MARK SARGEANT OPENS HIS MUCH-ANTICIPATED RESTAURANT ‘ROCKSALT’ IN FOLKESTONE
On 8th June 2011, acclaimed chef Mark Sargeant opened his first restaurant in the coastal town of Folkestone. Rocksalt sits on Folkestone’s harbour hovering over the water’s edge overlooking the day-boat fishermen as they moor their boats. This is one of Mark Sargeant’s first ventures since leaving Gordon Ramsay Holdings (during which he was awarded a Michelin Star at Claridges, assisted with the development of the company as well as Gordon’s books and TV work) and take him back home to Kent where both sites will contribute to the regeneration of this seaside town that has so much to offer.
head chef Simon Dyer work with key suppliers in the southeast on a daily basis ensuring that only the highest quality products arrive at Rocksalt’s kitchen. The team of chefs, in the fully equipped and visible kitchen where a Josper Grill takes pride of place, expertly prepare the seasonal ingredients creating classic and contemporary dishes, while specials are influenced by the day’s catch.
The produce-lead menu will offer dishes such as Smoked Coley Brandade, Dressed Crab with Harrisa and Toast, Josper Mussels, local Rock Oysters, Whelks and Cockles. Main dishes come with a choice of accompaniments such as Green Rocksalt Restaurant & Bar celebrates the finest Sauce, Peppercorn sauce or ‘Rocksalt Steak local produce and the best the British Isles has Sauce’, Spiced New Carrots, Braised Peas with to offer, whether from the farmland of Kent or Gem Lettuce or Runner Beans, and Minted the sea the restaurant overlooks. The dessert selection epitomises the height of summer with Kentish Gypsy Tart, Pink Grapefruit Possett, Cold Chocolate and Sea-Buckthorne Fondant and a selection of Kent and Sussex Artisan Cheeses with Spelmonden Farm pickles, Oatcakes and PX Raisins. Rocksalt will be open Tuesday to Sunday for lunch and Tuesday to Saturday for dinner; the bar will remain open on Sunday evenings.
