Inspired by the ancestral culinary techniques from the Japanese village of Wakayama, Katana’s cuisine incorporates open-flame cooking with Binchō-tan, a high-quality white charcoal, which infuses meat, seafood and vegetable robata skewers with rich smokiness. Japanese A5 wagyu beef, lobster, king crab and Chilean sea bass: the chefs only work with the most flavorful ingredients. The signature rolls, sashimi and nigiri are scrupulously prepared with freshly-caught fish for a memorable sensory experience. Katana’s menu also features an extensive collection of sake and wines, and exotic cocktails such as the Heat of the dragon — tequila, cointreau, lime, kumquat, serrano, agave — and a ginger lychee mojito.
