SEMINAR/WORKSHOP LEADERS SHARI STEINBACH, MS RD For the past 23 years Shari has worked as a dietitian in the grocery industry and has served as the Healthy Living Manager for Meijer. Shari manages consumer health communication, community events, nutrition programs, and solution selling strategies with a team of 4 other dietitians. Shari and her team serve as corporate spokespersons on food and nutrition issues and provide monthly television spots on several local TV stations. TINA MILLER, MS RD: Tina is the Meijer Dietitian and Healthy Living Advisor for East Michigan and Northern Ohio. Tina has over 20 years of experience as a registered dietitian and reaches thousands of consumers weekly through community events, media appearances, and educational presentations. As part of the Meijer healthy living team, Tina provides shoppers with simple advice on the selection of healthier foods and the creation of easy, affordable and healthy meals. DAVID STANLEY: With over 20 years of professional experience in fine wines, specialty beverages and quality foods, David helps customers pick great wine, beer or spirits as the Wine & Beverage Steward at Meijer. He assists with all aspects of planning a beverage menu or tips on how to pair each course perfectly. JENNIFER GRITTERS: Chef Jen Gritters is the Associate Corporate Research Chef at Meijer. CHEF ANGUS CAMPBELL: A City and Guilds Master Craftsmen, with 40 years of experience, Chef Angus Campbell was born and raised on the Isle of Lewis, Scotland. Beginning his professional career, Chef Campbell worked at the Bahamas Hotel Training College where he became the Department Chair for their Culinary Arts Department before moving to Grand Rapids where he currently teaches food production at the GRCC Hospitality Education Department at their acclaimed public restaurant “The Heritage.” He has won medals at many levels of food competitions and is an accomplished junior culinary team coach. MICHAEL SCHAFER: Michael Schafer is a charismatic wine educator, sommelier, and certified specialist of wine. His humorous and fun approach to wine is reflected in his trademark phrase, “I taste bad wine so you don’t have to.” Michael has studied wine around the world for over 30 years. He has been featured on CNN, ABC, WTVS-public television, the Detroit News and the Oakland Press. As an instructor at the International Culinary School of the Art Institute of Michigan, he teaches classes in Viticulture & Enology and in Food & Beverage Operations Management. Michael judges in international competitions. ARTHUR BLACK: Arthur is the Corporate Wine and Spirits Sales Manager for RNDC, a leading national wholesaler of fine wine and spirits. In addition, Arthur is a member of the Society of Wine Educators, a Certified Specialist of Wine, a Certified Spanish Wine Educator, a Certified French Wine Educator, a Certified Sake Specialist, a wine and spirits writer and has lectured and taught at copious venues and several universities. He has competed in many sommelier competitions, winning the honorable Best Young Sommelier in America Championship.

FRED BUELTMANN: aka The Beervangelist, is an owner of New Holland Brewing Company and a nationally-recognized expert on pairing beer and food. He is a Certified Cicerone®, past president of the Michigan Brewers Guild and recipient of their prestigious “Tom Burns Award” recognizing the pioneering spirit of the “Great Beer State.” Fred authored the book, “Beervangelist’s Guide to the Galaxy” and pens the column, “Beer and Food with the Beervangelist” which appears in various flavorful magazines. LAURA AND SETH PORTER: In 2010 they started the Michigan Beer Blog, which originally began as a way for them to remember the experiences they had around the state, and evolved into a project detailing the growth coming from the great beer State. Since inception, they have visited over 65 Michigan breweries. This experience gives them an outlet for writing and designing recipes focused around Michigan beer, and Laura is currently in the process of opening up her own kitchen and bar in Grand Rapids. NEAL DIONNE: Neal has been in love with broadcasting since he received his first radio for Christmas at age six. He took his first job in radio before he even had a driver’s license, and has continued on this career path. He is currently the Morning Host on Michigan’s Country 93.7 B93, which he has been with since its birth in 1992. Neal also discovered a real passion for all things culinary by experimenting in the kitchen and will be at the Festival to prepare one of his family favorites.

Brewer’s Loft

The View from the top

It’s no secret that Grand Rapids — and Michigan, as a whole — loves its beer, its breweries and its brewpubs. After all, three of the four top cities in this year’s battle for “Beer City USA” are here in the “Great Beer State” — with Grand Rapids taking top honors, followed by Kalamazoo and Ann Arbor. Beer has always been part of the Grand Rapids International Wine, Beer & Food Festival, but this year things are looking up in a big, big way with the introduction of the third floor Brewer’s Loft. The new addition features more than 40 booths, allowing participants to taste beers from all over the world, as well as many Michigan craft brews that you know and love (along with some that may be unfamiliar to you). Among the new features are a beer flight presented by New Holland Brewing. A specially set menu of fish tacos prepared with

Monkey King Saison, topped with whiskey brined grilled grouper served on a flour tortilla along with a pork shire and mustard slaw and an espresso bourbon truffle paired with three New Holland Brews. Spinnaker is back for the second year presenting a beer pairing. This one-hour chef prepared multi-course meal allows attendees to sit down and experience the Brewer’s Loft in a different way. Advanced tickets can be purchased on-line for the New Holland Beer Flight and the Spinnaker Beer Pairing. Beyond the samplings, flight, and the pairing, industry leaders will present free seminars throughout the weekend offering an in-depth look on various aspects of beer. Fred Bueltmann, author of the Beervangelist’s Guide to the Galaxy, is among the speakers. A noted beer and food pairing specialist, he will cover the highlights of how craft beer and a variety of foods blend

to create an even better culinary experience. While many people still think of pairing only wine with food, pairing with beer is actually easier because of the wide variety and complexity of flavors found within the brew, said David Engbers, co-founder of Founders Brewing Company in Grand Rapids and an annual participant in the Festival. “Beer is a great way to really make a good meal an exceptional meal,” he said. The Brewer’s Loft is sure to be a popular gathering spot, providing a pub-like atmosphere for those who wish to savor the flavors of finely crafted beer and other likeminded individuals. “I think by putting all the brewers upstairs, it gives a little extra attention to our industry, especially as Beer City USA,” Engbers says. “It’s great that the event producers have acknowledged the fact that beer is here and it’s here to stay.”

Bringing it all together As if the Grand Rapids International Wine, Beer & Food Festival isn’t enough of a “night on the town” — special Pairings held each day provide an opportunity for a more intimate dining experience, while also highlighting the culinary talents of the city’s top restaurants.

T

hese gourmet, multi-course meals are limited to 20 individuals per seating — giving the chefs, owners and sommeliers plenty of time to engage diners in conversation about the food preparation and the beverage pairing.

BAR DIVANI

For David vanderLaan, executive chef at Bar Divani, it is a feast for all the senses as he brings color and flavor to the table. “I’m big into bright colors, it’s something I have a kick for,” he says. For the first course, Chef David will serve up a Winter Fruit Salad — featuring local Dancing Goat chevre, and Blis maple syrup and balsamic vinaigrette, as well as red and green heirloom spinach. Darklycolored blood orange and woodsy Hazelnut lend even more color to the course. His second course is meant to bring a new taste to those who love fish, with Alaskan Wild caught Sockeye Salmon — pan-seared with crispy leeks, golden beets and apple coulis. “The fish is so rich, the apple cider caramel will be a nice compliment” Chef David says. “I think they’ll love it.” The meal is rounded out with Maple Leaf Farms Duck Breast. This pink peppercorn crusted duck breast, with an orange mint butter sauce, candied orange chip and vermouth sautéed mushrooms, is the perfect conclusion for this pairing. “I wanted to give a global flavor to things,” says Chef David, adding that he was influenced by French cuisine for the duck course. “The duck is traditionally one of my favorite things to cook. It’s a nice expression of not only myself, but tradition in French cuisine. It’s a beautiful thing to taste and smell.”

TRE CUGINI

Michele Godina, executive chef at TreCugini, took his inspiration from his home in North Italy. He was also drawn to the upcoming winter season, crafting courses to be warm and filling. “Heavy food for the cold season,” he said.

Chef Michele welcomes his guests with a rich and flavorful ravioli, served with portobella mushrooms, eggs and a blend of ricotta, parmesan and goat cheeses, then dressed with a cream sauce made of white truffle oil and parmesan cheese. Next, a wild boar stew is served over soft polenta with fontina cheese — a classic from Chef Michele’s home state. Marinated for 48 hours in red wine, juniper berries, thyme and sage, the wild boar is then braised and finished in the oven with carrots, celery and onion. To end his Italian tour, Chef Michele will lighten things up a bit with a Napoleon puff pastry with cream and strawberries.

REDS ON THE RIVER

The colors continue for Glenn Forgie, executive chef of Reds on the River, who draws influence from around the globe — while also tapping into the comforts of the cooler season foods. “I wanted something fun and lively to talk about, so I wanted to do something that was slightly different that would still make sense to us Midwesterners,” he says. Each of Chef Glenn’s four courses is a slight take on a more traditional meal — the first being a salmon ceviche with capers, red onion and oranges, influenced

by Sardinia in Southern Italy. From there, he takes his diners to the Caribbean for a unique clam soup with yams and coconut broth. A Merguz (spicy lamb) meatball with yuca mash and tomato broth, drawn from the Moorish influence of Northern Africa and Spain, completes the third course. From there, Chef Glenn delivers braised duck with an orange chocolate sauce over a saffron and corn rice in a Southern-Francemeets-Mediterranean style. “The idea behind this is we get to have some sweet, some hot, some sour and some salty. “It’s the coolest thing for me in cooking,” says Chef Glenn. “It’s so fun to bring in different influences.” In total, five restaurants will be offering Pairing menus during the Festival (the others being Spinnaker and San Chez) — each one an opportunity for guests to have fun, relax and engage in one-on-one conversations with the chefs. “I love doing stuff like this, it’s just fun to entertain, eat and drink with people,” Chef Glenn says. “This is the perfect event for us to be a part of.” Pairings range from $30 to $45 per person and are sold on site at the Pairings ticket booth or online at GRWineFestival. com.

HEN IT CoMES to agriculture — Michigan is second only to California in its diversity. And when it comes to Michigan produce — apples are bushels above other fruits with regard to the amount harvested each fall. Yet, it’s not just the fresh picked apples that find their way into the hands of consumers. on a national level, hard cider is among the fastest growing craft beverages. Hard cider has always been included at the Grand Rapids International Wine, Beer & Food Festival, but this year things are really heating up with the new “Cider House” (located in the Welsh Auditorium Lobby, where the beer hall had been previously). Unlike common brown cider found at farm stands and markets, hard cider is fermented to produce a range of flavors — from dry to sweet to sparkling. other fruits, such as pears, blueberries, cherries and cranberries can also be added to provide a more unique profile. “It’s reminiscent of childhood,” said Kare Greenup of Robinette Cellars in Grand Rapids, adding that many people remember their older relatives drinking hard cider. “They just want to go back in time. This is a way to do that, through taste.” Robinette’s has participated in the festival since year one. This year they will have a booth in the Cider House. Greenup is excited for more people to experience hard cider and suggests giving at least two sips when sampling cider. “You get the true flavor on the second sip,” she said, commenting that most people are a little skeptical at first taste. “By the second sip, they’re all about it and really like it.”

GoLD WITH THE THoUSAND-PLUS wines available for tasting at the Grand Rapids International Wine, Beer & Food Festival, how and where do you start? With the award-winning wines, of course. Medal-winning wines, chosen by the 2013 Tasters Guild 26th International Wine Judging and Michigan Grape and Wine Industry Council 2013 Michigan Wine Competition, will be featured at booths around the Steelcase Ballroom. These wines are designated in the program. According to Tasters Guild president Joe Borrello, the Festival offers a unique way to taste different varietals and find what you like (or don’t) without the expense of having to buy a full bottle at the store or at a restaurant. “There’s no teacher like experience,” he said. The Tasters Guild judged about 2,000 wines from more than 15 countries and 30 states/provinces in May, with restaurant owners, wine writers, retailers, wholesalers, educators, winemakers, and experienced

consumers from around the country judging the submissions. Many of these wines will be available for sampling at the Festival. As part of the Michigan Department of Agriculture, the Michigan Grape and Wine Industry Council supports the growth of the wine and grape industries around the state, which is gaining the reputation of a world-class wine region. Festival goers will

find Best of Class winners denoted in the program and highlighted in the booths. “There are more than 100 wineries throughout Michigan,” said Karel Bush, promotion specialist for the Michigan Grape and Wine Industry Council. “This Festival partners with Michigan wineries from all regions of the state, so guests can taste a wide variety of wines they won’t find anywhere else.”

Beyond the Classroom Michigan Hospitality Students gain experience, knowledge and careers

T

here’s a lot to be learned at the Grand Rapids International Wine, Beer & Food Festival. Of course, attendees are educated on the finer points of a variety of beverages and are exposed to workshops, seminars and demonstrations throughout the three-day event. Yet, on the other side of the table, hundreds of hospitality students from around West Michigan are expanding their knowledge of the industry and making key business connections through an ongoing volunteer program with Wine and Food Festival, LLC; The Convention Arena Authority and SMG. “Our Festival would not be possible without the dedicated students who work side-by-side with industry leaders, pouring samples and assisting with both front and back of the house operations,” says Dawn Baker, Show Manager. “This is valuable not only for us and the students, but also for our exhibitors and the colleges themselves — who utilize the relationship to raise funds for their programs.” Students from Ferris State University, the Culinary Institute of Michigan at Baker College in Muskegon, the Secchia Institute of Culinary Education at Grand Rapids Community College and Grand Valley State University dedicate as many as 20 hours each throughout the course of the festival. These students represent all aspects of the hospitality industry, from event planning and culinary arts to management programs focused on resorts, golf, skiing, tennis and music industry. For some students, participanting in the Festival is a class requirement. “It is a great way to bring so many different aspects of our industry together all under one roof,” says Dan Gendler, program director of the Secchia Institute for Culinary Education at Grand Rapids Community College. The event also gives students the opportunity to expand their own palettes and learn about food pairing. Forty plus students from Gendler’s program are participating in this year’s Festival,

learning the specifics of national ServSafe Alcohol training program and also honing their people skills. While students from GRCC have been involved in the past, the students this year will be assisting in the new Brewer’s Loft. Students from Ferris State University play a large role in the event, with more than 170 students bused in each day to handle wine pouring for the bulk of the Festival booths. “It meets so many levels of experiential learning for our students,” says Lori Armstrong, program assistant for the Music Industry Management program at Ferris. It also gives students a higher level of confidence in their chosen field. Grand Valley State University students work with the SMG building staff in the inventory control room, handling the processing of product, counting of tickets and delivering products to the booths on the floor. Students from the Culinary Institute of Michigan, a division of Baker College in Muskegon, started volunteering for the event on their own. Festival organizers were so impressed with that initiative they reached out to deepen the relationship. According to Jamie LeRoux, program

director for the Food and Beverage Management Program, their students are required to learn about the beverages they pour in order to better speak about them. This Festival gives them that level of experience, while reinforcing classroom lessons. It also provides them opportunities to network and showcase their program to the Industry. “Anybody that’s anybody in the beer and wine world in the state of Michigan is represented here,” LeRoux said. The student connection is something that has been honed over the years — making it a valuable tool for all involved, both now and for years to come. In 2008, Meredith Lauzon (daughter of Chris Simpson, executive chef at The Fifth Third Vault at Van Andel Arena, an annual Festival participant) was working at the Festival through the hospitality program at Ferris. “After my shift was done, Bryan (Ulbrich — winemaker/owner at Left Foot Charley Winery, Traverse City) asked if I would ever be interested in an internship and of course I said ‘yes.’” Meridith began working at the winery that following summer, before returning to Ferris to complete her degree. By the summer of 2010, she was offered a full-time Tasting Room Manager position at the winery and she has been there ever since. “I’m totally loving it,” says Meridith. Bringing in students is a winning formula from all angles. The colleges provide added educational experiences, the students gain first-hand knowledge of the industry while also working side-by-side with business owners and those companies get the opportunity to see the students in action in a real world situation. “This Festival is a good way to see how people really work beyond just an interview and references,” Ulbrich says. “We hired two volunteers from the Festival as interns. One worked two years as a sales associate and the other is still with us as our operations manager. Employers are always looking for positive attitude layered with work ethic.”
