e couldn’t be more excited by the soft fruits in season now. It’s the best time to throw together simple berry desserts, or to try something new – like our ideas below and on p16 and p30. The great thing about Tesco berries is that they are carefully hand-picked to minimise bruising and chilled within 60 minutes to stay fresh and juicy.
Strawberries The epitome of a British summer, did you know just one of these iconic berries has an average of 200 seeds? Use a sharp knife to ‘hull’ (remove the leafy top) washed strawberries.
Blueberries
on a blueberry is a natural protective layer.
Raspberries This fabulous fruit works well in many sweet recipes. The best are large and plump with a strong pink hue, but all have  ÉÁ ã« ó »ó ã÷ óÉè
Blackberries The versatility of blackberries makes them a British favourite. Oh-so-juicy, these mouthwatering berries are made up of small, round, fragile ‘drupelets’ and have a sharp sweetness. BALSAMIC RICOTTA TARTINES
Spread sourdough toast with ricotta, then layer with sliced strawberries, blueberries and mint. Drizzle with honey and balsamic glaze.

BERRY VINAIGRETTE
Blitz 3 parts olive oil and 1 part lemon juice with chopped garlic, black pepper and a few raspberries and strawberries. Drizzle over a salad.

BLACKBERRY FOOL
Mix equal parts whipped cream and natural yogurt. Simmer blackberries with sugar  ۨ É¢ » Éô É « » until they begin to break down. Cool; fold into the creamy yogurt. 52

COOK’S TIP Keep berries in the fridge, and take them out 10 minutes before eating. Only rinse just before use or they’ll go soggy. Pat dry on kitchen paper.
