t was a book called ‘Fountainhead’ by Ayn Rand that inspired Sanjay Puri - the founder of Sanjay Puri Architects, Mumbai, to begin his career as an architect. A book about setting one’s own standards treading new paths guided by vision alone, it perfectly describes his journey in the field of architecture. Puri, a graduate from the Academy of Architecture, Mumbai went on to work for, and eventually grow to become an associate of Architect Hafeez Contractor. In 1992, he founded Sanjay Puri Architects, a firm fuelled by his visionary approach. A testament to architectural innovation and sustainable design, Aria Hotel in the wine-growing region of Nasik in Maharashtra effortlessly integrates the site contours into its design. It is interesting to note how rectilinear cuboids angled differently create balconies that frame the picturesque surroundings. The development incorporates cross ventilation, large decks for heat reduction and extensive landscaping for passive cooling. MIRAI HOUSE OF ARCHES, BHILWARA
Mirai is a residential villa in Rajasthan that demonstrates thoughtful design despite the scorching desert climate. Occupying a small corner plot, the three-level house is meticulously planned for a multi-generational family, featuring four bedrooms, two living rooms, a gym, and a study. As a result of its dynamic interplay of volumes and curvilinear envelope, Mirai offers sheltered open spaces and reduces heat gain. main administration office, auditorium, seminar halls, library, and cafeteria, all harmoniously integrated into one building. Rather than imposing its presence, the five-level structure gracefully ascends from the approach direction, cleverly disguising its 20-meter height. Responding to the city’s climate, where temperatures fluctuate between 30°C to 40°C for eight months of the year, the building embraces energy efficiency, relying minimally on artificial lighting and air conditioning. A network of open courts and a diagonal indoor street promote natural ventilation, while a ventilated brick screen shields the east, west, and south facades from excessive heat gain. RAS TOWNSHIP, RAS, RAJASTHAN
The Ras Houses are situated in Rajasthan, India, among open courtyards and landscaped gardens. Comprising 61 executive guest houses, 47 bachelor hostels and 18 studio apartments, this low-rise development exhibits a thoughtful approach to design. Deeply recessed windows, sheltered courtyards and naturally ventilated spaces ensure reduced heat gain and naturally cooled interiors. Each housing unit has an organic layout inspired by the charm of old Indian cities. By employing local labour, fly ash bricks, and residual energy from a nearby cement plant, the project achieves both economic and environmental benefit. »

With its striking design, Stellar is the perfect blend of functionality and aesthetics in Ahmedabad, India. Its rectilinear composition houses retail spaces on the lower levels and offices on the upper floors, opening into landscaped terraces that enhance the work environment. Standing 110 meters long, the building’s upper floors are fragmented with north-facing terraces, while a two-level angular office space punctuates the northwest corner. Rustred composite aluminium sheets form this distinctive office volume, creating a captivating contrast with the rest of the building’s muted colour tones. The building’s large openings on the north side and recessed windows on the south side minimise heat gain. STUDIOS 90, KARNATAKA
Studios 90 is a residential project that captivates with its colourful cuboids. Designed to accommodate studio apartments, a hostel and a guest house, these mid-rise buildings are a vibrant addition to the residential township. The angular layout ensures each room faces north, intelligently countering the region’s blistering climate, where temperatures surpass 35°C for eight months each year. Balancing functionality and aesthetics, the buildings feature cantilevered balconies adorned in vivid primary colours - red, blue and yellow - adding character to the overall architecture. 24

The circulation spine meanders along the courtyard, offering glimpses of nature, while work areas open to external gardens. With a north-facing orientation and carefully designed louvres, the building maximizes natural light, ensuring energy-efficient interiors. Inspired by traditional Indian courtyard houses, this unique office setup seamlessly blends open and enclosed spaces, creating a harmonious work environment. THE RAJASTHAN SCHOOL, RAS
Inspired by the charm of Indian villages and historic cities, the Rajasthan School stands as a low-rise three-level masterpiece. Designed to combat the scorching desert climate with temperatures exceeding 36°C, the classrooms are strategically oriented to harness indirect sunlight. MAny people perceive you As An elusive designer. could you shed soMe light on this iMpression And discuss how you connect with your Audience And clientele?
Being perceived as elusive is not a deliberate choice; it’s more reflective of my personality. I’m naturally reserved and prefer to let my work take center stage. I reside in Kolkata, somewhat distant from the fashion epicenters. My focus has always been on my creations speaking for themselves rather than seeking the limelight. I am comfortable with not being in the public eye as long as my designs convey my vision. My connection with the audience and clientele is built on the emotional resonance of my work. One of the most memorable moments in my career dates back several years when Indian fashion was largely traditional. I decided to take a bold step by experimenting with the quintessential Indian attire, the saree. I introduced innovative concepts like the saree drape and trouser saree, challenging the traditional norms. This was incredibly risky, as it had never been done before in Indian fashion. I meticulously crafted 12-13 pieces in vibrant and unconventional colors, fully aware that this could make or break my career. When the models walked the ramp showcasing these avant-garde sarees, the audience was taken aback. It was a game-changing moment. The saree drape and trouser saree became iconic and played a pivotal role in shaping modern Indian fashion. This experience taught me the power of taking risks and embracing innovation. tell us About the collection you presented At the indiA couture week 2023.

It features elements like the “Khinkhab brocade,” intricate zardozi work, rich textures, hand embroideries, and exquisite tailoring. The silhouettes are a harmonious blend of structured draping and an artful sense of abandon. Delicate lacework and romantic detailing play a significant role in defining the overall aesthetic. Additionally, the collection includes a beautiful collaboration with special jewelry pieces, paying homage to the traditional “jadau” craftsmanship, featuring diamonds, emeralds, and rubies, all designed to complement and complete the looks. Absolutely, I recognize the importance of giving Indian fashion a strong global presence. There was a time when I ventured into international fashion with our brand called Anamika Khanna. and keep them for many years. For instance, I recently encountered a lady on a flight who told me that I had designed her wedding outfit, and now her daughter was wearing it. This, for me, is the epitome of sustainability— designing pieces that stand the test of time. When we produce fashion shows, we aim to use items that can be recycled or repurposed, rather than discarded. For instance, in one of our AK-OK shows, we restyled and remodeled shoes from a previous show. While I won’t claim that we exclusively use sustainable fabrics, we are making conscious efforts and are committed to making further improvements. you hAve been A pArt of the fAshion industry for MAny yeArs now. whAt chAnges hAve you observed in the industry over tiMe, And how do you plAn to AdApt to those chAnges going forwArd?
The fashion industry has undergone a remarkable transformation over the years. I do have some concerns about the direction Indian fashion is taking, with a growing emphasis on bridal wear. While bridal fashion is undoubtedly important, I believe there’s so much more to explore and offer. It’s essential to strike a balance between celebrating tradition and pushing the boundaries of creativity. I also observe a significant shift towards individuality. People are increasingly comfortable embracing their unique styles and identities rather than blindly following trends. This individualistic approach to fashion is not limited to India; it’s a global phenomenon.

he world, including Indians, can sometimes possess stereotypical interpretations of Indian cuisine. Globalization and modernization further advanced the misconception of associating India with its limited range of popular dishes. However, Indian cuisine is rooted in its culinary diversity and regional traditions. Putting Indian cuisine back on the map is Michelinstarred Chef Vineet Bhatia MBE, who ensures his cooking reflects a perfect blend of cultural authenticity with a unique and modern twist. “During my time with The Star of India, I remember experiencing the horror of seeing what was being served as Indian food. This was the starting point of realization for me as to how strongly I felt about the misrepresentation of Indian food and the very fact that I almost detest the word curry being associated with Indian food all the time,” elucidates Vineet. His recent venture, Dhilli, embodies the concept of serving authentic Indian cuisine with a contemporary take. Dhilli, yet another iconic restaurant added to The Oberoi’s repertoire, offers its patrons the opportunity to connect with the culture and distinctiveness of old Delhi with a modern spin through its food, decor, and hospitality. Recreating the essence of the city on a plate in a way that appeals to every diner is no easy feat. Under the expert mentorship of Vineet,

Dhilli pays tribute to the culture, history, and vibrancy of Delhi. A thoughtfully curated menu by Chef Vineet reveals a re-interpretation of recipes with illustrations of Delhi’s many historical monuments and embossed gold amalta patterns. Meant to be an immersive experience, these patterns also feature on the brass bowls and plates, an homage to the streets of Delhi covered in these flowers during the summer. DELHI ON A PLATE
The restaurant draws inspiration from the streets of Delhi and infuses it into each of its dishes, along with creativity and innovation. Having spent a good part of his life as a student and upcoming chef in Delhi, Chef Vineet dedicated a year to rediscovering and understanding every flavor, texture, and ingredient across every neighbourhood of the capital. The menu showcases carefully compiled dishes from each neighborhood. There are several chaats to choose from under the Chandni Chowk section, a wholesome Punjabi spread from Rajouri Garden, flavorful biryani from Nizamuddin, delicious kormas and kebabs hailing from Jama Masjid, doi maach and chingri representing CR Park (Chittaranjan Park) and a range of bread like naans, parathas and the like under the Gali Paranthewali section. “Inspiration comes from different quarters at different stages of your life, but I would largely pin it down to my »

Vineet. He recalls how his mother was a very clever cook who would not go to the market and buy the ingredients and produce that a recipe required. Instead, she would open the doors of her pantry and refrigerator to check what was available and figure out a way to adapt the recipes accordingly. He explains, “So if she had brown rice instead of white rice, she would make a very nutty kheer with brown jaggery and almonds. So she would use ingredients she had and adapt very cleverly.” While the world is turning towards the concepts of sustainable food usage and recycling food, it was always a core part of his mother’s culinary ethos. Watching his mother impart her knowledge through food, he was quick to imbibe her teachings. He dedicates his deep-rooted habits of reusing and recycling food to his mother. Vineet adds, “So a lot of my inspiration has been derived from my mother and her approach towards food. I would say a lot of the taste and flavors in my hands come from her as well. It is a gift that has been given by her.”

TRANSLATING INSPIRATION INTO FOOD
Even in his childhood, his mother would describe him as a daydreamer in school who would complete his tasks in parks or in the building with his friends. His family believed he would succeed and thrive in an artistic and creative environment as opposed to taking the academic route. In addition to this, working as a chef in a professional restaurant, Vineet derives inspiration from anywhere and everywhere. Just watching his peers or coming across a picture in a magazine would draw his attention. He would imagine his own version in his head and then translate it into a unique yet delicious dish. Moreover, coming from Indian roots, he would see things the Indian way. Vineet says, “For example, a risotto would translate as a khichdi in my head. But I would not prepare it with just rice and dal; rather, I created these khichdis with wild mushrooms and broccoli and served them as part of our menu.” He goes on to explain how his novel culinary style has evolved from his Indian roots and is deeply rooted in Indian culture and heritage. He simultaneously ensures that he »

since that would also largely dictate the target audience and diners who would come to indulge in a memorable dining experience. In essence, Vineet’s cooking is largely influenced by the seasonality, the region, and the diners belonging to that particular area. Delving deeper into this three-pronged approach for a successful dish, Vineet explains how one must keep in mind who you are serving, how that identifies with the personal culinary ethos, and where the dish is being served. This thought process is what has led Dhilli to become a trailblazer in the culinary domain. The concept at Dhilli is all about the rich culinary heritage that has influenced the food, its people, and Vineet’s vision as a chef. Chef Vineet strongly believes that all the rulers that have come about with Delhi being the seat of power and the influence that has had on the evolution of food, and then digging that out and celebrating it, is what Dhilli is all about. “How I perceive this is what I finally manage to put on the plate, with a little twist to what they would have experienced at their homes or on the streets,” adds Vineet. specialize in Indian cuisine, Vineet dishes out his best advice, which is to ‘keep calm and carry on’. This ideology resonates deeply with him, as he prefers focusing on his skills and being content with whatever he does. Especially in challenging situations, maintaining a sense of happiness and resonance with your work becomes crucial for consistent performance. Vineet says, “Maintaining a positive mindset, avoiding panic, and collaborating with peers to find solutions are essential. Engage in open discussions, seek input from others, and brainstorm with friends and family to arrive at effective solutions. Remember, keeping calm and carrying on is key.” In his three-decade-long career, Vineet, a renowned Indian chef, restaurateur, author, MBE awardee, and revered media personality, continues to strive to portray and celebrate India on a global platform. He is determined to inspire today’s generation to embrace the true Indian culinary heritage, even though it may be challenging to witness stereotypes and comparisons that undermine the cuisine. Vineet signs off, “I want to speak to this generation and get them in touch with their culinary heritage. I want to show them that our food is so complex and flavorful in so many ways that it can easily beat any cuisine across the globe. Indian food must be put out on a global platform as it so rightfully deserves.”

anjeev Kapoor launched his first television show in 1992, Khana Khazana, which lasted for 18 years. His show achieved a remarkable feat with over 500 million views in 120 countries, cementing his status as a household name. A native of Ambala, he graduated from New Delhi’s Institute of Hotel Management with a diploma in Hotel Management. Back in 1992, this talented chef took on the role of executive chef at the Centaur Hotel in Mumbai, and he was the youngest person ever to do so. As an entrepreneur, Sanjeev Kapoor opened a chain of restaurants called The Yellow Chilli in India and abroad. Khazana, Kapoor’s first Dubai restaurant, was launched in 1998, and since then, he has built his empire through entrepreneurship. WHAT’S THE BIGGEST MISCONCEPTION PEOPLE HAVE ABOUT YOU?
There’s a common misconception about me that I’ve always dreamed of becoming a chef. Truth is, my path to becoming a chef was accidental. Initially, I was focused on pursuing a career in architecture. In any case, I’ve always been determined to work hard and achieve my aspirations. WHAT IS THE SOURCE OF INSPIRATION TO BE RUNNING SO MANY BUSINESSES?
I embarked on this journey with a view to doing something
unusual with consistent efforts. My need for experimenting and trying out new things inspired me to explore avenues and keep growing. Fortunately enough, in my case, new opportunities kept coming at the right time and I made sure that I tapped on them. This, and of course, the support and love of my family and audience inspired me and brought me here! IN YOUR CAREER, WHAT WOULD YOU SAY WAS THE BIGGEST RISK YOU EVER TOOK – AND DID IT PAY OFF?
When you decide to go against the norm, you are sure to be hit with criticism, despite that taking that first step is vital. One of the biggest risks would definitely be when I decided to quit my well-paying full-time job as an executive chef of a reputed hotel. Thankfully, there was no resistance from my family, so I took the risk, believed in myself and followed it wholeheartedly. What followed was a lot of hard work, and the success of Khana Khazana so yes it did pay off! HOW ARE YOU REDEFINING FOOD GIVEN THE CHANGING DYNAMICS OF THE FOOD LANDSCAPE?

Indian cuisine back into the limelight, but with a modern twist to suit the current trends not just in India but beyond. WHEN FACED WITH DIFFICULTIES, WHAT IS YOUR WAY OF HANDLING CHALLENGES?
Challenges are part of every venture. One can either sit back and whine about them or face them head-on with a smile. I always go for the latter and convert challenges into opportunities. I find it fun to face challenges as I’m always curious to know how I will deal with the situation. CAN YOU SHARE SOME OF YOUR FAVOURITE INGREDIENTS TO WORK WITH AND WHY?
Each ingredient in our pantry has a different role to play as only they can ‘make or break a dish.’ My current favourite ingredients are ragi, palak and cinnamon. Each of the three has a distinctive feature, is versatile and loaded with health benefits, and inspires me to work with them. WHAT’S YOUR FAVOURITE FOOD INDULGENCE?

With fresh and seasonal high-quality ingredients, dher saara pyaar and a pinch of innovation, any dish can go from ordinary to extraordinary! So my approach is to keep things simple but explore and play with ingredients, methodology and presentation. Each time, I make sure that the recipe is done differently than the previous time with the muchneeded tweak required to suit the current trends. CAN YOU SHARE ANY MEMORABLE EXPERIENCES OR CHALLENGES YOU’VE FACED IN YOUR CAREER?
Throughout my career, there have been various humbling incidents like ranking 34th on the Forbes India Celebrity 100, in 2017 and receiving the fourth highest national honour in India - Padma Shri in 2017. Everything was as per plan, however, at the last moment, the hosts requested to completely change the menu to an all-vegetarian, Gujaratiinfluenced fine-dine menu. Executing this overseas at the last moment was challenging. But the reviews thereafter and the chance to have a one-on-one conversation with him for almost an hour made up for all the hard work and effort. Gastronomy is a creative process, with a massive canvas so it is sure to be followed with some feedback and some criticism. his year marks a significant milestone for German-born, Switzerland-based chef Tanja Grandits. It was exactly twenty years ago, in 1993, when she began her career in the culinary arts, taking up a three-year cooking apprenticeship at Traube Tonbach — a prestigious five-star hotel set within the enchanting Black Forest. This kicked off an incredible journey in the gastronomic world, which saw her work at Clardige’s in London and Château de Moncaut in Avignon before opening her first restaurant, Thurtal, in 2001. “My time in London had a great impact on me. It was there that I first became intensely aware of the changing times, the cosmopolitanism, the dynamism of a big city, and the energy of young chefs and restaurateurs. It was also then that I first experienced colleagues who were proud of their profession. I encountered many styles of cuisine for the first time in London, such as Japanese or Indian cuisine.” Harnessing all this knowledge and pouring it into her culinary offering at Thurtal led the restaurant to international acclaim. Here, in the small Swiss village of Eschikofen, Tanja made waves with her gastronomic prowess, winning the title of Cook of the Year and a sixteenpoint rating from Gault&Millau. After seven years of triumph at Thurtal, the time came for Tanja to start a fresh
chapter in her life, and she relocated to Basel to launch a new restaurant, Stucki. Now, fifteen years after opening, restaurant Stucki stands as one of Switzerland’s most decorated dining venues. Awarded with two stars from the Michelin Guide and nineteen Gault&Millau points, it has gained the praise of esteemed critics and discerning foodies alike — and at the heart of this success lies Tanja’s unwavering dedication to, and love for, her craft. Blessed with an innate aptitude for the culinary arts, and a formidable gut instinct, she follows her heart when cooking, creating cuisine that reflects her boundless creativity and radiant personality. “The most important thing which I learned in my life, as a woman, cook, and mother, is to do what I chose best. The inspiration is just there; I don’t have to make an effort. That is perhaps a gift that I have.” Luckily for diners, Tanja doesn’t hold back when it comes to sharing her talent with the world — and if cooking is an art, then her restaurant Stucki is the canvas on which she exhibits her creative genius. Nestled in the heart of Switzerland’s cultural capital, this venue has been immaculately conceived to take guests on a sensational culinary experience. And everyone here brings back something that also helps me.” Almost everything that happens at restaurant Stucki is a team effort. Tanja leads by example, and her collaborative spirit shines through as she cultivates a supportive environment, encouraging her chefs to experiment and explore their own creativity during the dish creation process. “We start with the main ingredient, which my Chef de Cuisine defines (fish, meat, or poultry). On this basis, I make a basic draft and add vegetables, components and flavours. Then I discuss the dish with my sous chefs, and we define who will do what for it.” In terms of some of her favourite ingredients, Tanja is a big fan of citrus, which is extremely versatile in the
kitchen, often having an enormous impact on the taste of a dish with just a small addition. Herbs are another staple in Tanja’s pantry; their freshness and vitality can invigorate a dish with immense flavour — something Tanja learned especially well on her trip to Vietnam. Always on the lookout for new and unique products and flavour combinations, Tanja doesn’t limit herself to the produce she works with; instead, when she finds an ingredient that piques her interest, she’ll find ways to incorporate it into her menu. “The basic products come from Switzerland, but we also use poultry from France, fish from local fresh waters or from the sea. I’m always discovering new products; most recently, for example, Alpine honey from 1000 metres above sea level.” What also makes Tanja’s cuisine stand out from the crowd is its inventiveness, versatility and inclusivity. »
“Guests feel that they are experiencing something special here and that there is a lot of love and dedication to the craft behind this restaurant experience.”

« Not only does she offer a full standard lunch and dinner menu, but she’s also created an entirely vegetarian tasting menu for her guests that more than punches above its weight in flavour and finesse. With a palate and skillset this impressive and intuitive, it’s no wonder she’s been named Chef of the Year by Gault&Millau twice, in 2014 and 2020. “The interest and curiosity for vegetarian food is very big. Our vegetarian menu is strongly based on the normal menu, but we then use tofu instead of Mediterranean seabass, roasted tempeh instead of Wagyu, mushroom from the grill instead of venison, etc. The point is not to serve only carbohydrates but a high-quality meal.” A popular choice for diners, Tanja says that about fifteen to twenty percent of people visiting Stucki opt for the vegetarian menu. There’s no doubt that the perception of vegetarian cuisine is changing worldwide, and chefs like Tanja are playing a significant hand in this, allowing people to realise that products other than fish and meat can offer phenomenal flavour. In fact, this notion is something Tanja feels so fervently about that it forms the basis of her highly successful recipe book, Tanja Vegetarisch, which spotlights vegetable-forward cuisine. A publication she is very proud of, the triumph of this book stands as one of Tanja’s most remarkable achievements in her career thus far.
76
“Every award contributes to success and is a motivation for employees, but what has pleased me most recently is the success of my book Tanja Vegetarisch, which was the bestselling nonfiction book in Switzerland in 2021.” It’s clear that chef Tanja Grandits’ impact extends far beyond the confines of her restaurant. She distributes her knowledge and expertise through her book, alongside cooking classes and workshops, inspiring a new generation of culinary enthusiasts. So resolute on sharing the joy that food can bring with the rest of the world, Tanja even presents foodies with the ability to take her delicious creations home, offering various products for sale through her delicatessen. In fact, developing new products is one of her goals for the upcoming year, as is writing a new cookbook. In an ever-evolving culinary landscape, chef Grandits remains a beacon of inspiration, challenging conventions and consistently pushing the boundaries of what is possible. Her unwavering commitment to excellence, coupled with her limitless creativity and genuine passion, ensures that her presence in the culinary industry will continue to captivate and surprise, tantalising taste buds and expanding gastronomic horizons the world over. Her artistry is a testament to the transformative power of food, a reminder that in the hands of a true master, a simple ingredient can become an extraordinary experience.

he brand’s journey began with a profound respect for the heritage of handwoven sarees, a legacy deeply embedded in the cultural tapestry of India. Recognising the artistry and commitment of this art, the brand was born to celebrate and preserve this while also promoting ethical fashion practices that empower local weaver communities. From the allure of Bhagalpur to the elegance of Bengal and the rustic charm of Ponduru, Mavuri pays homage to the immense variety of weaves and craftsmanship that India offers. Each saree in their collection is a testament to the dedication of their master weavers who meticulously craft every six yards with precision and artistry. All inspired from different regions of India, keeping alive the traditions and techniques passed down through generations. They are known for their ethical and sustainable practices which are part of the vision of the brand. As the sarees are produced in collaboration with the local weavers and artisans, this also helps promote fair trade and helps in supporting the local communities of the specific regions. ASSOCIATION OF TASTE Described as turbulent, unpredictable, and unconventional, Paul Pairet has garnered an international reputation for his sophisticated, forward-thinking cuisine for over a decade. FOUR speaks to the chef and creator of three Michelin-starred restaurant, Ultraviolet, in Shanghai to learn more about his unique blend of experimentation and substance. PAUL PAIRET
H
aving followed Paul Pairet since the early days of opening Ultraviolet, it’s clear that this type of chef doesn’t come along very often. Steadfast in his dedication to an essentialist philosophy about what food and hospitality should be, his three-starred restaurant continues to be recognised for its daring experimentation, inspired dishes and, above all, its unique approach to the concept of taste. After travelling the world with his craft – Paris, Hong Kong, Sydney, Jakarta, and Istanbul, Paul landed in Shanghai, a place that would finally allow his creativity to shine in a way that was true to him and his natural culinary style. “The move to Shanghai was originally to open Jade on 36, a fine dining for Shangri-La. It was a great chance to find somewhere where I had the freedom to express myself. It was important for me to find this space at that time because the field would have been much narrower if I had stayed in France or Europe. The move to Shanghai just happened to be the right place and at the right time for me to make sense of my career and facilitate my journey moving forward.” Having conceived the preliminary idea for his restaurant concept in Australia, in 1996, and coming close to opening a softer version in Paris with Baccarat, in 2002, Paul finally opened the 10-seat restaurant Ultraviolet, in 2012. “Without sounding conceited, Shanghai is also a place with the energy to support a project that was a bit forwardthinking at that time.
“The early trials were much different from what we have now; it was just a simple table for 12 guests with dimmed light and a little music focused on each dish. I was a bit pretentious at that time, having a beard and thinking that I would play Jesus Christ by the end of the “Last Supper”. “Now, we try to be a restaurant that is a good place to enjoy something more conceptual and edgy but also a place where the food has substance. As we say, Ultraviolet is avant-garde but figurative: with flesh and bone. “Equally, although the layout may have slightly changed over the years, the core concept of Ultraviolet remains the same. I believe that to cook at one’s best, you need to get rid of the constraints of a classic restaurant, that is to say, à la carte. Á la carte gives the guest a lot of freedom, but it constrains the cooking and prevents it from flowing naturally.” By this, Paul is referring to how food is pre-prepared or put in cold storage just in case someone might order it. He believes cooking should be more natural and something prepared freshly in the moment, not something cooked, assembled, and served according to an acceptable timeframe for typical restaurant standards. “As clever as mise en place is, especially for Michelin-star restaurants, this is somehow different from the natural way of cooking. The most organic form of cooking is inviting people over for a meal, and you cook and serve at the peak of the dish. “It is a huge asset for a chef to be able to cook or to impose a dinner menu and to also be able to control the time.” »

« With this in mind, Paul wanted to find the freedom and fluidity of casual hospitality while delivering a truly memorable and avant-guarde experience. By combining specific smells, textures, flavours, and techniques to stimulate the senses and call upon our subconscious, he embarked on what is now one of the world’s most unique and immersive dining experiences. “In terms of my cooking style, I haven’t really changed at all. Since we opened in 2012, the experience has remained the same. Naturally, the dishes have changed, but the pattern is the same. The menus are very complicated – the last menu was 4 years in the making – but the ingredients, the principle, and the way of thinking are all exactly the same, and I intend to keep it this way. “This field is endless, so I am naturally evolving without trying. I am competing with very long menus in a very transient industry so that in itself forces me to constantly change and find new ways to continue to express the same message.” Rather than trying to change Ultraviolet to fit the changing demands of the industry, he has instead chosen to use it as a springboard to develop elsewhere. This has translated into his other restaurants, Mr & Mrs Bund and Polux, where Paul and his team can explore alternative menus, formats, and concepts but still based on the same fundamental approach to the cooking and eating experience – to find a balance between entertainment and intimacy, where the level of taste and cooking is par excellence.
“The nature of Ultraviolet is very dissimilar to most other restaurants, so it is not something that crosses over into my other restaurants, nor would I want it to. At Ultraviolet, we have a whole ‘scenario’ for every dish, which includes tailor-made lighting, music, and ambience. The goal of every scenario is to create an atmosphere dedicated to each dish, which naturally prolongs the impression and memories of what you are eating.” Although its approach is spectacularly individual, Paul makes it clear that Ultraviolet is still a restaurant, and food remains paramount to the experience. Ultraviolet proudly stands for all the classic characteristics of a restaurant but has extended the capacity to illustrate what a dish can be. “When you are in a typical restaurant, the chef also has a clear intention of what they are cooking, how they will plate the dish, how they would like people to feel etc., but due to the constraints I previously mentioned, they cannot control the context of the dish. “We have the same objective, but we have combined the two so that the chef’s intention is mirrored in the delivery and atmosphere when you eat the dish. “It’s hard to describe the experience of Ultraviolet. It sounds cliche, but it really has to be witnessed to understand that there is a much higher level of concentration from the guest because we prepare and control the entire context of the dish, which is generally not possible in other restaurants. For example, if you serve a mushroom in a kind of autumnal setting, with the right melancholic music, »
83
PAUL PAIRET « moody autumnal lighting etc., your experience of those flavours, smells, and textures are all exaggerated. “I would say the common denominator between all my restaurants is level of taste. The difference is that Ultraviolet has the same menu for a long time, and any changes mean people can expect something new for every dish, but not necessarily the ingredients. We go only by one element and never use more than this because it wastes creativity that can be used elsewhere. So this could mean a new technique, the concept of the dish or the association of taste, but we don’t focus on a seasonally changing menu.” By removing unnecessary elements in expressing the idea of the dish, Paul can better focus on the intensity and flavour of what is being served. He does this by going to the roots of why something becomes a classic: what are the essential reasons or ingredients that have made it so popular and uses this to create an alternative version of those elements. He admits that he is not subtle with his approach to food, and, therefore, the plate reflects this. The aim is to draw people into what they are eating, so they can truly embrace the dining experience and delve into what he calls “psycho taste”: an exploration of our preconceived notions of taste based on memory, imagination, experience, and culture. “As a restaurant, we are not always perfect or precise; even Ultraviolet has dishes that are not the most sophisticated, but we make sure we use the same essentialist philosophy. This ensures that the dish is reduced to the
most essential elements needed to convey what we are trying to express. Our aim is to drive the psycho taste and use our subconscious to create a tangible effect on what we are eating. “We also don’t work with the traditional philosophy of seasonality in the sense that we change the menu based on what’s currently available. The menu stays the same because the dishes are conceptual, and we adapt the ingredient requirements to wherever is producing the best quality for that time. If there is one element that is a seasonal element, like crab, for example, we will source whichever crab is tastiest and in season during the course of the year. But, we are not driven by this. The menu could be served from the beginning of the year to the end.” One dish from the latest ‘UVD’ menu that demonstrates this idea perfectly is the ‘Bouillabaisse Nespressoup’. Encased within a Nespresso capsule that is placed into the Nespresso machine guests are delivered an instant, concentrated Espresso-like Fish Soup, which is served with a sugarcube-like bread crouton to playfully mimic this everyday commodity that has reached cult status. This idea is not bound by seasons or locality but is a savorous expression designed to be thought-provoking. Combining both a flavourful and entertaining experience, guests are immediately required to start thinking out what they are sampling in an entirely new way: What is this? How have they done it? What does it mean? The idea is that food isn’t just about taste; it’s about »

« the emotions a dish evokes and how this correlates to our subconscious and the things that shape and influence our perceptions of what we eat. “We follow the same curve that a traditional menu would use, starting slowly, crescendoing in the middle and then gradually peaking down to the end, but we just do this over 20 courses. “Each dish has its own distinct personality, which at times can even be quite extreme in its flavour, but it will be evened out in whatever comes next. The dishes are not supposed to be self-contained elements offering a complete balance of flavours. In fact, every course is designed to compensate for what came before and introduces what’s to come because it’s part of a larger narrative.” Each dish at Ultraviolet is highly personal, and Paul explains that there is a reason behind everything on the menu. These aren’t random ingredients pulled together but a concept shaped and moulded for up to years before it appears in the final cut. “There is always some liaison with my travels, memories, or daily life that filters into the dishes I create. In the case of the Nespresso capsule, we were working with them, but the concept also fascinates me. I wanted the machine to be able to produce something else, something unexpected, so this is where the idea came from. “Sometimes, even when I create a dish, and I don’t think there is a reason, later on, I realise that there was a link to something that has happened to me or that I have experienced at some point.” »
86
“To cook at one’s best, you need to get rid of the constraints of a classic restaurant, that is to say, à la carte. Á la carte gives a lot of freedom to the guest, but it constrains the cooking and prevents it from flowing naturally.”
PAUL PAIRET « With menus at Ultraviolet taking up to four years to develop, Paul has taken a mythological approach to the creative process. He divides the year into periods to work on projects and time dedicated to being in the kitchen, but he doesn’t see the latter as a crossover with the time spent devoted to developing new dishes. “The period spent specifically creating new dishes is incredibly satisfying but very taking. It’s a hugely draining process that requires my full time and attention. We like to take this structured approach because it means we can be absorbed entirely and spend quality time creating and not distracted by everything else. After I have developed a menu, I give myself at least a year off of creating before I have to think about it again. “I also don’t tend to feel the urge to create more dishes for the menu after this period because it’s such a thorough, creative process. Since 2012, we have created five menus, which are still available to guests. They don’t replace the last, just offer an alternative collection”. Although his commitment and hard work can’t be denied, Paul still humbly places some of his success over the last decade on luck. The idea for Ultraviolet was 15 years in the making and even failed to take off in a few of the earlier launches. He feels that it was just a lucky combination of factors that finally allowed Ultraviolet to have its moment and for his dream to become a reality. “The highest point in my career will remain the day I opened Ultraviolet. Although I have had Ultraviolet for a
long time now, which is the ultimate goal for some chefs, those first days of opening Ultraviolet were my dream come true. “Even a few weeks before opening, I still didn’t feel like things were entirely right. We didn’t realise at the time that we needed to add music, but once we did this and adjusted some final details, it was like everything just clicked. To this day, those first dinners and that first service remain some of the best moments of my entire career. “I feel proud to have created a three Michelin star with a concept that is not run-of-the-mill fine- dining. It’s one thing actually getting the three Michelin stars, but it’s another achievement entirely to get that with a unique concept like Ultraviolet. Not only did my dream come true, but it was also formally recognised by the industry, which is a tremendous achievement for both my team and me. “We always hope that guests are left with an impression. That the food has both evoked and created memories. I don’t believe something can be beautiful unless it leaves a trace. We can’t control this, but we hope that an experience leaves a lasting mark in their minds. “Since the opening, we haven’t tried to touch a thing because the recipe was just right. I love the experience of opening other restaurants and doing side projects, but I have no need to express myself in any other way because I have everything I need with Ultraviolet. There is no reason to change what I am doing and why I am doing it because this is who I am, not what I do”.
