’s dramatic mountains to Fort William; a route meticulously organized by Brendan Vacations at our request to relish as
much of Scotland’s 30,090 square miles of lochs, waterfalls, isles, and sprawling emerald-chartreuse Highlands during a one-week holiday.
Not even two hours into our trip, the wild surrounded us on the narrow A82—often monikered as Scotland’s most scenic drive. The rare rays illuminated the peaks and valleys; jagged boulders protruded from velvet-textured landscapes of verdant moss and fluffy moorland grasses.
“Look at the clouds just kissing the top of the mountain over there,” said our driver, Billy, as he greeted us the next morning at sunrise to continue our path toward the Isle of Skye. An early departure granted us the chance to witness the countryside bathed in dawn’s periwinkle hue.
A perpetual car-napper, I was nervous I’d nod off and miss the scenery, but the evolving patchwork as we neared Skye—from lush mountainsides to bog myrtle to terra-cotta
craters—proved an organic stimulant: I was wide-eyed. “I feel like I’m in a painting,” I whispered to Neil.
We arrived at the Storr only for the scenery to compound with every step along the one-hour vertical hike. I could have stayed up there all afternoon, but more panoramas called. At Mealt Falls, a misty rainbow framed Kilt Rock, a sea cliff with a waterfall that dramatically plunges into the Sound of Raasay. Leisurely drives passed through twee burghs, like Nairn with its sandstone facades and 16th-century church. We sat down with Shamoon to explore his philosophy on hospitality, his vision for the future of luxury travel, and how he continues to push the boundaries of what it means to truly retreat.
Hospitality has been central to your life from an early age. How did your journey begin?
I grew up immersed in hospitality, thanks to my father’s work. He started as an aeronautical engineer before transitioning into the restaurant and hotel business, eventually acquiring Puente Romano Hotel in Spain. By 16, I was working at Puente Romano Marbella, starting in the kitchens before moving through housekeeping and food and beverage. At 19, I opened my first restaurant on the property, Suite del Mar—a unique dining-to-nightlife concept. I even DJ’d there, creating an atmosphere that flowed from dinner into the early
hours. That experience shaped my approach to hospitality: It isn’t just about beautiful spaces; it’s about crafting moments that linger long after checkout.
How did your global experiences influence your perspective on hospitality?
Travel has always been a major inspiration. Studying in London, Paris, Madrid, and
New York broadened my view of different cultures and guest expectations. I make it a point to stay at hotels around the world to continuously learn what makes an experience truly memorable. Over time, I’ve seen the shift from guests simply expecting comfort to seeking immersive, personalized experiences. That’s what we focus on—creating moments that become part of a guest’s personal story.
What led to your acquisition of Small Luxury Hotels of the World?
In 2013, we saw an opportunity to bring our vision of independent, guest-centric experiences to a global platform. Small Luxury Hotels of the World became the perfect vehicle to unite unique properties under a shared commitment to excellence. Our focus has always been understanding what brings guests back year after year and elevating their experience—from gastronomy to wellness—to surprise and inspire them.
One of your most significant projects has been the reimagining of Hermitage Bay in Antigua. What was your vision?
Hermitage Bay has always been a beloved retreat, and we wanted to honor its essence while enhancing every aspect of the guest experience. We transformed the accommodations, dining, entertainment, and activities to create a holistic, world-class destination. The oceanfront restaurant now features a seasonal menu that changes daily, and we introduced a new Tree Bar on the beach, expanded the Beach Club, and revitalized the Garden Spa. The Hillside, Beachfront, and Garden Pool Villa Suites were
renovated, adding private pools for enhanced comfort and privacy. We also introduced a marine program with a fleet of boats, including a 100-year-old schooner, that allows guests to sail through Antigua’s crystal-clear waters.
How does sustainability play a role in this next chapter for Hermitage Bay?
Sustainability is at the core of our vision. We are developing systems to collect rainwater, desalinate seawater, and expand solar-power usage. Our organic garden supplies our restaurants, and we work closely with local fishermen to support the community. Beyond environmental initiatives, we invest in our team’s development and partner with local marine biologists to educate guests on Antigua’s natural heritage.
What is the most rewarding aspect of bringing a hotel vision to life?
For me, it’s about creating properties that blend seamlessly with their natural surroundings, offering a retreat where guests can disconnect from the ordinary and reconnect with themselves. Seeing people find fresh perspectives and experience unforgettable moments is the most rewarding part of what we do.

In general, I do small meals every four hours with two snacks: one sweet (fruit) and one savory (like fresh veggies or Skinny Pop popcorn). This March, nearly a year to the date after it opened, Hakuba, the newest restaurant at Cheval Blanc Paris, was awarded a Michelin star. Helmed by executive chef Arnaud Donckele, the Japanese restaurant (whose name translates to “white horse”) is described by Donckele as a “six-hands cooking” collaboration between his partners, chef Takuya Watanabe and pastry chef Maxime Frédéric. “We wanted to have a restaurant that invites guests on a gastronomic immersion, blending the traditions of Japanese cuisine,” says Donckele. “Every dish has its place in the kaiseki sushi cuisine, which is carefully thought out. Each texture is unique: soy sauce, fish, wasabi, and rice.” As Japanese cuisine flourishes throughout Paris, Hakuba differentiates itself by assigning a meaningful story to each dish.

We feel a new era of Japanese cuisine has just begun. The field of creativity has no limit, and in a way, this cuisine
Both cuisines treat food as much more than just something to eat—it’s a whole journey. There’s a real love for sharing a meal and a natural curiosity to explore creative, sometimes unexpected, flavors and techniques. They also both have a strong sense of tradition—everything from the way the table is set to the textures, the scents, the silverware, the tableware—it’s all very precise and meaningful. At the same time, both are constantly evolving, blending that deep-rooted heritage with a modern, creative approach. Above all, there’s this shared obsession with quality and excellence that really brings them together.
So much of Japanese cuisine is about the quality of the ingredients. Can you share where you’re sourcing your main proteins and produce from?
The fish are caught in Brittany on the Atlantic coast, and in the French Mediterranean, Spanish waters, and Portugal. The chefs have an in-depth knowledge of various fish species, their seasonality, and the importance of preserving their sustainability and ecosystem. The rice originates from
Japan’s Akita region but is cultivated in Spain, nourished by the Ebro, a river from the Pyrenees that closely resembles the water in Japan. The vegetables come from a farm in Tours owned by Anna, a fantastic Japanese woman. She cultivates seasonal Japanese vegetables there. In summer, for example, we source vegetables bursting with flavor and the energy of the sun, such as edamame, fruit aubergine, sweet chili, shiso, okra, and myoga (Japanese ginger flower).
What is a Japanese dining rule to live by?
Respect the products. At Hakuba, it all comes down to the simplicity and balance of the art of Japanese sushi, which aims to highlight the purity of the products in a subtle and refined manner.

wo producers have reigned over Japanese whisky for the last century or so: Suntory, with its famed Yamazaki and Hakushu distilleries, and Nikka, with its own pair of single-malt-producing powerhouses. Now, a trickle of new producers has become a torrent, and an exciting trio wield the know-how—and have the backing—to make a major splash on the scene.
Kanosuke, named for founder and master blender Yoshitsugu Komasa’s grandfather, has been producing shochu on the island of Kyushu for 140 years, stretching back four generations. The Kanosuke Distillery debuted in Japan in 2017 and has gained a foothold in the United States within the past year. Its three core releases include Kanosuke Japanese Single Malt Whisky, Kanosuke Hioki Japanese Pot Still Grain Whisky, and Kanosuke Double Distillery Japanese Blended Whisky.
Hatozaki shares a similar origin story: A fourth-generation member of a shochu-making family in Kyushu decided to produce whisky. Master distiller Kimio Yonezawa began distilling whisky in 2017 with an intriguing array of casks— including mizunara, sakura cherry wood, and Japanese oak—focusing on the blending process to showcase those influences. The current lineup in the United States includes Hatozaki Finest Whisky and Hatozaki Small Batch Whisky.
Perhaps the most exciting of the bunch is Komoro Distillery in Karuizawa. The project leveraged some of its initial funding to bring on board Ian Chang, the longtime master blender of Taiwanese single-malt specialists Kavalan Distillery, as a partner. Komoro plans to operate a handful of distilleries across the country, each producing different signature styles, and to incorporate all those single malts into stunning signature blends. It’s a long-term vision that is only now getting underway—distillation began at the Karuizawa location in the summer of 2023. Komoro’s matured whisky is therefore not yet available for sale, so stay tuned in the years ahead as Chang and his cohorts continue their Japanese whisky journey.

he island of Bonaire, the “B” in the Dutch Caribbean’s ABC trio with Aruba and Curaçao, has long flown under the radar, known as a world-class diving destination for those who wanted nothing more than to dive in the morning and lounge on the beach in the afternoon amid laid-back environs. That’s still on offer, but over the past several years, another tantalizing reason to visit the island has emerged: a phenomenal dining scene that rivals those of major metropolitan cities.
“They call Bonaire the culinary capital of the Caribbean,” says chef Janos Vermaat, who has played a major role in the transformation of the island’s dining scene. Instead of toiling in the demanding world of three-Michelin-star restaurants in continental Europe, Vermaat arrived on the island in 2015 in search of a better quality of life. He stayed and opened his own restaurant, Zara’s, in 2023. This multi-concept restaurant and art gallery offers à la carte rooftop dining, but its true centerpiece is a 10-seat chef’s counter, where guests enjoy a three-hour tasting menu paired with exceptional wines. Standouts range from blackened tuna with wasabi sorbet to barbecue jackfruit served with smoked bell pepper and banana chips.
Another standout on Bonaire’s gourmet scene is Brass Boer, an offshoot of the Michelin-starred Brass Boer Thuis in the Netherlands. There’s no missing the city life here, thanks to its idyllic location on an outdoor patio overlooking the shoreline of Delfins Beach Resort. Here, a six-course tasting menu incorporates the flavors and culture of Bonaire, including a watermelon dish prepared three ways, boasting an abundance of bright flavors and contrasting textures.
But your culinary journey on Bonaire is only just beginning. Chefs Han ten Winkel and Mark Tromop joined forces to create CHEFs Bonaire, the most coveted and in-demand reservation on the island. The tasting menu tour de force books up months in advance. More tasting menus can be found at Restaurant Wanapa, Biña, and even aboard the Melisa Sailing dinner cruise, which transforms the idea of a boozy sunset cruise into an elegant evening of fine dining.
Perhaps instead of going to Bonaire just to dive amid its reefs, you can plunge headfirst into its exceptional culinary lineup. Or even better, do both.
Denmark is a gastronomic mecca, home to an impressive 31 Michelin-starred restaurants (earning a total of 44 stars), along with 101 additional recommended establishments in the Michelin Guide Nordic Countries. Here’s a cheat sheet to help you navigate these culinary gems.

Denmark’s rise as an epicurean hot spot began in Copenhagen in 2003 with Noma, chef René Redzepi’s vision for New Nordic cuisine. The restaurant has since earned three Michelin stars and brought a wealth of attention to the region. The three-star Geranium, also in Copenhagen, sits on the eighth floor of the National Football Stadium and features a hyper-local menu. If time permits, try the three-hour tasting experience, which offers about 20 courses.
While in town, stay at Copenhagen’s historic Hotel d’Angleterre, an 18th-century jewel that has hosted notable authors such as Hans Christian Andersen (The Emperor’s New Clothes) and Isak Dinesen (Out of Africa). Within the hotel is Marchal, which was awarded a star in 2014 and has maintained it ever since. Opt for the multicourse menu, which—depending on the season—can include six or eight
courses, as well as smoked salmon tartare, whole black lobster, and stuffed quail with morel sauce.
Other top-tier restaurants in Copenhagen include Alchemist (two stars) for high-concept holistic dishes; Koan (two stars), by a Noma alum, which blends high-end Korean cuisine with New Nordic ideas; and Kadeau (two stars), which offers a 16- to 18-course wine-paired tasting menu.
If you venture northeast of Copenhagen, you’ll arrive in North Zealand—also known as the Danish Riviera—with even more Michelin-starred options. Søllerød Kro (one star) is a 17th-century thatched house serving French-Scandi cuisine and featuring three elegant rooms. In Western Zealand, Mota (one star)—located in the Anneberg Kulturpark, a haven for creatives—sources its ingredients from nearby farmers or through local fishing and foraging. Jordnær (three stars) offers a French-inspired menu made with local ingredients.
Northwest of Copenhagen is Jutland, a large peninsula that might be familiar to fans of the popular Danish period drama Badehotellet (Seaside Hotel). Henne Kirkeby Kro (two stars) has been hosting hungry travelers since 1790. The cuisine is home-grown and home-raised, and the 12 stylish bedrooms have Hästens mattresses. The menu changes daily at on-the-water Lyst (one star) but always includes fresh-caught and just-picked ingredients. Restaurant TRI (one-star) is a seven-table spot in a tiny coastal town, offering a brilliant nose-to-tail menu alongside wine and house-made juice. Perched on a cliff overlooking the North Sea, Villa Vest (one-star) features a wildly creative, seafood-centric menu. Linger over a second bottle of wine because it is just a short walk for a stay at the charming Villa Vest Badehotel.

An inside look at how one company is streamlining efforts to help with post-disaster recovery.

After the January 2025 fires ravaged Pacific Palisades in California, Rob Kilian and his partners—Tzvika Diner, Chris Kabatsi, and David Malka—launched Westside Build. With years of experience building luxury custom homes across Los Angeles, they are now using their expertise to help Palisades residents rebuild in a way that’s streamlined, cost-effective, and practical. How did you start Westside Build?
My partner Chris, who lost his house, and I were there with our partners during the fires, trying to protect the 20 homes we had under construction in the Palisades, Santa Monica, and Brentwood with our own water trucks. It was a very traumatizing experience for everyone, so we wanted to channel that energy to help in the recovery.
What is Westside Build’s mission?
It’s not just about building amazing houses; it’s about helping people who got turned inside out. Everyone from our company feels deeply connected to this community and immediately wanted to jump in and do whatever we could to get it up and running again. We understand its roots and want to keep its soul intact and keep some of the fabric of the culture in place.
What makes the Palisades special?
The power of that community and the pride—it’s something really unique. It’s a bit removed from the urban fabric, and it’s always felt like a safe and loving place to raise a family. Yes, it has some of the most stunning real estate in the U.S., but it’s not just mansion after mansion. Part of the charm has always been the more modest homes that have been there for decades and the mix of residents the community has attracted, from laid-back surfers to doctors and lawyers.
How is your company different from a typical developer?
We vertically integrate every step—from dealing with taxes and insurance to design and final construction. We’re also using cutting-edge technology, creating 3D digital twins—which are exact 3D computer models of the homes and systems we’re building—for precision planning. Additionally, when it comes to supplies, we have our own lumber company, and we’re even leasing nearby lots for storage and to streamline logistics.
What is your timeline for rebuilding?
In fewer than four months since the fires, we have a group of 12 homes currently under contract. Part of our initiative is to bring high-quality and high-level design that’s typically inaccessible to the average person to the people in the community who want to rebuild, without it taking too long or having quality issues.

Hong Kong’s Upper House is part of a collective of three ultra-contemporary and extraordinarily elegant properties. Designed by Hong Kong architect
André Fu, the public spaces are art pieces in and of themselves, punctuated by a selection of artwork and sculpture. The Upper House’s director of guest experience, Edward Tang, shares, “Since its history, Hong Kong has been at the crossroads of movement and conversation between Asia and the rest of the world—it makes for an incredible art destination unlike any other city.”
Tang recommends visits to nearby galleries, including the relatively new PHD Group (phdgroup.art), a playfully named venue that focuses on emerging and mid-career artists from across Asia. As climate change fuels more frequent and powerful wildfires, sustainable and resilient landscape design has become essential.

During and after the recent Los Angeles wildfires, the media highlighted the Getty Center—built in 1997 as a “marvel of anti-fire engineering”—and the design strategies that prevented it from succumbing to the flames. While its main Brentwood campus remained outside the fire zone, flames reached the museum’s sister campus, the Getty Villa, just 10 miles away in Malibu, prompting many homeowners to notice what specialized developers and landscape architects already knew.
“In order to minimize fire risk within a remodeled landscape design, one must first assess and analyze what and where the combustible materials are in relation to architecture,” says Adam Kober, whose eponymous landscape design firm (koberdesigngroup.com) is based in Southern California. “Landscapes need to be free of plant litter and dead or diseased plant material. Also, the method of fire transmission needs to be taken into
account. Trees and shrubs can transmit fire very quickly if they’re spaced too close to structures, planted in large groupings without breaks, or without at least 6 feet between the bottom of the tree canopy and the top of the shrubs underneath.”
Meanwhile, in Northern California, Lisa Baker, managing principal at VITA (vitainc.com), an interdisciplinary design firm with offices in California and Arizona, is also acutely aware of wildfire risks. “At VITA, our design philosophy for landscape architecture is to work with nature, not against it,” she says.
When it came to relandscaping after the Healdsburg fire, VITA sited reconstruction away from dense canopies and slopes, following defensible space guidelines—such as maintaining a 5-foot non-combustible zone around structures—and avoiding flammable plants like rosemary and oleander.
Similarly, the Getty Villa sits on travertine plazas surrounded by open space that serves as a fire buffer for the museum’s buildings, purpose-built from reinforced concrete and fire-protected steel to preserve seven centuries of the world’s most valuable art treasures. Crushed stone rooftops and carefully managed, drought-resistant plantings prevent falling embers from igniting the museum’s structures. Additionally, regularly pruned, native California oak trees are methodically irrigated with an underground network of pipes and sprinklers
to protect the museum’s buildings.
Regardless of the landscaping aesthetics homeowners will gravitate toward as they start to think about fire-resistant design, Kober suggests being cautious of cutting corners. “Unsurprisingly, many just want to get back to some semblance of normalcy as quickly as possible,” he says. “Sometimes this means that less consideration is being given to the many details in the design process that can cause further problems down the road. We caution people against subpar building materials, construction methods, and overall design.”

LESS THAN 10 YEARS AGO, if you asked someone who had just been to Dubai what it was like, you’d often hear, “Eh—24 hours is enough.” Ask someone who has visited more recently, and you’ll likely be told that the city is among the most fascinating and fastest growing in the world. Spend a week in one of its glamorous high-rise hotels with a view, and you can watch it grow before your eyes, right from your hotel room window, as construction often happens 24 hours a day, seven days a week.
An income-tax-free city, Dubai thrives on expats eager to luxuriate among its sparkling coastlines, which form the backdrop to many of its hotels. With the influx of new residents comes more and more restaurants, shopping, and luxury hotels that are as much places to stay as places to be seen. But in just an hour, you’ll find an exotic landscape of rolling sand dunes— with not a skyscraper in sight—offering both tourists and locals the best of both worlds.
The Burj Khalifa, which became the world’s tallest building at 2,717 feet when it was completed in 2010, and the Jumeirah Burj Al Arab, which dubbed itself “the world’s first 6-star hotel” when it opened in 1999, in many ways set the tone for the city’s architectural landscape, with their streamlined silhouettes and striking spires. And today’s crop of luxury hotels pushes the boundaries even further.
Atlantis The Royal (atlantis.com) appears as a series of stacked blocks, seemingly inspired by a Tetris game. Instead of a monolith, its layered levels and gaps of space in between floors allow for views of the Dubai skyline. Open since 2023, the hotel offers 795 rooms spread across 43 floors and a range of restaurants, from Milos to Carbone to Dinner by Heston Blumenthal. On its 22nd floor is the spectacular swimming pool, complete with spacious private cabanas that include direct infinity-edge pool access, private bathrooms, and plunge pools that face the interior roof deck and DJ booth. For a more subdued experience, Dorchester Collection’s The Lana (dorchestercollection.com) is perhaps Dubai’s most elegant offering. With architecture by Foster + Partners, the 31-story structure debuted in 2024 and is located in front of a bay, offering uniquely unobstructed views toward the northwest part of the city, including the Burj Khalifa. The Dior spa and rooftop High Society restaurant, with a menu from Jean Imbert, also impress.
Finally, Jumeirah (jumeirah.com) offers an astounding 11 hotels in Dubai, each offering something unique. Its beach properties form their own kind of compound, where guests can wander from one to another to experience everything from an old-style market to top-notch dining to canals navigated by water taxis. The just-debuted Jumeirah Marsa Al Arab was inspired by a yacht and features architecture from Shaun Killa and interiors from AvroKO. The contemporary property perfectly complements the nearby Jumeirah Dar Al Masyaf, where its newly renovated Arabian houses feel like private riads, with lush gardens and trickling fountains. —SAMANTHA BROOKS
N PALM BEACH, maximalism is back, martinis are theatrical, and the crowd is trading country clubs for culture clubs. The beauty of today’s Palm Beach lies in its calculated contradiction—where grandmother’s pearls meet statement sneakers, where old-money restraint dances with new-wave exuberance. The island that once epitomized social formality is now courting the downtown crowd: younger, looser, and style-literate. Think of it as Slim Aarons for the Substack generation.
That shift is nowhere more apparent than in the island’s reimagined hospitality scene. Palm House (palmhouse.com), a freshly revived property, trades minimalism for maximalist fantasy, with its coral Murano chandeliers, seashell murals, and poolside cabanas—nodding to Palm Beach’s golden years while inviting a new kind of guest: less clubby and more curious. The design is cinematic; the mood is unbuttoned. This is not a place where you’ll find quiet wealth sipping tea behind hedge walls. Palm House has a bar scene, a point of view, and a playlist.
Similarly transformative, White Elephant (whiteelephant palmbeach.com) brings museum-worthy art to a 1924 landmark, while The Colony’s (thecolonypalmbeach.com) fresh update by Kemble Interiors maintains its pink charm with knowing irony. The soon-to-open Vineta (oetkercollection .com) promises to complete this triumvirate of reinvention, reimagining another local icon through the lens of high European hospitality. Even established properties like the Brazilian Court (thebraziliancourt.com) are upping the ante on amenities and activations with the addition of things like BC One, the hotel’s own 44-foot cruising yacht for guests, and partnerships with ultra-chic brands like Moda Operandi.
Just 20 minutes south of the city’s hub, larger swaths of sand allow for hotels like the Four Seasons (fourseasons.com) and Eau Palm Beach Resort & Spa (eaupalmbeach.com) to offer guests a more expansive resort setting. Keep an eye out for the former’s stunning interiors by Martin Brudnizki, while the latter—acquired last summer by Larry Ellison—now features a Nobu and is expected to reflect Ellison’s signature sense of luxury, similar to his Sensei properties.
This evolution extends to Palm Beach’s culinary landscape, which now welcomes global powerhouses once reserved for metropolitan hubs like New York, Miami, or
Las Vegas. Estiatorio Milos exemplifies this shift, located just across the bridge to West Palm Beach. The acclaimed Greek seafood temple now brings Mediterranean elegance to the island, flying fish directly from the Aegean and attracting a cosmopolitan crowd that values both scene and substance. The restaurant’s arrival signals Palm Beach’s newfound position on the international dining circuit.
Retail spaces have undergone a similar metamorphosis. Worth Avenue’s vias—once the domain of monogrammed tradition—are now punctuated with fresh energy, thanks to the arrival of Julia Amory and Aerin—lifestyle labels that blend preppy codes with a modern sensibility. Meanwhile, the Royal Poinciana Plaza has become the island’s unofficial clubhouse, where gallery-hopping locals rub elbows with visiting art lovers over iced matcha lattes and boutique hauls.
As day transitions to night, Mary Lou’s leads Palm Beach’s after-dark renaissance. Hidden behind a relic bait-and-tackle shop, this cocktail theater and cultural playground is the brainchild of Alex Melillo and team, who’ve turned a family legacy into a layered narrative of local nostalgia and decadent fun. Expect world-class entertainment, from underground DJs to theatrical bites (fried chicken with caviar, anyone?), curated under the eccentric eye of music duo Sofi Tukker. The new Nashville is one in which chefs are experimenting with Japanese fermentation and Mexican mole just a few blocks from legacy recording studios.
East Nashville remains the barometer of what’s next: Sushi Bar sources directly from Tokyo’s Toyosu Market, with its 12-seat counter in the Gulch neighborhood serving rarities like truffle-topped scallop and tuna tartare hand rolls bursting with herbs. Alebrije has evolved from a pop-up to a brickand-mortar standout, with chef Edgar Victoria’s mole enchiladas drawing crowds. At the Noelle hotel, Richard Sandoval’s Lona delivers Mexico City–inspired lump crab guacamole in a 2,900-square-foot space adorned with murals by artist Ruben Ubiera. Meanwhile, Curry Boy BBQ’s James Beard–recognized founders have brought their Southeast Asia–Texas fusion fare—smoky barbecue kissed with Thai curry—to a funky space.
The hospitality scene is matching that ambition. In 2025, Nashville is slated to open the second-most hotel rooms in the United States—a testament to its cultural pull. The Four Seasons (fourseasons.com) set a new bar for luxury in the city when it debuted in 2022, and the hotels that have followed aim to impart their own take on luxury. The 1 Hotel Nashville (1hotels .com) introduced its biophilic, sustainability-driven ethos downtown, while Soho House (sohohouse.com) turned a 1930s hosiery factory into a creative clubhouse, with over 40 local artists on the walls. The forthcoming Edition hotel (editionhotels.com)—by hospitality pioneer Ian Schrager and Marriott, known for globally attuned design and nightlife—will likely anchor the neighborhood’s upscale evolution with signature restaurants and skyline-facing residences.
Culturally, the city’s calendar is filling out. Artville—a buzzy new fair spotlighting visual art, fashion, and design—joins homegrown hits like Musicians Corner and Full Moon Pickin’ Parties, which blend local sounds with civic charm. Even the distillery scene has leveled up: Nelson’s Green Brier, a legacy brand dating back to the 1800s, and Ole Smoky Moonshine, Tennessee’s most visited distillery, now double as event spaces with design-conscious tasting rooms and curated retail. While American tourists have been flocking to Japan in droves (thanks in part to a favorable exchange rate that has made it more desirable than ever), it’s easy to get lost in the array of contemporary charms that keep popping up in the city. But one of the best ways to experience Tokyo is by looking into its past.

From Hoshinoya, it’s easy to continue your voyage into the past, as you’re only a short stroll away from Nihonbashi Bridge. First built in 1603, the bridge marks Japan’s zero-mile marker—the starting point from which the country’s five main thoroughfares branch out from Tokyo.
The Nihonbashi district, therefore, is a prominent and historical one.
Stroll through the streets, and you’ll be revisiting what was once the center of culture and commerce in Edo-era Tokyo. Pop into a random storefront, and it may be a 300-year-old dashi producer or a 200-year-old fruit vendor.
Nihonbashi was also the site of the original fish market that preceded the legendary Tsukiji Market. Although the famed fish auctions have since been moved to a separate facility outside the city center, the hundreds of vendors, shops, and restaurants that once surrounded them remain in what is now known as Tsukiji Outer Market. This locale is still a must-visit, not only to get a sense of that culinary legacy but also to sample some of the best and freshest seafood on the planet.
Back at your indulgent accommodations, be sure to enjoy a meal at the signature restaurant, Nippon Cuisine. The restaurant showcases incredible attention to detail while highlighting regional dishes and traditional ingredients. Stop for a facial at VH Skincare in the Brentwood Gardens for the “dolphin skin” look—even if you are just going to Erewhon for a celebrity smoothie featuring rotating creations from Hailey Bieber and Gisele Bündchen.

IN THE LATE 1800s, binoculars became more widely available, and in 1905, the Audubon Society was formed to protect birds from the feather trade. Both events fueled birdwatching as an amateur hobby, albeit one that didn’t have a hip following. Not much changed until recently, when a few cultural phenomena suddenly put the activity in the spotlight.
Thanks to free apps like Merlin, which identifies bird calls much like Shazam identifies songs, and the popular Netflix show The Residence, whose main character weaves together bird-watching and detective work, there is a full-fledged cultural shift that makes birding cool. According to Alli Smith, Merlin project coordinator at the Cornell Lab of Ornithology, she has seen a massive increase in the number of people using Merlin. “Merlin has been downloaded 26 million times, but the app is actually 11 years old,” explains Smith, “and 21 million of those 26 million downloads are from 2021 to today.”
Birding can be as easy as using Merlin to identify a bird by its song, or as serious as tracking migration patterns for a truly rewarding experience. Esther Blakely, a certified master naturalist from the University of Florida who leads birding experiences tied to migration at The Swag in North Carolina, says that the Great Smoky Mountains are an important stopover and foraging area for about 240 species of birds during their spring and fall migrations. “Some hummingbirds from Central America and Mexico fly over the Gulf of Mexico for four days nonstop before collapsing on the barrier islands of Texas, where Audubon groups await with feeders.”

Smith and her team note that there are a few cardinal (no pun intended) rules of birding—chief among them is to have fun. “Birding forces you to be present and observe and appreciate what’s around you,” says Smith. “We live in a busy world where we tune out to scroll, work, cope, and find a sense of relief from daily complexities. Sometimes being present and fully noticing details about the birds around us can allow us to be better birders, while also bringing connection, stress relief, and some gratitude to our lives.”
It’s also a hobby that is light on equipment. Smith suggests a good pair of binoculars “to level up your experience and give you a better look at a bird’s details.” She recommends checking out bird festivals, sporting goods stores, and camera shops to test different binoculars and discover which ones work and feel best for you.

We tapped two 2025 James Beard Award–nominated sommeliers—chosen in the Outstanding Professional in Beverage Service category—for their recommendations for hidden-gem winemaking regions and innovative producers. Here’s what they had to share.

Rioja has contagious energy right now. Breaking beyond the traditional “Crianza,” “Reserva,” and “Gran Reserva” labels, there’s a focus on local grapes, the restoration of old vineyards from the 1930s to 1950s, and field blends. Especially in the Alavesa area, I’ve tried richly red-fruited and compelling wines from Lanzaga and Bideona. As for single-varietal expressions, Grenache from Rioja is silky and sublime, and I’m seeing more and more 100% Graciano wines—which are decadent and spicy. I just had a 2016 Viña Monty Graciano, grown in the higher sites of Rioja Oriental, which was spectacular.
I’m also very excited about the discussion of polyculture in the vineyard and the transition from small barrels to larger barrels in the cellar. There’s one estate that sums up this appealing philosophy perfectly, and that’s Château Palmer in Margaux.
I know Bordeaux, to some, feels antiquated and “not cool,” but Palmer is one of the most innovative and exciting estates in the world. It manages an entire ecosystem of gardens, forests, animals, vineyards, and employees. It’s not just about the health of the vines—it’s everything working together: polyculture. When the ecosystem is flourishing, the fruit quality is more pristine, and fewer manual influences are needed in the cellar. Also, for the second year of aging for its reds, [Château Palmer] removed all the 225-liter barrels in favor of 3,000-liter foudres, a trend we are seeing all over the world. The “less is more” philosophy has been talked about for decades in wine. Now, we get to taste and feel the progress. Palmer is a great example of that.
Lastly, I’ve coined the term “alternative beverage.” I’m a supporter of fine wine, but I also see potential in a whole new category of wines that are playful and less serious, like fruit-flavored wines that take inspiration from the spirits world. I recently worked on a sparkling fruit wine from Friuli called Fritz & Fredo. There’s Italian Peach and Piña Colada. Think of it like frozen drinks—lighter, better, and more grown-up.

One region I think will be interesting to watch for distinctive, delicious wines is Andalusia. This region has been known for centuries as “sherry country,” but passionate and bold winemakers, such as Ramiro Ibáñez, are crafting exceptional, non-fortified wines outside of the DO regulations. After spending time in both Australia and Bordeaux, Ramiro returned to his homeland in Sanlúcar to craft unique wines that aim to express the terroir of the chalky albariza soils and pay homage to the wines of the region produced in the 19th century. My wine of choice is the Ramiro Ibáñez Ube Miraflores 2023. It’s 100% Palomino from five plots of various ages in Miraflores Alta and
Baja, with three different types of albariza: lentejuelas, lustrillos, and tosca cerrada. It is bottled after about eight months in butts with a light veil of flor—the indigenous yeast cells that naturally form on the surface of sherry wines. Notes of white peach, orange blossom, and mandarin graciously shine through hints of oxidation displayed by notes of almond skin. Another interesting region to be on the lookout for great wines is Corsica. Jean-Baptiste Arena would be my go-to producer. He attended law school but returned home to his family’s domaine in Patrimonio after a harvest internship in Burgundy and followed in his father’s footsteps to become a famed winemaker in his own right. He says, “This happened naturally, as our parents had transmitted their love and passion for this land and everything that springs from it.”
The Jean-Baptiste Arena “Grotte di Sole” VDF Blanco 2017 is currently one of my frequent sippers. It’s 100% Vermentino (Vermentinu) from Patrimonio, grown organically in clay-limestone soils. The wine earns its name in reference to its direct southeastern sun exposure, which produces grapes that are both ripe and complex. The average age of the vines is 60 years old, and they have been a part of the family’s domaine since the 18th century. For me, this wine displays its ripeness through
tropical fruit notes of passion fruit, kiwi, and underripe pineapple. We’re also talking about a wine produced on what is considered to be one of the most beautiful islands in the world. So on the finish, I get a touch of salinity as well. Although round, it’s not lacking in freshness, making it a very versatile pairing wine.
Lastly, the wines of Mount Etna have been getting a lot more attention recently. Benanti is certainly a favorite producer in the somm community and a benchmark producer for the region. A descendant of the Sicilian branch of his family, Giuseppe Benanti began winemaking at the end of the 19th century, and the family tradition lives on to this day at this family-owned-and-operated estate. They focus on indigenous varietals such as Carricante, the sole varietal of the Benanti “Contrada Rinazzo” Etna Bianco Superiore.
One of the most interesting details of this wine is simply the place where it is grown. Contrada Rinazzo is located on the eastern slope of Mount Etna at 2,600 feet in elevation. I encourage guests to envision the grapes being hand-harvested at this height with every sip they take. Not only does this wine showcase the distinctive volcanic ash soil and the generous sun exposure that make up the growing environment of the grape, but it also displays the pure passion that went into producing it. n
