Apple Sauce Being aa mom momisishard. hard. What makes it harder is how hard we are on ourselves. Personally I beat myself up so much emotionally. I always question myself on whether I’m doing this whole mom thing right or wrong. Maybe it’s just me but when you’re a first time parent everything scares you. And it doesn’t help when people try to “help” you by giving you advice that just makes you feel worse. I lay awake at night worrying about vaccines and the food I give my son or whether or not I made his bottle with filtered water or not. I told my husband once that I felt like a bad mom because that day I made his bottle up with water from the tap instead of filtered water--as if one time was really going to make a difference. At some point you just have to get out of your head and trust God. mysweethomedesign.com

So why did I say all this? Because I was super intimidated to make my child food at first and then I felt bad giving him store bought baby food. I felt like a bad mom. This is crazy! Giving your child store bought food doesn’t make you a bad mom. And then I thought that if I made him food I would somehow make it wrong and hurt him. Again, CRAZY! I just had to get over that, and I did! Now I love making my child food. I love knowing that I know exactly what’s in it. I love coming up with new ideas and creating food I think he will like and will also be good for him. One of his favorite thing to eat is apple sauce. To make sugar-free (yep that’s right no sugar) refrigerator apple sauce here's a super quick and easy recipe:

You will Need: 3 pounds of sweet apples (roughly 6-10 depending on the size) 1 Tablespoon of lemon juice Water Clean, core, peel and cut all your apples. Add them to a pot on medium-low heat. Add just enough water to prevent sticking. Let the apples cook for about 5-20 minutes until they’re tender. Stir often. Then add the lemon juice (used to prevent browning). Cook for another 5-10 minutes more (you should be able break the apples up easily). Next blend you apples in a food processor to desired consistency. And there you go!

The Art of Antique Shopping It certainly wasn’t a nice day to adventure out but I was determined. The temperature was in the low 40’s and the sun hadn’t shown its face in days. I knew I needed a day out. So I bundled up my baby and my husband took off to find an unique antique store.

Antique stores come in many shapes and sizes. You never quite know what to expect. Typically you will find a place chalked full of a by gone eras treasured possessions. Over the years I’ve come to appreciate the antique store that you have to get on your hands and knees to find treasures.

I found exactly that plus more at an antique shop called Butlers Antiques in Hopkinsville, KY. First thing you notice about the place is the piles upon piles of stuff surrounding the store. Everything you could imagine could be found there; old chairs, tables, bathtubs, and windows…. Oh so many old windows. I had never seen so many in one place. As we walked in I could tell I had some work to do.

There was stuff packed from floor to ceiling and barely enough room for my stroller. But I was on a mission that day. I was determined to find some cool plates for a display I wanted to do in my home.

I wondered as I searched through shelf after shelf of plates what stories these plates could tell. How many family dinners had graced their pretty faces? How old were they and who had owned them before? Every item you see has a story to tell. The best part is the life you will bring back to whatever item you find.

Refresh an item and create your own story with it. Find something you can flip for fun or for profit. Every time you walk into a store make a list of potential items you want but also be open to find something extraordinary. Or maybe like me, you just like walking around an old antique store because it gives you good ideas and inspiration for future projects. mysweethomedesign.com

Ingredients Meringue

1 1/2 Cups granulated sugar 2 tsp cornstarch 6 large egg whites 1/4 tsp cream of tartar 1 pinch salt 1 tsp vanilla extract

Cream Cheese Whipped Cream

8 oz cream cheese 1 1/2 cups heavy cream 3 Tbsp granulated sugar 1/2 tsp vanilla extract Topping

Strawberry jam or Fresh fruit

Preheat oven to 250 degrees In a mixing bowl, whisk together sugar and cornstarch, set aside. Then, separate egg whites from yokes. In a electric stand mixer, whip egg whites with cream of tartar and salt on medium speed until soft peaks form. Increase speed and slowly add in sugar mixture. Increase speed to high and whip until soft glossy peaks form. Add vanilla at the end.

Spoon meringue into 3 inch circles onto parchment paper lined baking sheet. Use a smaller spoon to create slight dips in the centers. mysweethomedesign.com

Bake in preheated oven for 1 hour. Then turn off oven and let meringue sit in the oven for an additional 45 minutes. Remove from oven and let meringue rest for an additional 15 minutes Cream Cheese Whipped Cream

Mix heavy cream until soft peaks form then add sugar and vanilla and whip until stiff peaks form. In a separate bowl whip cream cheese then add to heavy cream mixture. Mix for additional minute. Assemble

Top meringue with cream cheese mixture then add strawberry jam or fresh fruit on top. Assemble just before serving! Enjoy! Homemade Strawberry Jam
