DISH’N IT OUT Simple Salmon
4 salmon fillets (approx. 1lb) 1 cup milk 4oz cream cheese 1 cup finely minced cucumbers 2 Tbsp. chopped fresh dill or rosemary 1 T Dijon mustard 1/4 t salt, divided 1/4 t pepper, divided
• Heat large skillet sprayed w/cooking spray on medium-high. Season salmon with 1/8t salt and pepper. Add salmon; cook 5 min. on each side or until fish flakes easily with fork. Remove from skillet; cover to keep warm. • Add milk and cream cheese to skillet; cook and stir until cream cheese is completely melted and mixture is well blended. Stir in cucumbers, mustard, remaining salt and pepper and dill or rosemary. • Return fish to skillet. Cook 2 min. or until heated through.

hen coming to town, a majority of Destin visitors arrive over the Mid-Bay Bridge. Once here, it’s time to roll the windows down, take your first breath of salty air and smile – you made it to the beach! Before you run off and get sandy toes, you may want to take a quick left at the foot of the bridge. Located on the shores of the Bay is a new Destin tradition. What’s it take to become an instant must-visit destination? We sat down with Lucy Buffett, owner of LuLu’s, to find out how her brand of Southern hospitality is enchanting our coast.
Immediately it’s apparent that LuLu’s is more than just a new restaurant in town. There’s a lot going on here. What exactly is LuLu’s?
LOL! I’ve been trying to figure that out since day one! Seriously, the mission is the same as when it was a tiny dive with nine employees and 40 seats: a vehicle to share my love of cooking the recipes of my childhood growing up on the Gulf Coast. Also, quite frankly, I had moved back to Alabama from Los Angeles to take care of my aging parents and I needed a job! I always say the heart of LuLu’s is the kitchen, so that is the foundation of what has now become the LuLu’s experience. I was determined that the food we served, while not fancy, would be the absolute best quality it could be. And because I was working side-by-side with the crew in the beginning, I wanted

You’ve managed to create a place that feels like it’s always been here. In hindsight it seems like we should’ve always had a restaurant on this part of the bay. You are really the first in this part of Destin to do it, and you did it right. Why Destin, and how did you choose your location? From the beginning of LuLu’s, I was intuitively leaning toward Destin, if I ever did a second location. One of the guys who develops for Margaritaville was working on their Destin location with a local developer He was also looking for another restaurant concept to go next to his Legendary

to create a business where I would want to work based on respecting each other, loving your job, and taking care of our customer. I’m passionate about taking care of my crew! I always tell every new employee, “If you take care of each other and LuLu’s, LuLu’s will take care of you!” Equally important for all of it to work is our passion and dedication to our customers and their needs and expectations. First of all, we developed a positive hospitality training program for our employees so that we could insure a culture of consistent and positive customer service. But we also consciously planned an environment and facility where families could relax and escape from the rigors of their every day lives – even on vacation! The other ingredients of the experience: daily live music, a sandy beach for kids, and a merchandise shop all evolved
Marine facility. He suggested that we meet and after I walked the location, I was sold. It had all the elements that had been a part of LuLu’s story: there was a bridge, it was off the beaten path, and it looked out over this gorgeous bay. As far as the facility goes, we had twelve years at our Gulf Shores location and during that time, we have fine tuned our systems and operations. We knew what we needed and worked with the developer to design a restaurant that can serve 3,000 people a day. As far as doing it right, well, that’s just part of our culture and my upbringing. I have no tolerance for mediocre.
organically because at the end of each year, we are always looking at how we can improve or add something that compliments the experience. We are always making it up as we go, so no telling what we will add in Destin. Our Gulf Shores location also sports a Mountain For Youth rope climbing course and a Fun Arcade.
Both of your locations here and in Gulf Shores are boater-friendly. You’ve also mentioned before that you want to enhance this “natural theater” that we call the Bay. What does boater-friendly mean to you? Boat friendly means you can come by boat. It’s just that simple. And though we weren’t able to build dockage like we have in Gulf Shores because of environmental restrictions, the water is shallow enough for folks to wade in and/or if they prefer, we also provide a water taxi that will bring folks in to a small landing area on our beach. There is nothing more fun than taking your boat to go to lunch or dinner. As far as the “natural theater” goes, our Bay vista allows our customer to watch all of the various activities that goes on in the Bay: boaters, fisherman, paddle boarders, kayakers, jet skis, dolphins and it’s just plain ol’ entertaining!

The Gulf Coast is your home, and it’s an important part of who you are. Tell us how the Gulf Coast has influenced your business. I’m a Gulf Coast gal, and the food I serve is classic Gulf Coast cuisine that highlights the wonderful bountiful seafood from the warm salt waters. Food is a major part of our unique coastal lifestyle coupled with recreation on the bays, rivers, and beaches along the Gulf Coast. We tend to play as hard as we work and that is certainly embodied in the LuLu’s concept.

Glancing around, there’s a ton of family photos. Family is clearly a motivator. It’s rumored that some of your recipes have been directly handed down from your Grandmother. Is that true? How else has your family influenced your business? Many of the recipes, including my signature gumbo, were handed down from my grandmother. I come from a family of sailors and shipyard workers. So I come to the table with a serious case of work ethic but my brother has been a great inspiration: he loves his work, sells escapism, and humorously refers to himself as a shameless self-promoter. I have followed that lead and it has worked out pretty well. We know it has to be a good story, tell us how you earned the nickname, “Crazy Sista”? In my family, like most Southern families, somewhere along the lineage, there is that oddball cousin or Aunt that is just a little bit different. And there seemed to always be a Crazy Sista in the family. Being the rebel and sensitive one in the family, I took it upon myself to play that role. In my youth, it just got me in a lot of trouble but now I wear it as a badge of honor, as I have figured out how to live life on my own terms. Your brother Jimmy has a place across town. We know he’s played a song or two at your restaurant in Gulf Shores. Any chance that’ll happen here? Well, you never know when he will drop in for a bowl of gumbo! These days, I prefer to have him relax when he visits and we catch up on our families. I don’t want to pressure him to play because that is his day job, so it’s work for him. And I think he would probably sing his tunes at Margaritaville first when he visits. He does love his job though, and chances are when he’s in a place where someone else is playing live music, he’s usually more than happy to sit in and sing backup. Lastly, you’ve mentioned that this has been a 14 year-long dream realized. What’s in store for the future of the Crazy Sistsa and LuLu’s? I’m thrilled to have landed in Destin but who knows where it will all lead? I do have a cantina concept that I would like to do one day for Crazy Sista. But for now, my great team is growing and nurturing the restaurants while I’m working on two new cookbooks, LuLu’s Kitchen – which will be published in paperback in May 2016 - and Gumbo Love – that will be a hardback published in May 2017. GET THE GEAR Without the right gear, you don’t have a chance! Swordfish can be extremely powerful with battles lasting up to two hours. This is one of the few species that can swim at depths of 2000 feet and then head right to the surface with no ill effects.
Head to the Spur and the steps at the tip of DeSoto Canyon. The canyon is an erosional valley that cuts through the continental shelf along the Northern Gulf Coast. Here an up-welling of deep water occurs and brings nutrients and phytoplankton to the surface, which attracts bait fish and squid, which in turn attracts large predators like swordfish. Swordfish are primarily nocturnal feeders. However, in recent years we’ve found them during the day. Instead of feeding near the surface at less than 300 feet down as they migrate at night, you can find them feeding in depths just greater than 200 feet. Swords can be caught year-round, but the most consistent action is between April and November.

In the old days, anglers would target swordfish with 80 lbs. class tackle. Modern reels with upgraded drag capacity and the invention of braided line, you can fish with reels like the Shimano Tiagra TI30WLRSA (which stands for 30 wide, two speed, and long range drag). With that said, there are still old school fishermen who prefer to use the 80 lb class rods and reels with monofilament line.
As far as rods go, many will do the job, but none are better than the Shimano Terez Carbon-fiber butt rods. The bent butt gives anglers more power over the fish with less effort. As they are solid aluminum, they can be a little on the heavy side. The new Terez Carbon-fiber rods reduce the weight by about 40%, making this version the weapon of choice.
RIGS & LEADERS
We rig our rods with a 20-foot long wind-on leader. By IGFA rules, you are allowed a total leader and double the line length of 40 feet on tackle over 20 lbs. We tie a double line using an Australian Braid to form a double line at the end of our main line that is six feet, this gives

six-foot double line, a 20-foot wind-on leader 150 lb to 300 lbs., and just a short ten-foot leader on the actual rig keeps us under the IFGA maximum. This allows the reeling of most of the leader on the reel, which enables more control of the fish, and avoiding the use of hand line. Rigs consist of a ten-foot leader 125 lbs. to 300 lbs., three-way swivel at the top, an LP LED light attached between the swivel with a #32 rubber band. We use the rubber band to attach the lead so it breaks off during the fight and does not give the fish leverage to use the lead to throw the hook.
BAITS
Swordfish love squid, but they are not the only choice for bait. Other options for bait include Northern mackerel and Bonita strips. When rigging the squid, make sure to sew the head to the body as it comes off easily and looks unnatural. Rigging the squid, mackerel and strip baits is important to sow or pin the bait to the leader. This prevents it from bunching up around the hook.
BUOYS & BALLOONS
Chances are you will be fishing at night and need to keep track of your baits. Buoys serve two purposes – one is to keep your bait at the right depth and the other is use as a marker. To allow for detachment during a battle, use either a long line clip or rubber band. Attaching a light stick to the buoy makes it easy to see at night.
Before you head out, you’ll need to do a little dockside preparation. Getting your lines spaced right in the dark can be a challenge. With preparation, it can be much easier. First, mark your long line, medium line and short line rods. Now it’s time to mark the line itself with a black marker. Pull off 50 feet on the long rod and put a one-foot long mark. Then do the same at 300 feet. On the middle rod, mark 150 feet and 45 feet, on the short rod mark 300 feet and 400 feet.
GAFFS & FIGHTING HARNESS
It’s necessary to have the correct gaff when bringing the fish on board. It’s common for anglers to have a gaff that is far too short. In a 60-foot sport fishing boat you need enough gaff to reach the water and three feet away from the boat. In a 20-foot center console, you need enough gaff to reach past the motors. As far as hook size, they need to be at least five inches. Fighting harnesses are a must and can save your back in a smaller boat or if you do not have a fighting chair. With a good shoulder or kidney harness, the right rod belt and a pair of drop strops – you can let go of the rod if you get tired, sit back and relax, and not have a care in the world! When we just swing our arms without turning our body, it becomes difficult to maintain arm extension. One sure way to know if we turned our body properly is to hold our finish position and observe.
