Chef’s Challenge™ Showdown at Cirillo’s Culinary Academy

Taste buds were tempted and culinary skills sharpened at Cirillo’s Culinary Academy on Wednesday, September 21. In support of Chef’s Challenge™: The Ultimate Battle for a Cure, Cirillo’s hosted an event for 36 registered participants of Chef’s Challenge, with Chef John Cirillo and Chef Luther Miller hosting the evening. All 36 event participants raised a minimum of $500 for Chef’s Challenge™ by September 12, which provided them the unique opportunity to attend this private Chef’s Challenge cooking class and reception.

Cirillo’s with a glass of wine and hors d’oeuvres by Chef Cirillo and his team, and each participant had an opportunity to meet other fundraisers focused on supporting breast and ovarian cancer research at Mount Sinai Hospital. To embark on their culinary evening, participants were divided into six teams, each team responsible for creating a dish from one of Chef Cirillo’s recipes. Each team received a unique recipe, fresh ingredients and a fully equipped kitchen. With only 40 minutes to complete their distinctive dish, the chef’s ensured each team completed their goals and assisted throughout the process.

Method: 1. Using a medium sized mixing bowl, add the red wine Lees (if Lees is not available use 2 cups of Merlot wine).

Wellington County beef tenderloin

3 cups

red wine “Lees”

1 bunch

rosemary, chopped

1 bunch

thyme, chopped

garlic cloves, chopped

2. Rub half the rosemary, thyme and garlic on tenderloin with cracked black pepper. Add the beef to the marinade and set aside in the place remaining herbs and garlic in a small bowl with olive oil. Set aside in the fridge.

A spokesperson from each team introduced their dish and everyone had the opportunity to indulge in the delightful offerings and mingle with the group. The participants were excited and engaged, utilizing the evening to meet their fellow fundraisers and enjoy friendly competition.

Equipment: Chef’s knife, clean cutting board, barbecue or indoor grill, medium size mixing bowl, small sized mixing bowl, 2 x 6 inch steel skewers, measuring cup and spoons.

4. Remove tenderloin from the marinade. Clean excess lees from meat. Place cuts of tenderloin on the skewers. 5. Add 2 tablespoons of red wine to the oil mix to make the Chimichurri marinade. 6. Using the barbecue or indoor grill on high heat, grill the tenderloin for three minutes on each side. Season with kosher salt, cracked black pepper. Brush the remaining chimichurri on the meat. Makes six portions.

Future Sinai is preparing to launch an annual cause-marketing campaign in partnership with Menchie’s Frozen Yogurt on Bloor Street West beginning Sunday, October 30. With 20 per cent of the proceeds of yogurt sales supporting women’s health, we encourage our members to visit the Bloor Street location on the last Sunday of each month. The flyer enclosed with this newsletter must be presented at point of sale. I want to extend my heartfelt congratulations to Moms for Sinai on their inaugural Eat Drink Give event, which raised more than $30,000! With more than 125 young mothers in attendance and culinary demonstrations provided by Gail Simmons, the event was a sold-out success! The Strike Out Cancer opening committee meeting is Thursday, November 10 and we hope that you will join this committee. Any members who have daytime hours available and want to join the Perspectives 2012 committee are encouraged to call the Auxiliary office to get involved. I’ll Toast to That: Fossil Raises $7,500 in Support of Chef’s Challenge Fossil Canada asked guests to raise a glass and some funds at their King Street West in-store event on Friday, September 9 in support of Chef’s Challenge™. Guests unwound from the work week by raising a glass, but more importantly, opening their hearts and wallets, raising more than $7,500.

Fossil hosted a raffle with a Deco Noir Diamond Michele watch valued at $1,800, a Blackberry Tablet and other stunning items, all benefiting Chef’s Challenge™. Event guests were thrilled to partake in the raffle along with a silent auction, and all contributed to the tremendous success of this fantastic evening!

Renowned jazz and gospel vocalist Diane Lee-Clemons offered her silky voice for live entertainment, creating beautiful melodies while guests enjoyed artisanal cheeses from Wills & Co. Fine Food Market alongside an array of hors d’oeuvres. A sweets table filled with pink-themed pastries acted as the perfect tie-in for supporting breast and ovarian cancer research.

Moms for Sinai Host Inaugural Culinary Fundraising Event crostini with roasted squash and kale, cinnamon doughnut holes with apple compote and caramel sauce—and of course—a lemon-ginger fizz signature cocktail conceived by Simmons and brought to life by official vodka sponsor ABSOLUT® ELYX. Each recipe was passed to guests by wait staff, boasting food as scrumptious as it was visually appealing.

The Sub-Zero/Wolf Showroom on King Street illuminated the city on Tuesday, October 11, as Moms for Sinai hosted a sold-out affair to raise funds in support of women’s health. This inaugural event, Eat Drink Give, played host to more than 125 women who are moms, foodies and philanthropists, and special guest host Gail Simmons joined the event to fuse together an extraordinary cause with an electrifying culinary experience to net more than $30,000. Barbara Kerbel-May, Mount Sinai Hospital Auxiliary President, opened the evening and congratulated Moms for Sinai Co-chairs Jennifer Brodlieb, Jennifer Elmaleh, Jennifer Konopny and 4

Kailee Mecklinger, along with Eat Drink Give Co-chairs Alexis Dean and Lara Katz, on an unbelievable effort in securing sponsorship, silent auction items and for being such an integral component of the Auxiliary. Renowned culinary expert, FOOD & WINE magazine Special Projects Director and dynamic television personality Gail Simmons inspired guests with a cooking demonstration of original recipes, including spicy peanut soba noodles with roast chicken and fresh herbs,

Simmons mingled and interacted with the guests and was a generous host who believes in the importance of Mount Sinai Hospital and this event. Simmons says, “I am thrilled to be hosting Moms for Sinai’s inaugural Eat Drink Give event this year! Not only was I born at the hospital myself, but have always been grateful for the excellent care my family and I have received there over the years. Research and education on breast and ovarian cancers could not be more vital to maintaining the health of all women. I am proud to support such a worthy cause for a hospital that has always been near to my heart.” In addition to this October event raising funds and awareness for breast and ovarian cancers, a silent auction of luxury and high-end children items complemented the indulgent evening. Each of the 80 auction items sold, and some highlights included two roundtrip tickets on Porter Airlines, Hermes scarves, a Swarovski evening clutch and MEGA Brands boy and girl gift baskets, which sold for well over retail value! Guests received gift bags with gift cards, FOOD & WINE magazine, Sweetpea Baby Food and many other luxury items.
