Causa Limena (Peruvian Potato Salad) 5 pounds Yukon gold potatoes 1 tablespoon kosher salt 2 tablespoons lemon juice 2 tablespoons lime juice 2-4 tablespoons aji (yellow pepper puree) 2 tablespoons canola or avocado oil 1 pound pasteurized crabmeat (chicken or shrimp of equal portions can be substituted for the crab) ½ cup mayonnaise ¼ cup minced red onion 4 ripe avocados, thinly sliced 10 pitted Kalamata olives
Wash and peel potatoes and remove any eyes. Boil potatoes in salted water. Strain and mash potatoes, preferably with a ricer. Season warm potatoes with salt, lemon and lime juice, aji puree and oil. While potatoes are cooking, mix crabmeat with ½ cup mayonnaise and minced red onion. To assemble potato salad, line a terrine mold or loaf pan with plastic wrap. Layer 1/3 potato mixture, ½ crab mixture, another 1/3 potato mixture, ½ crab mixture and the avocado slices. Repeat second crab layer and third potato layer. (Don’t stop with avocados because they’ll turn brown.) Top salad with plastic wrap and chill for at least an hour and as long as overnight.
¼ cup minced red bell pepper 3 hard-boiled eggs, sliced 12 large poached shrimp
Invert chilled salad onto serving platter; remove plastic wrap. Garnish salad with olives, red peppers, egg slices and shrimp.

Keftedes (Greek meatballs)
½ cup milk ¾ cup Italian breadcrumbs 2 pounds of 80/20 ground beef 2 shallots, minced 4 cloves garlic, minced 1/3 cup finely chopped oregano 2 tablespoons balsamic vinegar 2 whole eggs ½ teaspoon nutmeg (freshly grated is best) ½ bunch of parsley, finely chopped 2-3 cups of flour for dusting ½-3/4 cup olive oil (for frying)

Mix all ingredients together except flour and olive oil. Form mixture into 2-ounce balls (about 2 inches across.) Dredge meatballs in flour. Heat olive oil in a frying pan. When pan is hot, drop meatballs in pan and smash slightly. Cook covered for about three to four minutes on each side or until done.
