My reason for including this recipe in the book is that apart from the fact that it’s the first dish I ever ate at a Chinese restaurant – in Peterborough, in 1964 as it happens – it’s also a world classic but is so often ruined by tasteless crab and gloopy cornflour.

I thought it would be interesting to restore the dish to its simplicity and reliance on good fresh ingredients. Paradoxically, when you first taste it you’ll probably find it a bit under-flavoured, but I hope its subtlety will appeal to you. The one ingredient missing is MSG. It’s now understood that

MSG is not an instigator of headaches, trembling, sweating and whatever else has been ascribed to it. It’s about as dangerous as salt and is mostly produced by bacterial fermentation like vinegar. I’ve never owned up to having a tub of Aromat in my store cupboard, but I’ve always had one and can now admit to sprinkling it on my crab and sweetcorn soup. The choice is yours.

Crab and Sweetcorn Soup

STOCK

1.2 litres good chicken stock

6 thin slices of root ginger

3 bunches of spring onions,roughly chopped ½ tsp whole white peppercorns

SOUP

2 fresh sweetcorn cobs

225g fresh white crab meat

5 tsp cornflour

1 tsp very finely chopped root ginger

2 spring onions, cut into 2.5cm pieces and finely shredded lengthways

1 tbsp light soy sauce

1 tbsp Chinese rice wine or dry sherry

1 egg white, lightly beaten

Salt and black pepper

SERVES 4

Put the chicken stock in a pan with the ginger, spring onions and peppercorns. Bring to the boil and cook for 20 minutes for the flavours to infuse, then strain.

Meanwhile, stand the sweetcorn cobs up on a board and slice off the kernels with a large sharp knife. Add the sweetcorn to the stock and simmer for 5 minutes.

Check over the crab meat for any little pieces of shell, keeping the meat in the largest pieces possible.

Mix the cornflour to a smooth paste with a little cold water, stir it into the soup and simmer for 2 minutes. Stir in the crab meat, ginger, spring onions, soy sauce and the rice wine or sherry, then season with salt and some pepper to taste. Simmer for 1 minute.

Now give the soup a good stir, remove the spoon and slowly trickle in the beaten egg white so that it forms long, thin strands in the soup. Simmer for about 30 seconds and then serve at once.

You can find chicken katsu in Wagamama, Yo! Sushi and Itsu as well as in supermarket chiller cabinets, testimony to the dish’s popularity in this country. There are probably very few people under the age of 30 who don’t know it. It’s a dish that combines the Japanese love of protein fried in panko breadcrumbs with the flavours of India. Personally, being perhaps more familiar with the flavours of India than many Japanese, I prefer my katsu a little bit hotter than usual, so have added a modest amount of cayenne pepper to the recipe and I like a splash of vinegar to give it a bit more vigour. Katsu curry often appears on vegetarian menus, and I think slices of aubergine are the perfect alternative to chicken.

4 small chicken breasts (or 2 auberginesthickly sliced)

2 tbsp plain flour

1 large egg, beaten

60–70g panko breadcrumbs

60ml sunflower or vegetable oil

RICE

400g sushi rice½ tsp salt

KATSU SAUCE

2 tbsp oil

2 carrots, peeled and chopped

1 large onion, chopped

2 garlic cloves, chopped

2.5cm root ginger, grated

1 tbsp medium curry powder

½ tsp cayenne pepper

400ml tin coconut milk

150ml chicken stock

2–3 tsp soy sauce

2 tsp honey

2 tbsp malt vinegar

Wash the sushi rice until it runs clear, then leave it to soak for 30 minutes in cold water.

For the sauce, heat the oil in a pan and gently fry the carrots, onions garlic and ginger until soft. Add the curry powder and cayenne and cook for a minute, then add the coconut milk, chicken stock, soy sauce, honey and the vinegar. Simmer for 20–25 minutes until the vegetables are really soft and the liquid has reduced a little. Using a stick blender or liquidiser, blitz to form a smooth sauce, then taste and add a little more soy sauce or honey if needed.

Place a chicken breast between 2 sheets of cling film or baking parchment and bash it into an escalope about 3–4mm thick. Season with salt and pepper. Repeat with the other breasts. Put the flour, beaten egg and breadcrumbs on 3 separate plates. Dip each chicken breast in flour, then egg and finally breadcrumbs. If using slices of aubergine, you don’t need to bash them, just season and coat them as for the chicken.

Put the soaked rice in a pan with 500ml of cold water and the salt, cover with a lid and bring to the boil. Once boiling, immediately turn the heat down to a simmer and cook for 10 minutes. Turn off the heat, leave the lid on the pan and allow the rice to steam for a further 10 minutes.

Heat the oil in a large frying pan and fry the chicken, or aubergine, for 4–5 minutes on each side until golden. Transfer to a warm plate lined with kitchen paper and keep warm if cooking in batches.

Slice each chicken breast or aubergine slice on the diagonal into 5 pieces. Spoon some rice into a teacup and compress, then turn out on to a plate to make a rice dome. Add slices of chicken or aubergine and spoon over some of the sauce. Serve with green vegetables.

For me, bread and butter is a favourite nursery pudding. It was originally intended to use up stale bread and with that thought in mind, I think that simple white bread is the right choice for this recipe. Some people choose brioche or some other enriched dough, but I prefer the simple plainness of the bread with the creamy vanilla voluptuousness of the custard. I like to add some sultanas or candied peel or both to my bread and butter pudding and finish it with an apricot glaze, having first caramelised the top with icing sugar under the grill.

SERVES 6-8

Preheat the oven to 190°C/Fan 170°C. Butter a 1.5-litre shallow ovenproof dish – something about 6cm deep is ideal. Generously spread the slices of bread with butter and cut each slice into 4 triangles. Arrange a layer of the bread over the base of the dish, then sprinkle in the sultanas and/or candied peel. Arrange the remaining bread triangles on top.

Mix the cream, milk, eggs and sugar together and pass the mixture through a sieve. Slit open the vanilla pod, scrape out the seeds and whisk them into the custard. Pour the custard over the bread and leave to soak for 5 minutes.

Place the dish in a roasting tin and pour enough hot water into the tin to come halfway up the sides of the dish. Bake in the preheated oven for about 30 minutes, until the top is golden and the custard has lightly set but is still quite soft in the centre. Remove the dish from the roasting tin and leave to cool for about 15 minutes. Meanwhile, preheat the grill to its highest setting.

Generously dust the top of the pudding with icing sugar and place under the grill to glaze – watch it carefully, though, as it burns easily. If the top starts to puff up, remove the dish from the grill and let it cool a little longer before returning to the heat. Brush the top with the sieved apricot jam and serve with some clotted cream, if you wish.
