Creative Cuisine adapt to ‘unusual receptions’ BOOK

Sounds good for kids’ parties but what’s that got to do with weddings? “Popcorn bars are really popular,” Scribner said. Brides and grooms can purchase the popcorn in a 10-gallon bag for a buffet bar or they can have custom labels on smaller bags to use as wedding favors. Popcorn can be included as an appetizer, in gift bags for out-of-town guests or part of a sweets table along with candy. “Candies are a big thing,” she said. Once the big day arrives, Creative Cuisine is ready for almost any location. Outdoor weddings and barn weddings are popular now. “They’re a big thing – private barns and barns like Livengood’s [in Chadwick], which is a barn venue,” Scribner said, “and Allen Acres [in Rock Falls].” She said they’ve done some unusual receptions as well. One of those involved an airplane and a field in Coleta. “They put up a big tent and the bride and groom parachuted in for the wedding,” Scribner said. The caterers have provided food for weddings at the homes of bride and grooms, Neubauer said, and in tents in the backyard. “Sometimes, we have a really nice kitchen and sometimes we’re working out of our van,” Scribner said. After all those years of business, whatever the venue, the bride and groom do not need to be concerned about the food with Creative Cuisine Catering.

These fruit trays are among the many items available through Creative Cuisine. “We’ve got good staff and we’ve got it down pat, “ Scribner said. Two employees go out to the reception location, set the meal up, keep it stocked, then tear it down, clean up, pack up and go. Creative Cuisine provides the food, but doesn’t provide such things as tables and linens. The key is organization. “We work a week ahead making sure all the trucks are coming on time,” she said. “We’ve got people to work, we’ve got things lined up days ahead. When the day gets here, it really is easy. We’re feeding 200 people today and this is so easy, but we worked 4, 5 or 6 days ahead.” “There were times when it was very stressful,” Neubauer said. “We’ve learned,” Scribner said.
