My Czech friend, Petr Dam, was reading my copy of the July 13, 2020, Vestnik when he saw the recipe for kvašáky and said, “NO vinegar!” So here is his Czech-Moravian recipe:

KVAŠÁKY 6 lbs of small gherkins or 3 to 4 inch cucumbers, washed well 5 grape leaves 8 whole cloves of garlic 8 slices of fresh horseradish dill leaves and stems 2 to 2.5 Tablespoons of salt per quart of cold water, stir until all dissolved Large 1- or 2-gallon jar with a lid (you can make them in two jars)

Wash cucumbers properly, poke 3 to 4 holes with a needle, then tightly pack them into the jar. The leaves, garlic, and horseradish can be alternated at the bottom, in the middle, and on top. To this, add the salted water. Place the lid on but not closed so that the cucumbers can breathe as some of the water will overflow. Have some saucer or bowl under each jar. When this occurs, add additional salted water. Leave in a warm but not hot place for 7 to 10 days. Eat and enjoy! It is best to keep them in the fridge once they are done.
