Recipe of the Month- Sweet & Sour Pork

Serves 4 1 syn per serving. Ready in 40 minutes and suitable for Freezing Ingredients Low calorie cooking spray 500g lean pork fillet, visible fat removed, cut into chunks 1 large onion, cut into chunks 1 red pepper, deseeded and cut into chunks 1 yellow pepper, deseeded and cut into chunks 2 carrots, peeled and cut into matchsticks 50g fresh bean sprouts, rinsed 200g sugar snap peas 150 prepared fresh pineapple, cut into chunks

For the sauce 200ml boiling chicken stock 2 garlic cloves, crushed 1 level tbsp cornflour 1 tbsp tomato puree 2 tbsp white wine vinegar 4 tbsp dark soy sauce

Spray a non-stick wok or large frying pan with low calorie cooking spray and place over a high heat. Add the pork and stir-fry for 5-6 minutes or until lightly browned. Transfer the pork to a bowl with a slotted spoon, cover and keep warm. Put all the ingredients into the pan and stir-fry for 4-5 minutes. Return the pork to the pan and stir-fry for 5-6 minutes or until the meat is cooked through. Meanwhile, mix all the sauce ingredients in a small bowl. Stir the sauce and the pineapple into the pork and vegetables and cook for 3-4 minutes. Serve hot with Thai fragrant/jasmine rice-garnished with shredded spring onions.
