Ma y harvest Jersey Royals Rich, Jersey soil gives these baby spuds their nutty flavour. The short, but sweet, harvest runs from April to July, so enjoy them while you can. Jersey Royals have EU PDO (Protected of Designation Origin) status, which means only potatoes grown on the Island can take the name. The edible skins are full of flavour and nutrients, so give them a quick scrub to remove dirt, but don’t peel. To get the best from these delicate spuds, simply steam or boil. Serve with melted butter or in a potato salad.

J E R S E Y R OYA L , M AC K E R E L AND CUCUMBER SALAD Serves 2 Takes 20 mins Cost per serve £2·72 375g (12oz) Jersey Royals, halved, or quartered, if large 2 eggs 3 smoked mackerel fillets ½ cucumber, seeded and cut into half moons 1 x 85g bag watercress, leaves picked 3 spring onions, finely sliced For the dressing 2 tbsp natural yogurt 2 tbsp crème fraîche ½ lemon, juiced, plus extra halves, to serve 1 tbsp grainy mustard 1 tbsp capers, rinsed and chopped 1 tsp extra-virgin olive oil handful dill, leaves chopped
1 Cook the potatoes in a pan of boiling salted water for 10 minutes, or until tender. Drain and leave to cool for 2 minutes. 2 Meanwhile, mix the dressing ingredients in a large bowl with some seasoning. Add the potatoes and toss to coat. Set aside to allow the flavours to infuse. 3 Cook the eggs in a pan of boiling water for 6 minutes*. Remove with a slotted spoon, run briefly under cold water, then peel and halve. 4 Meanwhile, warm the mackerel in a pan or microwave for 2 minutes (optional). Discard the skin, then flake into chunks. 5 Add the cucumber, watercress and spring onions to the potato mixture. Fold through the mackerel, then top with the eggs. Season with freshly cracked black pepper. Serve with extra lemon halves for squeezing over. Each serving contains Energy
