Ingredients • 1 1/2 c. all-purpose flour • 3 Tbs. sugar • 1 lemon, zested • 1/4 tsp. sea salt • 10 Tbs. unsalted butter, chilled and cut into 1/2 in. pieces • 3 Tbs. ice water • 3 1/2 oz. almond paste at room temp. and cut into 1/2 in. pieces • 1/3 c. mascarpone cheese at room temp. • 1 tsp. vanilla • 2 Tbs. honey • 12-15 small fresh figs, stems removed and sliced (can use 20 dried figs, reconstituted) • 1/4 c. apricot jam or preserves Directions Combine flour, 2 Tbs. sugar, lemon zest, and salt in bowl or food processor. Pulse until blended. Add butter and pulse until mixture resembles coarse meal. With food processor running, gradually add water until moist clumps form. Take out and form into a ball. Flatten into a disk and wrap in plastic wrap. Chill dough for about an hour. Clean food processor bowl. Combine 1 Tbs. sugar, almond paste, mascarpone cheese, vanilla, and honey. Blend until smooth. Preheat oven to 400 degrees. On large sheet of parchment paper, roll dough out into an 11 in. circle. Transfer dough (on paper) to large heavy baking sheet. spread almond filling over dough. Leave 2 in. border. Arrange figs on top of filling. Spoon jam over figs. Fold dough over and pinch loosely to form 8 in. round. Bake on center rack of oven for 40 min. Place baking sheet on cooling rack for 10 min, then slide metal spatula under tart to loosen from paper. Transfer to platter and serve. Tip from Stephanie: You can overlap the figs somewhat. That will let you put more figs on. They shrink a little when they cook.

As a sommelier and wine educator for many years, I love to show people small-production wines that are made to be paired with food and teach them a little about the wines and why they work with a particular dish. When did you start your business and story behind it? I’ve been in the restaurant industry my whole life having worked in kitchens as a manager and GM in fine dining. In 2000 I started my journey as a sommelier, achieving certification by the Court of Master Sommeliers. When we opened Colony Wine Market in 2007, I knew that one day I wanted to open a wine bar in the space next door. I promised to put it on hold while raising a family and so fifteen years later in late 2019 the spot came available, and I thought it was the perfect time. Little did I know what lay ahead for the whole world and we opened on March 16, 2020, right at the start of all the lockdowns.

OMAHA! TRIP OF A LIFETIME

BRIDGEWATER NEIGHBOR LAURA FLYNT SHARES HER JOURNEY! After Mississippi State advanced to the College World Series Finals with Vanderbilt, my daughter (Margie McGee) and 10-year-old grandson (Hamilton McGee) began planning our trip to Omaha. So, with tickets purchased, car gassed up and bags packed, we were Omaha bound. We arrived in Omaha on June 28 ready for the 1st game. Our rooms were conveniently located directly across the street from the TD Ameritrade Stadium. With a short walk, we were ready to watch the “OmaDawgs.” The atmosphere was electric! The MSU fan base had definitely come to support their home team. (About 1% of the population of the state of Mississippi made the journey to Omaha.) Dak Prescott, Rafael Palmeiro, and Jonathan Papelbon were just a few of the prominent State alumni in attendance. Margie, Hamilton, and I were even seen on local TV Station KETV and on national TV in Game 3. Every game at TD Ameritrade was flooded with maroon and white. Sportscasters estimated 90% of the fan base was from Mississippi State. The TD Ameritrade began to call the stadium “Dudy North” because of the dominance of MSU fans in attendance. On the first night, we had a rain delay and suffered an 8-2

loss to Vanderbilt. The second night was rain-delayed, too, but was completely different with bats, pitching, and fielding all integral to the 13-2 win over Vandy. Game 3: Maroon and white were everywhere. With Bednar pitching and Sims ready to relieve him, State was fielding a great pitching duo. Our seats were just feet from the third baseline. During the game, my grandson, Hamilton McGee, retrieved a foul ball by Skinner. This 10-year-old boy was on the proverbial Cloud Nine. The only thing that could top getting a game ball was a win. Then it happened, MSU won decisively 9-0 over Vanderbilt in Game 3. Every MSU fan there was ecstatic! The TD Ameritrade Stadium was rocking with the maroon-white chant. I know this memory will always be a special one for me and my daughter, but especially for my grandson. The first national championship for Mississippi State. Our family is “ecumenical” in supporting Mississippi colleges and universities. Many of my cousins, my daughter (Margie McGee), and her husband (Hamilton McGee) are graduates of Mississippi State. Also, to add to the tradition, my uncle was a baseball pitcher for MSU years ago. You can always count on us cheering for any Mississippi team when playing! #Hailstate

Rochelle and Jason Hicks of Hidden Oaks Drive have been married for 22 years and have 17-year-old twins, Ethan and Isabella. Their two furry babies are Goldendoodles, Maddie and Georgia. They have lived in Bridgewater at Old Agency for six years. Jason received a Masters from Mississippi State and Rochelle attended Northeast Louisiana University. Both Rochelle and Jason are originally from Natchez, Mississippi and they met not long after they had both moved home from their respective colleges. It was an instant connection and they

have been together ever since! Currently, Jason owns a consulting firm, Sample, Hicks and Associates, and Rochelle is the executive director of Friends of Children’s Hospital. Ethan and Isabella are seniors at Jackson Prep and have been traveling to various colleges to begin their preparation for college in 2022!

Their favorite family activities include hanging out and watching movies, traveling together and for the boys, hunting and fishing! INSECTS to Your Outdoor Space

Every grower knows the feeling: proudly surveying your hardearned vegetable garden or flower beds, only to discover – with horror – an infestation of harmful pests. While the first impulse is to reach for the pesticides, Mother Nature knows there’s a better, more Earth-friendly way: beneficial insects. Beneficial insects comprise many different species and serve the holistic purpose of keeping plants healthy and flourishing, performing valuable services for plants such as pollination and pest control. Use the following tips to attract and retain these benign bugs to your outdoor space.

CHOOSE DIVERSE PLANTINGS

Selecting a diverse variety of plants will attract beneficials while also making your space more beautiful. Since adult beneficial insects primarily feed on pollen and nectar, gardeners should strive to have something in bloom from early spring until late fall, opting for a mix of trees, shrubs, and annual and perennial flowers in various heights – from low-growing herbs to taller, individual flowers. This arrangement will provide these bugs with the most comfortable environment and most attractive food sources, encouraging them to hang around all season. The top plant families for beneficial insects include the aster, carrot, legume, mustard, and verbena families. Particularly for fall (and depending on growing zone), bee balm, mullein, goldenrod, fennel, and aster are smart planting choices. USE PESTICIDES JUDICIOUSLY

While, ideally, many gardeners would prefer to avoid pesticides entirely, when a serious outbreak occurs, chemical intervention is sometimes necessary. To protect beneficial insect populations, pesticides must be chosen with care, erring toward targeted pesticides rather than broad-spectrum and products that degrade quickly, having briefer periods of residual activity and breaking down relatively quickly in the sun. The best choices are mostly natural ones, such as horticultural oils, insecticidal soaps, and botanical insecticides, which kill fewer beneficial insects while managing harmful pest problems. The goal here is to have a natural balance between predator and prey insects.

Much like the lawn and garden, beneficial bug populations need to stay hydrated; if convenient, nearby water sources dry up, these helpers will abscond in search of a new source. Regular watering or drip irrigation provides some relief, but in dry / drought conditions, gardeners should offer another hydration option (Penn State Extension recommends “shallow containers such as ceramic pot saucers with pebbles … to rest on”). And for soil-dwelling, nocturnal beneficials like ground beetles, which need shelter from heat and sunlight during the day, mulch (or other bug-friendly cover, such as stepping stones) keeps the ground moist and prevents them from losing hydration.
