Treating a cough at home

It’s very important that you stay at home for 7 days if you have symptoms that may be caused by coronavirus (COVID-19), even if you think your symptoms are mild.

You should: •

There are a few things you can do to take care of yourself at home. Do not go to your GP, pharmacy or hospital.

Treating a fever at home

It’s safe to treat most fevers at home. However, you may be at risk of becoming dehydrated. You should: • • •

Wear loose, comfortable clothing - don’t try make yourself too cold

Drink more fluids - you should be peeing (approximately) every 6 hours Monitor your pee colour - a pale yellow colour means you’re unlikely to be dehydrated, whilst darker pee means you should drink more water Take paracetamol if you have a temperature - always follow the manufacturer’s instructions

Keep your room at a comfortable temperature and make sure fresh air is circulating

Take pain medication such as paracetamol - always follow the manufacturer’s instructions

Drink enough fluids to keep you hydrated - this is particularly important if you’ve woken up Drink warm drinks as they have a soothing effect

GROW YOUR OWN SPUDS Concerns over the use of pesticides and genetically modified crops have got many people thinking about growing their own fruit and vegetables. But you don’t have to be green-fingered or even have a garden to start growing your own food. Potatoes can be grown from a sack with little to no effort at all. If the closest you’ve come to growing your own vegetables was cultivating some cress on a piece of damp cotton wool when you were a kid, then potatoes are a great place to start. This is because they are one of the easiest and most rewarding vegetables to grow and you don’t need acres of space, or even a garden to get a perfect crop. All you need is a grow sack, seed potatoes and plenty of patience and you can create a mouth-watering harvest on a patio, balcony or even roof garden. Not only that, but dedicated spud lovers can grow the earliest potatoes possible. There are two main types of potato growing containers: a barrel or a sack. For those that prefer a sack, seed manufacturers Marshall’s have come up with a handy Gro-Sack with carry handles which means that unlike potato barrels, you can move it wherever you want freeing space in the greenhouse or balcony, just when you need it. So you’ve got your sack or barrel, you’ve got your seed potatoes and you’re ready to start growing potatoes. Still feeling unsure? Don’t

worry, to help you along the way Marshall’s have compiled a list of helpful hints to ensure perfect spuds every time.

Six steps to perfect potatoes 1) Before you start planting your seed potatoes place them in a cool, light area to encourage strong sturdy shoots to grow before they are planted in the ground. For all you non-gardeners out there, this process is called chitting. 2) Find the end of the potato with the most sprouts forming (called the rose end), this needs to be exposed to the light to promote growth. 3) Stand the tubers (this is the swollen region of an underground root) upright in an egg box with the rose end skyward. Keep them in a light frost-free place to let the shoots develop. 4) When shoots are up to one centimetre plant three in the grow-sack or barrel in a layer of 10-15cm of soil-based compost, burying them completely. 5) As the tubers start to grow keep burying them adding another 10-15cm of soil until the grow-sack or barrel is full to within a couple of inches of the brim. 6) When your grow-sack or barrel is full the tubers will start to leaf up. As soon as the leaves have flowered the potatoes are ready to eat.

If you’re new to growing your own vegetables, a beginner’s kit such as Marshall’s Gro-sacks will help you get started. They come in packs of three, complete with nine seed potatoes. A DAY FOR FATHERS EVERYWHERE Father’s Day is on Sunday 21st June this year. Find out how the tradition began and why people used to wear a red or a white rose on Father’s Day. Father’s Day is celebrated throughout the world as a way to honour and thank dads of all descriptions. The relatively recent addition to our calendar now extends to cover granddads, step-dads and father figures to reflect the increasingly complex nature of the modern family. But for many years Father’s Day was treated as a joke by cynics who dismissed it as a card company holiday, despite its poignant origins. Unlike Mothers’ Day which is recognised by Christianity as an old religious tradition dating back hundreds of years, Father’s Day is just over a century old and took some time to achieve popularity. Many historians believe it was founded by Grace Golden Clayton in Fairmont, West Virginia, USA, as a memoriam to the victims of the worst mining disaster in American history.

The explosion in nearby Monongah had killed 360 miners, over 200 of them fathers who left behind widows and more than 1,000 sons and daughters in 1907 and inspired Grace to approach her pastor with the idea of a remembrance day for fathers. She later explained: “It was partly the explosion that got me to thinking how important and loved most fathers are. All those lonely children and those heart broken wives and mothers, made orphans and widows in a matter of a few minutes. Oh, how sad and frightening to have no father, no husband, to turn to at such an awful time.” Grace joined forces with the Reverend Robert Thomas Webb, of the Williams Memorial Methodist Episcopal Church South, to establish an honorary day on July 5, 1908 - the nearest date to her late father’s birthday. However a lack of publicity and a massive Independence Day Festival conspired


to sabotage their plan and Father’s Day failed to capture the public imagination. The idea was revived in 1910 by a Washington woman who was brought up, along with her five siblings, by her Civil War veteran father William Smart following her mother’s death. Sonora Smart Dodd argued: “A Father’s Day would call attention to such constructive teachings from the pulpit as would naturally point out: The father’s place in the home. The training of children. The safeguarding of the marriage tie. The protection of womanhood and childhood. The meaning of this, whether in the light of religion or of patriotism is so apparent as to need no argument in behalf of such a day.” She won the backing of Old Centenary Presbyterian Church (now known as Knox Presbyterian Church), Spokane YMCA and the Ministerial Alliance and the first Father’s Day was celebrated on June 19, 1910. Thanks to Sonora’s efforts, roses became associated with the day - red blooms worn for a living father and white if the father has died.

An attempt to have Father’s Day recognised by Congress three years later failed, as did a further effort in 1957, and it was not until 1966 that a presidential declaration by President Lyndon B Johnson assigned the third Sunday of June as Father’s Day. President Richard Nixon made Father’s Day an official US holiday in 1972 declaring it “an occasion for renewal of the love and gratitude we bear to our father”. Like many American ideas, the initiative travelled across the Atlantic and soon became popular in Britain as more and more of us used the opportunity to show our dads how much we love them. Having grown into the fifth largest card-sending holiday, Father’s Day which this year falls on June 21 - is now firmly established in our calendar as an important family occasion. So whether it’s a home-made card, a traditional pair of socks or a special day out, set aside some time this year to say thanks to yours - he’s worth it!

Cultural Feasting & New Cinema Club with Watermans There's certainly no lack of content available while we're in lockdown: from plays to films, cabaret to dance, even live music and art, there's a veritable smorgasbord of choice. Pork Chops with fried Pumpkin Gnocchi and a Creamy Cider Sauce At the time of writing, we were still in lockdown and it looks set to continue for a good few weeks yet. So, here’s a perfect dish to celebrate Father’s Day in June - just in case. Home-made gnocchi are a revelation and while an investment of time, manufacture is kind of therapeutic, so pour yourself a drink, put the radio on and roll up your sleeves. You may never buy the supermarket stuff again. Heat the oven to 50C (just to keep the gnocchi warm) Serves 4 For the gnocchi 150g baked squash (about a 1/3 of a small one- freeze the rest or make soup) 150g baked potato 1 egg 50g grated parmesan ¼ tsp salt Grating of nutmeg plain flour a knob of butter For the Sauce 100ml cider (or apple juice if preferred) 50 ml cream (single or double, or even sour) A handful spinach A dash of Worcestershire sauce 4 x pork chops (or 2 large ones, taken out of the fridge about an hour before cooking) Oil and butter for frying Scoop the flesh out of the potato and squash and put them through a ricer (or mash gently without squishing too much) and leave to cool a little. Add the egg, the grated parmesan, salt, nutmeg and add enough plain flour to bring it to a manageable dough. 20 | To advertise please email: suki@goldstarcreative.net


Dust a clean surface with flour. Knead and divide the dough into 6 to 8 balls. Roll them into ropes about 2cm thick and cut into small pillows, 3 cm long. Roll the pillows lengthways down the tines of a fork with your thumb so they curl around it and place on a floured tray. Bring a large pan of salted water to boil. Cook the gnocchi in batches (ready when they rise to the top), removing with a slotted spoon - this takes only minutes. Melt a knob of butter in a frying pan until frothy and fry the gnocchi in batches on a medium/high heat until golden and place in the oven to keep warm. In the same pan, heat a tbsp oil and a knob of butter until really hot. If the chops have a thick layer of fat, it’s a good idea to make three snips in the fat along the length of the chop- this stops the chop form curling inwards. Season the meat well and place in the pan, two at a time. If the pan is overcrowded, it will lower the heat and the chops will stew rather than fry. We often tend to overcook pork, so keep your eye on it - keep the heat high and you’ll get a beautiful golden crust on them. They only take a few minutes on either side to cook through. Remove from the pan and set aside to rest. Add the cider to the hot pan, scraping any pork juices and sticky bits from the sides into the cider. Reduce, bubbling for a minute or two, removing the acidity, then lower the heat and add the cream, reducing again on a low heat for a minute or two until thick. Season and add the spinach. Cook the spinach until wilted and finish with a splash of Worcestershire Sauce. Return the chops and gnocchi to the pan and serve.

Apricot Galette May and June see the start of the stone fruit season, where these beautiful, rosy hued, tart little fruits make their entrance into Summer cooking. Don’t be put off by the pastry making bit- it is super simple and can also be made savoury if you omit the sugar. The trick is to keep it as cold as possible and don’t work it too much. It’s a dessert for all seasons and works well with apples too. For the pastry 190g plain flour 50g caster sugar 115g v cold butter 60ml ice cold water For the filling A punnet of apricots (about 10) halved and stoned. 1 tbsp brown sugar A beaten egg for brushing Heat the oven to 180C or 170C fan Weigh the flour and the caster sugar into a large mixing bowl and mix well. Add the cold butter and mash the butter into the flour and sugar with a fork until you have pea sized lumps. Add the water and bring together. Refrigerate if you can, for 15- 20 mins- this makes it easier to roll out. Dust a clean surface with flour and flatten the dough into a round (about 20-25cm in diameter) with a floured rolling pin. Transfer carefully onto a lined baking sheet. Arrange the apricots in circles, skin side down, leaving a 4cm lip around the edge of the circle. Fold the edge of the circle over onto the apricots all the way round. Brush the pastry with a beaten egg (or milk would do) then sprinkle the pastry and apricots with a tbsp of brown sugar and bake for 35 mins until golden brown. Eat warm with ice cream.

Soda bread is fast food in the world of bread. No kneading, no waiting around for a rise and little shaping. This bread is a healthy meal in its own right, a wonderful twist on a traditional soda bread and an amazing colour. I love the flavour punch of earthy beetroot, the fennel seeds, and the crunch of pumpkin seeds. I won a Bronze Award in The World Bread Awards 2017 in the Irish Wheaten Soda Bread category for this loaf. Substitute the buttermilk for a dairy free alternative with a tablespoon of lemon juice. This makes a 500g loaf or two 250g loaves. Method Heat the oven to 200C and line a baking tray with greaseproof paper. Sprinkle a little flour in the centre. Blitz the cooked beetroot, buttermilk and fennel seeds together in a food processor or mash together with a potato masher. Mix all the dry ingredients in a mixing bowl. Add the wet mixture to the dry ingredients and mix together with a spoon. It should feel sticky but be pliable. Add a pinch more flour if too wet or a spoon more buttermilk if too dry. Once all the wet ingredients have been absorbed by the dry ingredients, lift from the bowl and shape into a loose ball with your hands, then place the ball on your lined baking sheet. Sprinkle a little flour on the top of the ball and gently press down the top of the ball with the heel of your hand to make a dome shape. Add a few pumpkin seeds for decoration. Cut a deep cross into the dough using a flat knife. The cross should almost reach the bottom of the baking tray. Bake for 30-35 minutes. To check it is cooked properly remove the loaf from the baking tray and tap the bottom of the loaf. It should sound hollow. Let it cool a little, cut a slice and add topping of your choice or just plain butter. GARDENING - 6 EASY TO GROW HERBS AND VEGETABLE

Many bush variety tomato plants can be grown in hanging baskets and window boxes, making them ideal for people who don’t have that much space. They also grow really quickly, meaning you won’t get bored (or worried) waiting for something to happen.

It’s one of the questions anyone remotely proficient in cultivation gets asked the most when friends who aren’t green fingered come over. ‘What would you recommend for someone who doesn’t really know what they are doing?’ There are several possible answers to give, and really it comes down to what the person wants to grow- are they looking for a colourful flower bed, a lush plant paradise, or something more functional like a vegetable patch? To make things a little simpler and easier or at least colour coordinated (to some extent), let’s stick with vegetables; here are 6 that almost anyone can get right.

Tomatoes

Beetroot

Sow the seeds directly into moist ground between March and July and you should be laughing in no time. Don’t expect anything to emerge until after about September and from thereon through the winter, though, but that’s kind of obvious.

Onions and garlic You can plant onion bulbs and garlic cloves in drained soil, next to one another, in either spring or autumn and expect to have plenty of both with little maintenance come late summer. Easy as growing onions and garlic...

Mint

Of all the herbs mint is the most attention seeking. Not only does it have that unmistakable taste, plant a little in pretty much type of moist soil and it will go crazy. As such we recommend using a pot to restrict how far it can stake its claim.

Potatoes

By using potato bags there’s little that can go wrong. Plant in late-February or March, part filled with compost, and as the green shoots begin to appear cover with more compost. Do this until the end of the season, not forgetting to water, and once the foliage starts yellowing you’re ready to rummage for your spuds.
