Apple P ie and Wensleydale Cheese

Dover Sole with rown utter, Lemon, Capers and Parsley

There’s an old Yorkshire saying, ‘Apple pie without cheese is like a kiss without a squeeze’. If you think you prefer cream or custard, try this classic combination and you may just be converted!

Delicate in ﬂavour but with a ﬁrm texture, Dover sole is best served simply – as in this classic regional recipe.

Serves 2 10 mins preparation, 20 mins cooking

Serves 6-8 30 mins preparation, 1 hour cooking, 1 hour 30 mins chilling Ingredients For the pastry 230g plain ﬂour 150g chilled unsalted butter, diced Zest of 1 lemon 75g caster sugar 1 medium egg and 1 medium egg yolk, beaten together

Ingredients 50g plain ﬂour Sea salt and milled black pepper 2 tablespoons rapeseed oil 50g unsalted butter 2 Dover sole, 500g each – ask your ﬁshmonger to gut them and remove the head, tail and skin

To serve 250g Farmhouse white Wensleydale cheese 20cm loose-bottomed ﬂan tin, 5cm deep

40g ﬂaked almonds Juice of 1 lemon 40g capers 1 tablespoon chopped parsley

1. Season the ﬂour with a little salt and pepper.

For the ﬁlling 5 Bramley cooking apples 25g unsalted butter 150g caster sugar, plus extra to dust 3 eating apples 2 tablespoons milk

2. Heat a large non-stick frying pan, then add the oil and 10g of the butter. When this is foaming, cover each Dover sole in the seasoned flour, and place carefully in the pan. Shake the pan gently to prevent the fish from sticking. 3. Leave the fish to cook undisturbed for 5 minutes until golden, then flip them over and cook for a further 4 minutes. Transfer them carefully from the pan onto warm serving plates. 4. Discard any oil left in the pan, and return to the heat. Let it get hot again and add the remaining butter. Let the butter foam and turn slightly nut-brown in colour, then add the almonds immediately, followed by the lemon juice, capers and parsley.

To make the pastry 1. Place the ﬂour and butter in a large bowl, and gently work them together until the mix resembles breadcrumbs.

5. Spoon the butter over the Dover sole and serve.

2. Stir in the lemon zest and sugar, then slowly mix in the eggs to form a dough. 3. Shape the dough into a ball, wrap in cling ﬁlm and keep in the fridge for 1 hour.

Oven Guide Choose from a range of single and double integrated ovens, which includes conventional to multi-function products, as well as microwave ovens and range cookers. Our selection of ovens will look the part in any kitchen.

Conventional Cooking

Fan Assisted Cooking

Uses heat from elements located in the top and bottom of the oven.

True Fan Cooking

Circulates the heat generated by upper and lower heating elements.

Cooking with Lower Heating Element

The heating element is located around the fan for better heat circulation.

Cooking with Upper Heating Element

The lower heating element is used independently to give concentrated lower heat, helping ensure food is cooked right through.

Grilling

The upper heating element is used independently to give concentrated top heat. It is advisable to use this facility for no more than 15 minutes, towards the end of cooking.

Fan Grilling

Rapid Heat

The grill element browns food and seals in the juices, while the fan circulates heat evenly. As it needs lower temperatures, it is more economical.

Oven Guide

Choices include variable (adjustable power level) or fixed (adjustable shelf position), and on some products the option to use half the grill for small meals (dual zone).

Significantly reduces pre-heating times by rapidly heating the oven to the required temperature. Once the temperature is reached, the oven can be turned to the desired function for cooking.

Using the fan without heat circulates air around frozen food. It is more hygienic than leaving frozen food out to defrost over a long period of time.

Ductless Application â&#x20AC;&#x201C; Re-circulating

Removes odour and smoke particles from the kitchen/room to the outside of the home via a ducting kit.

Removes odour and smoke particles from the air. This air then passes through a carbon filter before being released back into the kitchen/room.

Carbon Filters

Depending on the position of the extractor in the kitchen, there are two types of ducting kits available.

Carbon filters have a limited life. We advise you to change them when there is a noticeable drop in performance. The intervals between changing the filter will depend entirely upon the amount of cooking you do, but on average they will last around six months.

Grease Filter The grease filter should be removed and washed regularly. Please check the instruction manual for details.

Measured in revolutions per minute (rpm). At a fast spin speed, more water is extracted from the wash load, reducing drying time and overall running cost.

Automatic Load Detection System

The washing machine is fitted with a sensor, enabling it to use the exact amount of water needed to wash and rinse in relation to the load, without compromising performance.

An energy efficient system. Only the water required for the washing is heated. There is no loss of heat in the pipeline from the hot water tank or boiler to the machine. This can also increase the efficiency of the enzymes within detergents.

Drying Vented

Condenser Dryer A vented dryer removes the damp air produced during drying and pumps it outside the home through a vent. This is done through a plastic hose which can either be permanently fitted to an outside wall or simply hung out of a window.

Does not require a vent. Condenses and pumps water through waste pipe or separate pull-out tray.

Filter To allow the dryer to operate efficiently, the filter should be cleaned after each drying cycle by hand or with a soft brush. The filter should be washed occasionally in detergent solution to remove small particles.

Spin Speed - Measured in revolutions per minute (rpm). At a fast spin speed, more water is extracted from the wash load, reducing drying time and overall running cost.
