It was the late ‘90s – block colour tshirts and blazers were in, ripped jeans, neon brights and combat boots all had a following (fashion recycling is quick these days!). Teenage Mutant Ninja Turtles were seen on lunchboxes everywhere, body piercings were edgy, Strawpeople and Bic Runga were Angela Bennett, Editor topping the charts, White Town produced that catchy single ‘Your Woman’, and the National party was in power in coalition with NZ First. This was the era when we were rapidly embracing the internet and already couldn’t do without mobile phones, it was 1997 and it was the year Metropol hit Christchurch streets providing a stylish new publication which captured instant attention. Fast forward 17 years and Metropol is surprising the city again with a reinvention that is retaining all of the ‘much loved’ features but packaging them in a smart, stylish presentation that is easier and more convenient to read and display. lison Merchant has spent many years travelling the world, cooking on super yachts in the playgrounds of the rich and famous. Now she has returned to New Zealand, settled in Christchurch and set up her business The Food Merchant ( I caught up with Alison to nd out a little more about her delicious food and what it’s like to be home again…

What are the challenges of cooking on a super yacht? The biggest challenge is provisioning and knowing what produce is available in what country. We rely heavily on provisioning companies to source specialty products - caviar, trufes, foie gras and all our meats and seafood. The Caribbean is very difcult as there is limited local produce and it has to be own in either from Europe or the States. The other challenge is cooking in a moving galley. A yacht can heel so far over that you have to clip yourself onto the oven to stop falling over which can be quite dangerous. I couldn’t count how many burns I have received.

Did you spend a lot of time in the kitchen when you were growing up? I was always in the kitchen getting under Mum’s feet which annoyed her no end. To appease me, Sunday lunch became my domain. I started with pancakes and went from there. I don’t think the dried herbs in the pancakes went down well, or the lasagne I put a cup of stock powder in, instead of a cup of stock! Needless to say, I’ve always been one for experimenting. When did you realise you wanted to become a professional chef? I was working for an advertising agency in London and getting a bit disillusioned so decided to head away and do a ski season as a chalet girl in the French Alps. The cook had a new boyfriend and was never there so I found myself doing her job and loving it. One cooking job led to another until a guest must have seen my potential and asked me to set up the restaurant in the hotel he had just bought - I’ve never looked back.

What type of groups did you cook for whilst cruising? I worked for my last owner for 14 years, that was strictly private and not charter. His high prole guests included Princess Ann. He had a ‘J Class’ yacht, which he raced and a powerboat that was basically the oating hotel. Many of the professional race crew he ew out to race were Team NZ. Those boys can eat! How did you come to be chef de cuisine on many superyachts? I cooked for a yacht broker who had just sold a yacht to the then owner of the Everton Football Club. He recommended me to the new yacht owner who I interviewed with in London and the next day I was off to Italy to join the crew. Over the next several years the yachts got bigger and my job more specialised until I was the ‘guest’ chef and own out whenever the owner was on board.

When and why did you decide to return to Christchurch? Superyachts are very much ‘work hard, play hard’ environments. You need stamina to work 16-18 hour days for weeks or sometimes months on end, and eventually you want a ‘normal’ life. My partner is from Christchurch so I have settled here with him. We now have two little girls, which would make going away challenging. Continued on page 6

Your business Food Merchant is up and running – what type of events do you cater for? I have been doing a lot of nger food ‘milestone’ parties as well as dinner parties and corporate lunches. With spring and summer on the way I will be promoting my gourmet BBQs which are always a great way to feed a crowd. My menus are seasonal and tailor made based on individual client’s requirements. What is your best food memory? I spent a 12 hour day with two chefs from the El Bulli test kitchen in Barcelona. That was my introduction to molecular gastronomy and I was blown away. Do you do all the cooking at home? I do because I love it, but Martin can pull off a great roast chicken when required. Baking with my pre-schooler is another story.. How would you describe your cooking style? When you have the best or freshest produce it needs to speak for itself so I would say I love simple food with a twist. Asian fusion is a fantastic way to get loads of avour packed into one dish while still being healthy. My prawn and lemongrass dumplings with lime chilli sauce are always a hit.

What were you doing the last time the thought went through your mind, “I shouldn’t be doing this”? I was at the start line of the Christchurch half marathon on a cold and icy morning - but I’m glad I did it. What one book would you recommend everyone to read? I travel everywhere with my old Edmonds cookbook. It’s held together by a rubber band and is full of pages from magazines and recipes I have picked up along the way. If you are ever required to go back to basics it is a great reference. What do you love to do on a Sunday afternoon? My ideal Sunday would be lunch at a vineyard with great friends, scrumptious food and delicious wine but mostly you’ll nd me at the park with my girls. What’s next on the wish list? To grow my business and grow my girls to be independent, happy young ladies.

Gary Luff – 50 years a Fireman Gary Luff’s 50 years in the New Zealand Fire Service have seen some remarkable changes – in both technology and the training of thousands of volunteers.


ary celebrated his half century of reghting late last month at a party for 150 persons – many of them volunteers trained by him – at the re service’s Region 4 Training Centre, situated on more than 2 hectares behind the Woolston station at 925 Ferry Road. “I would have liked to invite all 40,000 people I’ve trained but that would have been too many,” says Gary. Located at 9 Olds Place, off Charlesworth Street, the training centre is a truly impressive place, particularly because, when driving along Ferry Road, one has no idea of the size of the establishment hidden behind the seemingly small re station. There are a couple of large-capacity buildings, lots of re engines, old cars, shipping containers and one big concrete edice with a tower on top. Gary’s party was held in one large enclosure usually used for housing the re engines. A conducted tour takes you to the ofces and lecture rooms, walls displaying photos, epaulettes of the various ranks, and one of Gary’s earlier uniforms on a model dummy. The breathing-apparatus room contains a large number of compressed-air masks. Outside, Gary shows you the location of the underground static tanks from which water is pumped for reghting, and then it’s on to the most impressive building on the site – the training tower. In almost complete darkness within the heated space, there’s a maze and tunnel system full of rubble, with ladders leading to various levels, a section that could be on a ship, and rooms of a family residence.

“It’s got everything you could wish for in this realistic training building and trainees must learn to go through the proper procedure to nd the dummies under these difcult conditions and bring them out,” says Gary. If that’s not enough, the outside shipping containers are lled with furniture and

mattresses, which are set on re for further realistic training. “Volunteer recruits are taught theory – and there’s lots of that – in two classrooms for seven days. We then get them to go out and practice it, and then teach them some more,” he says. Gary started as a volunteer at Stoke on June 6, 1964, and then moved on as a fulltime reghter to Petone, also serving in Nelson, Invercargill and Dunedin, and moving into the training division in Christchurch in 1999. “Since then, the training division has been getting bigger and bigger, and better and better,” says Gary, who also thinks highly of the volunteers. “They’re a certain, special type of person, who are here because they want to be here – and then want to come back.” Naturally, Gary would like anyone at all interested in reghting to visit the Region 4 Training Centre, which does training for the South Island from the top down to the Glenavy Volunteer Fire Brigade, south of Waimate.

Hidden beneath the French countryside are miles of mysterious and all but forgotten underground cities, lying in complete darkness and frozen in time. For the last 100 years, only the landowners and a few history enthusiasts have known these spaces. The subterranean cities are lled with beautiful art, inspiring inscriptions and thousands of names left behind by WWI soldiers from both sides of the conict who occupied the spaces at various times. In many cases, records show that men wrote or inscribed their names only to die in battle hours or days later. It may have been the last time these soldiers signed their own names. Finding the right motel


hristchurch Airport is welcoming a new link between the people of Taiwan and the people of the South Island, with a recent announcement of a summer service by China Airlines. Chief Executive Malcolm Johns says the new service will operate three return ights a week for an initial summer season from December 2, 2014 to March 1, 2015. “The South Island was a very popular destination for the Taiwanese in the 1990s,” says Mr Johns. “The new summer service will connect with the valuable Taiwan market, whose travellers are keen to experience the many attractions of the South Island. “The service will offer an extra 24,000 seats between ChristchurchSydney–Taipei over December/January/February, which underlines the ongoing importance of Sydney as an international airport hub for the South Island.” “The service will also offer more freight capacity to Sydney and on to Asia, so another opportunity for fresh and time sensitive goods.” The new service offers a total time of 14 hour and 15 minutes, including transit time in Sydney, which is up to four hours shorter and one stop less than any other option currently available.

Rise Up Stacey Tracey is aiming to rise money to go to the USA to get

prosthetic legs fitted. The Christchurch Limb Centre is great at what they do, but unfortunately they have never dealt with amputations as high as Stacey’s. Because the treatment is overseas ACC will not fund the prosthetics nor the trips. Hanger is based in Oklahoma USA and have had lot’s of successful experience with Bilateral Above Knee Amputees. Hopefully with the help of New Zealanders, Tracey will get the chance to go.

Fund raising for Special needs and Charity When it comes to recent charity fund raising events, the Mike Pero Foundation and its team have made an impact in the local community. Marilyn & Lindsay Welch are the team leaders, auctioneer, and with their merry men (and woman) come in like the 'Cat in the Hat' in the action stage and drive a pretty impressive show.

The Mike Pero Foundation lead by Marilyn and Lindsay’s Cashmere and Bishopdale offices team have taken up the challenge of fund raising to ensure Stacey has her much needed trip for treatment in the USA.

The Mike Pero Foundation was established earlier this year by the founder of the group, Mike Pero. The mandate is to help those less fortunate –specifically those with Cancer and other terminal illnesses. In the broader description of the (registered) Charitable Trust the charitable objects of the trust all fall within New Zealand and are to support schools and educational facilities for the benefit of the school and education facility, advancement of social and community welfare, relief of poverty, care, support and protection of the aged, children and young people and people with a disability and to undertake other such activities as the Trustees see fit to assist/support communities throughout New Zealand. "Marilyn & Lindsay are the driving force behind fund raising programmes, explains Pero. They have been instrumental in organising fund raising auctions from day one. Its amazing what a group of friends and family can do when someone desperately needs to raise funds for treatment, support or a bereavement.

She is a 31 year old mother, born in Christchurch nz. In 2011 Alana was diagnosed with a terminal rare cancer called Carcinoid syndrome. Following a major operation in 2012 she is currently on a monthly chemo injection and still suffers from numerous symptoms that make day to day life difficult. Now in 2014 there is a new treatment available at the Peter Mac centre in Melbourne Australia called PRRT, unfortunately this is not government funded, she has until November to come up with the $50,000 needed to do her first four treatments which will give her more years with her 5 year old son. The Team at The Mike Pero Foundation with the help of the Sales Team of the Cashmere and Bishopdale offices plan to help Alana in her goal to raise funds for her treatment.

Achieved their goal Marilyn, Lindsay and their wonderful team at Mike Pero Real Estate Cashmere & Bishopdale were simply amazing helping the Scottish Society of NZ Pipe band achieve our goal this year. The band wanted to compete at the Australian Pipe band championships. To be able to take over 28 playing members we had to do some major fundraising. We put together a Pipes and Drams night with a Charity Auction. Marilyn & Lindsay helped us from start to finish helping us raise over $10,000 . Art exhibition in The Heritage


group of Christchurch artists are combining their talents in an exhibition intended to help revitalise the centre of the city. Entitled “A Colourful New Palette for the City of Christchurch”, the exhibition opens at 4pm this Saturday (August 23) in the Art Space gallery, just inside the entrance to the Heritage Hotel, in the Old Government Building in Cathedral Square. Consisting mainly of work by Russian-born artist Galina Kim and Korean-born Min Kim, both residents of Christchurch, the paintings consist of local cityscapes, plus a few from overseas, some landscapes and porcelain sculptures. Other work included is from friends Janneth Gil, Sang Kyu Moon and Serena McWilliam. The director of Art Space, Natalia Kulanova, says this partnership of artists will help bring a fresh and familiar energy back to the city. Last Touching by Min Kim

The story behind



ilthy traitor or silly duffer? This is the question at the centre of The Court Theatre’s current production Plum, written by Roy Smiles, directed by Ross Gumbley and featuring Laura Hill, Colin McPhillamy, Stephen Papps and Roy Snow. Plum brings to the stage the most critical time in the life of popular 20th century writer, humourist and lyricist PG Wodehouse – or Plum as he was known to his friends. “Wodehouse was then and remains one of the few authors who can make me laugh out loud,” says playwright Roy Smiles. Although considered quintessentially English in style, Wodehouse’s work was particularly popular in America where he spent a large part of his time. In 1934 he moved to France to escape double taxation from British and US authorities. It was here, during 1940, that he was detained by advancing German forces and sent to an internment camp where he remained for several months, writing a 20,000 word novel “Money for Jam”. The following year, prior to of his 60th birthday, Wodehouse was released into the comparative luxury of a Berlin hotel. There he met a 'Hollywood friend', a Nazi propagandist, who suggested he record a series of radio broadcasts for transmission to America, which the Germans wanted to keep out of the war.

There’s no meat to his story’. ‘Ahhh’ I said, ‘well I have just heard a story in New Zealand, here in Christchurch, that might just make you reconsider that…’ and I told him a tale told to me by Chris Moore, the Arts Editor of The Press whose father had debriefed Wodehouse at the end of the war. epertory is proud to be bringing Pulitzer Prize winning play Cat on a Hot Tin Roof to the stage. Tennessee William's masterpiece is regarded as an important piece of 20th century American Theatre. Rep has presented it before, 37 years ago in 1977. Mervyn Glue, who died earlier this year, was Big Daddy. Mike Adams is Big Daddy in this production. The action in this play takes place on a single Summer evening in Mississippi. The family has gathered to celebrate Big Daddy's birthday. But all is not well with this family. The director, Annette Searle, explores the family tensions that simmer beneath the surface, the complex relationships they have with each other. She's looking at what happens when the young can't achieve the expectations put on them by their parents. She wants to investigate homosexuality and the family tensions that arise from this. She also states that she wants to accent the fantasy of “the cat”- the woman, and society's preconceived notions of how she should behave. The play is witty and intensely dramatic. Tension accelerates as afternoon rolls into evening. Deceptions and motives are exposed against a backdrop of the sultry South and looming mortality. Annette Searle is a director with much experience in both choreography and direction and she has assembled a wonderful cast and crew from some very experienced and excellent auditionees. Cat on a Hot Tin Roof will be staged at the Elmwood Auditorium from 22 August to 6 September. There will be no performances on Sundays or Mondays. All performances will start at 7.30pm. he Oxfords from Christ Church Oxford in the UK have been visiting and performing in Christchurch to celebrate founder John Robert Godley’s birth bicentennial (1814-2014). The nal opportunities to hear this outstanding sextet of singers is on 27 and 28 August. The Oxfords take part in a glorious Festive Choral Evensong at St Michael's and All Angels at 7pm, together with the Cathedral Choir, the Schola Cantorum of Christ's College and the St Michael's Choir. On Thursday 28 August at 1pm The Oxfords will perform a 40 minute lunchtime recital in the Christ’s College Chapel. The six brilliant young choirmen from the cathedral choir of Christ Church are also singing, coaching and working with the Christchurch Cathedral Choir and the choir of St. Michael’s and All Angels. The young British scholars are from the Oxford college where Godley studied between 1832 and 1836. They are honouring their fellow ‘Houseman’ in our city, which Godley named after his beloved Oxford college.

Artist-blacksmith going hammer & tongs Artist-blacksmith James Abbott has recently completed a grapevine iron gate that took him 80 hours to construct.


hen you see the meticulous work and dedication that he put into making such a beautiful, highly decorative xture, it comes as no surprise that it took him so long. Located for the past ve months at his Hammer & Tongs Ironworks, at 80 Rutherford Street, Woolston, James, aged 25, has had a love for ironwork ever since his high school days. During a woodwork project at school, James was constructing a pirate chest with metal hinges. These were difcult to obtain, however, and on a trip to Bunnings he could nd only massproduced square ones. “I decided to make my own wedges and got hooked on ironwork. I decided then that’s what I wanted to do and taught myself, learning from books,” says James. Since then, he has had a passion for working steel and has been dedicated to learning traditional and modern metalworking techniques.

The grapevine gate is an excellent example and he has also recently completed a set of security bars covered in grapes and leaves.

Using experience gained over the last eight years, including a oneyear welding and fabrication course at the CPIT, working for himself and in various metal workshops, James now offers his services and skills to create made-to-order, one-of-a-kind metal work. Covering many styles of design, items can be fashioned ranging from traditional to contemporary, Gothic to Art Nouveau or anywhere in between. His work ranges from unique metal gates to fencing, railings, balustrades, kitchen and household hardware, custom knives and tools, including hammers and chisels, bar and shop touts, home decorative items and artistic sculpture. At the time of the interview, James was busy assembling metal roses and leaves on 50cm-long rods, 20 of which he had to complete before the end of the day. This job indicated just how much of his work is still hand-crafted. “After working in the wrought-iron fabrication industry, I wanted to put more of a hand-forged twist onto things. Lots of others use preforged pieces and assemble them themselves but I like to make it all myself,” says James. The grapevine gate is an excellent example of this and he has also recently completed a set of security bars covered in grapes and leaves. James prefers to use modern tools, such as a pneumatic power hammer and a y press to push metal into shape, because traditional tools usually mean more hard work. He’s also got a modern forge working on LPG instead of coal. “I can make and supply anything you like, but the more individual the work is, the more I enjoy it,” says James. 22 August, 21 2014 Metropol

It discussed the history of the world through the stories of 100 important objects from the British Museum, with one of these being penny pieces the suffragettes defaced by stamping ‘Votes for Women’ across the king’s image. “I loved the idea of turning themselves into placards,” says Karen, with the suffragettes proudly wearing their slogan over their Victorian gowns. The resulting collection embodies much of this idea, with Karen saying it is a little bit of a nod to Victoriana and industrial work wear - mixing masculine and feminine as they have always done.

The collection also includes full length dresses for the rst time – a long black and off white jersey boyfriend dress featuring industrial images, with the same images carried through to the jewellery range. The work wear and industrial feel is continued into her next collection, Resort, due to be released in October. After a year of intense travel Karen wanted to design clothes that were made for wearing at home - washed out cotton, drill and chambray are detailed with over-sized smocking and single rufes in a collection of domesticity and comfort. For both Karen, and her husband and creative director, Mikhail Gherman, their life is about always living in the future and

constantly working on ideas for the next season. Their new line of eyewear, which they began work on 18 months ago, will be released globally in September, and their second season of handbags will be out in a few weeks’ time.

Themed wedding zones to inspire For any wedding there are hundreds of decisions to make, and hundreds of choices to choose from.


hristchurch will be home to the Christchurch Wedding Fair on Sunday 24 August for the very rst time, with its limited number of boutique vendors showing just what an inspiring event your wedding can be. Four themed zones will be created at Cossars Wineshed in Tai Tapu, with some of the best local boutique vendors that have been handpicked by Coco Lily Events director, Sophia Cohen. Sophia wanted to bring something more than a traditional wedding expo to those who are looking to get married, using her many years of international experience with hospitality, events and weddings to create the NZ Wedding Fairs. With fairs held in Waiheke and Queenstown, Sophia felt Christchurch was the perfect place to hold their next event. “We are so excited to be bringing the fairs to Christchurch this year – it’s such an up and coming city,” says Sophia, who wants to support the local boutique market and the city as a destination in itself. The new layout of the Christchurch wedding fair is designed to allow all to see and imagine what your wedding would look like in different styles. “At a wedding every body works together,” says Sophia, with the four zones giving a feel for how each vendor will work to

create the whole picture together. From Bohemian Glam and Woodlands Winter to Beachside Romance and Industrial Chic, each zone will have a very different feel, created by stylists, caterers, orists, cake designers, stationers, makeup artists and photographers. It is to be a day of fun for not only the bride and groom but the whole family, with live entertainment, local food, coffee and wine, as well as the opportunity to see, touch, taste and even purchase. There will be a vintage styled Lemonade Stand providing refreshment and wine tastings, as well as the chance to have your photo snapped in the photo booth. Mini makeovers will be on offer too, as will a taste in front of the camera with mini engagement photo sessions by photographer Tegan Johnson, and the opportunity to see the event styling work of Balencia Lane and wander through tipis by Kiwi Tipi. he digestive tract – oesophagus (throat-to-stomach), the stomach itself, the small intestine and large intestine (appendix, colon and rectum) – works as a single entity to keep us happy in more ways than one. It is a complex network of nerve cells, supporting cells, proteins and chemical messengers, much like those in the brain. The bowel itself contains about the same amount of nerves as the brain or spinal cord. This network acts independently of both the brain and spinal cord, reacting to stimuli without instruction. It will continue to do this even when a person is incapacitated from severe brain or spinal injury. In fact, the only two digestive actions controlled by the brain are swallowing and defecation – everything else is controlled by the nerve network in the bowel, the enteric nervous system (ENS). It is the gut’s brain, located in sheaths of tissue lining the oesophagus, stomach, small intestine and colon. In 1996, US professor of anatomy and cell biology Dr Michael Gershon, made headlines in The New York Times when he called the digestive tract the “second brain”. According to Dr Gershon, the ENS plays an important role in human happiness and misery, and it instigated a new eld of medicine known as neurogastroenterology – the interrelationship between neurology and the gastrointestinal (GI) system. Although GI turmoil can most certainly sour one's mood, our daily emotional wellbeing may well rely on messages sent up from the brain below, to the brain upstairs. Dr Gershon stated that "95 per cent of the body's serotonin is made in the bowel".

Where the sun doesn’t shine

According to Dr Gershon, the bowel plays an important role in human happiness and misery.

The bowel is home to major neurotransmitters serotonin, dopamine, glutamate, norepinephrine; nitric oxide; 24 brain proteins called neuropeptides; the major cells of the immune system; enkephalins (of the endorphin family); and a rich supply of bensodiazepines – the family of psychoactive chemicals that include Valium and Xanax.

A bowel movement is the last stop in the passage of food through the digestive tract. It is what is left after your stomach, small and large intestines and colon have absorbed nutrients and uids from whatever you consumed. There are no set rules as everyone is different, but if you have three meals a day, you should be going three times a day. For example, what you pass after breakfast should be what’s left from yesterday’s breakfast. If not, your diet or lifestyle are most likely slowing you down, causing unwelcome side effects like atulence, bloating and reduced appetite. The longer this continues, the more clogged up you get with food that has no bre (such as meat) and toxic waste. It can accumulate for years and end up as black and hard as tyre rubber.

Heavenly combo: flaky filo & fresh salmon Courtesy of Best Foods’ The best little Cookbook II is this delicious salmon recipe that is perfect for a sunday lunch… Best Baked Filo Salmon Makes 2 large parcels 6 sheets of lo pastry 40g butter, melted 50g baby spinach leaves 2 portions of boneless, skinless salmon (about 170g each) All purpose or bbq seasoning

Dressing ¾ C Best Foods™ Real Mayonnaise 1 lemon, juice and zest 1 Tbsp capers, chopped ½ tsp chopped dill

Method Pre-heat the oven to 180 degrees. Lay a sheet of lo out and brush generously with the butter, top with another layer and repeat the butter then add a nal lo sheet. Repeat this with the remaining 3 lo sheets. Place a large handful of spinach leaves in the centre of each lo rectangle and top with the salmon portions. Combine the Best Foods Real mayonnaise, lemon juice and zest, capers and dill and season well.

Spoon a large dollop of mayonnaise onto each salmon llet and then fold over the lo sheets and tuck the ends under like a parcel. Place the parcels on a lined baking tray and brush with any remaining butter, sprinkle with seasoning and bake for 10-15 minutes depending on the thickness of the llets. The parcels should be golden brown. Rest parcels 5 minutes before serving. Serve each parcel with a simple salad of baby spinach and cucumber ribbons and a lime wedge for squeezing. Drizzle with remaining sauce.

Venues on Victoria When the owners of the Revival Bar rst approached the breweries about their intention to open in Victoria Street, the beermakers expressed their doubts about the location, saying it was in the middle of nowhere.


ow wrong those doubts were! “In the last two or three years, Victoria Street has got very busy,” says Sam Heaps, the co-owner, with Brett Giddens, of the Revival Bar. Opening in November 2011, the bar was one of the rst in the area, to be followed soon afterwards by the Smash Palace; and today Victoria Street is bustling with liquor joints and rstrate restaurants, often the two combined in one. The Revival Bar was opened as part of the rejuvenation of Christchurch after the earthquakes, using shipping containers in the main structure, and suitcases recycled as chairs; while the Smash Palace also has that rough-and-ready look that appeals to late-night clients. With these customers in mind, the Revival Bar doesn’t open until 3pm, catering mainly to loyal after-work clients, and from 10pm onwards to a younger crowd, aged from 20 to 25. Other bars and restaurants in the area – most of them ideal as a party scene – now include the Carlton Hotel, the Mashina Lounge at the Christchurch Casino, the Tequila Mockingbird, Mexicano’s, the King of Snake, the Dirty Land and the somewhat more sedate Saggio di Vino. Sam Heaps says that because there are many residences in the area, security guards are on duty at his pub and there is also a security street patrol to maintain peace.

Although the “Tequila” part of its name may give it a Mexican association, Sam is quick to stress that it is very much a Latin bar, including inuences from all over South America. The menu certainly makes this clear, including Peruvian-style Citrus-Cured Scallop Ceviche, Jamaican Spiced Crispy Chicken, Argentinian Agria Potato and Lemon Noquis, Venezuelan Beef Cheek Asado Negro, and Hot Crab and Cheese Fundido with Cuban bread. The Tequila Mockingbird’s décor was designed along Cubanbodega lines, with an over-all nostalgic 1950s atmosphere, including large wooden radios in the corners, so that you can imagine Ernest Hemingway having a drink there. There is a touch of Mexico, however, in the Day of the Dead-style portraits of Marilyn Monroe and Audrey Hepburn installed in the ceiling. Music is also very important in what starts off as a bustling restaurant and later turns to bouncing night life, often with a ve-piece Latin band that is proving very popular. For those hoping for a relaxed quality meal, there is a quiet dining room for 40 persons at the back, for which it is advisable to book. And that’s not the end of it. ome of us may remember a wonderful bakery called Japans in the Gloucester Arcade, which thrived before the earthquakes. There were a lot of people who wondered where it had gone, and whether it would pop up again, like so many other popular spots which had to shut down for a while. The good news is that it is still here, renamed Japanz Bakery, and right there in the South City Mall next to The Warehouse. Takuya and Makiko Iyoda present a wonderful mix of solid New Zealand favourites along with a mix of Japanese and Asian delicacies, in a busy retail hub. The bakery area is more extensive now, providing an increased range of goodies, and they can be served outside along with excellent Vivace organic coffee. One of the rst things you notice when you approach the bakery is the magnicent savouries. The pies are works of art; they rise in layers of pastry, rich and aromatic – quite different to the at and unappetising splodges we see elsewhere. Takuya grew up in a family of patisserie chefs in Tokyo – a traditional background that had him helping out in the kitchen when he was just a toddler. He brought these skills to New Zealand, and has adapted them to different tastes. But he and his wife Makiko have rm beliefs about ingredients and the way they are brought together.

“We use real food – healthy and safe for us, our children – for all who buy from us. This is central to our philosophy.” Certainly everything is prepared on-site, and

with natural ingredients. Takuya is not impressed by short cuts. “I do not use custard powder. I would rather make my own custard with real eggs, milk and sugar, our, and vanilla pods, even if it takes time to create rather than just two minutes.” And he uses real butter, not shortening with yellow food colouring. “One of the reasons our food is so yummy,” explains Makiko, “is because we use genuine ingredients, even though it may take a while to bring them together.” While there is a range of foods that Takuya describes as the things Kiwis traditionally like, he

thinks outside the square and offers Asian variations: red bean paste in a bun, and the cookie bun – cookies on the outside but soft and luscious inside, which is very popular with Japanese youngsters. Another very healthy option is the “croquant”, a croissant dough creation mixed with nuts. The aim is to provide the very best of Kiwi café food, such as scrolls and Danish pastries baked with genuine ingredients, while at the same time encouraging customers to try something a little different; something with an Asian inuence, with a mixture of textures and subtle changes in avours. Sample beautiful gourmet sandwiches – teriyaki chicken, chicken cutlet, ginger pork and “pork kahuni” – created by Takuya and his right-hand baker chef. hristchurch’s @Tony’s Japanese Restaurant at Ferrymead, with its spectacular teppan style, combines the very best of New Zealand produce with the plated elegance of Japanese cuisine, along with the thrill of seeing magnicent dishes prepared in front of you.

For those who are not sure what teppanyaki is, the word ‘teppan’ means iron plate, and ‘yaki’ means grilled, broiled, or pan-fried. With a solid griddle type cook surface, the teppanyaki is ideal for smaller ingredients: nely chopped vegetables, sh, squid, prawns, oysters, scallops, rice, eggs, and portions of beef, chicken, lamb, venison, pork belly, and even ostrich. The menu ranges from traditional to contemporary, so that all tastes are catered for. It is also moderately priced. As owner Bernard Wong says, “A ve star restaurant with a three star price tag.” The dining room is the domain of the chefs, those culinary magicians who chop, twirl, and juggle their ashing, clashing knives to provide divine food. In many ways, the cooking is the entertainment, and the interaction between diners and chefs is informative as well as being exciting.

With its spectacular sea views of Sumner in Christchurch's eastern Port Hill Suburb the home creates its own unique canvas. Construction was not without its obstacles which included extremely difcult road access for transporting the concrete panels. The panels had to be re-designed to t the road access yet maintain the designers brief. Natural disasters by way of two major earthquakes meant additional engineering and construction was required to repair and complete the cantilevered mid-level media room. The majority of correspondence with the owners, the designers and architects was carried out via media including telephone, Skype, and email, with the odd visit thrown in for good measure. “Our team has proved in this highest quality residential build project they can cope with obstacles, issues and even natural disasters and deliver to the highest standard. nnovation is fundamental when approaching a project for the father - son duo of Innovate Renovate, Ron and Adrian Bradley. This means thinking about every job differently; from all angles. The Fisher & Paykel Kitchen Design of the Year award was won by Wanaka designer Melanie Craig (Melanie Craig Design Partners), with this contemporary kitchen It also won the Resene Best Use of Colour .

Wanaka designer Melanie Craig was announced the winner of the supreme Fisher & Paykel Kitchen Design of the Year award. The judges commented on the excellent use of materials in the kitchen, which include glass, American oak veneer, concrete block, quartz and stainless steel. “Form and a combination of warm and cool colours clearly organise the space and the zones within it – in particular, the welldened coffee station.”

Concrete blocks wrap the pantry and sandwich the stainless steel refrigerator. This in turn engages the stainless steel bench underneath the stone benchtop that resembles a table. On the back wall, black Techlam wraps over the raised cooking zone, providing set-down space for hot dishes without interrupting the ow of the work areas. The Techlam ties the coffee nook into the main kitchen, while the low oak drawer front that exposes the coffee cups provides detail to help personalise the space. continued on next page

metropol home This bathroom by Kira Gray of Fyfe Kitchens won the NKBA Bathroom Design of the Year award. It also won the Best Use of Lighting – Bathroom and the People’s Choice Bathroom Award. Although the space was restricted and lacking in light, the clients did not want a glass shower. Large dark tiles give depth of colour, a masculine twist, and a backdrop for the bathroom ttings. A mosaic feature wall provides a change in texture, and a privacy wall to the shower creates separation to the vanity. The sculptural bath needed to stand alone. Wall hung with lighting beneath, the timber vanity creates a feeling of space. The mirror was oated above to enhance this effect, and is backlit for ambience.

Online voting in the People’s Choice Award for kitchens and bathrooms received nearly 3000 votes. In this category, Margaret Young of Margaret Young Designs, Invercargill, took the kitchen prize with a traditionally styled white kitchen featuring beaded paneling and leadlight-style display cabinets. Judges’ comments: An innovative approach to space planning allowed a soaking tub in this penthouse bathroom. With an inspired selection of materials, the result is a contemporary bathroom inspired by Japanese culture.

Morgan Cronin of Auckland (Cronin Kitchens) won the Blum Creative Excellence Kitchen Award for this striking design. Judges’ comments: This kitchen ts perfectly into an existing, angular space. Creative use of stainless steel, such as the design of the seating area, gives it immediate dramatic impact.

The only thing more important than the size and dimensions of a room is how it ows into the next one. If you walk around your home, you should be easily able to walk around the furniture and room to room without it feeling awkward.

The textures and items that you will touch and feel in a room add another dimension to it, whether that is a cool, marble slab or a warm, furry rug. Certain materials, such as leather, which is smooth and supple, say 'touch me' and make your home feel instantly more comfortable and add to the overall theme that you are aiming for.

Getting the most out of existing features An interior designer will work on the space and features that you already have and maximise their potential. For example, an ordinary staircase can be transformed into a luxurious and elegant feature by tting an ornate handrail.

The quality of materials, accessories and craftsmanship will provide an overall impression. Work on existing architectural features and maximise their potential.

eveloped by CERA to help facilitate the recovery of our city, The Draft Residential Chapter for Christchurch Central, A Livable City, presents visions and objectives for central city living. Having dropped out of the Christchurch City Council’s, Share An Idea concept, which mostly dealt with commercial and mixed-use zones, A Livable City attempts to create a cohesion, or transition, between intense commercial zones and mixed use. Recently put out for comment, it expands on the Christchurch City rebuild blueprint, which established the ‘precincts’ in which we will work, live, play and so forth. What this rebuild blueprint didn’t look to redene was the rules or development standards around what we can and can’t build – such as building height and density. This has now been covered, with an interesting approach, in A Livable City, based around discussions of minimum standards and council control around conformance to a bottom line, which I fear is not enough.

Based around people and interaction with design, as well as the impact buildings will have on space and existing context, it is a set of principles designed not to constrain and direct, but to achieve positive results.

But are we happy to have every development meet a bottom line without taking into consideration quality design? Who is there to assess the design standard? The developer – what is in it for them to go beyond the bottom line? The architect – who is paid by the developer, and while some will stand up for design quality, at what expense? The only option left is an urban design panel. As an architect my frustrations with urban design stem from its lack of substance to control all design outcomes. Yet, on the other hand, urban designers are advocates for high quality, positive design. And in rebuilding and dening our inner city living, the architect alone is not enough. Urban designers’ role in advocating for

a beautiful, livable city, falls directly in line with that of the architect, and by singing from the same song sheet we can achieve a wellbalanced, architectural solution to central city living. We cannot however do this without recognition of quality design, and the impact these designs can have on people, in our rebuild blueprints. We need to make sure we are rebuilding a livable city. And we cannot ignore the value that positive design outcomes bring – both through personal well being and commercial success. By trying to achieve this through conformance to a bottom line we will fail. Internationally, cities that have undergone rejuvenation, redesign or rebuild have done so with a focus on positive design outcomes; so why not us?

ugust is one of the coldest months of the year but it is also the winter month closest to spring so our thoughts must now turn to the tasks needed to be completed as spring approaches. Much of the work is preparation for the sowing of seeds, planting and cleaning up of weeds. As the days lengthen day time temperature can be quite warm which can bring on new growth but be aware that nights will still be cold and there will be plenty of frosts to come.

Now is a good time to plant new fruit trees and berry fruits.

Lawns • The wet winter has left the ground sealed so the grass needs to have the soil opened up, this may be done by using a fork sparing the ground, grooving with a special rake or adding gypsum.

Slug bait around plants just as the buds start to grow will give good control also.

ith the new WorkSafe regulatory reforms tightening up, health and safety is in the spotlight more than ever before,” explains Zeb Reid of Reid Safety Consulting. “Although the Health and Safety Reform Bill has not yet been passed, the government is already pulling in the reins, with new inspectors giving out improvement notications. If your business is deemed unsafe, they won’t hesitate to shut you down immediately.” However compliance is often hindered by complex paperwork and specialist language. A recent study shows most employees struggle to understand their workplace health and safety paperwork. Carried out by Workbase, the study found the majority – 65 percent – did not fully understand their employers’ policies, hazard information and safety procedures. In fact, eighty percent of employees could not accurately complete a hazard report form. Health and safety documents are consistently complex, using indirect, specialist language which many employees were unfamiliar with, researchers said, further complicated when you throw large numbers of immigrant workers into the mix. here is much to like about the Honda Jazz. While retirement village car parks around the country seem to grow them, there is no denying Honda knows how to build a great small car. Whether in petrol or hybrid form, ‘Jazzercising’ is nice.

Using design elements similar to the Euro Civic, the Jazz is now a funky and forward thinking piece of kit.

Now the Jazz enters its third generation, and shows it can still hang with the cool kids. Available in four spec levels (S, RS, RS Sport and Mugen), prices start at $23,700, which is astonishing value when you consider what you get. While still retaining its egg like shape, the new Jazz features a longer wheelbase (3955mm) and a striking and much needed exterior nip and tuck. Using design elements similar to the Euro Civic, the Jazz is now a funky and forward thinking piece of kit. Fork over an extra $2,500 and your Jazz can be breathed on by famed Honda tuners, Mugen. This means a Mugen body kit and wheels, but no extra oomph, sorry. Though the RS Sport ($27,000) featured here, looks great as it is. A cap on backwards spoiler and side skirts complete the ensemble.
