SPICED TOFFEE APPLE CAKE (SERVES 12)

meet, eat, drink and stay INGREDIENTS 115g unsalted butter 300g Bramley apples, peeled and chopped 50ml water 75g caster sugar 2tbsp Calvados 175g light brown sugar 3tbsp Golden Syrup 2 eggs 1tsp vanilla extract 200g self-raising flour 1 tsp bicarbonate of soda 1 Granny Smith apple, peeled and sliced 2tsp mixed spice

METHOD Lightly grease a 10-inch cake tin. Melt 25g of the butter, add the Bramley apples, water and caster sugar, and cook until soft. Add the Calvados and bicarbonate of soda then leave to cool. Beat the remaining butter, light brown sugar and syrup until it is light in colour. Slowly add the egg before adding the flour, vanilla and spices, beating for one minute. Fold the apple purÊe into the cake mix and pour into the cake tin. Arrange the sliced Granny Smith apple over the cake. Bake at 160°C for 45 minutes.
