Editor`s Letter We’ve had a few lovely warm days and the weather tricked us into believing summer had arrived, this only seemed to happen as I left the UK for some strange reason. I can’t really moan as I’ve had a fabulous month of April. I visited Tulum Mexico for the first time and stayed at the superb privately owned Villa Amalfi Tulum. Read all about it on pg 8. I sampled some wonderful food and drinks and we’ve a couple of recipes to share with you to try, check out pg 30 & 31. The views continue to be described as spectacular as millions of people visit this Maya ruin in the Riviera Maya. We spent the morning wandering around the ruins and enjoying the views. It can get quite busy I would suggest visiting in the morning. Villa Amalfi Tulum what can I say about this place honestly it is one of the nicest places I have ever stayed at, the design is amazing
and the owners have spent so much time on every tiny detail, the colours flow from the outside of the property inside. Even down to the towels and the tea towels. As daft as that may seem these tiny intricate details make you feel as if you really are in paradise.

I found the ideal spot to work first thing in the morning when everyone was still asleep up on the fabulous veranda, I could watch the sun rise and listen to the birds in the jungle singing their dawn chorus. Two Fabulous Restaurants in Tulum Posada Margarita is a rustic Italian gem owned by a cool young Italian couple. The concise menu features homemade pastas, fresh vegetables, and charcuterie and the white-washed patio is basically an invitation to spend hours sipping wine. This is a shabby-chic picturesque dream on the beach, this little Italian place is so cute and romantic, and 14 | May 2017
it’s completely open and right on the beach. It has the best Italian food in the city. Fresh fish in lemon and olive oil paired with a huge mason jar of fresh squeezed green juice is just one of my favourites. The chef is always willing to talk you through the tasty menu (fresh fish, pizza, pasta), and we came back twice during our stay. You will need to book, as it
is always full. They have an extensive wine menu and the atmosphere was lovely.
Mezzanine Most visitors to Tulum aren’t looking for Thai food. But for those spending more than a couple of days in town, the change of culinary pace can be quite welcome. southcountymagazine.co.uk

METHOD Combine water and rosemary in a small pan and bring to a boil. Reduce heat to medium and allow to simmer, until reduced by half. Remove from heat and allow to cool. Strain through a fine strainer, and add apple cider vinegar. Store in a reusable container I picked mine up from Superdrug. WHY IT WORKS Rosemary is rich in vital nutrients, including iron, calcium, and antioxidants. It may help prevent signs of ageing, treat acne, and prevent infection. It also has aromatic properties that may soothe and rejuvenate. Apple cider vinegar helps battle acne, and may help reduce age spots. The two combined leaves you with a fresh, radiant glow!

INTRODUCING A NEW MEMBER OF THE FAMILY One of the thorniest issues a pet owner may face is introducing another dog or puppy into the family and boy do I know about it. We have had a Shih Tzu Louis from a puppy and he is 3 years old this October. I had been toying with the idea of another for well over a year and my son decided he was going to take it upon himself to get a new puppy. Fantastic idea I thought at the time but it has been harder than I had first thought. My dog who has had the house and

family to himself may be resenting having to share his family’s attention. The initial meeting went well but as the first week went on things began to take a little turn for the worse. Before introducing our new puppy, I tried to take away all items he may feel protective of slowly. A couple of favorite toys and his bones, as these he tends to react aggressively to when strangers are in the house. We made the puppy his own bed, in his own crate given both dogs
their own space. For the first week it seemed to be going well a few times Louis the older dog would snap at the new addition and it seemed that he was putting him in his place, but there have been a few occasions when Louis seems quite upset and put out. After a lot of research on-line I found that there’s conflicting ideas of what should and should not be done, so I decided we would give a monthly review of how things are going with us. Chicken Chimi in the Oven ”A fragrant, spicy chicken mixture is rolled up in flour tortillas and baked. This is a fabulous recipe! Serve with salsa, sour cream, and guacamole.” INGREDIENTS: • • • • • • • • •
4 tbsp olive oil 1/2 cup chopped onion 2 cloves garlic 2 cups salsa 3 tbsp water 1/4 cup chilli powder 1/2 tspground cumin 1/2 tsp ground cinnamon 1 pound cooked, shredded chicken breast meat • 1 cup refried beans • 6 (10 inch) flour tortillas

Preheat oven to 220 degrees Lightly grease a medium baking dish. Heat 2 tbsp oil in a large saucepan over medium heat. Saute onion and garlic in oil until tender. Stir in salsa and water. Season with chili powder, cumin, and cinnamon. Transfer the mixture to a blender or food processor, and blend until smooth. Return mixture to the saucepan, stir in the chicken, and cook until heated through. Spoon an equal amount of refried beans down center of each tortilla and top with equal amounts of the chicken mixture. Fold tortillas over the filling, and secure with toothpicks. Arrange seam-side down in the prepared baking dish, and brush with the remaining olive oil. Bake 15 minutes in the preheated oven, turning every 5 minutes, until golden brown and crisp.

These refreshing Beer Margaritas have only 3 ingredients and taste way better than any bottled mix I have tried in the UK. For me, the best balance of flavors and the closest to an actual margarita came from equal proportions of all three.

Cauliflower Rice RECIPE
WHAT’S ALL THE FUSS ABOUT CAULIFLOWER RICE? Well this one of those easy swaps if you lose the rice you can save your carb allowance for the fun stuff. Crammed with more nutrients than I have space to mention and with just 25 calories per 100g (compared with about 140 calories per 100g cooked white rice), this new grain-free grain is cropping up as a highly popular rice alternative. No longer is the vegetable restricted to the smelly and soggy cauliflower cheese of the 80’s. It has undergone a health-enhancing transformation, the result of which should satisfy even the most avid of rice addicts. I first had it at my daughters and I am now hooked. 1 large cauliflower could serve four people, though with fewer calories and much more dietary fibre than rice, there’s no harm in having an extra large portion. This doesn’t just need to play the role of the unassuming side dish; it also works well as a rice replacement in a biryani.

METHOD The key to disguising the cauliflower is to grate it finely, I find the fine side of a box grater gives the best result. In a deep frying pan or sauté pan, heat a little oil over a medium heat. Add the grated cauliflower with generous pinches of salt and pepper. Sauté for about 5 minutes, stirring occasionally, just until the cauliflower is cooked through and has lost its raw taste. Stir through a splash of cream (if using), and serve.
