saw a saying that made me smile in a 'knowing' way the other day: “Nothing's ever really lost until your mum can't find it.” Mother's really do have quite super human powers – moving on from the “Where's my: school bag, phone charger, sweat shirt, shoes…?” questions, Mothers also get a bombardment of statements that they are expected to magically, instantly, resolve, such as “Mum I'm hungry, cold, hot, tired…” They are forever expected to know the answer to “When are we…?” “Why are we…?” and “How are we…?” questions. Mothers are obviously on a par with Google when it comes to knowing everything about anything and it's strange how fathers are often quietly sitting in the same room reading the paper. Dads never seem to get the chance to answer the million everyday questions, or show their prowess in solving everyday dilemmas. The biggest question Dads get is “Where's Mum?” Mums not only know plenty, they can also do things that no-one else can. Mums know how to change a toilet roll, hang up towels, get dishes into the dishwasher and not just on the bench or in the sink. They can find things in the fridge and pantry that are invisible to others and they are often the only ones psychic enough to realise a rubbish bin needs emptying. Mothers also have amazing ears – they can hear a sneeze through two closed doors and along a hallway, and they are equally good at hearing a teenager's step on the stairs in the middle of the night. Mums will also do things that no-one in their right mind would bother with. They will make pancakes in the shape of the Taj Mahal and birthday cakes that look like cargo trains, just to see their children smile. They will sit through cheesy movies, work at work and then do a double shift at home, smooth troubled waters and always be positive, optimistic and encouraging. Where in the world would we be without our mothers? Make sure you honour yours this weekend – Sunday 10 May!

Q& A

hey say if you find a job you love, you’ll never have to work a day of your life. Now I’m not saying that Uli Dinsenbacher, the GM at Porters Ski Area isn’t a hard worker, quite the contrary, but from the outside, it looks like a job that could be a lot of fun to me! Uli is at home in the mountains. He grew up around the ski fields of Bavaria and took up ski instructing and racing at the age of 16. Since then he has spent many years skiing, coaching and instructing in Germany plus North and South America. He arrived in New Zealand in the early ‘80s and met and married a Kiwi girl. He has been working at Porters for over 30 years now – helping develop it into the amazing field it is today. Not surprisingly his two children (young adults) share his passion for the mountains and are keenly involved in skiing. I caught up with Uli to find out a little more about the improvements at Porters and what managing a ski area involves…

6 May 7, 2015 Metropol

Uli Dinsenbacher What was your first job at Porter Heights (since 2007 Porters Ski Area) and when did you become general manager? I was the Ski School Director for three seasons, then became General Manager in 1986. Still here.

You have been at Porters for over 30 years what was the field like in the early days? When I came to Porters, the ski area was fairly basic with limited grooming and rope tows. In the ‘80s we replaced the rope tows with T-Bars, in the early ‘90s we were the first commercial ski area in NZ to install snowmaking, and have gradually improved our infrastructure over the years.

The big news this season is Porters’ fabulous new four-seater chairlift (Easy Rider). Where is it located and have you changed the layout of the field to incorporate it? We located the chairlift loading just a few steps up from the Ticket Office and shifted the whole beginner’s area over to the Platter lift which is on the same level as the car park. This means easy access and an easy progression from beginner to intermediate to advanced lifts and terrain.

What other improvements have you made in the last couple of years? During the last few years we have built a licenced cafeteria in the car park with a big sundeck in front of it, revamped the rentals with the latest state-of-the-art equipment and racking system, introduced an electronic ticketing system and installed a Sunkid Carpet Lift for the beginner skiers.

Porters is the closest ski area to Christchurch, how long does it take to drive there and what are the road conditions and parking like? It takes about 85 minutes from the airport, a bit longer when snow is on the road. Our access road is one of the shortest and easiest in the country and there is a complimentary shuttle service from our chain fitting area on days when chains are required.

“Have a good attitude and be passionate for whatever you do as a job or hobby.”

Can you tell us about the off-piste runs in the area? There are plenty off-piste areas with untracked powder on our black and double black runs. The signature runs are Big Mama and Bluff Face, one of the steepest and longest in the Southern Hemisphere serviced by a lift.

What is your price point like compared to other South Island ski fields? We have one of the best packages for beginners and families. Other bigger commercial ski areas in the South Island are more expensive than Porters.

How many staff are there during high season and what are their roles?

snow and weather, especially in combination with wind. Weather systems in the mountains can change rapidly; we always have to be prepared for it.

On a more personal note, what was the proudest moment of your racing career? Quite a few years ago, winning a NASTAR race in Michigan on hire skis and beating a friend of mine who was a competitive instructor and racer.

If you could go back and tell your teenage self something what would it be?

We employ 20 instructors, and 45 seasonal staff, from car parking, lift operation, snowmakers, groomer operators, road clearing and maintenance staff to employees in the ticket office, administration, rentals, café, and ski patrol.

Have a good attitude and be passionate for whatever you do as a job or hobby. If you can combine both job and hobby, even better.

How many skiers are on field on a busy winter’s day with good snow?

Green tea and red wine –not together!

What is your favourite drink? On a busy day we have up to 1200 customers.

Which is your favourite café, restaurant or bar in Christchurch? What are three things you would suggest a beginner should bring up the mountain?

My favourite café in town is the Addington Coffee Co-op, and my favourite coffee is Underground.

A can-do attitude, warm clothing (gloves, hat, sunglasses) and sunblock for the nice days. If you forget any of the latter it can be all purchased or hired on the mountain, and we can certainly help you get on and achieve lots in a day.

What is one thing Metropol readers would be surprised to know about you? I have a master degree in brewing beer.

What do you love about your job?

What are you like at parties?

Being in the mountains and snow, dealing with daily challenges and working with people from all over the world. As well as being able to go for a ski every day.

Depends on the party; I go with the flow.

What are the challenges? The biggest challenges are the factors we can’t control like

What's next on the wish list? Going to the Antarctic from Ushuaia. In the off season I want to ski some more of the top ski areas in the Northern Hemisphere – I am slowly ticking off the list.

Bubbles for Mum An elegant bottle of bubbles, inspired by the woman behind Allan Scott Family Winemakers, makes the perfect addition to a Mother's Day lunch or luxury high tea this year. Flavoursome and graceful, the Allan Scott Cecilia Brut NV carries the middle name of Catherine Cecilia Scott – wife of winemaking founder Allan Scott, and mother to children Josh, Victoria and Sara, all of whom work in the family business. “Our mother is an avid bubbles fan, it's her favourite drink,” explains daughter Victoria. “Dad decided early on that he should probably start making some bubbles or else she'd send him broke by drinking Champagne all the time – and so he created the Cecilia range, which includes a Vintage, a Rosé, and Mum's favourite, the Brut NV.” At the Scott family's traditional Mother's Day lunch in the Marlborough Sounds, it will be the drink of choice for guest of honour Catherine and her two daughters. Make your mum the guest of honour wherever you are – Sunday 10 May.

INTERNATIONAL THRILLERS How do you solve a murder in a high-security area where no one knows who the other people are or what they're doing there?

his is the premise on which Peter Clements has based his latest novel, A Murder at Bletchley Park, which is set during World War 2 at the very secretive home of Britain's codebreakers, and which was also the location for the outstanding recent film, The Imitation Game, which told the story of the pioneering computer scientist Alan Turing, who led the deciphering of the German Enigma code. Murder at Bletchley Park, however, is a fictional story about the investigation of the murder of a woman, although it also successfully recaptures the historical setting and the various levels of intrigue that were going on there at that time. “She's only one casualty in a war in which tens of thousands died. It takes place in the autumn of 1941, the fulcrum of World War 2, when the sleeping giant, America, came into the war,” says Peter. To help understand the principal characters in the book, including the spies, Peter also touches on the rise of fascism under Mosley in Britain before the war, the Spanish Civil War and the beginning of the Cold War. There is also a touch of the British TV series Foyle's War, with the murder being investigated by two Special Branch police officers, one from the East End of London, the other a former policeman in India. “Critics may say that I'm trying to bring too much into it but I'm trying to get

people to understand the circumstances,” he says. Born in Britain, Peter had some experience in this world of intrigue himself during his military service as a young man, working for three years with Royal Air Force Intelligence, which took him to the Middle East and Cyprus. “In Intelligence, you usually don't know what the others are doing or what it's all about. You only do your own little bit. It's so boring. You don't even know the finished product of what you've been doing,” says Peter. Having learned a considerable amount about the behind-the-scenes world of Intelligence at that time, he has kept up that interest ever since, eventually bringing him to writing his latest novel. Peter stresses that the writing of the book was purely coincidental to the release of The Imitation Game, the general rise of interest in Bletchley Park, which has been reopened as a museum, and the English TV series, The Bletchley Circle, about four women code-breakers

CREATED IN CHRISTCHURCH By Hans Petrovic year. After the war, the family returned to Britain and then went on to Germany. Always a traveller, Peter learned to fly as a young adult in Canada, where he also met his wife, Valerie. “I got my commercial flying licence in Canada but couldn't find employment there during the days of the Vietnam War. Valerie and I decided to come to New Zealand in 1966, where I got a job flying for Mt Cook Airlines,” he says. Peter also worked for television during its early days in New Zealand. In the late 1970s, he was the presenter of Free Time on what was then known as South Pacific Television; and made a six-hour programme on the history of aviation in New Zealand, entitled Off the Ground, for National TV. He then went on to make flight-security programmes, commissioned by the Civil Aviation Authority, to be shown to groups like flying schools and helicopter companies. He also appeared in a couple of films in the 1980s. At the age of 50, Peter got a political science honours degree at the University of Canterbury. This led on to studies in peace-keeping at the Lester B. Pearson Canadian Institute in Nova Scotia, which was also attended by Russian, Ukrainian, Guyanian, Lithuanian and Irish Intelligence personnel, as well as a few civilians. The father of two children, with seven grandchildren, Peter is now comfortably settled in the Murray Aynsley Hill area of Christchurch. His other three books are all international thrillers: The Fifth Agenda, about a biochemist in germ warfare; The Third Temple, the history of Israel through the experiences of a family; and a novella, Russian Revenge. His latest book, A Murder at Bletchley Park, can be bought at Scorpio Books in Riccarton, Paper Plus at Merivale, the University Book Shop and through Amazon.

Peter was a pilot for Mt Cook Airlines for 30 years, seen here on his last day.

MT PLEASANT'S SENSE OF COMMUNITY A sense of community has long been a strong aspect of life in the Mt Pleasant area and that will be strongly reinforced by the magnificent Memorial Community Centre that is to be rebuilt down in the McCormacks Bay Road area.

he new multi-purpose centre's venues for community events, meetings and personal celebrations, will offer something for everyone. With the nearby Avon-Heathcote Estuary as a source of inspiration, the centre's landscape design includes volcanic rock banks, timber decking, exposed aggregate paving and native plantings to reflect the surrounding natural environment. With a ground area of 450sqm and an overall internal floor area of 600sqm, the two-storey building will have a highperformance, lightweight internal structure and external canopy, designed to withstand future earthquakes. “We've got both resource consent and building consent and we're ready to go,” says Derek McCullough, the president of the Mr Pleasant Community Centre and Residents' Association. “It's back to the future for the Mt Pleasant community. To meet the need for a community facility back in 1945, the

Asset Sure Quantity Surveying

residents worked together with the government to establish a memorial centre. “After World War 2, the government had a scheme to help communities build war memorials but the Mt Pleasant community decided a hall would be better than just a stone monument. This was an unusual situation, resulting in our community centre being owned by the community and not the council. “This turned out to be to our advantage because we could move ahead with the replacement of the centre, which was

destroyed by the 2011 earthquakes. We didn't have to wait for council approval of the rebuild. What we needed was the support of the community to make it happen again. “Since 2011, the Mt Pleasant Community Centre and Residents' Association has worked steadily on the project, consulting with the community and raising $3 million through grants and insurance payments. “However, we're still $650,000 short of the replacement cost and so we're inviting everyone to become part of the new centre by becoming a Square Foot Sponsor.” Every sponsor will receive a certificate noting the number of square feet. Your name will also be listed on a board in the lobby of the new centre. Donations can be made by visiting communitycentre, through direct or Internet banking with Westpac Ferrymead, or posting a cheque to Mount Pleasant Community Centre, 3 McCormacks Bay Rd, Christchurch 0881.

Alleviating STRESS “A number of owners of properties in residential multiunit complexes are facing further difficult and potentially stressful times,” says Ann Woods, managing director of Skyway Body Corporate Services Ltd. “For four years many have been waiting for their earthquake claims to be dealt with by EQC and for repairs to commence with EQR via the Canterbury Home Repair Programme available to most home owners.”

Tanya Morris, An n Woods, Linda Ku ipers

QC is tackling the claims now, but in its push to achieve settlement and scale down the EQR repair programme it is likely to offer some owners cash settlements rather than undertaking the required repair work. Often cash settlement is not the preferred option for owners, who will need to have their repairs re-scoped and priced by a building company to ensure that the amount being offered as a cash settlement is going to be sufficient for the required repairs. Once that process is completed they will be left to arrange and manage their own repairs. “This is tough, particularly for those who do not have the assistance of a professional body corporate manager such as Skyway.” Skyway's portfolio includes a variety of multi-unit complexes in the South Island comprising residential and commercial/industrial properties ranging in size from three to seventy units. To talk about the services your Body Corporate needs email for further information.

iD Dunedin delivers

Heading to Dunedin for iD Fashion Week is definitely one of the highlights of my winter calendar.

Emerging Designer finalist Kelsi Bennett

Emerging Designer finalist Vanessa Emirian

rriving on Thursday in the late autumn sunshine I was dropped to the Otago museum to attend a behind the scenes tour of their extensive and very well curated clothing collection. Bracelets of human hair, a king penguin muff and a sneaky peek at one of Queen Victoria's nighties kick started my iD experience. Thursday evening was the Emerging Designer Awards where some of the most amazing young designers from around the globe put their collections to the panel of international judges including Doris Raymond from the famed Los

Angeles vintage store 'The Way we Wore' and TV show 'La Frockstars'. Carolyn Enting the associate editor of Mindfood Style, Doris De Pont, Margarita Robertson and Tanya Carlson all iconic NZ fashion designers worked with Doris Raymond to complete the judging panel. The winner Steve Hall from Massey University kept us thinking hard with his collection 'Abandon Man' featuring minimalist clothing with a Japanese and samurai feel to the collection. I'm not sure his male dress will take off here in Christchurch but it was certainly food for thought and the collection beautifully put together. Emerging Designer winner Steve Hall

FASHION, HEALTH & BEAUTY unedin Railway station was the home of the longest catwalk in the Southern Hemisphere on Friday evening. Local and national designers showed their winter collections. It is refreshing to see clothing on the catwalk that is available to purchase immediately. I certainly came home with a lighter wallet after seeing what the designers had to oer! Thank you Dunedin. Christchurch's' Debbie Lawson from Deval spared me a few moments to talk me through 'Deval Winter 2015'. Her capsule collection featured strong leather elements and beautiful clean cut tailoring using only the highest quality silk and wool fabrics and construction techniques. A navy and nude colour palette with gold hardware and trim to give it a military edge and modern feel summed up the collection. Highlights were the nude leather trousers and matching top and classic navy jacket. A Deval leather jacket is a must have investment piece and Debbie keeps coming back with new and fresh designs that make you think one is simply not enough... Find Deval in Merivale and at The Tannery. Canterbury born and bred Charmaine Reveley was one of the lynchpin designers in the Friday show – her winter collection 'Halves' featured a signature print of half of each a rose and a chrysanthemum. She also extrapolated this through into her fabric choice by combining heavy and light fabrics in one garment. Her gold and black evening dress was a hit and teamed well with all the signature colours in her collection of raspberry pink and jade. The pink coat is a great buy in either the blanket style or tailored piece. Find Charmaine Reveley at Deval. Perriam a new knitwear label from Wanaka also showed garments that will well suit the Canterbury climate. Christina Perriam the designer experimented with merino leather with great success especially when combined with her luxury merino knitwear. The Perriam Woman Winter 2015 collection features 20 New York inspired pieces that include touches of metallic gold, black on black, prints, paneled arms and pom-pom trims. Check out the kids' collection as well - quality and style for the little ones. Purchase at Back at home in Christchurch the cold weather has hit and I am cosy in my Deval leather jacket and snuggly knitwear. Thank you iD Dunedin for making me think about fashion; enjoy the vibe and have a great time. I'll be back next year.

Ilabb's Creative Creatures 'Q2 winter' collection of athletic/street aesthetic wear is uber cool.

esigners Tash Loo, Blake Gordon and Matt Saunders say the inspiration for the look comes from what they call “renaissance athletic”. “It's a combo of strong simple athletic panelling/prints/silhouettes/colour combos and looking back on interesting historical details. Each collection has an injection of a 'concept' to give them their own identity.” This latest range has a back story about ancient creatures that are resurrected to help bring out the creativeness in all of us. The designers say that may sound crazy but, “it makes for an interesting and fun design process.”

here's been an optometry practice here for many years. It was formerly Bell Optometrists, but since 1996 it has been owned by Paul and Debra Hey. The addition of new equipment and a modern open-plan frame display area featuring a great range of stylish glasses has allowed the couple to improve the range of products and services available. Paul and Debra are joined by fellow optometrist Alison Appleyard and receptionists Tegan, Debbie and Lauren in bringing patients high quality, friendly and distinctly personal service. Indeed it is their real enjoyment in

spending time with patients that is the hallmark of Hey Optometrists. People coming to the practice can see the same optometrist each time for their comprehensive eye examination and build up a relationship and a rapport. Tegan, the “fashion diva” of the practice, likes nothing better than to find the perfect frame to suit a patient from the wide variety in the showroom. There are Kate Sylvester, Sass and Bide, Oroton, Calvin Klein, Marc by Marc Jacobs and Tom Ford to name just a few – frames that are that little bit different to ensure you will stand out from the crowd. Hey Optometrists also have a good range of quality sunglasses to buy off the

Debra, Paul and Alison (optometrists) shelf, as well as making up prescription ones for spectacle wearers. Top quality lenses too are a feature of the practice, especially the latest digitally surfaced free-form progressive lenses that are easier to adapt to and have a wider field of vision. Hey Optometrists are open Monday – Friday 9am – 5.30pm and up until 7pm on Thursday by appointment only. Call (03) 366 0190 or drop by their showroom. Their website sets out in detail their range of services.

Winter, and the colder weather it brings, is almost here. A lot of people notice that their skin is dull and dry looking. The changes are due to the cold, harsh environment outside and the warm, dry air inside.

WINTER skin care! W

hen your skin is dry it looks older and more wrinkled than it really is. It is the superficial layers of skin that are dry and no matter how much water you drink and how well hydrated you are it doesn't help. Hydra-dermabrasion uses sterile salt water and air at high pressure (it was invented by a Russian rocket- scientist!) to gently exfoliate the dull, dead skin cells from the surface of the skin leaving it looking hydrated and fresh. Another good treatment at this time of

year is IPL. IPL (intense pulsed light) is good for removing the brown spots caused by sun-damage and the redness from superficial, broken capillaries. It also stimulates collagen production and people notice that their skin is clearer, firmer and the pores are smaller. Of course sometimes it is just easier to inject the hydration into the skin. Dr Brigid Lee uses a variety of dermal

fillers as she finds that they are all slightly different and it is important to select the correct filler for the job and for the client. “Lately I have been doing a lot of hydrating fillers. These fillers don't add any volume to a clients face but are very hydrophilic (water loving) so they attract water into the skin leaving the client with beautifully hydrated skin that looks healthy.”

The ‘70s

This season's key trends are a hark back to our laid back and fun filled '70s – with tassels, fringing and bold prints in mustard, orange and khaki featuring. Military style and colours also feature strongly in many collections and look great teamed with brights on a cold day. Navy is most definitely the new black and now is the season to invest while it's everywhere. Navy also looks so much better on most skin tones where black can harden and age. Oversized cardigans and knitwear is also strong this season as are longer hem lengths and fuller skirts. Short boots are very much on trend, but watch out next winter for the longer styles. Colour is everywhere and it's so great to brighten up a cold grey day. Happy shopping!

Providing excellent service is imperative to Christchurch Orthodo

ntics, beginning

from the moment their patients arrive.

New orthodontist

joins team

A new Orthodontist is joining Christchurch Orthodontics team, the practice which prides itself on creating smiles that inspire confidence.

e are very excited to announce the arrival of our new Orthodontist, Dr Christine (Chrissy) Bailey to our practice next month,” says Orthodontist Dr Russell Lovatt, who established the practice when Riccarton Orthodontic Practice closed due to the Christchurch Earthquakes in 2012. The addition of another experienced orthodontist means Christchurch Orthodontics will now offer a MondayFriday service at their Christchurch practice, while growing their North Canterbury practice based at Rangiora Dental Centre. “This expansion means we can offer many more new patient consultations and increased flexibility in appointments,”

says Russell. “With the choice of female or male experienced orthodontists we can now meet more needs.” Christchurch born and bred, Chrissy has extensive experience in orthodontics. Graduating from the University of Otago in 2003, she received a Doctorate in Orthodontics at the University of Melbourne, before working in both private practice as well as the Dental Hospital in Melbourne, where she also taught.

Chrissy is passionate about really working with and getting to know her patients. She remembers the difference orthodontic treatment made to herself, and enjoys knowing that she'll have the same positive impact on her patients. Providing excellent service is imperative to Christchurch Orthodontics, from the moment their patients arrive at their smart, friendly practice. They offer free wifi access, iPad, magazines, puzzles and even a PSP and Xbox. They utilise the best current techniques and materials, including digital photos and xrays as well as a 3D scanner, model scanner and printer onsite. All new patients go away with custom created booklets which include photos, xrays and detailed information of the various orthodontic options for them. With a commitment to innovation and technology, Christchurch Orthodontics offers a variety of treatment options and was the first to introduce Suresmile® in the South Island 18 months ago - its customised robotic-pre-bent orthodontic wires lends itself to more accurate treatment and results in less treatment time. Christchurch Orthodontics welcomes your enquiry on (03) 962 0334, or visit for more information.

Many of fashion's most ICONIC pieces were designed with the CREATIVE freedom of those FUN-LOVING, edgy and FLAMBOYANT designers of the '60s. Think ANDRÉ COURRÈGES – the inventor of the MINI SKIRT, the triangle shaped shift dress and the GO-GO BOOT; MARY QUANT who named and brought the mini skirt into mainstream; HUBERT GIVENCHY who refined style by dressing Audrey Hepburn, and PUCCI for his trademark colourful PSYCHEDELIC PRINTS.

t is no wonder that elements of '60s style has been reinvented over the decades and with fashion houses such as Gucci, Miu Miu and Louis Vuitton reinterpreting key looks in recent collections, the carefree expressionism of that wild era is ubiquitous. Autumn/winter 2015's interpretation of the '60s does have a unique twist though. It is more about conveying the 'attitude' of that radical and rebellious era, than a full-on reproduction. Christchurch brand Firklover's creative team of designers, editor and director have presented their edit of the vibrant, retro style of the '60s and '70s for the season - it is both compelling and ready to wear. Firklover's owner Clover Qi launched online fashion boutique Firklover last year and carefully selected capsules of the collection (some exclusive) are also stocked at Where the Fox Lives in The Tannery and Robe in Rangiora. Clover is excited about bringing the youth and vitality of '60s fashion to Christchurch; she explains that it brings brightness to our social environment which has had its challenges postearthquakes. The collections include modern takes on '60s hippie fashion tops, a selection of winter's 'must have' pencil skirts, A-line dresses that are fun, flirty and flattering on any shape, and the simple tunic dress

which promotes a youthful silhouette. Boxy dresses are seen in an array of geometric patterns and jackets and coats are in colourful, warm wool-blends. These timeless classics are not limited to age. Call in to Robe or Where the Fox Lives or shop online at You will find that Firklover is a label that is challenging the current market and bringing distinct new designs to women who crave individual style.

Variety the spice of winter Women have never been happier to see winter arrive. At sweet boutique Made in the Shade the stock is being well received thanks to the “variety of mod new labels and winter couture,” says owner Ali Donn.

here's a unique French/Italian influence emerging in store. A focus on femininity sees plenty of sheer, polka dots, delicate detailing and ruching from the likes of Animale that is sure to infuse wardrobes with European flair. Similarly, funky necklines are a luxe trend with a dual purpose: wrapping wearers in warmth as well as concealing the neck for the more self-conscious of the fashion savvy. Women are loving the comfort of Lisette pants and how well they interrelate with other aesthetics. They are equally versatile with ponchos, tunics, layered tops and jackets in creating radiantly chic looks. Not only are the creations visually compelling, but with lots of luxurious natural knitwear and velvet in collections from Bazaar and Optimum, made here in NZ, the pieces feel luscious and are addictive to wear. With so much variety and an open colour palette, it's comforting to know that Ali and Sharon are on hand to show customers how to interact their wardrobe to get the most out of it economically. THE WORLD'S BEST FEMALE CHEF Hélène Darroze of Hélène Darroze in Paris, France and of Hélène Darroze at the Connaught in London, UK has been named the 2015 Veuve Clicquot World's Best Female Chef. She will be honoured at The World's 50 Best Restaurants Awards, sponsored by S.Pellegrino & Acqua Panna, in London in June. Hélène Darroze

rench-born Hélène Darroze is a fourth generation chef who, after completing a degree from l'Ecole Supérieure de Commerce de Bordeaux, joined Alain Ducasse's team at the prestigious Louis XV restaurant in Monaco. After three years under his tutelage both in business and in the kitchen, she

returned home to the family restaurant, Chez Darroze, in Villeneuve-de-Marsan in the Landes region. There, in 1995, Darroze's father gave her the keys to the kitchen, where she spent the next four years refining her culinary style and honing her skills. At the age of 32, Darroze closed the family restaurant and set her sights on

Paris, opening her eponymous restaurant on the Left Bank to critical acclaim and widespread commendation. Darroze's talent and heartfelt contemporary French cuisine caught the attention of the Connaught, leading to the opening of Hélène Darroze at the Connaught in 2008. Seven years on, Darroze remains head chef at Hélène Darroze at the Connaught and her namesake restaurant in Paris. She travels regularly between Paris and London with her two children, Charlotte and Quiterie, overseeing all aspects of her businesses. The Veuve Clicquot World's Best Female Chef award celebrates the work of a woman whose cooking most impresses the world's toughest critics and most venerated chefs, more than 900 of whom voted in this category.

Surprising, HEALTHY, delicious Caralee Caldwell, who was a guest at the Christchurch Food Show recently, has a philosophy of only eating 'real foods'. Her blog and recently released cook book Real Food Pledge include some delicious 'real food' recipes. Caralee shares her recipe for Mini Raw Chocolate Tarts with Metropol…

Ingredients Base 1 cup raw cashews 1 cup dried dates 1 cup of shredded coconut (unsweetened) 2 tablespoons cacao powder 1 tablespoon natural maple syrup 2 tablespoons coconut oil (melted) Dash vanilla extract Topping 1 cup medjool dates 1/4 cup coconut oil (melted) Dash vanilla extract Pinch of salt 2 tablespoons cacao powder 1 punnet of raspberries (to garnish)

Instructions 1. To make the base, place all the dry ingredients in the food processor and whizz together until fine and crumbly. 2. Add the maple syrup and coconut oil. 3. Whizz again until the ingredients are combined and sticky when pressed together. 4. Press the mixture into a mini muffin pan tray that holds 24. Fill each muffin case and then place in the fridge to allow to set. 5. To make the chocolate topping, soak the medjool dates in hot water to soak for 10 minutes, to soften the dates. 6. Drain the water from the dates and place the dates along with all the other topping ingredients into the food processor. 7. Whizz together in the food processor until the mixture is smooth. 8. Take the bases out of the fridge and flip them out of the mini pans and place on a serving plate. 9. Top with the chocolate topping and place one raspberry in the centre. Serve immediately or place back in the fridge and serve once fully set.

Little CHINA girl Maureen Falloon of The China Cabinet Vintage Tableware Hire adores fine English china. She has been collecting it since she was quite young and now, with over a 1000 pieces (and counting) she has turned her passion into a business, hiring out her beautiful china for parties, functions, and weddings all over the country.

he home based business is now into its ninth year and her spacious kitchen has been specifically designed to house and display her vintage china collection. Cups and saucers all in different designs nestle in glorious, colour coded splendour in enormous soft close drawers. China cabinets house yet more china, crystal and silverware. A visit here is as delightful as visiting a china museum. And it's all available for hire!

“I like people to choose what they want,” says Maureen. “It's amazing how much fun they get from choosing.” Her collection includes entree and dinner plates, tiered cake plates, sandwich plates, teapots and milk and sugar sets and more. They are almost all vintage and Maureen prides herself on offering quality pieces in pristine condition. Remarkably

If something unusual comes along, I can't resist.

” Maureen Falloon

she suffers very few breakages! “People are very careful and the china is surprisingly robust,” she explains. She allows her precious stock to be taken all over the country for parties large (up to 300) and small. One of the most interesting was a 70th birthday party in the Hastings Opera House which began with an afternoon tea and ended with a dinner dance. To complement the pretty vintage

china, crystal and silverware, Maureen also has hollow stemmed champagne glasses, lolly jars, cupcake stands and special wedding cake stands. Everything for that elegant, breath-taking special occasion, where beautiful fine china not only sets the scene but is also a treat to use. “It's great to meet so many people doing such nice things,” Maureen says. And she is still collecting. “If something unusual comes along, I can't resist,” she laughs. Phone Maureen on 352 0488.

HEAVENLY combination Chicken thighs stuffed with ricotta, dried fruit, nuts and wrapped in salty sweet prosciutto then roasted is a great combination. Cranberries work well in this instead of the apricots if you prefer and can look very festive with the green of the pistachios.

PAN SEARED CHICKEN THIGHS WITH AN APRICOT AND PISTACHIO STUFFING WRAPPED IN PROSCIUTTO WITH KUMARA Ingredients: 200g ricotta 3 Tbsp fresh white breadcrumbs 1 large clove garlic, peeled and crushed 1 Tbsp chopped thyme 4 Tbsp dried apricots chopped 4 tbsp pistachios chopped Salt and freshly ground black pepper 6 free-range boneless, skinless chicken thighs 4 slices of prosciutto 2 Tbsp oil Photography – Alan Gillard Method: Preheat the oven to 180°C. In a bowl mix ricotta, breadcrumbs, garlic, chopped thyme, apricots, pistachios, 1/2 a teaspoon of salt and a few grinds of black pepper. Taste the mixture and make sure that it has enough seasoning. Place each thigh between two pieces of glad wrap and bash to flatten out so that each thigh is even in thickness. Spread ricotta mixture over meat, and then roll up. Then roll a piece of prosciutto around each thigh and set aside. The chicken thighs can be prepared ahead of time and kept in the fridge but bring to room temperature before cooking. Heat a large non-stick frying pan over medium heat and add the oil. Once it is sizzling, add the chicken and turn every 2 minutes until is nice and golden on all sides. Remove the chicken parcels onto a roasting tray, place into the hot oven and cook for 15 – 20 minutes or until just cooked through. Rest covered loosely with foil for at least five minutes before slicing and serving. 50 May 7, 2015 Metropol

Rustic Italian fare

Simple ingredients, perfectly balanced

“'Casa Nostra'. It's Italian for 'our home' and that's what this restaurant is, a family restaurant where people can enjoy good rustic Italian food,” says Paulette Mannucci, who with husband Felice has just opened an Italian kitchen in Ferrymead.

hey have transformed the former Gorilla Bar into a modern Italian rustic restaurant - all dark wood, checked tablecloths, and red, white and green. But it's the food that takes pride of place. Felice (of Il Felice fame for those who remember way back when) hails from Tuscany and is passionate about Tuscan cuisine. Pasta is a speciality, handcrafted on site using traditional techniques, but the menu, which includes plenty of sharing plates, offers much more. From the Apperitivi (palate teasing

Italian style aperitifs) to bread and olives (including bruschetta and crostini), zuppe, antipasti, insalatore, pasta and risotto, to substantial mains like herb and pancetta lamb cutlets and fritto misto, and grilled steaks served Tuscan style

with salt, pepper, olive oil and fresh herbs, the choice is designed to cater for every member of every family. Dine inside or in the sheltered, heated al fresco area, Casa Nostra opens at 5pm seven days. Bookings are advised and takeout dining is available.

TRUST THE LYTTELTON LOCALS Fine food, fantastic views and faultless service, Freemans Dining Room, Bar and Deck never disappoints – trust the Lyttelton locals, they know it and love it.

pril 21 marks nine years to the day in business for Freemans and it's been nine years of amazing customers, fun-filled dining experiences, and great food and service. Joint owner Sarah Freeman says the learning curve has been steep. “We have learnt so much and all the challenges along the way have given us the strength and knowledge to still be in business today. “The earthquakes challenged us on every level. We were forced to close but we feel such a strong connection with Lyttelton and Christchurch, that's what pushed us to rebuild.” For Sarah and her husband, Chef Nick Freeman, building repeat customers is what they strive to do. “When customers visit for the first time, it's our mission to make sure they enjoy the food and service so much that they come back for more. For returning customers, it's about building a relationship based on trust. They know that every time they visit, we always deliver our best.” Every weekend is an occasion at Freemans. Soak in the Saturday morning market then pop in for a coffee and sweet treat or tasty breakfast. On the

menu is grilled pineapple with ricotta and streaky bacon and house-cured salmon with scrambled eggs. No matter what the weather you can still enjoy the views from the large heated and covered deck, and on Sunday afternoons sit back and enjoy the live music from 3 to 6pm. Freemans is open Wednesdays to Sundays. Happy hour every day 3 to 6pm. $18 pizza and $20 pasta Wednesdays and Thursdays.

All the way from the party city of New Orleans direct to Christchurch comes Paint 'n' Sip Studio, a unique new social experience. It is an art studio like no other, where participants with no previous painting experience can create their own masterpiece, make friends, and have a jolly good time, helped along by a glass of wine, cider, beer or juice.

he popular studio is the brain child of Louisiana native Amanda Anthony, who experienced the concept in her home town and has set up the Christchurch operation from scratch. “It's a fun thing to do with friends, and a good way to meet people in our postquake city,” she says. “Trying something new and out of your comfort zone seems

daunting for most people, that's why we have created a relaxing atmosphere for our customers to get in touch with their inner artist. It's art therapy with a social side.” Each session has a different painting. Just choose a painting from their website ( and make a booking. New paintings are added monthly and change with the seasons. Flowers for Mother's Day, autumn themed

paintings for May, snowy landscapes for the coming winter months, Christchurch icons and more. You can even attend Paint Your Pet Night and wine glass painting sessions. All ages can enjoy Paint 'n' Sip Studio; so far the range has been from 2.5 to 87. They have kids' sessions over school holidays, host private events for birthday parties, hen's parties, team building, etc. and have gift vouchers available. Everything needed for the art work is provided, from aprons to brushes, paints and canvases. Just arrive 15 minutes early, buy a wine, enjoy a complimentary nibble and mix and mingle before the two hour session starts. One of their artists takes the group step by step through the featured painting of the night. “If I can do it, anyone can,” Amanda says. “Our customers walk out proud of themselves, their paintings and with the biggest smiles.” 136 Ilam Road, phone (03) 351 0879.

Despite a number playing a key role in its name, what makes personalised home building firm Build7 so unique is that it doesn't treat you as just another number. When Jamie and Francesca Cowan started Christchurch's Build7, the vision was of a building company that would treat every project with the care and attention to detail it deserved.

hey recognised Build7's high standards, unique design service and personalised attention aligned with their own values and, with the strong backing of the greater nationwide company offering a 10 year Certified Builder Guarantee, they haven't looked back. “We put the emphasis on the design process,” Jamie explains. “We don't have standard plans as we prefer to have the client fully involved in the design process. A key part of that is finding out what the seven must-haves are for someone's house and making that a reality.” Construction is an increasingly complex field and even more so in the dynamic local market. There's a large number of people sitting on TC3 land, who have had their pay out and don't know what the next step is, or people being told they will be in their house by an ever-changing date. Build7 offers an open and transparent service, talking clients through everything from site selection and understanding Christchurch land categories through to

ensuring you are receiving the right engineering advice for your land. With the weight of a large building company behind them, Build7 offers competitive rates, without compromising on quality. And, once your project is underway, Jamie will oversee quality control as his handpicked crew builds your new home. It's a level of care and attention that comes from experience. After completing his apprenticeship, Jamie spent 15 years working both in New Zealand and abroad, from high-end residential housing to commercial fit-outs, bringing with him the best of overseas trends and knowledge when he came home to Christchurch to start his own family. “Because we only complete a select number of houses each year, it enables us to concentrate on the relationship with the client,” Jamie says. “That's what I like about Build7, we can concentrate on ensuring each client gets the special journey they deserve.” For more information on Build 7 phone Jamie directly on (021) 783 001, email or visit

IT'S WHO WE ARE Architect Cymon Allfrey reflects on the importance of history… Cymon Allfrey

Language is the skill that we as humans, have to transact, offer, request, assert. It is what sets us apart from other beings. Universally it is an action which unites us, and I have long been a believer in the concept that 'language is the means through which the future is already written. It is also the means through which it can be rewritten.'

elen Keller comments: “I was like an unconscious clod of earth. Then, suddenly…I awoke to language…I was lifted from nothingness to human life.” Language is the manner in which we articulate our views, our values, our ethics, morals and culture, things which are important, and unimportant. It communicates who we are. And architecture is a tangible realisation of all of this. The world over, as you go in and out of cities you get an understanding of the people, the way they live and what makes them unique, through the built environment. As we look at the many debates going on around the city about the future of our architectural landscape, it is

important to understand that while we can rewrite our future, we are doing so with a language we have already acquired. While the future isn't predetermined, the way in which we have formed our ideas and our identity has been. There is nothing you can do that changes where you have been. We are who we are because of the past. We cannot undo or forget, without changing our values and purpose. Our identity rests on core anchors, some of which are architecture. And we can't afford to lose these. There is an opportunity in front of us to take our icons and exemplars of eight hundred plus years of human habitation and nurture and enhance them.

By taking them away the reality is that we will erase one of the only tangible reminders of our identity. While I am a passionate and firm believer in the restoration of the Cathedral and Town Hall, I am also a realist, and we are dealing with a unique and catastrophic environment. But for better or worse these iconic structures have crafted who we are. They are the anchors of our history and should be retained for their uniqueness. They should be retained to stand side by side with the next generation of icons. Our architectural language and history is our identity. We cannot forget who we are, or the journey these buildings have undergone. They are amazing examples of people, time and generations of work. They are buildings which have become precious because of the contribution they have made to our identity, not because they are buildings of note. By erasing them, we are erasing our identity. We will become just another dot on the map. A clod in the earth looking for our language.

THE KEY TO KITCHENS The kitchen is the most important room in a house. It is where the food which feeds a family is created and the social centre of many homes.

MAKE YOUR BATHROOM STAND OUT It's often the smallest room of the house, but when it comes to impact, it's one of the most important. Yes, the bathroom is one space where size doesn't count. When it comes to making your bathroom stand out, local familyowned bathroom supply and installation firm Showerwell is just the place to go.

Clients include Ryman Healthcare and Ramada Hotels amongst others. The family business is also getting
