BY SIMON PINEDOMEXICAN RUM
While tequila and mezcal often steal the spotlight in discussions about Mexican spirits, there is another gem in the country’s beverage repertoire that deserves its due recognition—Mexican Rum. Steeped in history and crafted with precision, Mexican Rum offers a delightful departure from the more commonly associated agave-based spirits. Join us on a journey through the origins, production methods, and unique flavors that define the charm of Mexican Rum.
Rum, typically associated with the Caribbean, might seem unexpected in the context of Mexican spirits. However, Mexican Rum has its own distinct identity, rooted in the country’s historical connections to sugarcane cultivation and trade. Dating back to the colonial era, Mexico’s tropical regions provided ideal conditions for sugarcane cultivation, setting the stage for the production of this delectable spirit.
Mexican Rum, often referred to as “ron” in Spanish, has a history that traces back to the colonial era when sugarcane cultivation and distillation techniques were introduced to the region by Spanish settlers. The production of rum-like spirits in Mexico became prominent, especially in coastal areas where sugarcane thrived.
In the 17th and 18th centuries, various regions of Mexico, including Yucatán and Veracruz, were involved in the production of sugarcanebased spirits. These spirits were initially known as “aguardiente” but evolved over time into what we now recognize as Mexican rum.
The unique climate and terroir of different Mexican regions contribute to the distinct flavors found in Mexican rum. The spirit is often aged in barrels, which can be made from various types of wood, further enhancing its characteristics.
While Mexican Rum may not be as well-known internationally as rum from some other regions, it has gained recognition for its quality and craftsmanship. The diversity of the Mexican rum industry allows for a range of styles, from light and sweet to rich and complex.
Rum is a very well-known product in the world. According to a brief investigation carried out by the Ministry of Agriculture and Rural Development and published on the Mexican Government website, this liquid with alcohol is the first to be marketed in history, therefore it is considered “the oldest” of this type of beverage.
Rum depends a lot on the way it is prepared to determine its flavor, this varies by traditions and distillation and/or fermentation methods. The best known begins with molasses extracted from sugar cane (a kind of juice) to which water and yeast are added, which will determine the final flavor and aroma that it will have based on the amount and type that is added.
Once this mixture is obtained, it must be left to rest in wooden barrels for at least one year, this is known as aging. It should be noted that the type of wood also influences the flavor that the rum will obtain, mostly oak is used.
Mexico ranks fifth in sugarcane production, which means a great advantage for the production of great rums. Master distillers and developers in Mexico take advantage of the large production of sugar cane in states such as Veracruz, San Luis Potosí, Chiapas and Oaxaca, among others, to create masterpieces and drinks that leave Mexico’s name as a producer high, these are some of them.
One of the most renowned Mexican rum brands is Ron Mocambo. Mocambo is recognized for its premium and aged rums, and it has gained international acclaim for its quality and distinctive flavor profiles. The brand is produced in Veracruz, Mexico, a region with a rich history in sugarcane cultivation and rum production.
While Ron Mocambo is notable, there are other respected Mexican rum brands as well, such as Ron Centenario and Ron Caribe. These brands contribute to the growing reputation of Mexican rums in the global spirits market.
Historical feat for this Mexican rum, as it has positioned itself as the leader of Mexican rums from Córdoba Veracruz, in the most important blind tasting on the planet, organized in Belgium by the International Taste Institute.
Rum Villa Rica is made by the 100% Mexican company Licores Veracruz, it is a company that also offers mezcals, tequilas and gourmet liqueurs that reach 30 countries including the United States, England, Denmark, Switzerland, Germany, Japan, Thailand, Andorra, Ukraine, Belgium, France and Austria, to name a few.
Rum Villa Rica 23 years Gold Edition was released to the public in 2015. And from 2015 to 2022, it has won the Gourmet Oscar. It has been 8 continuous years of being number 1 in that tasting, in terms of rum, always achieving 3 Gold stars, that is, the Superior Taste Award, the highest certifications. In fact, it is as if its name “Gold Edition” grants it a destiny full of success.
In the realm of Mexican spirits, Mexican Rum emerges as a hidden treasure waiting to be explored. Its rich history, meticulous production process, diverse flavor profile, and compatibility with Mexican cuisine make it a standout choice for those seeking a unique and culturally resonant spirit. As Mexican Rum continues to gain recognition, it invites enthusiasts and connoisseurs alike to savor the essence of Mexico in every sip, celebrating a spirit that adds a new dimension to the country’s illustrious drinking culture.

PINOT GRIS WINE
BY T&S MAG TEAMPinot Gris, a versatile and captivating white wine, has gained popularity among wine enthusiasts for its unique flavor profile and adaptability to various winemaking styles. Originating from the Pinot family of grapes, Pinot Gris showcases a fascinating interplay of fruitiness, acidity, and texture that makes it a delightful choice for both casual sipping and pairing with a wide range of dishes.
Pinot Gris, also known as Pinot Grigio in Italy and Grauburgunder in Germany, traces its roots to the Alsace region in France. The grape is a mutation of Pinot Noir and, depending on the winemaking process, can produce wines with varying levels of sweetness and dryness.
The grape’s skin color ranges from grayish-blue to brownish-pink, and its wines can exhibit a spectrum of colors from pale straw to deep gold.
Pinot Gris is renowned for its ability to express the nuances of its terroir, highlighting the influence of soil and climate on the final product.
Pinot Gris wines are known for their refreshing and crisp acidity, balanced by a moderate level of alcohol. The flavor profile is typically characterized by notes of green apple, pear, citrus, and stone fruit. Some Pinot Gris wines may also display hints of floral aromas, such as honeysuckle and jasmine.
Winemakers around the world produce Pinot Gris in a variety of styles, ranging from bonedry to lusciously sweet. In regions like Alsace, France, Pinot Gris tends to be more full-bodied with richer, spicier notes. Meanwhile, Italian Pinot Grigio is often lighter and more zesty, with a focus on the crisp, citrusy elements.
One of the charms of Pinot Gris lies in its versatility when it comes to food pairing. Its bright acidity and diverse flavor profile make it an excellent match for a variety of dishes. The crispness complements seafood, salads, and light appetizers, while the fuller-bodied versions can stand up to richer fare like poultry, pork, and creamy pasta dishes.
To fully appreciate the nuances of Pinot Gris, it is advisable to serve it chilled, generally between 45 to 50 degrees Fahrenheit (7 to 10 degrees Celsius). The cooler temperature enhances its refreshing qualities and allows the aromatic characteristics to shine.
The history of Pinot Gris wine dates back centuries and is intertwined with the broader history of the Pinot family of grapes. Here is an overview of the historical journey of Pinot Gris:
Origins in Burgundy: The Pinot Gris grape is a genetic mutation of Pinot Noir, and its origins can be traced to the Burgundy region of France. Like other members of the Pinot family, Pinot Gris
has been cultivated in Burgundy for centuries. However, it has always been a somewhat rare mutation compared to its more widely planted relatives.
Spread to Alsace: While Pinot Gris had a presence in Burgundy, it found a more significant home in the Alsace region, located in northeastern France. Alsace became a key area for the cultivation of Pinot Gris, and the grape adapted well to the region’s cooler climate. Alsace Pinot Gris, known for its full-bodied and rich style, gained recognition for its unique expression of the grape.
Evolution in Italy: Pinot Gris made its way to Italy, where it is known as Pinot Grigio. The grape found success in regions such as Friuli-Venezia Giulia and the Veneto. In Italy, Pinot Grigio is often produced in a lighter, crisper style, with an emphasis on freshness and acidity. Italian Pinot Grigio gained international popularity, becoming one of the most widely consumed white wines globally.
International Spread: Over time, Pinot Gris spread to other wine regions around the world. Countries like Germany, Austria, Australia, New Zealand, the United States (particularly Oregon), and Canada began cultivating Pinot Gris, each adding its unique touch to the winemaking process.
Adaptation to Different Styles: One of the remarkable aspects of Pinot Gris is its adaptability to various winemaking styles. Winemakers produce Pinot Gris in a range of sweetness levels, from bone-dry to off-dry and sweet. This adaptability has contributed to the grape’s popularity and success in diverse wine markets.
Modern Resurgence: In recent decades, there has been a renewed interest in Pinot Gris, with wine enthusiasts appreciating its versatility, food-friendliness, and ability to reflect the characteristics of its terroir. Winemakers continue to experiment with different winemaking techniques to showcase the grape’s unique qualities.
Pinot Gris has come a long way from its humble origins in Burgundy, establishing itself as a grape capable of producing wines that capture the essence of their respective regions while offering a delightful range of flavors and styles for wine lovers around the world.
Pinot Gris stands as a testament to the beauty of diversity in the world of wine. Whether enjoyed on a warm summer evening or paired with a cozy winter meal, Pinot Gris offers a delightful sensory experience that captures the essence of its origin. Its ability to adapt to different winemaking techniques and regional influences makes it a wine worthy of exploration for both seasoned connoisseurs and those new to the world of wine.
IRELAND
ST. PATRICK’S FESTIVAL
BY JOSE PINEDOA CELEBRATION OF IRISH CULTURE AND HERITAGE
The St. Patrick’s Festival in Ireland is an annual extravaganza that transforms the nation into a sea of green, celebrating the patron saint of Ireland, St. Patrick. Held around March 17th, St. Patrick’s Day, this vibrant festival is a testament to Ireland’s rich cultural heritage and a showcase of the country’s lively spirit.
St. Patrick’s Day has become a widely celebrated cultural and festive event around the world, particularly in countries with significant Irish communities. The day is marked by various activities and traditions, with people of diverse backgrounds joining in the celebrations.
History
St. Patrick, whose birth name was likely Maewyn Succat, was born in Britain in the late 4th century. At the age of 16, he was captured by Irish raiders and taken to Ireland as a slave. During his six years of captivity, Patrick worked as a shepherd, and it is said that his time in solitude led him to develop a deep faith in Christianity.
According to legend, Patrick escaped from captivity, returned to Britain, and later had a vision in which he felt called to convert the people of Ireland to Christianity. He studied to become a priest and then a bishop before returning to Ireland as a missionary.
One of the most famous aspects of St. Patrick’s story is his use of the shamrock to explain the concept of the Holy Trinity (Father, Son, and Holy Spirit) to the Irish people. The shamrock, with its three leaves, became a symbol associated with St. Patrick’s Day.
St. Patrick is credited with numerous miracles and converting many Irish pagans to Christianity. He is believed to have died on March 17th, around the year 461 AD. Over time, March 17th became a day of celebration in honor of St. Patrick, and it eventually evolved into the secular holiday we know today, marked by parades, wearing green attire, and various festivities.
It’s important to note that much of the information about St. Patrick’s life is based on legend and tradition, and separating fact from fiction can be challenging. Nonetheless, St. Patrick’s Day has become a global celebration of Irish culture and heritage.

The celebrations often extend beyond Ireland’s borders, as cities worldwide participate in the “Global Greening,” illuminating landmarks in green lights to mark the occasion.

MARGARITA
MIMOSA COCKTAIL
BY T&S MAG TEAMThe Mimosa Margarita is a creative twist on the classic Mimosa and Margarita cocktails, combining elements of both to create a refreshing and citrusy drink. While there isn’t a specific documented history for the Mimosa Margarita.
The Mimosa is a classic brunch cocktail that typically consists of equal parts chilled citrus juice, traditionally orange juice, and sparkling wine, such as Champagne. It is believed to have originated in the early 20th century, with various stories attributing its creation to different individuals and places.
The Margarita, on the other hand, is a wellknown cocktail with a more widely accepted origin story. It is said to have been created in the late 1930s or early 1940s, and its birthplace is often attributed to Tijuana, Mexico. The exact details of its creation are a bit unclear, but the Margarita is generally made with tequila, triple sec, and lime juice, served in a salt-rimmed glass.
The Mimosa Margarita likely emerged as a creative combination of these two popular cocktails, adding tequila and triple sec to the traditional Mimosa ingredients, creating a delightful fusion of flavors. Bartenders and mixologists often experiment with classic recipes to invent new and exciting drinks, and the Mimosa Margarita could be the result of such experimentation.

In this article, we will delve into the diverse world of blue agave products, exploring their origins, unique qualities, and the wide array of offerings that showcase the versatility of this remarkable plant.
Tequila: The Spirit of Mexico
Blue agave is perhaps most famous for being the primary ingredient in tequila, Mexico’s national drink. Tequila is distilled from the heart of the agave plant, known as the piña. The meticulous cultivation, harvesting, and distillation process contribute to the distinct flavors and characteristics that define premium tequilas. From Blanco, Reopsaso, Añejo, Extra Añejo to Cristalino each type offers a unique tasting experience, appealing to connoisseurs and enthusiasts alike.
Agave-Based Sweeteners
A Healthier AlternativeIn recent years, the demand for natural sweeteners has surged, leading to the popularity of agave nectar. Extracted from the agave plant, this sweet syrup serves as an excellent alternative to traditional sugars. With a lower glycemic index, agave nectar is considered a healthier option for those mindful of their sugar intake. Its versatility makes it a favorite among chefs, bakers, and health-conscious consumers, finding its way into various culinary creations.
Agave Fiber: A Sustainable Textile
Beyond the culinary realm, blue agave also contributes to sustainable fashion. The plant’s fibrous leaves can be processed into a sturdy and eco-friendly textile known as agave fiber or sisal. This material has gained traction in the fashion industry due to its durability and biodegradability, aligning with the growing trend of sustainable and ethical fashion practices.
Sisal is renowned for its durability and strength. Products made from agave fiber can withstand wear and tear, making them suitable for hightraffic areas. This resilience extends the lifespan of products, reducing the environmental impact associated with frequent replacements.
As a biodegradable material, agave fiber contributes to a circular economy. Products made from sisal naturally decompose at the end of their lifecycle, avoiding the accumulation of non-biodegradable waste.
Agave fiber has found its way into the world of fashion, offering a unique and textured appearance. Sisal clothing, hats, and accessories bring a touch of natural elegance to the fashion industry, appealing to consumers seeking sustainable and cruelty-free options.
Sisal rugs, carpets, and woven items have become popular choices in interior design. The neutral tones and natural texture of agave fiber complement various décor styles, providing a contemporary and eco-friendly aesthetic.

Agave extract is a common ingredient in skincare products, renowned for its ability to hydrate and soothe the skin. The plant’s natural compounds, such as vitamins and antioxidants, make it an ideal component in creams, serums, and masks, providing a nourishing and revitalizing experience.
Agave Beverages: Beyond Tequila
Beyond the realms of tequila, agave has made its mark in the non-alcoholic beverage sector. Agave-infused waters, aguas frescas, and soft drinks offer a refreshing alternative to traditional sodas. These beverages highlight the plant’s subtle sweetness, providing a natural and wholesome option for those seeking innovative drink choices.
Eco-Friendly Homeware: Crafted with Care
The versatility of agave extends to homeware, with items such as baskets, lampshades, and decorative pieces. The natural aesthetic of agave products adds an organic touch to interior design, promoting sustainable living and an appreciation for nature-inspired craftsmanship.
