Josh Emett and Fleur Caulton are the creators of Queenstown’s famous restaurant Rata, as well as Madam Woo – the Malaysian hawker restaurant with dining establishments in Queenstown, Auckland, Dunedin, Hamilton, and, as of last month, Christchurch. Of all cuisines in the world, I was interested to know, what it was about Malaysian food that has inspired the pair and how do Josh and Fleur go about creating the flavours on their menu.

JOSH Why did you choose Malaysian Food? I’ve always had a love of malaysian food. the difference with madam Woo is we try to focus on traditional dishes. We don’t try to westernise versions of fusion or mixed Asian cuisine. [those at madam Woo] are the best possible versions of malaysian dishes. the way the team do this is by travelling over to malaysia and experiencing as much of the culture and food as possible. Jane Leon, who is malaysian born, has been with us since the beginning and travelled over with us. When we get there we eat as much food as possible! We have a trip coming up soon with 10 of our chefs going.

What is one of your most favourite dishes? Nasi lemak. this is a very traditional dish; malaysia’s national dish. there are a lot of variations, but most include coconut rice, sambal, peanuts, egg, cucumber. the best way to eat it is to mix it all together. It’s absolutely delicious. It’s a dish you can eat any time of day. If you turn up at someone’s house, they probably will have nasi lemak ready. At hawker stalls, you’ll find it wrapped in banana leaf. Once I stopped at a truck stop on the way to Penang, we stood in line, and there were only four left – I was absolutely devastated that I missed out.

What do you love most about travelling to Malaysia? It’s all about the food. Life in malaysia is based around the food, it’s so well celebrated. they are so fanatical about certain dishes they will travel from place to place to get certain dishes.

How do you define the flavours you use? We’ll go and try the same dish in about five different places and really try to knuckle down what they do differently – is it the temperature of the wok? We are pretty organised; we have a big list of places to go and people on the ground who will take us to exactly where we need to go.

FlEuR What is your favourite dish on the menu, and why? Char kway teow is my favourite dish on the menu with prawns, rice noodles and lap cheong (traditional Chinese pork sausage). It is such a tasty, satisfying dish and something I always love eating on the street when in malaysia. madam Woo does an amazing version of this dish. Why have you chosen Malaysian food? What was it about the flavours? I simply love Asian food of any sort. malaysian cuisine is such a varied cuisine with Chinese, Indian and Nonya all in the same place. It is a very interesting cuisine, influenced by its neighbouring countries. What are your favourite places to eat, shop and experience in Malaysia? Every time we go to Malaysia I find something new to like. I prefer to be in the villages rather than big cities. every place has a different version of a national dish, so we are always discovering new flavours. To be honest, when I am there I don’t shop I just eat, which is a great job to have. What do you think we could learn from Malaysian culture? We can learn a lot from malaysian culture and especially their cuisine. they love to combine textures and contrast savoury with sweet in a range of their traditional dishes. Some of these flavours and pairings are just delicious, and I think they resonate well with New Zealand palates. How is Madam Woo a different experience from a traditional Malaysian restaurant? madam Woo food is very authentic and traditional. most of the food we serve can be found anywhere in malaysia; we just serve it in a more modern, funky environment with fun, fast service to create a whole experience.

Vladimir Putin is the world’s most powerful person for four years running. Russia’s president has exerted his country’s influence in nearly every corner of the globe; he has gained a name as a leader who continues to get what he wants. Born in Saint Petersburg (then known as leningrad), Putin came from humble beginnings. his father was a conscript in the Soviet navy and his mother a factory worker. he is the youngest of three boys, two of whom sadly died before his birth (albert died in infancy, and Viktor died of diphtheria during the Siege of leningrad). Putin studied law at the leningrad State university, graduating in 1975. He then became a KGB foreign intelligence officer for 16 years and rose to the rank of lieutenant Colonel before retiring in 1991, when he entered politics. While at its essence architecture is about providing shelter, warmth and a functional living space, it is also about eliciting a response. driven by the ethos that architecture should be ‘visually powerful, intellectually elegant and above all timeless’ tobin Smith and Blair Paterson of CoLab architecture are producing results that are getting people talking. “Whether you love it or hate it, getting feedback means we have done our job,” laughs tobin. Emerging from a long-standing friendship the collaboration between these two talented designers resulted in a design firm destined to forge its own way in our post-quake city. “right from the start we knew we wanted be part of the new architectural language of Christchurch and reference what the city has lost through a new style of building,” tobin says. Nestled on a prominent Fendalton site, one of their most recent designs embodies exactly that. While embracing their characteristic minimal palette of natural, honest materials, at a closer look the property reveals it is a new take on the traditional family home.

For homeowner and builder Blaine horton the brief was simple: create something unique while reworking the typical family home. “there is beauty to be found in simplicity,” enthuses tobin, “and this was an opportunity to showcase that. our focus was on not being too complex, or shape making for the sake of it. But rather to pull back the ideas and achieve a timeless end result.” From the street, the two-storey gabled form, with its single level adjoining pavilion, ignites a sense of familiarity, drawing on the ’60s and ’70s modernist style of architecture that dotted pre-quake Christchurch. Part of the success on the exterior is the uninterrupted lines of the vertical cedar paneling across both the home and the garage. “the cladding over the garage is flush mounted,” explains Tobin. A design decision that transforms a mundane, essential component of the home, into something beautiful. While inside the simplicity of the design continues, there is no disguising that the home is something special. Welcomed into a double height, voluminous entry you are enveloped in a light, bright interior – in total contrast to outside. “It is a nice surprise,” offers tobin. “there is a sense of connection achieved between inside and out, with the black cedar paneling running the length of the entry and up the stairwell, but this is off-set by the contrast of the white living space and windows out to the garden.” Breaking the mass of the house, the entry provides a beautiful connection between inside and out, and also between the upper and lower levels with a custom-made floating staircase leading to the master suite and two of the three double bedrooms. Painted resene Black-White, the interior colour palette is simple in its offering, but vast in its appeal with, once again, a sense of elegance and timelessness drawing you in. running the length of the gabled pavilion is the heart of the home, the open-plan kitchen/living/dining area. Essential to family life the large space effortlessly acts as one, while is also seamlessly able to function as individual spaces with a considered lighting plan working to provide definition. Breaking down the requirements of a traditional family home, tobin and Blair recognised the need for privacy when it came to family bedrooms (all discreetly tucked away on the upper level) and multiple living spaces. the southern side of the home (located behind the garage) is single storey in its form and houses a formal living area and guest bedroom. this wing of the home brings a sense of longevity to the livability of the home, with the second living area providing scope for a growing family, and the guest bedroom and bathroom the option for an alternate master should the stairs become too much.

Investment Wealth Creation Needs a Plan

Lynette McFadden It’s a commonly held belief that acquisition of property is a means of wealth creation if it is done correctly – what it isn’t, is a getrich-quick scheme. I’ve worked with individuals and syndicates who have purchased and accumulated property in a single-minded pursuit of building a substantial nest egg. Some have done spectacularly well and sit on considerable portfolios, and others have seen their hopes and their funds depleted. Both groups started with the same dreams and desire, expecting to benefit from rental incomes or increases in capital values, but there are some significant differences in their approach. Here’s where I’d like to share my observations of factors that helped rather than hindered the investment process. A Plan Having a specific plan as to where to purchase, how much to invest, what would happen if interest rates go up or if long periods of vacancy

occur, is integral to overall success. Get a Plan A, have a back-up Plan B, and then keep assessing it. Look at others who have successfully managed the ups and downs of the market and ask for tips. Join the local property investors’ group and use a business-like approach to the process of developing a portfolio. Don’t listen to people who don’t have investments (note plural: one rental does not make an expert). Location Location will always dominate any real estate discussion or decision, and this is especially important when you are considering rentals. Amenities, schools, recreational facilities and good public transport add to the desirability of a property and its rental potential. The purchase of a small, cheap “orphan” out in the middle of nowhere is close to pointless if you expect to use it as part of your investment strategy – and I have seen people purchase these – so don’t!

Brought up in rural Marlborough, Rebecca Rose lives and works in Titirangi, Auckland, and her work is represented throughout New Zealand and internationally. Rose began her career as a landscape designer, but subsequently studied sculpture, blending her knowledge and interest of the landscape with her new artistic path. Her talents are now securely within that field. Her first works were figurative, often made of concrete. Rose had an interest in the cycles of life and developed work based on the passing of her grandmother. Government House in Wellington bought part of her group, Gathering, an aptly named and placed work for this public space. More recently Rose has been working with metal, creating landscape sculpture, which resonates in meaning with the natural environment. She takes her inspiration from nature, be it a walk along the beach or through the forest. Rose feels a strong interconnection with all things in nature and mankind and seeks to express this in her work. Her work is not dark or full of hidden concepts but light, accessible in meaning and form, provoking interest and contemplation. Modern engineering technologies of software design and laser cutting have allowed artists scope to create larger metal pieces with seemingly intricate patterns with accuracy impossible by hand. More and more artists are using a collaboration of the computer and the laser cutter to produce complex forms in materials from paper to metal. Rose incorporates this technology in some of her work. She can create models of work to show a prospective client or to submit an idea for a show, such as the Bondi Sculpture by the Sea. INDUSTRIAL

Repeated patterns found in natural forms or tessellated mathematical shapes are able to executed: branching tree designs, leaf growth can be cut in varying shapes and sizes. Rose is fascinated with the hidden meta-physics and mathematical patterns found in nature, repeated patterns found from the smallest cellular structure to the universe. Computer-aided designs can aid the production of these. The final piece, however, still requires skill and dexterity of additional forming and welding, but it does allow artists and craftsmen a new and exciting medium. The success of the work is in the design and resolution of the final piece. A fine example of this is Sea Whirl, a large circular disc hanging from a tree branch where the wind and light create an aesthetic dance. Part of Rose’s philosophy is a desire for interaction with her work. Her recent work Sea Anemone, bought for Cottesloe Beach, near Perth, Australia, is six metres in diameter. Sea Anemone demonstrates Rose’s versatility as an artist. The subject matter is relevant to the site, and the construction also takes the site into consideration. It is made of painted hand-pulled tubular steel, designed and engineered to withstand the rigours of a busy public beach. Rose particularly enjoys the sight of children playing on and around this playful work. Rebecca Rose wishes to spread love and joy through her work and does so through the careful design and execution of sophisticated pieces that grace both public and private domains. She has shown her work throughout New Zealand and nearby at Art in a Garden, Flaxmere, Hawarden.

The design of many buildings are inspired by their location, sense of purpose or clever ideas – let’s check how many answers you got right.

What led to your career in aviation? I was often found at Ardmore airfield when I was a kid, hanging around the small planes. One day a pilot asked me if I wanted a ride, that was it. Since then I have always been around aviation in one way or another. Does your family share your love of flying? My wife loves flying, although it’s usually in an A380 on its way to Dubai. My son is planning to be a pilot and my daughters simply go along with my madness and make me feel like all my ideas are good ones, clever girls. What is the most common question someone asks before their first flight? It’s not what people ask but more often what they tell. That they never really thought they would find themselves taking the controls of a light plane, although always wanted to try, then it’s how long before they can fly by themselves and when can they take their friends and family for a flight. Can you recall your first lesson? My first lesson was at Fairoaks, just west of London in January 1988. I was asking those same questions, when can I fly myself, etc. Time does not take away the excitement and fear of that first solo flight, if time takes those memories from you, you are no longer a pilot. How do you define success? I am successful as long as I continue to start each day wanting to make something good happen and end each day with the people who rely on me – family, friends and work colleagues – looking forward to tomorrow so we can do the same thing again. There is no success that does not involve everyone you touch in your life feeling you have contributed to their success.

Chris Walsh highlights how best to add mulch and why it’s important for tree health.

Even after everything we have been through, Christchurch is still ‘The Garden City’. Trees are very significant within our urban landscape. While many may think mulch just makes newly-planted trees look pretty, the reality is all trees benefit from an application of mulch. • Mulch insulates the soil, protecting the roots from extremes in temperature; • Mulch reduces soil moisture loss through evaporation and keeps the roots moist; • Mulch helps to control weed germination and growth; • Mulch reduces the damage to trunks from machinery (such as lawn mowers and line trimmers); • Mulch reduces soil compaction; • Mulch can improve your soil’s fertility. Applying mulch in an urban environment somewhat replicates that of a natural forest where the soil is covered with leaves and organic matter providing nutrition and an optimal environment for root growth and mineral uptake. For mulch to provide its many benefits, it does need to be applied correctly. Too much mulch can cause problems, so it is recommended to apply a layer 5-10cm deep. If the layer is too deep on wet soils, it

can lead to an excess of moisture around the roots, which in turn can lead to root rot. As a general rule, mulch should be applied out to the edge of the tree’s crown. This ensures the majority of the root system is covered. The layer of mulch should look like a doughnut with a cleared space around the trunk. Because mulch holds water, it cannot touch the base of the tree’s trunk as you then risk rotting the root crown. Avoid using mulch containing fresh grass clippings as it heats up while it decomposes and can affect the pH level of the soil, both of which are detrimental to the health of the tree. Mulch can be organic or inorganic. The inorganic mulches, such as stones and rubber, do not need to be replenished, but they do not benefit the tree nutritionally. Organic mulches, such as wood chip, bark nuggets and leaves, decompose and therefore do need to be replenished, but the decomposition process results in improved soil quality, fertility and weed suppression. Trees add so much to our landscape that it really is worth the investment to ensure their longevity. If a tree is properly maintained with a regular pruning and mulching regime, it will provide you and the community with benefits for generations.

The real cost of Landscaping Designing and building the architecture of your landscape deserves the same planning as the architecture of your home. Most of us commence a building project or renovation with a clear idea of the budget available- the same approach is appropriate for landscaping. Good communication is key to completing any landscaping project successfully. Any idea of the range or budget you are prepared to spend on your landscaping should be communicated to your landscape architect from the outset. The same landscaping project can be designed and constructed in a multitude of ways, with different cost structures- which will ultimately result in different quality results. Some projects will last and some won’t. The concept of ‘quality’ landscaping is nebulous, many cheaper landscapers claim quality work- but what exactly does this mean? Ensuring landscaping is constructed to a high industry standard is far more quantifiable than subjective claims of ‘quality’ landscaping. Following correct industry practice will best ensure the longevity of your project. Attention to detail should be given to every aspect of the projecthardscaping such as decking should be constructed to a high finish including oiling or staining. Take care to ask how less readily visible aspects of the project will be managed, for example ensuring plantings are in soil well fertilised with organic matter and properly hydrated. Some landscapers whittle down costs through using less exacting techniques. Once the project is completed, and the invoice paid, many landscapers consider that the end of the association- even when problems arise due to poor workmanship. Check what the landscaper’s policy iswill they stand behind their work and resolve any flaws which arise post completion? • Wood prices fluctuate throughout the year. Many landscapers only buy as and when needed, meaning higher prices are passed on to clients. Purchasing wood supplies when prices are lower enables the saving to be passed on to clients. Check whether the wood supplies are ethically sourced. • Ensuring design and construction complies with the required health and safety standards, meets the appropriate building

Good landscaping highlights the aesthetics of your home, improves street appeal and better utilises space for improved outdoor living. Sugar – What’s the Big Deal? Elly McGuinness takes a look at the sugar debate, and gives us some realistic advice.

Recipes and nutrition plans centred on sugar-free, low-sugar, or freefrom-refined-sugar meals and snacks can be found a plenty on the internet, and in modern cookbooks. Why move aWay fRom the sWeet stuff? a diet high in sugar can: • lead to accelerated tooth decay. • Be highly addictive, leading your brain and body to want more. • Cause insulin spikes and troughs which, over time, challenge the body’s ability to use insulin effectively and increases the risk of type ii diabetes. • Cause energy peaks and troughs rather than steady energy throughout the day. • lead to excess storage of body fat. sugar that is required for energy is burned off. after that, the liver and muscles store some. anything remaining after this is stored as fat. But don’t I need some? all carbohydrate foods will eventually be broken down into sugar inside the body. this includes foods like fruit, vegetables, grains and legumes. so, if you are eating a balanced diet your body and brain will be getting plenty of it. it will also be in a more sustaining form, allowing a gradual release of energy throughout the day, rather than the energy spikes and troughs experienced with high-sugar foods. aRe less RefIned optIons BetteR? Cane sugar, whether it be white or ‘raw’, and even more so ‘high fructose corn syrup’ (HFCS) are the most refined forms of sugar that can have the largest negative impact on the body. this is because, in

the refining process, the nutrients have been removed making the end product a very unnatural thing for the body to deal with. Unrefined alternatives include honey, fresh dates and pure maple syrup. these will provide nutrition for the body and will not impact it in the same way that sugar will. For example, honey has a lower glycaemic index than sugar, meaning it will release sugar into the body more slowly. Unrefined alternatives can still result in insulin spikes and are best consumed alongside other foods that are primarily fat and/or protein based. Beware of any sugar alternatives on offer, whether they are natural sweeteners such as stevia, or claiming to be ‘less refined’, such as brown rice syrup. Reliance on or craving for any form of sweetener (even unrefined ones) is a signal to your body that there’s something missing in your overall nutrition picture. Practical tips to help you reduce your sugar intake: • Avoid processed juices and fizzy drinks. Instead, have a couple of serves of fresh fruit and/or berries which will provide you with a sweet fix along with fibre and nutrients. Add squeezed lemon or herbs, such as mint, to fresh water for flavour. • Significantly reduce packaged and highly processed foods, which often contain hidden sugars. if you must eat something from a packet, check for added sugars – anything ending in ‘ose’ (lactose, glucose, dextrose, sucrose…), and hFCs. • Dressings and sauces are usually high in sugar. Make your own, so you know what’s going into them. Balsamic vinegar and olive oil can make a simple, tasty salad dressing • select baking recipes with sugar substitutes such as dates, pure maple syrup (not the stuff with sugar added!) or honey. also ensure there are protein/fat based foods in the recipes, such as nuts or seeds. this will lower the glycaemic index of the food and slow down the release of sugar into your body.

REDISCOVERING

HAWKE’S BAY Victoria Tait takes a weekend away in one of the most beautiful parts of the country.

On the central-eastern coast of the North Island, Hawke’s Bay is a genteel farming and vineyard region that covers an enormous valley flanked by two tumbling rivers. Since the 1970s, due to its fertile soil, the region has become home to a growing number of excellent wineries. It makes the perfect weekend getaway from Christchurch. With so much on offer, I’ve selected some of my must-do activities. Cape Kidnappers There is more to this lodge and golf course than just pure luxury. The experience starts as you enter through the gates to the 2428-hectare property and take a drive through the sheep and cattle station, native bush and cavernous gorges and gullies. The winding road and stunning scenery has been said to bring a tear to the eye of even the toughest of men. This possibly has something to do with the fact there is one of the world’s most prestigious golf courses at the top. Before you reach this, however, you’ll notice signs not seen on everyday roads: “mind the kiwis” – that is not us, but the actual flightless bird. American philanthropist and multi-millionaire owner Julian Robertson has spent a fortune protecting New Zealand wildlife and built a bird sanctuary on the property, complete with a large predator-proof fence that sinks a metre and a half into the ground.

Wine Tours and Tasting Hawke’s Bay has many of the country’s most renowned wineries, many with exquisite restaurants to match. Craggy Range, named Best New World Winery 2014, is situated at the base of Te Mata Peak and surrounded by views of the rugged cliff face. The famous Terroir Restaurant is reminiscent of the French countryside, with a view of the rambling hills and vineyard. Black Barn, a small, exclusive vineyard situated on the Te Mata hills, faces north. Best known for its premium Bordeaux-style red varieties, such as merlot, cabernet sauvignon and cabernet fran, as well as a fabulous farmers’ market, cheese shop and gourmet gift store. It’s certainly on the must-visit list. Te Mata Estate was established in 1896 and is one of New Zealand’s oldest wineries. They produce some of the country’s top quality reds. They don’t have a restaurant, but a visit to their cellar door is a must. Elephant Hill was designed by Queenstown-based architect John Blair in 2008. The winery’s distinguishing feature is the exterior cladding in natural green pre-patinated copper. The design was inspired by the Pacific Ocean. The stunning outdoor restaurant overlooks the vines with the coast beyond.

Te Mata Peak One of the most loved attractions by locals and tourist alike, the famous peak stands at 399 metres above sea level at the western boundary of the bountiful Heretaunga Plains. The panoramic views are breathtaking in all directions. On a clear day you can see as far as Mt Ruapehu. The peak lies on the edge of the dramatically uplifted limestone hill country, cut through by the Tukituki River.

Insider Tips If you are staying with someone ‘in the know’, head to the Hawke’s Bay Club. Take a step back in time – where women are only allowed in the front parlour – and enjoy genteel provincial New Zealand at its best. Mister D Dining is a rock ‘n’ roll style diner where the emphasis is on fresh and local produce. The salmon is to die for, as is the pulled pork, with white polenta, apple and fennel salad, and pollen salt.

Ross Kiddie discovers Lexus’ sport coupe, the rC200t, punches above its weight.

It was only a matter of time before the new 2-litre turbocharged engine stretched across more Lexus product. Last year the four-cylinder unit first arrived in the Lexus NX sport utility vehicle, it then found its way into the IS sedan, and it is an option in the RC, a two-door sport coupe and, as you would guess, it is badged RC200t. I’ve long been an RC series fan. The 350 with its 3.5-litre V6 engine is a stunner, delivering vivid performance and fitting in well with the concept of manageable power and reasonable economy. The same could be said of the new 200t, it has stunning economy (7.3l/100km or 39mpg) and its 180kW (5800rpm) is more than adequate for the RC’s concept. Sure, it gives way 53kW to the 350, but that is negligible, it’s not often you can exploit an engine’s true potential, and the RC200t delivers honest power and still imparts the fun factor. Lexus also rates the twin-camshaft, 16-valve unit with 350Nm of torque, and if you take into account the areas where maximum torque is produced – 1650rpm to 4400rpm respectively – it has a solid flow of energy across the rev band. There’s a global trend towards smaller-capacity turbocharged engines and Lexus’ entry is a true gem. It is smooth, silent and very flexible. It works through an eight-speed automatic transmission unimpeded; the latter provides a seamless ratio spread and changes which are almost undetectable, bar the needle shift on the tachometer. In true sports car fashion, the RC200t drives through the rear wheels, which is pretty much as Lexus hallmark, and it offers an involving driving experience. There is something about rear-wheeldrive which contributes to a pure handling feel, encouraging driver input. You also get a deliberate feel of control from the rear with the fully independent multiple links controlling suspension movement and keeping the wheels in constant contact with the ground, that on top of the most amazing feedback from the front.

While it is like steering on velvet, there is definite feel which encourages quick turn-in. It is forceful yet delicate in the same movement. I took the test car on the gorgeous road to Lake Coleridge Village. It has a mixture of corners, fast and slow, which really tests chassis control. The RC200t served to prove it is a true touring car. It sits low at just 1395mm; consequently, there is a low centre of gravity, so body movement is well contained. The spring and damper rates are a mix of what is needed to control balance and allow for freedom and absorption for comfort. When powering out of a corner, there is just enough power to test grip at the rear. In saying that there is plenty of grip on offer through sticky Bridgestone Potenza sport specification tyres (265/35 x 19in), and with the traction control settings there is little to suggest the RC200t would oversteer, although that could be manufactured by disengaging the TCS. I don’t do that in any car, and

the RC200t can still be an engaging drive without making it tail happy. It is also a car that uses different size tyres front to rear. The combination of grip and control, along with the involving nature of the steering has an end result of desire; the 200t is a driver’s car of true genius. It looks the part, too. The edgy, coupe-type styling is eye-catching and suggests definite sporty appeal. Inside, there is the sporty/luxury combination which Lexus does so well; it is well specified with all of the Lexus trim detail that makes the brand so appealing. In terms of figures, the Lexus RC200t delivers the goods. It can cut out a standstill to 120km/h time of 7.5sec and lunge through a highway overtake in around 5sec (80km/h to 120km/h). According to its comprehensive onboard fuel usage readout, it will also sip fuel instantaneously at the rate of 6l/100km (47mpg) at 100km/h, the engine very unstressed at 1600rpm. Lexus also claims a 230km/h top speed, if laws allowed. All in all the 200t has respectable all-round performance. It also sits well at $102,900 for the F Sport model as tested. This represents a $23,100 saving over its V6 stablemate, and by my reckoning makes it a very desirable purchase. I’m quite smitten with Lexus product, there’s just enough sporty appeal and, of course, as a luxury brand there is no skimping on detail. The RC200t is beautifully built and feels fabulous to be in as a driver, and as a passenger, too, for that matter. Sure, the rear is a little tight to access, but, once seated there, two occupants can be made comfortable. For me, I see the 200t as a driver’s car and one that excels in all situations. I’d expect nothing less from Lexus as a brand. Also, I simply can’t wait to drive more vehicles across the Toyota/Lexus line-up with the fabulous turbocharged four-potter.

Television and radio cooking personality, Annabelle White believes in keeping food simple and easy. The author of 11 books knows how to add a sense of fun to her presentation style, too. iNgRedieNTs 4 large eggs, at room temperature 6 Tbsp sugar 2 Tbsp water 4 heaped Tbsp cornflour 1 Tbsp plain flour 1 heaped tsp baking powder Cream, peaches and passionfruit, for topping or filling Icing sugar MeTHod Preheat oven to 180°C. Line the base of a 23cm springform cake tin with baking paper. Grease sides of tin well or spray with baking spray. In an electric mixer, beat egg whites. In a pot, place sugar and water and simmer for 2-3 minutes. Remove syrup from heat and add to egg whites. It will puff up beautifully. Add egg yolks. Blend through gently – do not over-mix. Sift cornflour, flour and baking powder then fold gently through egg-white mixture. Bake sponge for 15-20 minutes. Remove from oven then pick up the sponge in the tin and drop it from a height of 30cm. Not upside down! Once cool, remove from the tin and cut sponge in half, and smear base with whipped cream then top with drained peaches and passionfruit syrup. Place other sponge half on top and dust with icing sugar. Note: Adele likes to mix the peaches and passionfruit into the whipped cream and uses that mix to sandwich the sponges together.

Valley Inn Tavern is situated on a leafy corner in Heathcote Valley. Surrounded by hills, the iconic establishment was rebuilt following the 2010 earthquakes. The triangular building now stands prominently on the winding village streets. The tavern is especially attractive on a sunny summer’s day when locals spill onto the outdoor courtyard. Valley Inn is the perfect spot to share an alfresco beverage or a hearty meal with friends. The spacious yet secluded courtyard features large, established peppercorn trees that provide ample shade from the sun. Twisting and turning, the family trees act as living playgrounds with knotted ropes that kids actively climb while their parents socialise. The tavern itself is reminiscent of an elegant British heritage establishment, complete with friendly Kiwi service. We started off our leisurely meal with bacon-covered scallops, which were both light and juicy. A delicious mix of sweet and creamy, the colourful dish was served on top of crispy potato gratin and sautéed spinach. Next up, we tucked into fresh Akaroa salmon. Drizzled with balsamic vinaigrette, the main dish pairs nicely with grilled broccoli, kumara, tomatoes and onions. Having visited on Tuesday night, which was coincidentally Steak Night, we also sampled the rib-eye steak served with sunny-side-up eggs and chips. The delicious cut of steak was cooked to perfection. Valley Inn is all about good honest food cooked well. The neighbourhood tavern is laidback, appealing to families, older couples and twenty-somethings alike. Drawing in an eclectic mix of patrons, the garden bar and restaurant plays host to weekly events. Be sure to stop by the next time you’re in the neighbourhood or make a point of visiting if you’re craving classic Kiwi dishes. You won’t regret a trip to Valley Inn Tavern, a community hub that exudes both comfort and familiarity. With birds chirping to the sound of lively conversation, you’ll find that the hours quickly slip away.

Post-quake Christchurch has forced a new type of eatery to take centre stage in our culinary landscape. we’ve learnt to cross town for a good coffee and to align with local businesses that provide what we want – a warm, welcoming environment that offers style, service, and some sort of connection. open since June 2016, Magnitude Café and Roastery delivers on all counts. with a décor of warm wood and colour accents via on-trend lighting fixtures and Scandi chairs, it is the coffee-roasting machine that will make its mark as you enter. Each week, in the early hours, the monster roars into life, creating a range of blends to be sold as beans or ground coffee. the house blend served by the café is ‘French’, a dark roast described as having a full, strong flavour and a punch of medium citrus acidity. I was eager to sample the goods. Upon ordering, I was pleasantly surprised to be asked when we would like our cappuccino and half-strength latte to arrive: “Straight away, or with breakfast?” A question often missed, yet so appreciated. to eat it was Eggs Florentine ($14.50) that won me over, especially with its choice of rosti: kumara; potato and herb; or mozzarella and bacon. Upon recommendation, I opted for the latter, while my partner-in-dining-crime was encouraged to choose waffles, with berries and yoghurt ($12.50). our fellow café-mates were treated equally as well. Regular patrons were recognised not only by name, but by cabinet food or protein shake order. (I’m told they’re just as friendly towards children, with the highchairs, kids’ table and colouring supplies backing this up.) I believe you don’t know what you’re missing until you are served a decent cup of coffee. Like a good glass of wine, I was able to sip and enjoy every mouthful of mine. My tablemate was much the same, appreciative of her single-shot drink still delivering that pick-me-up punch. It’s encouraging to be told another grinder will soon grace the café counter, as I would be keen to try others in the seven-strong coffee range produced on site. The waffles hit the spot and the eggs were on the money. Jealous glances from beside me were confirmed when my dining date said, “I’d come back just to try the rosti!” Portion size was just right, too. there are plugs under the tables for laptops, large tables to accommodate meetings, and free fluffies for the next generation of coffee lovers. you can host an event here after hours or simply drop in to buy a bag of coffee. the cabinet is ever-evolving and even the breakfast menu is incredibly customisable. For once, it’s all about you. with a logo that incorporates the Christchurch skyline, a faultline and a coffee bean, perhaps it isn’t surprising this café resonates so well with a Cantab looking for more than just incredibly good coffee.

SPARKS 2017 Rockets lit the heavens as local windows, and probably some dentures, were rattled by the explosions overhead. This was not a re-enactment of the Battle of Waterloo, but Sparks 2017, where music and gunpowder form the perfect partnership. In this modern age, there are many table manners that are, quite simply, out of date. for example, the concept a woman must never finish her entire meal, but leave half of it on the plate. Perhaps a good diet tip, but it’s now offensive to your host to do so. Today, we are faced with the issues of smartphone manners, which alone could fill an entire book. The simple answer is to pick your moments: your dinner guest might not appreciate selfies, and your new boss less appreciative of food photography for Instagram, especially over a business lunch. There are, though, some manners that have and will not change. To ensure you’re not offending anyone we suggest taking a look at our list.

Let’s start by keeping it simple. Napkins belong on the lap. The back should be straight without rigidity; unless you are sitting next to someone, you really detest. About elbows, the only place they should be anchored to is the ribs. never on the table, but always down near the sides. use your soup spoon in a motion away from the table edge and leave the spoon in the soup plate when done.
