In a small bowl, mix 120g lighter mascarpone with 2 finely chopped balls of stem ginger from a 350g jar plus 2 tbsp of the syrup, and the zest

of 1 clementine. Cut 4 vertical slices from the centre of a panettone. Grill or toast the slices until lightly golden and fragrant, then cut them in half diagonally. Serve topped with 2 tsp of the ginger mascarpone, a spoonful of raspberry or blackcurrant conserve and peeled, sliced clementine rounds. Dust with a little icing sugar, if you like.
