GINGER SPICED GINGER TEA *Simmer sliced ginger and lemon in a pan of water with a cinnamon stick, star anise and some cloves. Strain and sweeten with honey. ASIAN SALMON PARCELS Put a salmon fillet on an oiled square of foil with some mangetout. Top with sliced chilli, ginger and a drizzle of soy sauce and rice vinegar. Scrunch the foil; bake for 15-20 mins.

PRAWN SAGANAKI Soften onion, garlic and chillies in olive oil. Add tinned tomatoes; cook until reduced. Add raw prawns and simmer until cooked. Serve on toasted ciabatta with crumbled feta. TANGY TZATZIKI Stir deseeded, grated cucumber into Greek yogurt with garlic and chopped mint. Fold through crumbled feta and olive oil.

CHEESE & BACON SALAD *Mix GOAT’S a handful of raspberries with rocket

leaves, goat’s cheese and crispy fried streaky bacon. Whisk together 1 part cider vinegar and 3 parts extra-virgin olive oil, season and toss with the salad.

TROPICAL PAVLOVA Stir passion fruit pulp through whipped cream and spoon onto a ready-made pavlova base. Arrange sliced mango and more pulp on top. Serve immediately. PASSION FRUIT MARGARITA Mix sieved passion fruit pulp with an equal quantity of freshly squeezed lime juice and double the amount of tequila. Shake over ice, then serve in a salt-rimmed martini glass.

SPEEDY COMPOTE *Simmer raspberries with a little sugar and a squeeze of lemon juice for about 2 mins or until the berries break down. Serve warm with pancakes or waffles.

SLAW *Mix BUTTERMILK shredded sweetheart cabbage, spring onions and carrot in a bowl. Whisk buttermilk with some wholegrain mustard and maple syrup to make a dressing. Mix into the veg. CHEESE & ONION TOASTIES Butter 2 slices of bread on both sides. Top 1 slice with grated cheese (Cheddar, Lancashire or Red Leicester) and sliced spring onion, then sandwich with the second slice. Fry on a medium heat for 1-2 mins each side until golden.
