Albondigas Soup From Olga Smith, owner of Pepe and Chela’s Meatballs:
2½ pounds ground beef (or ground turkey or chicken) 1 cup diced fresh tomatoes 1 cup diced fresh cilantro ½ cup onion ½ cup uncooked long grain white rice 1 teaspoon garlic powder 1 teaspoon salt Soup:
8 cups water ½ teaspoons tomato paste ½ tablespoons salt 3 carrots, peeled and chopped 2 chayote, quartered to bite size 3 peeled red potatoes, cut to bite size 1/3 head green cabbage, chopped into large pieces method
Combine all meatball ingredients and form into balls. To start the soup, stir the water, tomato paste and salt in a stock pot and bring to a boil. Add meatballs. Reduce and simmer until meatballs are cooked all the way through, about 30 to 45 minutes. Add vegetables. Bring back to a boil. Cook until the potatoes are soft, about 15 to 20 minutes. Serve with tortillas and a side of Mexican rice. The traditional way to eat the dish is to remove the meatballs from the soup and place them in a tortilla to eat.

Pulled Pork Sliders From Bob Carmichael, Perkins Restaurant 8 pounds Boston butt or pork shoulder 8-10 white or wheat mini-buns Rub
¼ cup garlic salt 1 tablespoon ground cumin 1 tablespoon fresh-cracked black pepper 1 teaspoon allspice 1 teaspoon thyme 1 teaspoon white pepper
Combine rub ingredients in large bowl. Rub on pork at least one hour before grilling. Honey Barbecue Sauce
½ cup extra virgin olive oil ½ yellow onion sautéed 1 clove garlic, finely chopped ¼ teaspoon celery seed ¼ teaspoon cumin ¾ cup red wine vinegar ½ cup honey 2 cups ketchup
Preheat olive oil in large saucepan. Add onion and garlic and cook until softened. Season with celery seed and cumin. Add vinegar and bring to a boil. Add honey and ketchup and simmer on low for 30 minutes. method
Smoke pork on grill for 14 hours. Pull pork into pieces and baste in honey barbecue sauce. Serve on mini-buns. Makes 8-10 servings.

Sweet and Tangy Coleslaw From Amanda Broxterman, Washburn Institute of Technology Dressing
½ cup mayonnaise ¼ cup granulated sugar 14-ounce can sweetened condensed milk ¼ teaspoon black pepper 1 teaspoon kosher salt 3 tablespoons white vinegar 1 tablespoon poppy seeds
Slaw Mix
2 red bell peppers 2 large green Granny Smith apples 16-ounce package coleslaw mix method
Whisk together all ingredients for the dressing and set aside. Thinly slice the red bell peppers and green apple. Toss all slaw mix ingredients together. Add dressing and gently toss again. Refrigerate for at least 2 hours, or preferably overnight, before serving.

Soon, your eyebrows will sweat, your nose will run. … But that’s part of the enjoyment of the house hot: taste and texture, heat and health.

Creme Caramel (Quesillo) From Luis Guillèn, New City Cafe Ingredients
1 cup sugar 4 eggs, separated 1 can condensed milk 1 cup milk 1 teaspoon vanilla method
Preheat the oven to 350 degrees. Melt the sugar in a pan with no liquid over medium heat until it starts to caramelize. Do not stir; instead, just move the pan around over the burner. Watch sugar carefully so it does not burn. Once the sugar turns to an amber color, pour some in the bottom of each of the eight ramekins. In a mixing bowl, beat the egg whites a little and add the remaining ingredients. Combine using a mixer or food processor. Pour egg mixture into the ramekins. Place the ramekins in another baking dish and add water to dish until it is halfway up the sides of the ramekins. Bake for one hour until firm; chill several hours or overnight. Before serving, apply a little heat to the bottom of each ramekin so the caramel at the bottom will melt and loosen so the dessert can be successfully flipped onto a plate. Makes eight servings.
