f you could condense the experience of Italy to a dollop of fresh ingredients perfectly arranged on Old World bread, would you do it? Of course you would! Bruschetta is a staple on just about every menu these days, and the ways that restaurants interpret the classic snack are as many as the variety of ingredients you may want to experiment with in your own summer delight. That said, not every bruschetta is a masterpiece. Some are simply Tower of Pisaesque, difficult to eat vertical conundrums, while others evoke the Colosseum with their unyielding largess of flavor. My advice? Keep it simple, keep it flavorful (without hijacking your palate), and pair with a decent wine. A nice Brunello or Chablis is the perfect mid-range option for an elegant affair.

Balsamic cherry & mascarpone (or Ricotta) Bruschetta Ingredients: 2 cups pitted cherries ¼ cup thinly sliced fresh basil ¼ cup snipped fresh chives 2 tsp sweet aged balsamic vinegar (Colavita) Sea salt to taste Black cracked pepper to taste 1 baguette, sliced and toasted ¼ cup mascarpone or ricotta 1–2 tbsp honey
Directions: Slice cherries and place in a mixing bowl. Combine with balsamic vinegar, sea salt, basil, and pepper. Spread toasted baguette slices with mascarpone or ricotta cheese. Drizzle with honey. Add cherry mixture on top and serve.
