The dedication of you and your staff to the wonderful and true traditions of "Ancient" Umbria made for a sumptuous and delicious meal and a unique Medieval evening of colorful flag throwing, music, dance and armored Knights at tournament. THE SECOND MILLENIUM

Welcome to the year 1200 and to the Abbazia di San Pietro in Monte for the celebration of the King of May. In this Dark Age, when everything is subjected to great transformations, we are entering an era of historical revolutions. Warned by the prophecy of Holy Writ, we see clearer than daylight that in the process of the Last Days, as love waxed cold and iniquity abounded among mankind, perilous times were at hand for men's souls.

" If, in our uncertainty, we must often err, it may be sometimes better to risk excess in rigour than in indulgence, for then at least we do no injury by loss of principle " Yet take heart! For Justice has been Justice, Mercy has been Mercy, Honor has been Honor, Good Faith has been Good Faith, Truthfulness has been Truthfulness from the beginning.

Middle Age has given birth to great kings and valorous knights there have been great battles and magnificent victories. Man has been guided by law, by order and by a strong sense of responsability and a greater belief in moral valor and moral principle. Opinions may alter, manners may change, creeds rise and fall, but the Moral Law is written on the tablets of Eternity... ENJOY!

MEDIEVAL TIMES "...in every sauce, savour or soup, you can put precious things, like gold, gems, or spices elected from your own will..." Medieval times...going back to discover researched and sumptuous techniques of a sophisticated cuisine. Banquets for noble excess would keep busy for a long time armies of chefs, of slaves on the purpose of obtaining a windmill of flavours, of visual astonishments, of tastes, of colours, of unlikely as well as hazardous combinations, adorable spices as well as unknown. And again, table-cloths one on top of another, only to reach the perfect chromic match with food, wooden dishes, personal knives and forks just introduced at the table (end of year '300). Those are virtues and faults of an ĂŠpoque that has given birth to modern cuisine. Recreate and research things that you don't cook from a long time is like a delicious plunge onto a table arranged as ancient times...

extraordinary medieval evening for the Sunset Club of Pasadena, California. Fosca Moretti and La Tavola dei Colori for the commitment, the long research for the menu and for making my guests wonder at every dish at this enchanting medieval banquet. Mauro Branda and the Laus Nova for the music, the fun and dancing they put into Carmina Burana, their exquisite voices and for the atmosphere they contributed to create. Eugenio La Rosa and the Famaleonis for setting the medieval camp and for their great performances of armored knights at tournement. The flagthrowers - Sangemini for the grand performance, their coloured flags, the drums, the trumpets, and for making my clients cry.
