COMMUNITY NEWS Artisan Food Fair at Easton Walled Gardens I

ndulgent and homemade, Easton Walled Gardens celebrates its' third annual food fair on Sunday 17 November, 11am - 3pm. Easton Walled Gardens is at the heart of a diverse culinary scene so what better way to celebrate than by bringing together over 20 of the finest local food and drink producers to celebrate all that the area has to offer. The third Artisan Food Fair is to be held on Sunday 17 November between 11am and 3.00pm. As usual there will be an array of wonderful stall holders offering a large variety of produce from speciality meats and artisan cheeses to handmade confectionery and mouth-watering fudge. As well as delicious produce and the opportunity to get some Christmas shopping done, the gardens will be open for you to wander around at your leisure. The 400-year-old, 12-acre gardens are a relaxing, rural retreat. It’s a chance to see the gardens from a completely different perspective at this time of year while the gardens are being prepared for the 2020 season. The tearoom will be open serving light lunches and afternoon teas and a well-stocked gift shop welcomes you with carefully chosen products for more Christmas shopping inspiration. Garden owner, Ursula Cholmeley says “Living and working on a rural country estate has really given us a great love and respect for local food and drink producers. We want to help celebrate what our region has to offer and have brought together some of the truly talented producers we

Festival of Remembrance I

n November, Peterborough Male Voice Choir, Peterborough Voices and Peterborough Youth Choir will commemorate the region’s fallen soldiers and the service and sacrifice of the armed forces with Festival of Remembrance, a moving evening of beautiful melodies and poignant words for Remembrance Sunday, taking place at The Cresset in Peterborough and St Nicholas’ Chapel King’s Lynn, in support of the Royal British Legion Poppy Appeal. The third event of its kind this promises to be a memorable evening, particularly so in this 75th anniversary year of the D-Day landings and the Battle of Normandy, one of the most remarkable allied wartime operations, when men from all over the world came to fight in Normandy to defeat Nazism and re-establish freedom. While paying tribute to soldiers from America, Britain, Canada, Belgium, Denmark, Holland, Norway, Poland and Australia who fought to defend Britain’s freedoms, values and way of life – many of them losing their lives during that momentous summer of 1944 – the anniversary represents a momentous occasion celebrate peace, liberty, reconciliation and to hope for a peaceful future. Sirens were sounded in Peterborough a total of 650 times during the second world war and the city was among the fi rst to

have an air raid, on 8 June 1940, when several small bombs hit the city centre, damaging several shops and the Lido. On 10 May 1941 the city was caught up in the heaviest night of bombing of the entire blitz with bombs falling in the vicinity of the museum, across Priestgate and into Cowgate, killing two fi re officers and injuring several people. Peterborough played an important part in the first world war with soldiers and sailors from across the country passing through by rail on their way to the front or home on leave. Possibly the most famous visitor to Peterborough - one who never left was Sergeant Thomas Hunter ‘the lonely ANZAC’, who was critically wounded at the battle of the Somme in 1916 and died here, and of course the city has its very own war hero, pioneer of modern nursing Edith Cavell who became probably the most wellknown female casualty of the entire conflict. William Prideaux, the choirs’ director says “Peterborough Male Voice Choir has a long history in the city, going back to not long after first world war when so many local men made the ultimate sacrifice. Given our roots in the local community it seems fitting to mark the occasion with what promises to be a nostalgic evening of wonderful melodies and touching moments, while raising money for a really good cause, the Royal British Legion Poppy Appeal.”

Bloodwise Coffee Morning N OV E M B E R 2 8 B O U R N E C O R N E XC H A N G E

loodwise Coffee Morning was set up by Dr Michael McGregor and his wife Margaret in memory of their son John who sadly died of Leukaemia over 30 years ago. For a university student in the prime of his life this was a cruel disease to succumb to. A coffee morning has been held each year since. Sadly one of the helpers died two years ago of a blood cancer and the coffee morning is now in

memory of both John and Royden (Taff ) Roberts. These coffee mornings have raised over £100,000, all with the aim of eradicating blood cancers. The coffee morning this year is being held on Thursday 28 November at Bourne Corn Exchange between 10 o’clock and 1 o’clock. There is a pound entry charge but this entitles supporters of this charity to a drink and mince pie.

Stamford’s Eddie Harper selected for GB Hockey Development Programme

S

tamford School sports scholar, Eddie Harper, was selected for the Men’s Great Britain Hockey Elite Development Squad for 2019/2020 season. The training squad is comprised of 34 players within the age ranges of U18 to U23 and leads to selection for U21 and U23 appearances. The GB EDP forms a passage to the GB Senior Training Squad, accelerating the development of future medal winning Olympians.

Eddie has represented England at U18 level throughout the 2018/19 season, spanning several international and home appearances. Earlier this year, he was selected to represent England at the 2019 Six Nations competition in Eindhoven, in all five tournament matches against Ireland, Spain, Belgium, Germany and Holland, where he scored his first international goal against Spain. Following repeated selections at Junior Regional Performance Centre level, it was Eddie’s performance at the England Hockey Futures Cup last year that earned him selection for a National Age Groups Squads assessment weekend, whereby he was chosen as one of the final 25 strong England U18 Squad. His hockey career flourished when he joined Stamford

School when he also began playing for Royston Hockey Club and City of Peterborough, moving to National League at the age of 16 to play for Cambridge City Men’s 1st team. Eddie displayed a passion for sport from a young age, first announcing his desire to play hockey for England during an assembly in Year 4 at Therfield Primary School. Following the news of his selection, Eddie said: “It’s been a very demanding few weeks,

mentally and physically, but I’m absolutely thrilled with the result and I’m really looking forward to my next challenge”. Regarding Eddie’s next steps, Ian Harper, Eddie’s father, commented: “It is a very exciting and challenging time for Ed, and rightly so, he is very chuffed. He is great kid and his Mum Jane and I, along with our respective partners, his brother Max and all of his extended family, we could not more proud”.

Stamford School triumph at county-wide bridge building challenge

S

tamford School’s Lower School Engineering Club, made up of 10 pupils across Years 8 and 9, were presented with ‘The Bridging the Gap’ trophy in September following their success against local schools in a county-wide engineering challenge. The Engineering Club’s creative design triumphed, scoring an impressive 95/100 for both aesthetics and engineering; ultimately winning the Club their Trophy.

‘The Bridging the Gap’ challenge tested the design and construction of a miniature bridge, which would withstand as heavy a load as possible whilst being the lightest in weight. This competition is coordinated by The Imagineer Project, The STEM Ambassador Hub, Engineering in Grantham (EiG) and InvestSK and forms part of the South Kesteven District Council’s wider ‘Grantham Bridge’ project; a district-wide endeavour culminating in a beautifully designed

temporary bridge being constructed in the centre of Grantham. The bridge itself hosted a number of community events, performing arts and creative displays. The 10 pupils, who have worked hard on this co-curricular project, whilst completing their studies, include six students from Year 8; Edward Winstanley, Patrick Wienand, Finn Hewitt, Oliver Wardhaugh, James Plenderleith and Harry Wright; alongside 4 students from Year 9; Louie Raybould, George Worthington, Matthew Worthington and Charlie Vickers. Judging was undertaken by Dani Shaw of InvestSK, Jamie Clare of Iconic Engineering and Darren Addlesee, Dean Lawson and Kai Newby of DLS Plastics. Kai, who is in the second year of his toolmaking apprenticeship with DLS Plastics, was assisted by DLS Plastic’s Managing Director, George Brewis, to craft the competition’s trophy. Dean Lawson, Assistant Operations Manager at DLS Plastics and competition

judge, commented: “We were very impressed by the high standard of entries in the competition. The variation was good, and the winning bridge had obvious design features based on real life bridge design. All the students involved clearly worked very hard building their bridges and they should be very proud of their achievement. We very much hope to see more entries next year, congratulations to the students of Stamford School on winning the first ever Bridge Challenge! Look after the Trophy, be ready for the school to challenge for it again next year.”

Helen Becomes InvestSK’s First Apprentice

T

he organisation that encourages businesses in South Kesteven to recruit apprentices is setting a good example by taking on an apprentice of its own.

Helen Ward (18) has joined InvestSK as an apprentice office assistant and will support the economic development company at its office in Grantham while studying for an NVQ Level 3 in Business Administration at Grantham College. “We’re delighted to welcome Helen to the team,” said Steve Bowyer, Chief Executive at InvestSK. “She’s really grasped the opportunity with both hands and I’m pleased to say we’re already seeing the benefits of recruiting an apprentice - the new skill set that Helen brings is really valuable. “We’re practising what we preach. Part of our remit is to help businesses grow by promoting apprenticeships in South Kesteven, and what better way to do that than by taking on an apprentice of our own? Apprenticeships can be a great way for a business to grow their own talent in a way that makes commercial sense.” InvestSK is keen to hear from businesses who are thinking about taking on an apprentice but who might not know exactly how to go about it. “Apprenticeships can be a bit of a mystery for small and medium-sized enterprises

in our area,” Steve continued. “Businesses see the benefits but sometimes they find it hard to get the information they need about how funding works or what process is involved. “Our role is to bridge that gap, put businesses in touch with training providers and strengthen the network of training organisations across South Kesteven. Amy Clark joined InvestSK in July as Business and Skills Officer and since then has been working with local companies to understand their training needs and promote the benefits of taking on apprentices. “In the short time since I joined InvestSK, I’ve met a large number of businesses all expressing their interest in taking on an apprentice,” Amy said. “There’s certainly a demand out there so now we need to make sure local training providers can meet that need.”

Recruiting an apprentice brings benefits for both the apprentice and the business: 81 per cent of customers say they would prefer to buy from a company that employs apprentices. Helen says she’s enjoying her first experience of the working world. “I’m still learning the ropes but so far I’ve been involved in raising purchase orders and processing invoices, arranging meetings and providing administration support to the wider team. “After I left school I had the option of going to university, but it wasn’t the route I wanted to take. ouise Doughty will be visiting Peterborough Central Library on Friday 15 November, talking about her new gripping and original novel, Platform Seven, set on Peterborough Railway Station. She will read from the novel and talk about what inspired the book, and her life as a writer.

Louise is also the author of Apple Tree Yard, made into a BBC TV series in 2017. From the blurb: Platform Seven at 4am: Peterborough Railway Station is deserted. Armed Forces survey has excellent response R

esidents who responded to an Armed Forces survey have been thanked by South Kesteven District Council. More than 700 people replied, with findings helping with understanding all aspects of military life and issues arising within the community. Feedback is now being analysed and the findings will be used to improve local services for individuals and families who are connected to the military. The survey targeted people in South Kesteven, Rutland and Harborough with a connection to the British Armed Forces and was developed by Armed Forces Officer Michelle Woolman-Lane along with Healthwatch Rutland. South Kesteven District Council, Cllr Dean Ward, Armed Forces champion, said how rewarding the response was. “The enthusiasm of people who took part in the survey proves just what a strong military community we have,” he said. “It’s been a privilege to reach out to all those within the services community living in South Kesteven. “I am delighted that so many people from our military community have come forward to take part in this survey and want to thank them for trusting us with so much information. Those connected to the

Armed Forces are a really important part of our district and this has been a golden opportunity to listen to their concerns. “I am looking forward to hearing the survey findings when they are published in the autumn.” The survey report was published in October.

The beautiful town of Oundle will hold its annual Christmas Market on Saturday 7 December from 12 noon until 7pm. Light switch at 5.30pm. Oundle Town Council will fill the town and Queen Victoria Hall with a traditional Christmas Market selling a wonderful array of food, gifts and goodies. There will also be carols, a brass band, fun fair and the Weekenders will be performing in the Queen Victoria Hall. Santa will be in his new Grotto with his reindeer, sleigh and of course, his cheeky elves. Free parking and the town’s fabulous independent shops and cafes will be open for late night shopping.

Needn’t Cost The Earth!

ver the last year we have looked at lots of different garden elements and how these can be achieved in a cost effective and considerate way. Let’s look back at some of those ideas to see how we might pull it all together to create a particular theme that ‘Needn’t cost the earth’.

WHY ARE THEMES IMPORTANT? Use a theme to give all or part of your garden an identity. Everything will have a feeling of belonging to the bigger picture. This also makes choosing plants and other garden features easier. I’ve chosen a woodland theme for it’s long lasting period of interest. If your theme contains lots of natural items, please get permission from the landowner before foraging for materials. Be mindful not to destroy wildlife habitats. Foraging is not permitted is certain places, nature reserves for example.

PULLING IT ALL TOGETHER ACCESS:

You’ll need some shade but that doesn’t mean you have to have trees. It could be the shade of a hedge, a fence, a wall or even your house. If you’re not fortunate enough to have any trees already, consider planting some or at least one as a basis for a Woodland Garden. Sorbus (Mountain Ash) are good all rounders with a light canopy, good autumn tints and berries in a variety of colours. When planting trees, be conscious that tree roots spread horizontally, so keep them away from built structures, drains, ponds and streams.

QUIRKY CONTAINERS:

• The subtle colours of natural wood and stone work well and will eventually green over and melt quietly into the background. • Look for wooden or woven natural materials. • You can plant in logs or use the bark from a log wrapped around a pot.

THE POWER OF PAINT:

• Last months stone look-a-like, polystyrene trough was created with paint and compost. Pictured here on its pallet wood stand with tumbled brick ‘boulders’ alongside. The Violas will keep on going through the winter if deadheaded regularly. Image supplied • For furniture colours, keep it neutral with soft greens to blend in rather than stand out. With paint suppliers offering the rainbow of colours for outdoor use, there is no excuse not have every item in your garden colour co-ordinated!

PLANTS:

Take your theme through the seasons with spring bulbs to billowing summer borders. As the flowers fade and the leaves begin to turn, the baton is taken up by architectural seed heads, coloured stems and bright berries. Spring flowers: Take your cue from nature with Arum, Winter Acconites, Convallaria majalis (Lily-of-the-Valley) snowdrops, primulas, bluebells, pulmonarias and scented perennial violas. These perform before the overhead canopy has become established providing a valuable lifeline for early flying insects. Hellebores can be expensive but a great investment as they self seed and spread. This being the case you may find them for sale at plant sales and village fetes. Coloured stems: Cornus alba ‘Sibirica’ has deep red winter stems and Cornus sanguinea ‘mid winter fire’ provides a veritable bonfire of orange and yellow stems. Berries: Don’t forget the holly the Hawthorn and Viburnums. Deep Shade: Lush, green foliage of ferns, ivies and sarcococca (Christmas Box). Asplenium scolopendrium (Hart’s-tongue fern). Woodland Edge: Ajuga (Bugle), Anemones, both the diminutive wood anemone and the larger and later Japanese anemone/wind flower, Aquilegia (Columbine/ Granny’s Bonnets), Cyclamen, Digitalis (Foxgloves), Hardy Geraniums (Cranesbills), Lamiums (Spotted/Dead Nettles) Vinca minor (Periwinkle) and many more. Woodland Climbers: Use natural materials twiggy sticks, chestnut or hazel canes to support plants. Clematis like to have their feet in the shade as long as they can reach their heads into the sun. Lonicera (Honeysuckle) comes in a variety of colours that flower at different times of year. Many of these plants are skin irritants or toxic if eaten. Always read the label and exercise caution with any plant that you are not totally familiar with.

RAISED BEDS & BORDER EDGES: • Mossy logs. • Log roll made up from vertical logs.

SURFACES AND MULCHES:

• Wooden board walks and log slices or sleepers as stepping stones. • Thick bark mulch under foot and around the plants. Leave the leaves on the borders but not on the plants. • Pine cones littering the ground look interesting and provide homes for critters. • Pine needles can increase the acidity of your soil.

WITH WILDLIFE IN MIND:

• An ideal environment for wildlife to shelter, nest and forage for food. • Leave leaves on the borders for insects to live in and birds to forage. • A pallet wood hedgehog house can be hidden with an insulating layers of leaves and twigs. Upturned pots and log piles provide homes for newts, frogs and toads. • Provide water in a simple bird bath or a mossy edged pond.

FURNITURE & FINISHING TOUCHES:

• Keep it natural with wooden structures and furniture, like last months simple plank bench. • A woodland garden should be strewn with mossy tree stumps and logs. • Hanging mobiles made from pine cones. • Carved wooden toadstools. • Renovate old trees, shrubs and climbers • Remove fallen leaves from plants to prevent damage and disease. Leaving a covering of leaves on bare soil can provide winter homes for beneficial insects. • Bonfires: Larger stems and branches or diseased plant material can be burnt. Please check for hibernating hedgehogs before you light bonfires.

• Keep watering to a minimum and ventilate on warm days. • Remove dead leaves from plants as they can decay and spread disease. • Keep the glass clean and snow free to make the most of low light levels. • Check heaters and thermostats regularly.

IN THE VEGETABLE GARDEN

POTS & CONTAINERS

• Plant Garlic, fruit trees and summer fruiting Raspberry canes • Remove netting from fruit cages if snow is forecast, as the weight can damage the frames. “One snowflake may not weigh much but a whole gang of them can break the branch off a tree!”

• In severe weather make sure your pots are all wrapped up or in a sheltered spot. • Keep watering to a minimum during winter and raise pots up on blocks or feet to help them drain. • Check they're not standing in water or under a leaky gutter.

LOOKING AFTER THE WILDLIFE: I know I say it every month but please spare a thought for the wildlife. Although we are experiencing milder, wetter winters there is still a great need to help where we can. If you can, provide them with a high energy diet and a supply of fresh water. In return you will get a huge sense of satisfaction and a constant supply of entertainment.

LAWN CARE: • Keep off the grass whenever possible. • Mow as necessary. • Remove fallen leaves from lawns promptly to prevent damage and disease.

Cyclamen hederifolium (Ivy leaved Cyclamen)

The perfect little spreading perennial for the base of deciduous trees or the edge of a woodland garden. It's happy in full sun or partial shade and well drained, humus rich soil. It puts on a show of fragrant, pink or white flowers throughout October and November. The pretty marbled leaves often appear after the flowers and remain throughout winter disappearing during summer to return again in autumn.

reating the right ambience for a meal is easier than you think. Don’t spoil the chance of a perfect luncheon or evening get together by skipping on the details of your dining space. After all, if you’ve spent time toiling in the kitchen over a hot stove, you want to present your food in the right way, to be enjoyed by your friends and family. Some of us have dedicated dining rooms, whereas others have bar stools and a breakfast bar. No matter what space you have available, you can make it look beautiful to enjoy your meals with these simple tips:

1. COLOUR SCHEME

Take a look at the colour scheme of your room and create place settings to match. For example, if you have a neutral space in whites/greys, then sprigs of lavender on a linen napkin can look stunning set on plain white crockery. You can create centre pieces with fresh or faux flowers or even purchase fabric to make your own napkins to tie in with your scheme.

2. CROCKERY

Do your plates need a bit of an overhaul? Cracked or missing pieces are annoying and don’t look decadent. Yet a simple set of white or black plates can look really stylish, especially if they are an unusual shape. Look out for rectangular or square dishes which make a welcome change from round ones. You don’t have to spend a fortune on new sets but purchase the best you can - a nicely shaped and weighted plate will wash and display well. If you have more of a cottage-style home then floral or delicately patterned crockery can be in keeping with your style in which case you want to keep the rest of your table dressing simple so as not to appear too cluttered. Having said that, some people really enjoy the vintage vibe that goes with mis-matched crockery and this can be reminiscent of the 1940’s with exquisitely shaped cups and saucers, scalloped plates and painted china. Much

of this can be sourced from charity shops and is very en vogue, especially as you’re not purchasing from new.

3. CHAIRS

Sitting comfortably for a meal, especially if it is likely to last for a little while, is really important to allow your guests to properly settle in and enjoy your food. You may not have expensive dining chairs but these can be made cosier by adding cushions or bolsters. If you have bench-style seating consider adding blankets or rugs for a stylish, yet comfortable effect.

4. LIGHTING

Creating the right mood for your meal is crucial and can be achieved easily depending on what time of day you are

entertaining. Lunch gatherings are best with natural light so wherever possible open the blinds and curtains wide to let the sun shine in. You can add a magical theme of fairy lights over the table for both day and evening settings which make for a safer (and sometimes less toxic) alternative to candles. If you like a bit of flickering light then try to pick a non-scented candle so it doesn’t detract from the taste of your food. Candles in the top of wine bottles are rustic whereas pillar candles in storm lanterns can give off a good, but gentle glow. Lastly, welcoming your guests at the door with a hug and a smile is always a good start to an excellent food experience and if all else fails, a fabulous bottle of wine should be enough to keep the conversation running smoothly!

reating the perfect meal in the kitchen can sometimes be therapeutic, when you have the time. The endless steps of preparing a home-cooked meal can be tedious when the sofa’s calling, cutting corners isn’t something to feel guilty about in the kitchen. We’ve come up with a list of kitchen shortcuts that can save you time and sometimes money.

shortcuts SPEEDY FROZEN FLAVOURS FROZEN WINE CUBES Although leftover wine happens once every blue moon in many households, saving the last dregs to add to stews and sauces can add a real depth of flavour to a meal. Pour wine into ice cube trays and freeze to use whenever needed. White and sparkling work best in creamy or clear sauces and brothy soups, while red wine goes well with tomato or beef-braised varieties. Add a few generous splashes per portion.

BREADCRUMB TRICKS BREADCRUMBS IN A BLITZ Whip up gourmet bread crumbs in a pinch with this trick. If you’ve got any leftover bread, whether that is burger buns or a stale loaf – tear into pieces and freeze in a zipper top bag. Once you’re ready to use breadcrumbs in a meal, ten to twenty pulses in the food processor will transform the content into ready-to-use bread crumbs with no thawing necessary. THICKEN A SAUCE There’s nothing worse than cooking a great meal only to find your sauce is a little lack lustre. If you want a thicker sauce but have run out of flour, all is not lost. Just stir in breadcrumbs and

allow them to cook for a few minutes, so they release their starches. When at the thickness you desire, strain the sauce pressing all the liquid out of the crumbs. You’ll have a thick sauce without that raw-floury taste. CRUMB ALTERNATIVES Having no breadcrumbs at hand doesn’t mean you can’t use them in a meal, its just time to get more creative. Use instant mash as a crumb for meat or fish, mix with herbs and seasoning to get a great taste. Put pretzels or almonds in the food processor to create a crumbtype substitute. You can create gluten free crumbs using different ingredients.

PESTO PORTIONS Depending on how much pesto you need, a quick thawing out of an individual cube or two creates a nice sauce for pasta or chicken, fresh mozzarella and fresh tomatoes. Simply freeze in ice cube trays and use for a tasty addition to many dishes. For a scrumptious alternative, freeze garlic with herbs and butter to add an extra depth to meals, slather onto crusty bread or to add to risotto.

hristmas can be one of the few times of the year when you can get all of your family together. Make the most of having everyone in one place and take loads of great pictures so that you can remember the occasion. But just how do you take a good photo? We help you focus on the key points.

PREPARATION

COMPOSITION

Think ahead with your equipment. If you have a fancy camera, make sure you know how to use it. But don’t buy a camera just for the event; nowadays, most phones can take better photos than your average point-andshoot. Whatever you’re using, check it is fully charged, preferably with spare batteries lined up and has plenty of free memory.

Really good photos aren’t too cluttered. Difficult to do at Christmas, we know, but if you get closer to your subject you could pick out a focal point of an image. Try taking a photo of the turkey with a couple of crackers, or a few presents under the tree. By closing the frame in, you are helping to make sure that images will be of good enough quality when blown-up. Another idea is to try holding your camera differently. If you find yourself always taking portrait photos, mix it up with a few landscape ones.

SETTING

The best photos use natural lighting. However, being in England in the middle of winter doesn’t really help with that. Open curtains to let as much natural light in as you can and make do. If you want to take pictures of fairy lights, make sure the surroundings aren’t too dark. A tripod can be useful to avoid any shaky hands. Fashion your own simple one with bulldog clips or a pile of books.

BE DIFFERENT

Instead of snapping photos while everyone is eating or unwrapping presents, try to catch more staged moments. You could set up a ‘photo booth’ area in front of a plain background, like a curtain, and give out reindeer antlers and Santa hats. It will give you a chance to have photographs with everyone individually, which makes people feel more special and gives this year’s snaps a new twist.

THE FINISHED PRODUCT So that’s it. Christmas is over and now all the photos you have taken will go in a file on your computer, or in a dusty photo album, never to be seen again. But it doesn’t have to be like that. There are many places you can go to that can make your images into something magical. You can print them on mugs, t-shirts or canvases, and give them as a late Christmas gift to all your family.

Have you ever looked through a set of photos and realised you have your finger over the lens in every single one? This is a perfect example of why you should not only check your snaps while you’re going (if you’re not taking them on film, that is) but also why you should take as many as you can. If you take hundreds, you may fill up your memory card more quickly, but at least you can ensure you have a couple of truly beautiful ones. This is one of the few instances where less really does not equal more.

MAKEUP DO’S AND DON’TS THE MINUTE YOU FALL THROUGH THE DOOR You’ve made it back home after your night out. The temptation to crawl into bed hits you, but this moment is a crucial step to the non hangover face regime. All those cheeky drink refills at last night’s get together will sap your skin of essential nutrients, vitamins, and moisture. So, the key to giving your skin some of its glow back the next morning is hydration, it goes without saying that you should drink a large glass or two of water before your head hits the pillow. Whilst you’re in the kitchen, make use of your coolest friend - the fridge. If you’ve got a face pack lying around, pop it in there to help your skin de-puff in the morning. If you’re not that organised, improvise with cucumber slices over the eyes – a quick 30 seconds of this will reduce any inflammation caused by alcohol.

THE MORNING AFTER The killer headache may prevail and the early alarm may send you into despair, but at this point of your battle against hangover skin, you can commend your success so far. To de-puff your skin, use the facemask or cucumber straight out the fridge as a first step. Moisturise before applying any makeup to make your skin ready to face the day. Use an eye cream to soothe your eyes and reduce inflammation. But also remember that dehydration can in fact cause your makeup to slip as the day drags by, so don’t forget to prime your skin before applying makeup. Keep sipping plenty of water alongside your coffee, this not only helps the physical symptoms but will help hydrate your skin back to normal - helping you forget all of last night’s antics by 5pm (hopefully).

Although it may be tempting to slather your face in foundation to hide a multitude of sins, high coverage and dehydrated skin can actually make you look more tired. Opt instead for a tinted moisturiser with more concealer, this will keep your skin looking fresher and more awake. A heavy-duty concealer is great for mornings like these, but if your eye bags seem beyond saving, colour correcting will counteract dark areas, adding a great base for your concealer. To keep your skin dewy, avoid using a lot of matte or powder products. To add luminosity to skin that’s looking lacklustre, choose a cream blush to warm up the cheeks and apply liquid or cream highlight to the tear duct area, brow bone and the centre of the lids to immediately make your complexion brighter. For the eyes, line your water line with a flesh toned pencil liner to appear more awake. Using a black mascara will also counteract redness, even one coat can create the appearance of a more open eye, fooling everyone into thinking you had more than three hours sleep.

BEFORE YOU NOD-OFF The ultimate rule to this stage of your night is to never sleep with your makeup on. If you really want to replenish your skin for the morning, a quick makeup wipe isn’t enough either. Alcohol causes the dilution of blood vessels, which in turn causes inflammation, redness and blemishes. To fight dehydration, use a cleanser that is rich with hydraulic acid to pack moisture back into your skin. Be sure to moisturise after this step, any product will help (we know you don’t care by this point of the night) but facial serums will pack an extra punch when avoiding dryness. Following these steps will help your skin repair as you sleep. You’ll thank yourself in the morning for these extra ten minutes of complexion care.

Time for the

Resurgence of

CAVA? T

ime had it when Champagne ruled supreme in terms of status and true complexity, but was sold at a price point out of reach for many, whom found Cava a worthy alternative and within their budget. These two sparkling wines dominated market share with around 80% by volume. Then, around ten years ago, previously scorned Prosecco began to take the sparking drinks market by storm. One has to ask why, when it is such an inferior drink in qualitative terms. The answer lies in genius marketing. Prosecco was aimed squarely at women and was shown to be the go-to drink for those little celebrations and girlie reunions, where glamourous shots of people having a great time, with a glass of fizz in hand, were splattered all over social media. No-one asked about the flavour or depth of whatever the girls were drinking, they just wanted to look the same, be the same and drink the same. Prosecco tends to sweeter than champagne and the fact is has less of a signature and less to appreciate or understand was seen as a bonus. The new wave of drinkers didn’t need to learn to appreciate it because the drink itself was a sideshow, a simple foil for the actual social

gathering. The snobbery of champagne became irrelevant and drinking Prosecco was no longer seen as downmarket. The rise of Prosecco has been nothing short of staggering. It is now the largest volume of sparkling wine sold in the world, with 120 million bottles being sold in the UK alone (2018). Its not just the UK that became intoxicated with the allure of Prosecco, so too did the US and Germany so much so that 75% of all Prosecco was exported to these three countries alone. Total Prosecco production for 2018 was 600 million bottles -that’s one heck of a lot of selfies! Cava, by comparison, saw its sales crash over the same period. Why? It is a far superior drink which costs broadly the same so why did consumers turn their back on the hitherto highly popular alternative to champagne. Again, its down to marketing but in the case of Cava, the advertorial positioning was a major owngoal. Cava became seen as old fashioned, perhaps

something your parents used to drink on their holidays to Spain when you were younger. Prosecco, on the other hand, was light, frivolous and fun and could be mixed with other drinks, particularly with Aperol Spritz, to extend its draw as a drink for fun-loving goodtime seekers. However, all of this looks about to change. Prosecco sales fell for the first time in a decade this year, partly because all sparking wine sales have fallen, but importantly, their share of the fizz market has slipped. Its no longer the height of fashion and Prosecco has now become a bit, well, M&S; relaible, friendly but something everyone else is drinking. Party goers have always looked to be a bit different and moving from Prosecco to other styles of sparkling wine is really gathering pace. It will be very interesting to see how sparkling wines sales pan out this Christmas. The main beneficiaries so far have been Cremant wines. These are often good quality sparkling wines made in regions across France but outside of Champagne itself. They often include a little bottle age to encourage flavour development and they can just about compete on price. For all its former branding failures, I believe Cava now has the opportunity to seriously regain ground. It is made in the Methode Champenoise, the same way as champagne and is significantly more time consuming to make. Prosecco. Additionally, a second fermentation in bottle takes place during which the bubbles (CO2) are absorbed into the wine itself and only escape once again when the cork is pulled. Prosecco, by comparison, is a bulk produced, still wine that is simply pumped under pressure into bottles. No secondary fermentation take place in bottle, the wine is not aged and because it only involves a short lived carbonation at the point of bottling, the bubbles tend to evaporate very quickly once opened. Cava is everything Prosecco is not! I would encourage you to revisit Cava, prices are very similar to Prosecco and they are widely available in all supermarkets. The following are a few examples of very reliable Cava to try. Marks and Spencer, Cava, Prestige, £60 for six bottles. A classic, traditional Cava. Clean citrus and apple notes and persistent bubbles. Waitrose, Cordorniu Vintage Brut Cava, £10.99. Longer aging on the lees gives this Cava a lovely round mouthfeel with a touch of honey and toasty aromas. The fruit all comes from a single vintage, in this case the 2017. An excellent example. Vegan. Lidl, Arestel, Cava, £5.29. Perhaps the closest to Prosecco in terms of flavour profile but still made under the traditional champagne method. Good acidity, a hint of pear drops and persistent bubbles.

Vegetarian and Vegan Christmas Recipes

C

hristmas is the perfect time to enjoy great food whether you are treating yourself or sharing with friends, family or neighbours. Please enjoy our brand new festive recipes perfect for both vegetarians and vegans.

Cheesy Lattice Pie An indulgent centrepiece, great served with fresh winter greens. Serves: 4-6, Preparation: 1 hour 15 mins including cooling, Cooking: 1 hour. Can be vegan, nut free. INGREDIENTS For the lattice top: 500g vegetarian or vegan puff pastry, in a block Flour, for rolling out For the filling: 500g leeks, finely sliced and washed 1 tbsp olive oil 1 tsp paprika 3 cloves garlic, crushed 1 tsp plain flour 200ml milk or soya milk 100g vegetarian or vegan cheese, grated 100g vegetarian or vegan cream cheese 400g vegetarian or vegan Quorn pieces* 50g sun-dried tomatoes, drained & diced 1 tsp fresh thyme or parsley, finely chopped 50g frozen peas Salt and pepper For the glaze: 1 egg, beaten, or 1 tsp flour and 3 tbsp soya milk, mixed METHOD

1. Preheat the oven to 180°C/gas mark 4. Roll out the pastry on a lightly floured surface to 40cm square, or large enough to cover a pie dish with a 10cm overhang on all sides. With a sharp knife, cut the pastry into strips 3cm wide. 1. Make the lattice top. Lay two strips of pastry on the work surface at right angles, with the ends overlapping. Add new strips one by one, alternating vertical and horizontal strips and weaving them over and under each other to make a pastry lattice sheet. Don’t leave any gaps between the strips. Put the sheet on a baking tray, cover and refrigerate. 1. To make the filling, gently fry the leeks in the oil for 5 minutes, then add the paprika and garlic. Stir constantly while you add the flour, then the milk a little at a time. Add the grated cheese, cream cheese, Quorn, sun-dried tomatoes, herbs and peas. Cook for 5 minutes, stirring often. Season to taste. 1. Place the filling in a 25cm square pie dish and allow to cool. Carefully lift the pastry lattice onto the pie dish and press around the edges with a fork to seal. Trim off any excess pastry. Brush the pastry with the glaze and bake for 45 minutes or until golden. *As an alternative, use other chicken-style pieces, or pressed tofu.

Fruity Trifle with Cashew Cream These individual desserts are creamy, fruity, crunchy, vegan and raw. Serves: 4, Preparation: 40 mins. Vegan, gluten free, wheat free, raw. INGREDIENTS 70g cashew nuts ¼ tsp mixed spice 4 blood oranges 2 tsp vanilla extract 10 ready-to-eat prunes 2 tbsp cacao powder 3 tbsp date syrup 400g frozen summer fruits, thawed and drained METHOD

1. To make the cashew cream, finely chop 20g of the cashews with the mixed spice in a food processor and set aside. Juice one of the oranges and pulse half the juice with the remaining nuts and 1 tsp of the vanilla extract until smooth. If it’s too thick, add a little extra juice. Set the cashew cream aside. 2. For the chocolate sauce, blend 3 prunes, the cacao powder, the remaining vanilla extract, the juice of one orange and 2 tbsp of the date syrup in the food processor until smooth. Set aside. 3. Pick 12 whole fruits from the summer fruits and set aside. Split the rest of the summer fruits into two portions. Blend one portion of the fruit in the food processor with the remaining prunes and 1 tbsp date syrup. Set aside. 4. To make the compote, simply push the other portion of the summer fruits through a sieve and retain the juice, discarding the pulp in the sieve. Peel and segment the remaining two oranges with a sharp knife. 5. Assemble the trifles by dividing the whole summer fruits between four serving glasses. Gently layer the cashew cream, chocolate sauce, orange segments and fruit purée on top, until the glasses are full. Finish with chopped nuts and a drizzle of compote.

Pea & Spinach Soup with Beetroot Swirl A silky, goodness-packed soup that looks really festive. Serves: 4, Preparation: 5 mins, Cooking: 30 mins. Vegan, gluten free, wheat free, nut free. INGREDIENTS For the soup: 1 onion, chopped 1 tbsp olive oil 3 cloves garlic, chopped 1 small potato (around 130g), peeled and chopped 1250ml vegan vegetable stock 100g frozen peas 150g frozen spinach Salt and pepper For the beetroot swirl: 1 cooked beetroot 1 tsp balsamic vinegar ½ tsp smoked paprika 1 tbsp olive oil 2 tbsp water To garnish Soya cream (optional)

1. In a large pan, gently fry the onion in the oil for 5 minutes, then add the garlic and potato. Continue to cook for another 5 minutes. 2. Add the stock to the pan and simmer for 15 minutes, or until the potatoes are cooked. While the soup cooks, put the ingredients for the beetroot swirl into a blender and blend until smooth. Set the finished swirl aside and rinse the jug of the blender thoroughly.

3. Add the peas and spinach to the pan and simmer for 5 minutes. Let the soup cool for a few moments, then blend until smooth. Season to taste, reheat if necessary and serve in warm bowls with a swirl of the beetroot mixture and soya cream if desired.

INGREDIENTS For the pastry: 500g vegan puff or shortcrust pastry, in a block Flour, for rolling out For the inner filling: 50g sun-dried tomatoes (oil reserved) drained and chopped 1 onion, chopped 300g cooked chestnuts, mashed 400g tin butter beans, drained and mashed 2 tsp fresh thyme leaves, chopped 50g ready to eat prunes, chopped 1 tsp mild curry powder 100g chopped mixed nuts Salt and pepper For the outer filling: 400g mixed mushrooms, chopped 2 cloves garlic, finely chopped 2 tsp soy sauce 200g frozen spinach 1 lemon, juice and ½ zest only

To make the outer filling, use the rest of the tomato oil to fry the mushrooms and garlic for 5 minutes. Add the soy sauce, spinach, the lemon zest and juice. Cook for 10 minutes, or until all of the moisture has evaporated. Allow to cool. 4. To assemble the Wellington, line a baking sheet with greaseproof paper and transfer the pastry to it. With the long edge facing you, use

the back of a table knife to lightly mark the pastry in half horizontally, giving two long rectangles. Place the inner filling in the top rectangle, leaving a 3cm border around the edges, and form it into a sausage shape. Pat the mushroom and spinach layer all over the filling to form the outer filling. 5. Brush the pastry borders with a little water. Fold the lower half of the pastry over to enclose the fillings and press all around to seal, then crimp the ends with a fork. Brush with the soya milk and bake for 45 minutes or until golden.

Nut Roast Easy to make and delicious hot or cold, nut roast is the classic main course for a veggie Christmas. Serves: 4-6, Preparation: 15 mins, Cooking: 1 hour 10 mins, vegan, gluten free, wheat free. INGREDIENTS 200g red lentils 1 onion, finely sliced 50g sun-dried tomatoes (oil reserved) drained and chopped 2 cloves garlic, crushed 50g dried apricots, chopped 200g mixed nuts, chopped 50g mixed seeds 1½ tsp dried mixed herbs 1 tsp soy sauce* 1 carrot, grated 1 tsp turmeric powder Salt and pepper METHOD

1. Preheat the oven to 180°C/gas mark 4. Cook the lentils in plenty of water for 15 minutes, then drain using a fine sieve. While the lentils cook, heat a little of the sun-dried tomato oil in your largest frying pan and gently fry the onion for 5 minutes. 2. Add all the other ingredients, except the seasoning, to the pan. Stir really well, add the cooked lentils and stir again, seasoning to taste.

Save money on your

gas & electricity Citizens Advice Mid Lincolnshire

N

ow the days are shorter and the weather is colder, your energy consumption is probably increasing. We would like to share these tips for making your bills as small as possible. You’ll probably save money on your gas and electricity bills by switching to a new supplier. You’ll need to follow a different process for switching if you’re in debt to your supplier, or if you’re a tenant.

BEFORE YOU DECIDE TO SWITCH You should start by: • checking which type of meter you have • finding out if your contract has an ‘exit fee’ for leaving early - it’s usually on your bill • looking at your current suppliers tariffs

IF YOU HAVE A SMART METER

Before you decide to switch, it’s a good idea to contact your new supplier to check if your smart meter will still work the same. For example, with some suppliers you might need to send meter readings yourself.

If you use your smart meter in ‘prepayment mode’, you’ll usually need to top up with your new supplier once you’ve switched. Your old supplier will refund you any remaining credit. Contact your new supplier if you have questions about switching with a smart meter.

CHOOSING THE RIGHT TARIFF

It’s worth thinking about the type of tariff you need before you switch - for example, you might want: • a flexible tariff that you can get out of at any time • an environmentally-friendly tariff • the cheapest tariff available

You should also check whether you need a specific tariff for the type of electricity meter you have - for example, if you have

a prepayment meter or an ‘Economy 7’ meter. If you get the Warm Home Discount, check whether your new supplier offers the Warm Home Discount before you switch you’ll lose it if they don’t. If you’ve applied for the Warm Home Discount but not yet got it, you'll have to apply again if you switch supplier - check if your new supplier has different rules about who gets it.

HOW TO SWITCH SUPPLIER OR TARIFF

Follow these steps to switch: 1. Compare tariffs from different suppliers 2. Once you’ve found one, call the supplier - they’ll set up the switch and tell your old supplier. Alternatively, you can switch online. 3. Take a meter reading on the day of the transfer to give to your new supplier this means they won’t charge you for energy used before the switch. 4. Pay your old supplier’s final bill or get a refund if you’re in credit.

Once the switch has started, you’ll also need to give the new supplier your energy meter reference numbers, known as ‘MPRN’ or ‘MPAN’ numbers. This will make sure they switch your energy supply and not someone else's. You can find these numbers on your energy bill.

IF YOUR OLD SUPPLIER OWES YOU MONEY

They have to pay back any credit they owe you within 10 working days of sending your final bill. If they don’t, they’ll owe you an extra £30 in compensation. You should complain to your energy supplier if they haven’t paid you what they owe.

A smart meter is a new type of energy meter that will eventually be introduced in homes throughout the UK. It has a digital display that lets you keep track of how much energy you’re using, which will help you use less. It can also send data about your usage to your energy supplier to make sure you get accurate energy bills.

Then to his credit, he tried to scan it one more time, it wouldn’t scan – so he went ‘bip’ himself and chucked it through. And it was at that moment I thought ‘oh we’ll be alright as a country we will’. And we will be alright. Trust me.
