G R A N D V I C TO R I A S A N DW I C H Serves 16 Takes 1 hr Cost per serve 50p 275g (10oz) unsalted butter, softened 150g (5oz) Lyle’s Golden Syrup 100g (4oz) Tate & Lyle Caster Sugar 5 medium eggs 275g (9oz) self-raising flour 1 tsp baking powder 600ml (1pt) whipping cream 375g (13oz) mixed berries Tate & Lyle Icing Sugar, for dusting
For the compote 150g (5oz) raspberries 25g (1oz) butter 1 tbsp Tate & Lyle Caster Sugar 1 tsp arrowroot
1 Preheat the oven to gas 5, 190°C, fan 170°C. Grease and line 3 x 20cm (8in) cake tins with nonstick baking paper. In a bowl, whisk the butter, golden syrup and caster sugar until creamy. Beat in the eggs, flour and baking powder. Divide the mixture between the tins and bake for 20 minutes until golden. Turn out onto a wire rack to cool. 2 For the compote, put the raspberries in a pan with the butter, sugar and 1 tbsp water; bring to the boil. Remove
from the heat. In a separate bowl, mix the arrowroot with 1 tbsp water. Add to the berry mixture and stir, until thickenened. Set aside to cool. 3 To assemble, level the cakes with a serrated knife. Put one on a serving plate for the base. 4 Whip the cream to soft peaks. Spoon a third onto the base, then top with half the compote and a third of the berries. Repeat with the remaining two cakes, finishing with a layer of cream topped with berries. Dust with icing sugar to serve. Each serving contains Energy
