KEEP CHRISTMAS FOOD FOR CHRISTMAS AND NOT FOR THE WHOLE OF SUMMER

This means all the extra chocolates, nuts, ice cream and mince pies shouldn’t come out until Christmas day and should go away straight after. You’ll enjoy them more if you wait!

ALWAYS CHOOSE QUALITY OVER QUANTITY

Commit to enjoying one or two of your favourite, good quality things rather than a little of everything. Don’t waste calories on poor quality party snacks, chocolates and lollies.

Always eat a snack before you go to reduce the temptation to try and fill up on high calorie, poor nutrient foods.

SET SOME LIMITS

For example, use the five canape rule — five canapes equates to a meal’s worth of calories, so make sure you are counting. An alcohol limit is also a must — it may be just on weekends or for very special Christmas parties, but create your own rule and stick to it.

PLAN SOME EXTRA EXERCISE AROUND SOCIAL FUNCTIONS

If time permits you should be doing extra exercise to compensate for the extra calories. Commit to an extra walk or even plan a social function based around a sport rather than a meal time. Most of all, enjoy yourself and the time you spend with friends and family.

How have you changed as a person over the last three years? One highlight is my growth as a leader. I feel I have grown considerably from when I first took on this role. Our organisation has certainly seen growth and of this I am extremely proud. The awards myself and the company have received in the past 12 months have been a magnificent affirmation for the team. It’s been a challenging but wonderful three years. Which women in your life have mentored/ inspired you? My grandmother was a teacher, business owner and loved politics. She was a strong woman with a great business mind and strong values. I’ve always looked up to my mother also who is resilient woman who has always been there for our family. She is a woman of great compassion, sensitivity and beneficial advice. There have also been some incredible women in our industry. Do women have a responsibility to help other women coming up through the ranks? Yes, it is important to mentor and offer a hand up. But I believe it’s not just women we need to help out. Gender diversity is the responsibility of both genders. It’s not until the value of all roles, including the stay-at-home work, is given its true value will we ever see true equity and diversity. What three qualities do you need to make it in the business world? Passion, tenacity and drive. How do you maintain work/life balance? This is a tough one. I really don’t subscribe to work/life balance. I have always thought, if you love what you do, then work is another part of your life. Someone asked me just recently, ‘do There also you ever switch off from work?’ One of our core needs to be an values is ‘it’s personal’. Being fourth generation of acceptance this remarkable legacy is that we aren’t really important to me. My work is such a part of me, superwomen that my work/life balance is one. and can’t do it Tell us about your all, perfectly, home, ‘chill out’ and unwinding time. all of the Home is my sanctuary — a place I relax, sometimes time. with a glass of wine or bubbles with Nivard, while he cooks dinner. We both love to spend time with our family and friends so we love it when the house is full of love, joy and laughter! We try to entertain as much as we can, whether it be a relaxed barbecue under our beautiful trees, or a dinner party or a picnic in the backyard with our nieces and nephews. Is there still stigma about being a ‘career woman’? No, but I do believe there needs to be more acceptance of the decisions made by both men and women when it comes to who stays at home and who joins the workforce. And until the honest value is placed on the work done in the home, then that acceptance will not transpire. We aren’t superwomen and can’t do it all, perfectly, all of the time. We need to be kinder to ourselves.

What keeps you going through the hard times? I really do have a great network around me. I am blessed to be supported by my wonderful partner Nivard and beautiful family and friends. My retired parents, who own the business, are an enormous encouragement and assistance. And we are also fortunate to have a great team at work who are very supportive. I have also truly valued the role mentors have played in my career. Their guidance and direction have certainly assisted through some of those harder times. What advice can you give for starting your own business? I would say, believe in yourself and back yourself. Ensure you have a great network around you, and plan well. One thing I have learnt, is I don’t and never will know everything, so I have learnt to surround myself with people who have the knowledge and skill base that I need to succeed. TRADITIONAL CHRISTMAS MULLED WINE INGREDIENTS

10 cloves 2 cinnamon sticks 1 ⁄4 cup caster sugar 1 nutmeg, roughly grated 2 cups water 1 orange, rind roughly grated 1 apple, roughly chopping with skin on 750ml fruity red wine, such as merlot

METHOD

1. In a large saucepan, heat cloves, cinnamon, sugar, nutmeg, water, orange rind and apple over medium heat. 2. Bring to the boil, then reduce heat and simmer for 10 minutes. 3. Add red wine and simmer for a further 5 minutes. Remove saucepan from heat. Strain and pour into serving glasses. Serve immediately.

Cutting a leg of ham

1. Place ham skin side up, then run a small, sharp knife under the rind around

the bottom (opposite end to hock) and each side of the ham to about halfway up. Peel the rind back. 2. Run the tip of the knife around the bone on the underside of the ham. Begin to slice on a slight angle down to the bone. 3. Run your knife lengthways along the bone to remove slices. Continue to slice towards the hock. 4. Continue slicing down to the bone, working your way around the ham. When you’ve reached about a third of the way up, you can remove the bone by making a few short cuts at the joint.

Storing your ham

To keep your ham fresh, fold rind back over exposed surface. Prepare a ham bag, cotton pillowcase or tea towel by soaking it in four cups of water and two tablespoons of vinegar and then wringing it out. Place the ham in the bag or pillowcase or cover it with the tea towel and store in coolest part of fridge. Re-soak the cloth in solution every few days or when it dries out and enjoy your delicious ham. December 2016
