ith the new season upon us, it is time to dine out as much as we can to support the restaurants who have struggled the past few years. With care and extra precautions, we can keep this up hopefully for the duration of summer. Let’s support local restaurants twice a week if you can! I ventured out to the wonderful breakfast/lunch eatery called Egg Harbor Cafe in Geneva. With tasteful decor and vibe that makes you feel relaxed and light, you can dine on these amazing choices, of which there are many. I first went for the Bacado Omelette. I mean, seriously! The name itself — a combination of bacon and avocado. Who doesn’t love bacon!? And avocado is

creamy and smooth like butter, but with the good fat. This is topped with cheese, sour cream and green onions. It is served with housemade salsa. If you do it with did, you cut the calories and still get all the righteous taste! And for a little carbs — yes, who doesn’t love some of those!? — Sam’s Swedish Pancakes. We are in Geneva after all! Home of the Swedish Days. These pancakes are topped with a lingonberry butter sauce and some lingonberries. Mmm, delicious. Now I just had a third of the dish and shared with some others to keep my waistline trim. But these over-thetop pancakes take you right to Sweden!
