LETTER ost of my friends and colleagues are surprised to hear that I actually like camping. Yes, in my everyday life I prefer to wear heels and pretty jewelry, and I basically have no idea how to dress casually, but I still enjoy the simplicity of camping. Growing up, my family went camping at least once every summer, usually with family friends who were expert campers and also a lot of fun to be around. So to me, camping is synonymous with quality family time, memory making, and laughter. Plus, there’s nothing like the sound of nature awakening outside your tent in the morning. A little dirt under my nails is an easy price to pay for such lovely benefits. We are fortunate to have a beautiful campground right here in the area, at the Indiana Dunes State Park. This was the setting for our camping feature on page 46. The Samardzija family from Valparaiso brought their awesome vintage International Scout to the site, along with some other camping necessities, to show us how to make the most out of a family camping trip. This includes s’mores, of course, with recipes for three different ways to make everyone’s favorite gooey snack. Along with the Indiana Dunes, we highlight other gems in the area, one of which is the growing town of Whiting. I visited Whiting late last year and met with some developers who are really taking the town to the next level. It’s inspiring to see such passion for a place that others might have dismissed. I have high hopes for Whiting and am eager to see where its momentum takes it. Check out our fashion feature, photographed in Whiting, on page 54 to see what all the hype is about. egina Biddings-Muro, vice chancellor for institutional advancement at Purdue University Northwest, is leading a charmed professional life. Responsible for fundraising, marketing and communications, alumni relations, and university events, she says, “It’s personally fulfilling to visit with both students, whose lives are transformed by their degrees, and donors, who are so joyful about providing opportunities for students. It makes me jump out of bed and smile.” Her favorite day is commencement day. “Every year, watching students collect their degrees, and knowing the sacrifice, dedication, and focus that went into getting those degrees, is so satisfying,” she says. “Those degrees also represent the investments of donors who value education and transforming the lives of our graduates and, through them, our community.” In addition to being a public face of Purdue University Northwest, Biddings-Muro is a behind-the-scenes supporter in the local community

as an Edgewater board member, through her work with the Urban League of Northwest Indiana, and is actively involved with her church, SS. Monica & Luke in Gary. Recently, she served as part of a team assisting Gary mayor Karen Freeman-Wilson with a project on cabinet leadership development. “It’s fulfilling giving back to the community, and the university wants us out in the community,” she says. She’s also known for her sense of style which, she says, “is all about the shoes.” Biddings-Muro jokes about being a “typical woman” and how she bonds immediately with other women over mutual shoe envy. She traces the roots of her extensive shoe collection to the traditionally conservative corporate dress code for women in which suits are the standard uniform. “Accessories are my chance to express the personal me,” she says. Because her demanding schedule leaves little free time, BiddingsMuro admits that her “guilty pleasure” hobby is online shopping. She confesses, “I didn’t intend for it to become a hobby, but I love hunting and shopping online late at night.” Though she loves the idea of shopping local—especially for vintage items—her schedule makes

that difficult. “It would be nice if the local business community had a better online shopping presence.” As a consummate professional, she tends to stick to her standard dark suits, but she enjoys mixing things up a bit in the summer by adding in color, floral accents, and other accessories that provide visual interest and variety. “It’s important to have a sense of style and polish,” she says. “It conveys respect and concern for other people.” In addition to polish, Biddings-Muro identifies energy as her key style staple. “I’m energetic, and I like to convey energy through my style and presence. I have a team of individuals who inspire me, and I want to inspire them as well that we can conquer any challenge.” ■ Amanda Wilson

C

hris Valavanis has always been fascinated by the effect a simple haircut can have on a person, how it can change the way someone looks and feels. That fascination is what drove him to start cutting hair himself, then to open a salon, then two more, all while teaching others the art of the above-mentioned transformation. Valavanis is the man behind the Vanis Salon empire, with salons in Schererville, Valparaiso and Crown Point. When he opened the first Vanis 31 years ago, Valavanis says he “had no ambitions of growth, none, zero. I just wanted a little four-chair salon with a few people who had the same passion for service and the craft that I did.” But he did things differently than at most other salons. He started the first salon apprenticeship in Northwest Indiana, developed an education fund so stylists could learn in other settings, and provided health insurance for his employees, the first of any salon in the area. “So consequently,” Valavanis says, “when you invest in people, even though you don’t want to grow, nobody leaves . . . So we just kept growing, and here we are 31 years later.” In addition to taking good care of his staff, a third of which has been with Vanis for more than ten years, Valavanis takes pride in having created a culture of excellence that clients appreciate. “We’ve tried to push to elevate the standards in Northwest Indiana the whole time, from the individual’s experience behind the chair, to the perception of what clients should expect when they walk into a salon,” he says. This forward-thinking mindset extends to all areas of his life, including his own stylistic preferences for design, music and fashion. “My sense of style would be minimalist,” Valavanis says. “I think fashion on the whole should really reflect who you are. And everything I do is in that direction: the work I did behind the chair, the environment that I live in. I’m minimalist.” Valavanis says the male clientele in his salons has increased significantly over the last five to eight years, which he attributes to

a greater cultural acceptance for men to care about how they look. This acceptance has “given guys permission to be themselves, and that’s important,” Valavanis says. “There are many, many options now for men. There are guys wearing beards and some guys have a lot of long hair but it fits them and it’s suited them.” In fashion and in hair, Valavanis is adamant about authenticity. “It should reflect you,” he says. “Sometimes people Locations in Schererville, get caught up in Valparaiso and Crown Point what they’re reading vanis.net and looking at and get guided by trend. But if you don’t pay attention to trend you can look ridiculous, too, and you don’t want that. You want to look current. It’s about finding your best version of the current.” To sum it up: “Pay attention. Pay attention. Pay attention. Then take that inspiration and be yourself. And find a great salon.”

W

hat used to be a wine drinker’s delight—wine and cheese pairing—seems to be taking a more casual yet artisan feel in the beer brewing community. This may seem like a new trend, since up until recently the mention of beer and cheese together in a sentence would make one think of soup or a spread for bread. However, as Skip Jones of Charcuterie in Griffith points out, beer and cheese pairing “is something old coming new again.” Thousands of years ago, average households more than likely had beer and cheese on hand, which was commonly consumed after a long day’s work. With more artisan crafters recently taking to the foodie scene, this tradition is coming full circle. The first thing to remember when putting together a beer and cheese pairing is that not everyone likes the same beers or cheeses. What may taste salty to one may be subtle to another. To get a true understanding of whether you like a particular craft beer, Jack and Bill Mix of 95ate5 Brew Pub in St. John suggest giving it three nice sips to allow your palate to get used to and decide if it likes the beverage. But how do you know which cheese goes with which beer? Our experts give their picks for the following brews. ■ SHAWNA SLAVICH

STOUT

Similar to a Porter, the stout has a dark and robust flavor, and some crafters tend to balance the flavors with ingredients of coffee or chocolate. This dark, smooth flavor goes well with a very mild cheese like mozzarella or provolone. A creamy brie also pairs nicely with a good stout beer.

SOUR

This style was created in Belgium and has taken shape in the United States. This tricky style of brewing can lead to a somewhat tart yet refreshing beer. With its slightly sour taste, a light cheese such as provolone or colby jack will taste best.

DOUBLE IPA

This beer will have a lot of hops and is a lighter tasting beer, with almost a bright taste to it. To make the most out of pairings, mix with a nice aged cheddar or even be daring enough to do a horseradish infused cheese. “The combination of horseradish, cheddar and beer dances on the farthest ends of the spectrum of your palate,” Bill Mix says.

PILSNER

A LOCAL LOOK When searching for variety in beers, you don’t have to look any further than Northwest Indiana, which is bursting with new brew pubs. This community of brewers is passionate about their craft and very eager to share their knowledge with others. Hannah Ford of Beer Geeks in Highland is one of them. She shares what she would put together if doing a beer and cheese tasting. Most Americans are familiar with a Pilsner type of beer, since that is how many of the major brands are made; however, there are some crafters brewing up their own versions. This is an easy go-to beer, something that is nice to drink after a long, hot day. To match its easygoing style, pair it with light cheeses such as mozzarella, muenster, provolone and Swiss, along with some cashews or almonds to bring out the nutty flavors.

These two styles can lean light or dark, depending on the crafter. Due to their versatility, mixing them with a salty style cheese would take this to the next level. Leading to the dark side of beer tasting, a Porter style of beer has a complex and smoky flavor and aged barrels. We recommend following up with an equally intense cheese such as sharp cheddar or an aged provolone, especially a smoked provolone. Some people also prefer blue cheese.

Cool Flavors A blend of juices and smoothies star at local shops

T

he trend in customers reaching for juices and smoothies of all types is popular all across the country. From vegetable-based healthy concoctions to sweet fruit versions, the juice/smoothie pool is varied and flavorful. Locally, beverage fans will find diverse flavors and styles at juice bars, health food stores and other shops. “There are a lot of people who are really into juicing,” says Amy Rakoczy, owner of Roots Organic Juice Cafe in Valparaiso. Roots, a family-run shop which debuted four years ago, serves all organic products. The cafe’s menu features a diverse collection of juices and smoothies in various flavors. Customers may also order special add-ins for their beverages. Rakoczy says her entire family has been into the trend of juicing. At the cafe, juices and smoothies are consumed by customers not only for their great flavors, but for health benefits as well. “All our juices are palatable,” she says, adding just because they’re healthy doesn’t mean flavors shouldn’t be pleasant. At Sunrise Health Food Store in Lansing, assistant manager Michael Kujawa says the juice trend is pretty popular. In the store’s Sunny’s

Kitchen, customers will find a range of juices. Many green concoctions are some of the most popular at the juice bar there, the assistant manager says. Rebecca Raspberry, owner of Vibrations Health, Wellness and Juice Bar in Gary’s Miller area, says she’s definitely noticed a great deal of customers reaching for the healthy beverages. “When I opened the [business] my idea was that I would have a health food store as well,” she says. “And the juice bar really took off,” Raspberry adds. “People that (regularly) juice come in and people who don’t (regularly) juice come in,” she says. Raspberry, who grew up in her father’s health food store in Chicago’s Hyde Park neighborhood, says she’s always been into the healthy way of eating. All the juices at Vibrations are made with fresh, natural ingredients. No dairy or ice is used in the juices. Juice experts say they expect the trend for healthy juicing to continue as more people look to juicing for everything from wanting to gain more nutrition to detoxing, weight control and simply desiring to consume great flavored beverages that are also good for you. Allyson Straka, owner of Frozen Garden, says they use fresh fruits and vegetables from local farmers and flash-freeze them. Once the fruits and vegetables are flash-frozen, they’re packaged. “Customers can take them home, open them and put them in a blender and they’re ready to go,” Straka says. Juices and smoothies are “a great way to get leafy greens into one’s diet,” she says. Some of the items offered through Frozen Garden are the Jungle Breeze, Rollin’ Oats, a Detox version and others. Straka says a retail shop will open soon in Valparaiso, and is expected to debut in midAugust. Through the shop, Frozen Garden will be able to blend and make juices on site

A country home gets an artistic update he spare, shotgun-style house built at the cusp of the 1900s has gained considerable room over the years. Now the current owners—only the third this house has known—have also amped up its personality. Talk to Jennifer Streeter and you understand why. “This house is quirky,” she says, referring to additions that grew it to 4,000 square feet. She’s a bit quirky, too, with an avant-garde-meets-boho style and quick sense of humor. It’s helped inform how she and husband David have made changes to, and have big plans for, the Hebron country home nestled amongst trees. “It’s our dream property,” the very first home the Streeters looked at after living in Crown Point. “We were driving, I saw this place and I said, ‘Stop!’” To their delight there was a For Sale sign out front. After a first offer that didn’t go through, the disappointed couple sold their home and discovered their dream home was still available. This time everything went smoothly. “God opened the door,” Jennifer says. “We moved in two days before Christmas! We were so happy; the home felt like we’d lived here.” David’s experience as a contractor is a plus in planning changes to their home of just under two years. The four-bedroom, three-bath house with finished basement and second story is roomy enough for the family with five children. Still, “We knew the house needed updating,” Jennifer says. Some changes already made: Beams for the kitchen’s vaulted ceiling—knotty pine like the rest of the ceilings—were raised, and a huge venting hood from an indoor grill is gone, allowing space for a window-style seat.

There are spaces that suit them all just fine right now, like the dining room with its wide, arched windows, a favorite place for Jennifer to have coffee and watch wildlife. “We chose just three panels of sheer curtains, to not block the view.” No ordinary rods here: the sheers hang from industrial-style, metal arrows the Streeters already had. This former shotgun home had a 20-foot ceiling added to the living room that has one of the home’s five fireplaces. Windows reach the entryway, where mud cloth, a derivation from material used in Africa for designs and symbols, covers a table. Appropriately, Jennifer added designs to it, and the kids add their own, too: expect snowflakes at Christmas. “I’m a color and texture person,” Jennifer says, pointing to a wall whose lower half she painted, leaving a softly uneven line at the top resembling worn fabric. Three steps down from the living room is a playroom, for kids to be close by. Jennifer opens a trunk and exclaims about its levered levels and original interior wallpaper. Jennifer’s exuberant personality makes it understandable that she

enjoys an eclectic mix of décor. A favorite place for vintage finds is Spill the Milk Vintage in Valparaiso. Then there’s the light fixture: “Its modern feel tones down the vintage,” and it’s this intuitive sense that makes the different styles live together comfortably. Simple, inspired solutions work. In the main floor bath, “It felt like too much white tile,” so she painted five-inch gold circles on it. “The master bedroom is perfectly placed, because above us, where the kids’ bedrooms are, we can hear everything and see who’s going up and downstairs,” she says with a grin—handy, because two of them are 3 and 5 years old. A lover of Instagram, she says with delight that she got 1,500 likes on a picture of the boho bed with her string art overhead. For some, that’s the vital question. For others, that’s not the point at all. We spoke to experts and admirers about their finds, and their stories are fun to hear. But every person explained the real value is in what the piece means to the purchaser. Sharon Dzwonar of LaPorte has no intention of turning her finds into profit. Ever since she and husband Joe inherited a few antique sad irons from their grandmothers, Sharon is on the lookout for more to add to her collection of forty. “My wonderful irons—I don’t want to part with any of them.” A few good bargains are there. A brass box iron she and husband Joe bought in 1971 for $20 was valued for insurance at $110 in 1996. Family history is important, too: Joe remembers his grandmother putting coals into a sad iron to make it hot. Some irons used charcoal that smoked, so keeping smoke away from the laundry required a certain finesse. Sharon has collected smaller, sample irons carried by tinkers from farm

to farm; electric travel irons; and an iron fueled by kerosene in a 4-inch round tank. “I’m so glad I don’t have to use that!” she says. She has her grandmother’s box iron with two slugs that were heated on a stove, then inserted—carefully—into the space of the box iron and switched with the other one as the first cooled. They were all called sad irons, says Sharon, because they were so difficult to use. The couple also inherited flatware whose value remains high, and Sharon loves her collection of pretty biscuit tins.

Estate Finds

Sometimes even an unpromising estate sale hides a good find. Brent Lemaich, co-owner with David Nadolski of Coachman Antique Mall in LaPorte, bought everything left over from a high-end estate sale goneto-church sale. He broke open a locked, unremarkable end table to find it was filled with sterling silver, including Tiffany items, a sterling chalice worth about $2,000, and crystal epergnes. Now retired from real estate, he’s been “doing antiques” for almost 40 years, and the stories are intriguing. An auctioneer told him at a yard sale, “You missed all the good stuff.” “I picked up a little lamp and he said not to bother because it had a

chip,” Lemaich says. “I paid fifty cents for it because it was cool.” Indeed. It was a Handel lamp, made in 1920, and Lemaich sold it for $800. Lemaich, who now does an estate sale every week, had bought the entire house contents of a late retired schoolteacher. He found never-used Coach and Chanel purses and jewelry worth $2,000 to $3,000. Working with an auctioneer at an estate sale at the old place of an elderly couple with no children, he discovered $10,000 hidden in a kitchen stove in the garage. At a LaPorte County place where the daughter didn’t want anything at all, Lemaich discovered one room packed to the ceiling with wedding gifts from 1953, all in their original boxes, as well as wedding pictures. “That was sad,” he says. A truly breathless discovery years later: a letter signed by Mother Teresa. David Nielsen, who with his wife Debbie has booths in antique stores in Northwest Indiana and Southwest Michigan, had acquired for about $200 an opalescent, 14-inch-tall Fenton art deco vase made in the 1930s. He knew the vase was rare, made by 1905-founded Fenton Art Glass Company, which in 2011 began to focus solely on glass jewelry to make use of remaining inventory. Neilsen had someone put it on eBay; after brisk bidding, the vase sold for $3,000. “We were jumping up and down!” he says. Was that luck? Hardly. Nielsen has been an antique Joe and Sharon Dzwonar of LaPorte started dealer since age 18, a collection of sad irons after first inheriting specializing in glass some from their grandmothers. because he loves it. But experience alone may not guide you to the right pieces. Neilsen advises, “Invest in books on antiques. We believe every antique book has paid for itself.” And it’s more than a matter of looking at a picture in a book. “There’s so much glass out there that you have to be knowledgeable to know what is a good piece—how it was made and by which company,” he says. “Even a color can alert you to the value of a piece.” The Neilsens discovered years ago that a lot of original Depression glass molds were bought by Asian managers who then made reproductions—some in colors never made in true Depression glass. Locally, “A reputable antique dealer isn’t likely to sell something that isn’t good; that will lose customers,” says Debbie. Russ Stephens at Russ & Barb’s Antiques in Chesterton says he has hundreds of books on antiques. “If you haven’t seen it, how do you know what it is?” he asks. If you’re interested in a certain line of antiques like Depression glass, read about it first. Pick a pattern you like, but find out about it, because some companies made only a few pieces, Stephens explains. You may never get a whole place setting and serving pieces in that pattern. He has a plate he bought at an antique show for $10. There were no markings on it, “But I knew what it was. I looked in one of the books,” and it’s worth at least $125. While the hunt and discovery of valuable antiques can be a thrill, Alan Robandt, who owns Robandt Antiques, Vintage & Modern in Buchanan, Michigan, has a different take on the hunt for profit for profit’s sake alone. An object’s value is intrinsic; it is the piece that makes you catch your breath because of its beauty or unusual features. Like all antique dealers, he delights in the great find—he’s in the business, after all—but Robandt’s passion is appreciation for the piece, and inviting others to share that appreciation. “People will come in and tell their children not to touch, but I tell them, no, go ahead—if it breaks, we’ll fix it,” he says. Intimate knowledge of antiques teaches young people what to look for, what makes a piece not just desirable but of value for its own sake and for its place in history. It’s a knowledge Robandt thinks is missing for most millennials, who may even say they can’t afford antiques. “But their desire for the new and modern can be seen in where they put their money: stocks and bonds, dining out, houses, and expensive cars,” he says. Robandt wonders if young people understand that antiques can enrich and be useful in modern-day life. An example is coin silver—pioneer miners’ finds of silver later melted down to create, for example, flatware. “It’s wonderful, lovely stuff,” Robandt says. “Clean, plain, not embellished in design, and works well with modern pieces. And it’s not understood that silver that’s used doesn’t have to be polished all the time.” The Dzwonars know this. An antique wooden tool chest makes a perfect cocktail table in their sunroom. With two big handles and corners protected with metal caps, Sharon claims, “This was a work of pride.” ■ Julie Dean Kessler

or most football fans, the 2016-17 NFL season starts with the opening night game on Sept. 8 between the defending champion Denver Broncos and the Carolina Panthers. But for Indianapolis Colts general manager and Highland native Ryan Grigson, it began way back on Jan. 4, the day after the team closed out its 2015-16 campaign with a 30-24 win over the Tennessee Titans, but no playoff berth. That was when Grigson got back to working the phones, watching the tape and making the changes that would help the Colts return to the postseason. In fact, other than the absence of Sunday games, there’s precious little difference between a season and an off-season for Grigson—and this football lifer wouldn’t have it any other way. “Football has always been my passion, and it’s what has inspired me since I was very young,” says the fifth-year GM and former all-state offensive lineman for the Highland High School Trojans. “Nothing ever pulled me from those dreams. I thought I would play in the NFL for a long time, but it didn’t turn out that way.” Indeed, even as the prospect of a fruitful NFL playing career coming out of Purdue University in 1994 was ultimately cut short by a series of back injuries, Grigson soon found a new way to impact the game he loved. His first NFL scouting opportunity on the staff of the Super Bowl champion St. Louis Rams in 1999 led to a new perspective on team-building that had him hooked immediately. After moving up through the ranks with the Rams and the Philadelphia Eagles, Grigson eventually landed the top personnel job for his home-state team, a dream position that he still finds pretty hard to believe. “It’s a little bit surreal at times when I actually take it in,” he says. “But I don’t believe there’s a better place to raise a family than Indy, or a better family to work for than the Irsays. I love my job, and I never take for granted the fact that there are only 32 of these jobs in the NFL.” Despite his enthusiasm for the job and the impressive success the club has enjoyed over his first four seasons (44 wins, three playoff appearances, two AFC South titles), Grigson knows that he works in a business that is hypercompetitive and holds a position that is under almost constant scrutiny from both fans and media. Amid all of the intense pressure and second-guessing, he draws on lessons he learned while growing up in Northwest Indiana to forge ahead. “I’m a competitor at heart, so I’d be lying if I said it didn’t burn me to be doubted or to have my abilities called into question,” he says. “But I have a tremendous amount of pride in my work. Since I


was young, for whatever reason I have always thrived when challenged or doubted. I feel like you never need to fire back or explain yourself to the doubters—you just need to have the resolve to be the last one standing at the end of the day, knowing you gave it your all and that you never gave up.” Lessons in facing adversity and persevering through difficult times were also learned on the gridiron, first at Highland and then in West Lafayette. Grigson says that even though working in the front office can’t compare to the thrill of competing on the field, there are plenty of parallels between the two that he draws on each and every day. “Football taught me courage and how to dig down beyond the physical aspect and learn about my own true will to succeed,” he says. “I found out that I could push myself to new heights in many areas as long as I had the will and desire to see things through. I have a note that’s been on my desk here for at least four years now—it says, ‘Be at your very best in the darkest moments.’ I strive to do that because that’s what I feel the best leaders have always done under fire.” Outside of contract negotiations and salary cap headaches, one of the main challenges Grigson faces on a daily basis is trying to maintain perspective and balance in a job and an industry that has morphed into a 24/7/365 proposition. After all, he knows the Colts aren’t the only team for which he’s responsible—he and wife Cynthia have a roster of six kids ages 1 to 13 to manage at home as well—and that there’s more to Sundays than just football. “I have such a great bunch of kids and a rock star for a wife who knows when I’m getting out of whack and need to re-center and refocus,” he says. “I think my Catholic faith has always played a big role in

maintaining my priorities as well. Just trying to be consistent with making sure I get to mass Sunday usually keeps me grounded enough to where I’m not going off the rails in terms of balance in my life. I have too many people counting on me at work, and more importantly at home, to not give my all in that regard.” While Grigson thinks that he might be running a restaurant if he weren’t running an NFL franchise, as a football guy to his core, he would undoubtedly miss the excitement of the game-day experience—still his absolute favorite part of the job. Because even if he can’t quite enjoy a fall Sunday like a typical fan anymore, he can still see very clearly why he decided to stick with the game long after his playing days had passed. “Seeing the actual product we’ve assembled out there competing on the field and the outpouring of joy in that locker room when we’re victorious are things that will never get old for me,” he says. “That’s the addiction. Winning is such a great feeling and reaping the rewards of your labor with everyone in the organization who’s put in the work—that’s just so special.”

When tent camping, you spend most of your time outside in the fresh air. Making sure you have comfortable chairs to relax in outside is important. Warm blankets and clothing will help stave off the chill that can happen during the night. When preparing your campfire, be sure your wood is stamped and approved by the Dunes. Most gas station wood bundles are.

CAMPING ESSENTIALS

We need a guitar to strum on while sitting around a campfire; it is a must! Also, a wireless music player is a great way to personalize your experience. This Nixon Blaster is durable and affordable. A Stanley thermos is a tried and true way to keep cold drinks cold or hot beverages hot. A cast iron skillet is ideal for heating up leftovers and cooking over the fire. And we always bring trail maps; we love to spend our evenings planning the next day’s adventure.

When packing for a camping trip, bring items that fit with your family’s personalities. What do you normally like to do for fun? For my family, music, hiking, and activities to keep us busy are a must. A great pair of hiking boots, water bottles, sunscreen and bug spray are the first things we pack. And don’t forget about games! We love to play UNO and 31 in the back of our International Scout.

S’mores Puppy Chow Ingredients 5 3 1 ½ 1½ 1¾

cups Golden Grahams cereal, divided cups Chex cereal cup powdered sugar cup peanut butter cups chocolate chips, divided cups mini marshmallows, divided

Directions Combine 4 cups Golden Grahams cereal and 3 cups Chex cereal in a large bowl and set aside. Put 1 cup powdered sugar in a large gallon Ziploc bag and set aside. Combine peanut butter and 1 cup chocolate chips in a large microwave-safe bowl. Microwave for 30 seconds, then stir, then heat another 30 seconds, stir, and heat another 30 seconds if needed. Add 1 cup mini marshmallows to the chocolate peanut butter and stir together so the marshmallows melt a little. Pour your chocolate peanut butter mixture over the cereal and stir together until cereal is completely coated. Carefully scoop chocolate-coated cereal into Ziploc bag with powdered sugar. Shake the bag until the cereal is completely coated with powdered sugar. Pour cereal into another large bowl, mix in remaining ½ cup chocolate chips, ¾ cup mini marshmallows, and 1 cup Golden Grahams cereal, and serve.

Toppings: marshmallows, mini Reese’s peanut butter cups, milk and/or dark chocolate bar pieces, butterscotch chips, toffee chips, banana slices, fresh fruit, etc.

Directions Fill cone with desired amount of marshmallows and toppings. Wrap cone in aluminum foil. Place over campfire for about 3-5 minutes, on a hot grill for 5-6 minutes, or in the oven at 375 (preheated) degrees for 5-8 minutes. Using tongs or a hot mitt, carefully remove cone and check under foil that everything is melted to your liking.

Don’t sacrifice the amenities. We’re not roughing it anymore. If you like that expensive coffee, find a camp coffee maker and bring it and your favorite cup along.

Plan your camping trip early. Most campgrounds take reservations and the lastminute camper may not find availability at most parks today.

Prepare for bugs and other wildlife. As more people enter the great outdoors, more conflicts with wildlife are possible. Know when you’re camping near bears and always plan to encounter mosquitoes and other insects. Better to have spray and not need it, than to be driven out of your site.

Learn how to start a fire. You’ll not only impress your friends, but stay warm and eat well.

Approximately 4 Hershey’s (or your other favorite) chocolate bars 1 bag marshmallows 1 box graham crackers

Directions Preheat oven to 450 degrees. Spray shallow, heavy-bottom baking or casserole dish (a cast iron pan works well, also) with nonstick cooking spray. Break chocolate bars into pieces and layer on bottom of pan, as thick as you’d like. Place a layer of marshmallows on top; really jam them in there. Bake in preheated oven for 5-7 minutes, until marshmallows are toasted. If you prefer it a little crispy, briefly place under broiler (attention: do not walk away—watch very closely) until you reach desired level of singe on your marshmallows. Explore camping in all the seasons. Many stop camping once Labor Day comes, but the best camping to be had is in the off-season.

Create a camping tote. Don’t skimp on camping supplies. Treat them like an investment for a lifestyle.

Carry a map. If a trail and park map is available, take it. Not all places will have cell signal.

TRANSFORMING WHITING

When developer Enrico Plati visited Whiting, he saw something that other developers didn’t. Plati—who helped pioneer previously run-down Chicago neighborhoods like the West Loop—recognized potential in the once sleepy town of Whiting. “It has beautiful amenities, a progressive administration, it’s close to Chicago, and it’s safe,” Plati says. The city’s strengths were enough to convince Plati and his partner, Bob Berry, to build a new luxury apartment building, City Place, with Vavrek Architects and MVP Builders. They were onto something, because the apartments were leased almost immediately. Now, the group is in the process of developing White Oak Condos, the first condo development in Whiting, and Triangle Site, another apartment building with luxury amenities. Triangle Site will also house the new Whiting Lakefront Museum. The developers, along with Whiting’s administration, are hopeful that the town’s polished new features and high-end housing opportunities will bring in young professionals who work in Chicago but prefer to live in Indiana. “Now there’s an option to live next to the lake, without the Illinois taxes,” Plati says. Plus, there are still plenty of things for residents to do, he points out: boating, wind surfing, concerts at the nearby Horseshoe Casino, and plenty of family-oriented events. Those who believe in Whiting have many more plans to continue its growth—a cutting-edge art center, for example—and are hopeful that the progress will have a snowball effect, according to Plati. “Success will breed success.” -JULIA PERLA HUISMAN

Two of Michigan City’s most creative minds and successful entrepreneurs collaborated to open a new shop in the swanky Uptown Artist Lofts. Julia Nielsen, owner of The Closet by Franklin Vintage, formerly owned a space downtown that was literally as large as a closet while Amanda Joyner, the brilliant hatmaker behind Chef Bizzaro Millinery, crafted her quirky creations out of her home. The two friends decided to expand by opening a shop that provides ample space for Julia’s vast collection of vintage clothing and antiques and Amanda’s artistic hats and fascinators. Since 1970, local artist Charles Lotton has created hand-blown glass for museums and art collectors all over the world. It has since become a family affair, with sons Daniel and David following in their dad’s footsteps. Together, the Lottons create hand-blown vases, bowls, sculptures, bottles, and lighting such as lamps, pendants and chandeliers. (In fact, several of Lotton’s chandeliers hang at Café Borgia in Munster, a feast for the eyes upon entering the large dining room.) The Lotton style is whimsical and ornate, and “no two pieces are alike,” Charles says. A visit to the Crete studio (there’s also a gallery in downtown Chicago) allows visitors to take in the wide variety of pieces the Lottons have crafted. If you happen to stop by while the artists are making a piece of glass, you’re welcome to watch the fascinating process. The studio is open Monday-Friday, 9 a.m.-5 p.m., and Saturday by appointment only.
