Sukar Magazine: How did your journey as a singer start? Marwa Ben Sghaeir: It’s been an exciting journey ever since I participated in the Star Academy in 2006/07. I’m delighted I made it all the way to the finals and that gave me the key to many doors of opportunity I never expected. It took me on a path through Lebanon, back to Tunisia and then on to Egypt and Dubai. I then settled happily in Kuwait and have been here for three blissful years.Thankfully I’ve been able to work in my passion each step of the way; growing as an artist and developing my craft. SM: You currently have over three hundred and fifty thousand followers on Instagram alone. What do you believe are the reasons that have made so many people gravitate towards you? MBS: When I came to Kuwait I wasn’t exactly a known figure; my first job was a commercial selling dental products. Slowly my fan base grew and, the truth is, I believe it was my singing voice that led so many people to me. My singing has always been my focus as an artist and I don’t post any glamour shots or modeling shots, so I believe my fans follow me because of my singing ability.

BROWNIE SQUARES WITH DATES Makes 8 Servings INGREDIENTS BROWNIE SQUARES WITH DATES 1/4 cup 50% less fat & unsalted butter 1/2 cup all purpose flour white 1/2 cup dates chopped 1/4 cup brown sugar 2 tbsp artificial sweetener or as desired 1 pinch low sodium Salt 1 whole small egg 1 egg white 1 tbsp cocoa powder 1 tsp liquid vanilla essence 2 tbsp chopped walnuts 1 tbsp melted dark chocolate CARAMEL SAUCE 2 tbsp dark brown sugar 4 tbsp light whipping cream GARNISH 1 tbsp chopped walnuts PREPARATION Blend butter by using electric blender, then add melted chocolate, vanilla, chopped dates, salt and sugar, then continue mixing until the mix becomes fluffy, then add egg and blend for 1 more minute. Combine flour with cocoa powder. Then add to previous mixture, mix with spoon, and add walnuts. Pour batter into greased shallow 4 inch rectangular cake mold, bake in a hot oven at 180 ̊ C until done. (Do not over bake until dry, centre should remain moist). Combine caramel sauce ingredients together, cook over heat for 5 minutes or until thick and then pour over cake. Garnish with chopped walnuts. Cut into 8 equal portions and serve.

PREPARATION Take 1/4 cup from the milk and mix with the starch until dissolved then keep aside.

DECONSTRUCTED RASPBERRY CHEESECAKE Recipe by Lucy Moore

A quick and super delicious dessert to share with your loved ones this winter.

‫تلذذ بطبق حلوى سريع التحضير وشاركه مع من تحب‬ . ‫هذا الشتاء‬

Serves 6

INGREDIENTS BISCUIT 1 & 2/3 cups of white flour 1 cup of butter 1 cup of sugar 1 egg ¼ teaspoon of baking powder Pinch of sea salt ½ teaspoon of freshly ground cardamom

TOPPING 2 cups of Philadelphia cream cheese 2/3 cup of white sugar 1 cup of raspberries

‫الزينة‬: ‫ كوب كريمة جبنة فيالدلفيا‬2 ‫ كوب سكر أبيض‬3/2 ‫ كوب توت‬1

DIRECTIONS Preheat your oven to 180C. In a large bowl blend the butter and sugar together until smooth. Beat in the egg until fluffy and then sieve in the remaining biscuit ingredients.

‫طريقة التحضير‬: ‫ اخلط‬.‫ درجة مئوية‬180 ‫حمي الفرن على حرارة‬ ،‫الزبدة مع السكر في وعاء كبير حتى يصبح الخليط طريًا‬ ‫ ومن بعدها أضف باقي‬،‫أضف البيضة واخلط جيدًا‬ . ‫مكونات البسكويت ببطء‬

Mix with your hands until you have a firm dough and place in the fridge to set.

After 1 hour, roll out the dough on a floured surface to ½cm thick and cut into a large, round shape. Place on parchment paper on a baking tray and place in the oven for 12 to 15 minutes or until golden brown. Transfer to a wire rack to cool.

Just before serving, take the cream cheese and sugar into a bowl, bring together with a whisk until the sugar has dissolved. Wash the raspberries and pat dry, roughly chop or tear them apart and then mix gently into the cream cheese mix. Roughly scoop the mixture on top of the biscuit and serve on a pretty tray.

‫حلوى اللوتس الذهبية‬ MILLION LAYER LOTUS Recipe by Lucy Moore

This super simple yet utterly indulgent dessert is the best way to wow your friends and family this winter, not to mention it's perfect with a cup of coffee on a cold day. Serves 6 INGREDIENTS PASTRY 1 pack of puff pastry squares 1 egg FILLING 1 cup Lotus paste 1/3 cup fresh double cream DECORATION Gold leaf Lotus biscuit DIRECTIONS Preheat your oven to 180C. Place six pieces of the pastry onto a baking tray, place baking parchment over the top and another baking tray and place in the oven for 10 minutes. Then remove the top tray and parchment and return to the oven for a further 10 to 15 minutes. While the pastry is baking, take the lotus paste and mix together with the double cream. Place the mix in the freezer to set a little. Remove the pastry from the oven and cool. Use rectangular plates to serve; place the pastry on one side of the plate and the lotus mix in a scoop on the side as pictured.

PUMPKIN PECAN SQUARES Recipe by Sara Al-Minhali

Soft and spicy pumpkin squares with cream cheese swirls and pecans are just a perfect wintery treat. Serves 12 INGREDIENTS PUMPKIN BATTER 1 cup unsalted butter, softened 1 cup brown sugar 1 egg 1 tsp vanilla extract 1 cup pumpkin puree (fresh or canned) 2 cups all purpose flour 1 tsp baking soda 1 tsp cinnamon 3 tsp pumpkin spice 3/4 tsp salt CREAM CHEESE FILLING 225 grams cream cheese 1/4 cup sugar 1 egg 1 tsp vanilla extract 1/2 cup chopped pecans

DIRECTIONS Preheat the oven to 175 C, line a (9 x 13 inch) baking tray with parchment paper.

In a mixer beat the butter until creamy. Add the brown sugar and mix well, beat in the egg and vanilla till combined then add in the pumpkin puree.

Combine the dry ingredients in a separate bowl, whisk the flour, baking soda, cinnamon, pumpkin spice, and salt. Mix into the wet ingredients and combine well.

For the cream cheese filling, beat the cream cheese for a minute until smooth. Add the sugar, egg and vanilla; whisk on high until completely combined.

Spread two thirds of the pumpkin batter in the pan, top randomly with spoonfuls of the cream cheese filling. Add the remaining pumpkin batter on top of the cream cheese. Using a knife gently swirl the two together, sprinkle with the crushed pecans.

Bake for 35-40 minutes until a toothpick inserted comes out with a few crumbs attached. Allow to cool completely at room temperature, then transfer to the fridge for about 2 hours; cut into three inch squares.
